Dear Readers, to act favourably on the brain. The reason I started this diet was not to lose weight (I’m a stick figure as it is!), but I wanted to avoid that sluggish feeling during the day after lunch and feeling exhausted in the afternoons. So far it seems to be working, although the downside is that I have lost weight, so if that happens to be your aim, I’d definitely recommend you try it!

“Never eat more than you can lift.” – Miss Piggy I’m not generally a fan of diets, just eating well. However, for the last few weeks I’ve been trying a controversial way of eating (aka ‘diet’) which has left me feeling alert, less stressed and super efficient. It’s called the ‘Warrior Diet’ and involves eating like our ancestors did 10,000 years ago; grazing during the day on fresh fruits, vegetables, a little protein if desired, but no carbohydrates, then eating whatever and however much of what you want at night without any restriction of calories or macronutrient content. The science behind this way of eating shows that during the daily hours your body is at a peak capacity to remove toxins and generate energy, while staying alert and resisting fatigue and stress. Long periods of undereating, which is what I do in the day when I’m working and staying alert, apparently increases protein efficiency. Taking in certain types of protein on an empty stomach can increase growth hormone levels which you can’t do on a full stomach and long periods of fasting allows certain beneficial amino acids

So, as I look forward to my feast feeding tonight, I present you with a calorie-packed edition to get your mouths watering! Food, glorious food is our theme and our feature story will take you on a culinary day in Jakarta, from breakfast to a midnight snack. Tempted? Read Young’s article on page 4 and 5. If you fancy a two hour drive to Bandung, Holland gives his insight to the best out-of-city dining spots, some with unbelievable views. This on page 7. Some of the tastiest dishes are found on kaki limas on the street and Petersen reveals the top eateries in Ben Hil, including where to find the illusive sambal ganja – page 8 for his insights. We have more history for you with the a tale of the sought-after spices and their profits which were indigenous to Indonesia’s Banda islands only. Sutton has this on page 6. Bon appétit!

The Dutch governor, Georgius Everhardus Rumphius (16281702) of Amboyna (present day Ambon) once said, “It is at the same time so juicy, that many people can never eat enough of it, so delicious is its fragrance and agreeable its sweetness; and it is believed that the sick, when appetite or the power of eating has wholly gone, are nevertheless delighted with this fruit; or at least if they will not take to Mangosteens their case is indeed hopeless.”

Rich in Zanthone Antioxidant Very low in calories, contains no saturated fats or cholesterol, but rich in dietary fibre (100 g provides about 13% of RDA). These delicious fruits are a very good source of vitamin C; providing about 12% per 100 g. It is also a high in B-complex vitamins such as thiamin, niacin and folates. UK rapper Jesse J20

One pack will cost you 420 calories and set you back 17g of fat, so if you like to have a double portion (as one is never enough), that’s a whopping 840 calories and 34g of fat. Interestingly, there is no cholesterol per serving. UK rapper Jesse J20 uploaded a music video on YouTube called “Indomie” in 2011 which quickly became a big hit in Indonesia. In this music video, J20 raps about the different flavours of Indomie and about how much he loves these curly noodles.

Tempeh Did you know that tempeh is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form and is unique among major traditional soy foods in that it is the only one that did not originate in the Sinosphere and instead in Indonesia?

The earliest known reference to tempeh appeared in 1815 in the Serat Centhini. The soy carbohydrates in tempeh become more digestible as a result of the fermentation process. In particular, the oligosaccharides that are associated with gas and indigestion are greatly reduced by the Rhizopus culture. A serving of soy tempeh is an excellent source of dietary fiber and soy protein. It is also a good source of folic acid, potassium, and iron. Important bio-active components called isoflavones and saponins, found naturally in soybeans, are being studied in relationship to relief of menopause symptoms, such as hot flashes, maintaining healthy bones, and preventing prostate and breast cancers. Tempeh is a healthy, high-quality protein source that contains all essential amino acids for growth. Soy protein is equal in quality to meat, milk and egg protein, and comes without saturated fat and cholesterol.

T

here has always been some form of excitement hearing the busy bustling sounds of the Chef calling out the orders, with their crew hustling after every order. Being able to hear your order being called out is like preempt to what is about to come, a foreplay to the meal. After all, food is not just fuel to keep you breathing, it has to have a form of nurturing, a pampering of the body and soul, a pazaz as I would call it. And when it comes to most chefs their food is their way of communicating and expressing themselves. They are artists. It was this artistic charm which led me to be in the restaurant business and jumping into several kitchens to work alongside these artists. Having years of doing so, I have come to understand that it is the kind of food which comforts your soul and not only your hunger that really makes the impression. It is not always top quality products cooked by a Michelin Chef that is impressionable. Many nights I have found myself eating simple home cooking with great chefs and am easily content. With the ever growing restaurant scene in Jakarta, the options to your culinary desires are almost endless. As the population grows more and more multi cultural, so does the diversity of cuisines, personal taste buds and preferences. Personally, this is an exciting time in the food and beverage sector to go out there and seek out the food that speaks to you. Here are a few of my soft spots to visit, some new and exciting, some old tried and true, yet all speak to me with pazaz.

Breakfast... The way to start a day Please allow me to confess one thing. I am not a morning person. Breakfast at 7 am is not something I would get out of bed for. The standard eggs over easy with a side of toast is not usually on my menu. However when the

yearning does arise, Antipodean café does a delicious all day breakfast menu with eggs, sausages and bacon. They also roast their own coffee beans, making a good cup of Joe. If you’re not able to sit and indulge in the beauty of breakfast, pick up a bagel sandwich at Bagel Bagel.

Homemade bagels with a variety of toppings to your liking, this may be the power breakfast for those on the go.

Brunch… The way to start a weekend Push the hours a little later when brunch is served and you will see me bright eyed and bushy tailed. Now we are talking about one of my favourite meals; Chinese brunch, dim sum. Freshly steamed dumplings, crispy and succulent barbeque meats and slowly cooked rice porridge that coats the tummy like a warm blanket. There are heaps of Chinese restaurants to choose from these days. Long gone are the days when the

only places for dim sum were in North Jakarta (yes, I am not that young). I have found Maystar and Crystal Jade Chinese Restaurants tend to be consistent at maintaining a good variety and quality. If you are looking for a more Chinese ambiance, try Sun City in Kota area.

I’ve always enjoyed dinner time as this is usually more relaxed and involves my favourite beverage, wine.

Other brunch options would be Koi Restaurant, with their Western style options or Four Seasons Hotel where the weekend brunch buffet includes Foie Gras, oysters and Sparkling wine if one desires. For those who know the culinary scene in Jakarta, Chef Gilles Marx is no stranger. Hailing from Alsace, France, he brought his Michelin star talent years ago to Riva in the Park Lane Hotel. Years onwards, he now is Chef – owner of Amuz. Clean and refined French cooking here, perfect to have with your special bottle of vino.

Lunchy Munchy I have found lighter meals such as sushi or salad usually hits the spot nicely. Fresh fish dipped in soy sauce with a healthy kick of wasabi has always been a personal favourite, accompanied by a nice salad with sesame dressing. Sushi Tei is scattered generously around major malls in the city, serving well priced items that can suit the lunch budget. You can generally grab your lunch and be back at work within the hour, if you don’t include the queuing, traffic, coffee break with friends, telephone calls, window shopping and impromptu meetings...

If a relaxed ambiance is your calling, Elbow Room in Kemang may be your choice. Jakarta’s 1st gastropub concept, the food is generous and unassumingly delicious. Ambiance is nothing short of comfortable where live acts perform on Friday and Saturday nights. Drinks will surely follow. 

Union is another choice spot, the latest effort from the people who brought Loewy, Cork and Screw and Canteen. Nothing short of a hit from the get go, the food is unassuming yet with a twist. Find bistro staples such as cured meat platter and grilled steaks alongside local comfort food such as bakmi ayam Foie Gras (Indonesian chicken noodles with Foie Gras). Their Red Velvet Cake is currently the talk of the town where it is common to see a slice or two on almost every table. Located in Plaza Senayan, lunch easily turns into coffee time and into dinner and drinks.

Tea for Two and Coffee Talks If Western is more delectable to your palate, try Negev in Wisma Mulia. Chef Chandra’s influences hauls from his experiences in five star hotels, bringing together Spanish, Italian and French cooking. A fairly broad yet focused menu has proven to work for people in the mood for modern European cuisine. Desserts at Negev are also not to be neglected. Executive Pastry Chef Eric Gouteyron is making magic with stunning results.

All the malls here have major coffee shops that are popular for afternoon hang outs and chats. Café Victoria in Plaza Senayan is one of the long standing outlets that is still going strong for meetings and somewhere to see and be seen. If you are in Pacific Place, check out Liberica where the house coffee blend is no joke. Rich and robust, these guys have done their homework to find their own unique blend. Non coffee beverages are also popular, including the Bali brewed beer, Stark.

Of Spice and Profit By Antony Sutton

N

early half a millennium before the world, slowly getting connected by grainy black and white TV images, was entranced by antics of Yuri Gagarin, Neil Armstrong and various cute animals in astronaut outfits there was another race that captured peoples’ attention. Instead of the moon though and the vanity of nations it was spices and it was all about profit. Massive profits for tiny seeds. As far as the Europeans were concerned, spices were inordinately expensive and they blamed the Venetians. They knew the commodity came from somewhere in the east but that was it. Europe was coming out of the dark ages; to them, the east was the Ottoman Empire. Beyond that, their knowledge was scanty at best. In fact that lack of knowledge can be highlighted by the fact that Christopher Columbus set off looking to tap into the spice trade when he ‘discovered’ America by mistake! They little knew that the spices themselves, nutmeg, clove and mace, began their journeys on tiny islands on the other side of the globe and were carried by a virtual cornucopia of nationalities before ending up in the finest houses and restaurants. They didn’t know that but they By David E. simple. The Portuguese felt their work was done for the glory of God but the Dutch and the British, not bound by the dictates of Rome and the Holy Father, had no such scruples. And the profits were mindboggling. After an initial Dutch sortie which had seen many of the crew die and left behind a succession of upset local potentates, a second, more serious venture, bought forward a return of 400% for the investors and launched a slew of copycat traders; by end of 1601 14 fleets had headed east looking to imitate that success. Towards the end of the 17th century the British and the Dutch were sitting on ever greater riches. A trader could purchase a 10 pound bag of nutmeg, the seed of the nutmeg tree, in the Banda Islands and pay less than one English penny. That same bag, on its arrival in London could then be sold for more than £2 10 shillings. A return of 60,000% that would have cleared any inner city of drug dealers in today’s world.

Towards the end of the 15th century the race was on and the early frontrunners were Portugal and Spain, no doubt encouraged by a papal ruling that had conveniently, for them at least, carved with the globe into halves; the one half being awarded to Spain, the other to Portugal. Malaka was vital as it was from there, at a narrow point on the Malaka Straits, that all shipping could be checked, and most importantly, taxed.

As men of greed themselves, the backers of these pioneer armadas trusted no one. The men captaining the fleets were strictly told they could not engage in any trade themselves and even the slightest discrepancy was viewed very seriously. Returning fleets would have their precious cargo guarded jealously from the cargo hold to the market place.

Before the Europeans came on the scene the Straits was of great importance; all trade between Arabia, India and China had to pass through this stretch of water that separates the Malay Peninsula from the long, cigar shaped island of Sumatra.

So what were these tiny seeds that sent men around the world, saw small wars exported round the globe and, ultimately, saw a tiny island in the middle of wide open sea exchanged for a piece of real estate that eventually became New York?

With the Portuguese conquest of Malaka, then a middle ages Singapore, they could almost smell the aromatic spices carried on the trade winds and after consolidating their hold on the vital port they headed east and eventually set foot on the fabled islands.

Today if you sell a nutmeg it refers to the act of one footballer passing the ball between the legs of an opponent. About 1,300 years ago monks saw nutmeg as something they could add to their desserts for flavouring while the England of Queen Elizabeth 1 and William Shakespeare believed it could be used to ward off the plague, a frequent occurrence in those days. It has also reportedly been used as an intoxicant by a smorgasbord of people from Indonesia, to the USA via India.

But the Portuguese mastery of the trade was brief. At the end of the 16th century two other players emerged on the scene and for them their goal was profit pure and

Given the high cost of nutmeg in European markets it is little surprise they were seen as a status symbol and the well off would think nothing of going to the finest restaurants, sitting down then whipping out their nutmeg grater as ostentatiously as possible. Think Blackberry without worrying about charging the battery. In a boon to those businessmen the reddish covering around the nutmeg seed, called mace, was also highly sought after for its culinary qualities. Cloves also have a long and varied usage. One Chinese emperor demanded that anyone who wished to speak with his should first wash their mouth with clove to improve its odor! The Romans were also familiar with cloves, with one complaining the amount of money and resources that were expended annually to trade with India. They are also a mainstay of Indian food with the spice added to a variety of dishes from the sub continent while the idea of burning clove is one that has spread far with of course it being a popular ingredient in Indonesian cigarettes but also as an incense in both China and Japan. As any free market economist will tell you, a monopoly is not in the interests of the market place. The Dutch and British were not able to enjoy their massive profits for long. The need to protect their supply routes led to ever increasing costs of security and it was never going to be long before some enterprising soul tried planting the seeds in similar environments far from the monopolists avarice. Today, for example, nutmeg is grown on the tiny Caribbean island of Grenada and such is its importance to the country’s economy, it is the second largest producer in the world after Indonesia, it features on their flag. 

Off the Beaten Path

A Variety of Rich Culinary Experiences Every weekend thousands of people from Jakarta travel to Bandung to visit the many factory outlets and dine out at hotels, resorts and open air restaurants. Hoping to escape the traffic jams of Jakarta, many are disappointed to find that Bandung suffers a similar fate at the weekend, with thousands of B plated cars clogging the roads. In this brief article I would like to share a few ideas on out of town eating places where the traffic is not quite as severe as down town Bandung.

Congo Restaurant & Wood Gallery

Kampung Daun One the best known attractions in the surrounding hills around Bandung is this unique and remarkable place which offers a wide choice of food; perhaps best known for its Indonesian cuisine, it also offers western favourites such as steak, pizza and pasta. This traditional and cultural centre comprises dozens of suang (traditional huts) catering for small groups or larger gatherings. The whole complex sits amongst an array of native ferns and other

exotic tropical plants, located in a small canon where the water races over red rocks —this native garden setting is a treat for your eyes. After dining, it is almost irresistible to lie down on the comfy cushions and listen to the cascading water or steady rain—look around; you will be one of many soaking up the tranquillity and dosing off—ahhh, just bliss! For directions it is best to look the location up on the net, or hire a local car and driver. Guaranteed not to disappoint.

Located near the Dago mini-bus terminal, it is worth a visit if new to Bandung. Apart from a great selection of food in the min-market , plus eat in or takeaway (suggest you try the Jerry Burger), upstairs is an internet cafe and tourism information centre which can assist in providing valuable details and directions to many of the fine restaurants and attractions around Bandung.

As mentioned earlier Dago has many wonderful restaurants and coffee houses, but not many offer better food than the Mountain View Golf Club. Visitors are very welcome and food has greatly improved since the introduction of a new Italian chef. Whether you drop in for lunch or a simple drink, the view from the open balcony is breathtaking.

This is a favourite day and night spot for visitors who want to enjoy the mountain air and indulge in a good variety of food. Like many other restaurants in the Dago area, its surrounds are tastefully done, including the old wood mill and gallery, which has on display some magnificent pieces of furniture highlighting beautiful wood grains and colours. As with the Burgundy restaurant mentioned above, evening dinner guests at Congo can enjoy live entertainment, in a warm and friendly atmosphere.

Cafe OZ

This bar/restaurant has the best pizza in town and fantastic views over the city. Certainly worth a day visit or stay late into the night and soak up the atmosphere. Situated on a steep ridge, the building has a tiny entry, but once you walk downstairs it opens up into a fantastic open area with timbered decks and a relaxed ambiance. Perched high over the valley that falls away beneath you, Cloud 9 has a most unremarkable appearance from the front, but move inside and you won’t be disappointed.

Whilst not located out of town like most of the other restaurants mentioned above, Cafe OZ is certainly worth a visit if you want a good restaurant with an Australian flavour. As you would expect it has wonderful meat pies and other western food, but also offers good value Indonesian favourites. A really good place to take the family, Cafe OZ offers something a little bit different and is off the main drag at Jl. Bungur No. 23.

Burgundy Restaurant Mandarin If you are travelling through Lembang on way to the volcano or hot springs at Ciater, there is a Chinese restaurant located just up from the small fruit market on the left hand side of the road. Situated on a sharp right hand turn in the middle of town, the Mandarin is an unassuming small rumah makan, run by the same married couple for nearly 30 years and in all that time it has

offered some the best food in the Bandung region. Its signature dish is kangkung cha, served in a sizzling plate with tender slices of steak and quail eggs, this is a regional delicacy that all the locals come to enjoy. Other favourites here include the crab and asparagus soup, fantastic frog’s legs, and all the seafood. The decor is plain, but the food; sensational.

Not far from Lembang on the road to Marabaya, this is a complete contrast to the Mandarin. Located on ridge overlooking a beautiful green valley, it offers a wide range of cuisine in a delightful setting. One of the many food offerings here is the tempura—a tasty combination of prawns and local vegetables in a light batter, or you can choose from a variety of western dishes, washed down with a glass of fine wine, of which there is quite a good selection. The Burgundy Restaurant is a cool place, and l mean this in both terms— it is a great place to hang out and enjoy the view, but it can get cold, so bring a light jacket, particularly if dining in the evening. Coming down the mountain from Burgundy, there is a new road that takes you through a housing estate (still to be developed), which is an excellent short cut to the Dago area. So, rather than heading back to Lembang, turn right from Burgundy and then left off the main road and drive up to where there is a boom gate. Go through the gate by simply waving to the guard and follow the windy road down to a crossroad, turn right and follow the road till it intersects with another, keeping left until you find Cloud 9.

Street Food Spots

DELICACIES FOR THE DARING DINER It’s hard to put your finger on what makes Ben Hil (short for Bendungan Hilir), right at the heart of the city, the go-to spot for street food. Maybe it’s the atmosphere—the perpetually wet streets, the howl of the bemo, the ubiquitous banci whose Adam’s apple bobs as she points her chin at you and asks for money with those do-the-right-thing-or-else eyes.

1. MIE ACEH It’s your first stop in the Ben Hil market. A few metres off Sudirman, just past the Viagra salesmen sits one of the simplest stands in the city. A man and his wok. But this is no regular mie dish. There’s just something about the simplicity that makes this place a favourite. Forget catering your next meal or even slaving away in the kitchen. Just roll up to the cart and order five portions. It will set you back Rp 50,000.

But like nowhere else in the city Ben Hil provides long-time residents and tourists alike with a long list of food haunts like nowhere else in Jakarta. So here, in no particular order, are a few impeachable favourites. Did yours make the list?

2. SEULAWAH KHAS ACEH Let’s just get this out of the way, this place is famous for is sambal ganja (marijuana chilli). It’s on the menu, but it always seems to be sold out. Don’t ask why. Maybe all the people with glaucoma are coming from the hospital across the street? But even if they’re sold out of the spicy mary jane, order anything on the menu. You won’t be disappointed. And even if you are, who cares. You found a place that sells chilli sauce with pot in it.

3. MARTABAK MANIS The name says it all. If you’re looking for dessert after a great meal at any of the places on this list or if you end up at Santika Baru, just walk across the street and order the martabak. If you’ve never had martabak before, it’s simple. It’s like a pancake soaked in butter and then folded and filled with chocolate, peanuts and condensed milk. Two pieces might make your heart stop, but one piece will leave you wondering if a heart attack is really that bad.

4. MIE TANDANO Like Gudeg Penjompongan, Mie Tandano keeps crazy hours and they only have so much food. Every day except Sunday they cook up a huge basket of noodles and fork them out until the last noodle. There are other things on the menu, nasi goreng and the like, but remember, you’re not there for that. Get the mie, have a seat and enjoy, there isn’t a better plate of noodles in the city. 5. CAHAYA BARU No list would be complete without a Padang resto, the fast food of Indonesia. The best thing about Cahaya is that it’s right next door to Seulawah, so if you don’t like the look of one you can duck into the other. But if you like Padang you won’t be disappointed. There’s something for everyone. The staples— dadar, perkedel, terong rending and djenkol are flawless, not to mention the fact that the place is like “Cheers”. Go there once and the guys will be calling you by name for years.

6. GUDEG PENJOMPONGAN Next on the list might be the hardest to find. Gudeg Penjompongan, which is actually a big deal during the day and usually sells out of food a little after sundown, is actually a house someone converted into a restaurant, not a rarity in Jakarta, but nonetheless, if you don’t know what you’re looking for you’ll never find it. The best way to spot the Yogyajakarta favourite is to look for the pile of cars outside the gate.

SANTIKA BARU Forget the fight that comes with what happened to the original Santika or any of the other folklore that comes with the place, like the fact that the band was never really hired, but just showed up one day and started playing, and try and enjoy some of the best seafood in the city. Most folks come for the mussels or the grilled fish, but the best dish on the menu is the Kepiting saus Padang (Crab in Padang sauce). It will change the way you think about crab and pineapples, forever.

ormally when dining in a newly opened restaurant, my expectations aren’t to see the place heaving with customers at lunchtime, but at the new Indian eatery, Samy’s Curry, it was. Why? Since the 1950’s, Samy’s Curry has been an institution in Singapore, with its permanent home now on Dempsey Road and for one month this famous restaurant has opened its doors in Jakarta. Naturally people have been swarming to enjoy the dishes they’ve been loving in our neighbouring land and also with its location, opposite of Grand Lucky Superstore by Pacific Place, it’s logical that lunch times are busy with hungry shoppers and people from surrounding offices after a spot of Indian delights. This down to earth resto offers South Indian cuisine at a reasonable price and could be considered semi-fast food. I was impressed to see staff take our order with an iTouch, sending the order directly to the kitchen, ensuring complete efficiency. “We have to take advantage of the technology that’s out there,” Manager, Tony Ching tells us. Having been a fan of the original Samy’s in Singapore for 20 years, he partnered up with owner, Maheyndran to open up the Jakarta branch, which took only six months from the initial planning to the grand opening.

The restaurant is big, at 750m2 including the kitchen and the outside seating area, and décor is a simple and minimalistic white and green. Clientele are a mix of Expats and Indonesians, with many Indian diners which is always a sign that food is authentic. What do you drink at a South Indian restaurant from Singapore? I’d say try the Teh tarik, literally meaning ‘pulled tea’, which is hot tea and condensed milk, prepared by pulling the tea from one vessel to another, creating its characteristic frothy bubbles. If you don’t have a sweet tooth, be warned. You can choose to dine on plates or be adventurous and try eating off of banana leaves – we opted for the latter and got stuck in. A specialty on the menu and a must try is the Fish Head Curry. If you’re squeamish, you can order the same dish with fish meat only, to avoid any unwanted eyeballs or fish brains. On the menu there are several chicken curries, including Masala and Tikka, as well as a couple of mutton dishes, which Tony says is a must try. In the kitchen, five expat chefs from India and trained in Singapore are in charge. “They refuse to touch beef, therefore pay great attention to the mutton dishes, ensuring they are tender like kobe beef,” says Tony with a grin.

Around us, guests are munching down on Combo Meals, which include a Meat Combo (Rp.65,000++) filling your arteries with Masala Chicken, Curry Mutton and Mysore Mutton. If you’re an Indian food lover after an authentic fast meal, I would recommend trying Samy’s Curry. As they are just starting here in Jakarta, they are constantly improving which can only be good news. Expect tasty, spicy food and staff who are very efficient and keen to help. As a famous Hindi saying goes, “Would one expect a monkey to appreciate the taste of ginger?” Meaning – Those who don’t know, can’t appreciate. 

A Dutch F & B Manager at the Mandarin Oriental who’s fresh off the boat from New Zealand. Congratulations on becoming the new Food & Beverage Director at the Mandarin Oriental, Jakarta. How are you settling in? I am settling in perfectly well thanks and adjusting to humidity and the temperature change, air conditioning life and the chaotic traffic of Jakarta, but overall the most important aspect is the friendliness of my team. Where were you posted before here? Where’s been the most memorable experience so far? I lived in New Zealand for four and a half years and joined an iconic property, Huka Lodge, which is situated in the middle of the north island on the beautiful banks of the Waikato River. I started my journey there as a Restaurant Manager and within period of two and a half years became the General Manager. The most memorable experience so far again was my time in New Zealand as it was a wonderful opportunity to understand the high end market, to meet and greet celebrities, royalty, and many interesting walks of life. New Zealand and now Jakarta... That’s a huge change. What made you decide to move to the Big Durian? After reaching the position of General Manager at a very young age and working for small luxury brands, I made the choice to throw myself into the deep end again and choose Asia as a destination, as well as making the switch from small luxury to large luxury. This would give me a new opportunity for

further development and grow within the hospitality industry. Was relocating difficult? And what are you finding the hardest thing to adjust to? The relocating was not difficult because my background has taken me to many places and cultures during my childhood. The hardest thing to adjust to is living in the air conditioning and the noise of the city. Have you had a chance to sample any Indonesian foods yet? The first six weeks in Jakarta has given me an opportunity to eat Nasi Goreng, Beef Rendang and Soto Ayam. What’s the next thing on your agenda at the Mandarin? Do you have any interesting events coming up? We have several interesting events happening at Mandarin Oriental, Jakarta such as Nicolas Isnard, a Michelin Star Chef who will be cooking at Lyon. MO Bar will also be presenting Indonesian night at the end of March as well as a new Saturday Brunch, instead of Sunday Brunch. If I wanted to start a career in F & B, where would you advise to be the best place to start? All F&B careers start with a great education. Mine started in the hotel school, Ter Duinen in Belgium, which is a great institute for classical gastronomy. After my education I would recommend to take training at a Michelin star restaurant. Confession time, Mark. What weird or bizarre food combination do you love that others may not understand? Beetroot Risotto with Sweetbreads, delicious! And if you could compare your personality to that of a type of cuisine, which would you be and why? Any type of food or combination puts a smile on my face, but at the same time makes me think how something is put together. This is very much in sync with my personality I’d say! 

The Austrian Restauranteur with over 15 years of experience running restaurants in paradise. Where do you originally come from, and how did you end up here in Indonesia? I come from Austria, the homeland of Arnold Schwarzenegger. My last divorce drove me to far away lands...actually islands, so I came here to paradise over 18 years ago. What made you decide to go into the restaurant business? I was offered a very interesting looking investment which, in the end made me lose all my money in a very short time! But luckily I managed to save the restaurant setup, which made me a newborn restaurateur...the real beginning of a very steep learning curve. But I must say it was very interesting to do something completely new and very different (being actually a computer guy). Austrian cuisine has a lot of pork dishes, are there any favourites you would recommend? “Krautfleisch” which is a kind of a goulash made from pork belly and sauerkraut, especially when it’s cooked by my Austrian friend Ernesto! Any restaurants you can recommend for fellow pork lovers in Bali? Go to “Babi Guling Andayani” that’s traditional Bali fare (a roasted pig on a spit), very good, very clean and fresh. Every day, they start at 9:30 in the morning until maybe around 1 pm. It’s located on the Bypass in Denpasar Topati, about 50 meters from the crossroad to Gianyar. Or you can wait until I open a new restaurant again!

So in your experience, what is the most challenging aspect of running a restaurant in Bali? Finding the right staff! Training them, watching them 24/7 and keeping them as long as possible. What would you say are the three most important ingredients in running a successful restaurant? Care about your guests, care about your staff, and care about your business. And what was the most rewarding part of the restaurant business? When I finally started to make some money! But even more rewarding when guests told me that my dishes were as good as their Mom’s home cooked food. You’ve been described as “Bali’s most popular host”. Any plans to open a new restaurant? I am not sure about the first part, it was said by a really good friend and guest who now already passed away, but I always had incredible support from many special guests! Food and Drink related issues still interest me very much and some of my best friends are still the top Chefs from around Bali. But all the daily stresses of running a busy restaurant was getting too much for me. I was doing it for 15 years and I think that’s enough. Otherwise, you become completely nuts and a complete alcoholic...Now I am only partial! Do you have any tips for Expats looking to open a restaurant in Bali? Don’t! (Just joking!) Last question: If you had to choose only one dish to eat for the rest of your life, and nothing else, what would it be? Nasi Campur...or may be Dim Sum...or Rice Taffel. Ahhh! Very difficult, drink would be easy, just wine! 

ne day, in the middle of the summer of 1976, my step father decided we were going to have a dinner party. He fancied himself as something of a gourmet cook and he decided that he was going to impress everyone with his worldliness and his international culinary expertise by cooking a Nasi Goreng. I had no idea at the time what this exotic sounding dish was or where it came from, but I knew from previous experience that he was bound to screw it up in spectacular fashion so I watched intently as he lined up his ingredients in the kitchen and started to cook. He pranced around from pot to work surface to chopping board and after about two hours ended up with a huge frying pan full of rice and lamb and vegetables. It looked nothing like the Nasi Goreng I know now, but it looked good. I must admit I was very

disappointed that nothing had exploded in his face and nothing extremely hot had contacted him in the groin area. In fact nothing at all of any note had seemed to go wrong at all. But there was still time. The summer of ’76, for those who weren’t there or don’t remember, was the hottest summer in the UK since records began. On Saturday July 3rd that year, the day my step father chose for his dinner party, temperatures in Gloucestershire reached nearly 36 degrees, making it one of the hottest places in England. About 6pm people started to arrive and everyone gathered in the garden where the dining table and chairs had been set up. My mother greeted everyone and gave them drinks while my step father paraded around in his “Kiss Me,

I’m the Chef ” apron. The men drank ice cold beer and the ladies sipped white wine spritzers while they fanned themselves with magazines and paper plates to combat the stifling heat. I guess by 7pm the temperature had gone down to around 30 degrees, and it was at about this time that I followed my step father into the kitchen one last time to help him bring out the food. Before he picked up the huge frying pan he tasted his concoction one last time and decided, to my delight, that it wasn’t nearly spicy enough. He removed the cap from his bottle of chili sauce and gingerly dripped a few more dark red drops into the pan. Then a pause, then a few more drops, then a shrug of the shoulders and a good firm shake that sent roughly a third of the contents of the bottle into the mix. He stirred everything in vigourously with a wooden

spoon then picked up the pan and headed for the garden where our already sweating guests awaited. I inspected the sauce bottle after he had gone. “Hell’s Inferno Chili Sauce. One Million Scoville Units. 200 Times Hotter Than Jalapeno. Use with Extreme Caution.” I made my way out to the garden to watch the fun. He served everyone directly from the pan with generous portions, then raised his glass in an elaborate and overly sincere toast before encouraging everyone to “dig in”. They did. I’d never seen grown men cry before. Cold beers disappeared in an instant. Within seconds women were in the house fighting for turns at the cold water taps. People clutched their throats as their faces turned purple, looking for all the world like they were trying

to strangle themselves to death. A struggle for the ice bucket sent the cubes flying onto the grass where they dissolved in seconds as people tried to grab them and stuff them into their mouths. People actually started throwing up over the garden fence. Echoing screams could be heard as people ran off down the road. My stubborn step father sat alone in the midst of this mayhem and carried on eating like nothing had happened. His face was bright red, his veins were well up and he was drenched from head to foot in sweat, but he refused to admit the obvious. He cleared his plate and actually helped himself to more from the pan. He must have been in agony as he tried to salvage his dignity but he wasn’t giving up. He didn’t go to work the following week so I guess he paid the price. So did I. My stomach muscles ached from the laughing for days afterwards. 

new development in 8 Ball Pool known as Tangga Bilyard Jakarta, or TBJ, is attracting the attention of expatriate pool players across Jakarta with more than 50 already signed up and playing each other in a competitive “Ladder” format. We spoke recently to TBJ’s founders, Mark Sims and Keith Miller about its creation, its first month or so in operation and where they are going from here. What is "Tangga Bilyard Jakarta"? “Our first plan was in fact to call it Jakarta Pool Ladder, however its abbreviation to JPL would have caused problems as it would have the same abbreviation as Jakarta’s Premier Pool League! So, instead, we turned to its literal translation in Bahasa Indonesia, Tangga Bilyard Jakarta,” Keith tells us.

Keith played in a squash ladder in Aberdeen as far back as the 1970s when players challenged each other and moved something that looked very like old fashioned clock cards up and down on a board close to the squash courts; what he did was to see the possibility of taking the basic concept and marrying it with their knowledge of the software that could do the same thing, in a way fit for the 21st Century and compliment it all with cheap and cheerful Internet technology so that players could see the results on the website and indeed where they and others lie on the ladder. The aims of TBJ? Firstly to improve the standard of the expat game here in Jakarta through regular competition as there is no other way for players here to play regular best of five singles matches in a competitive setting. The other aim is to increase what Mark calls either the “sociability” or “cohesiveness” of the expatriate pool community. Mark and Keith have been amazed to see the competition and developing friendships between players, across bars and the main pool playing areas of Blok M, Kemang and Kuningan, and there are even examples of the TBH bringing players together from the same bar, players who had never known or played each other before! So if you’re thinking that the TBJ is for the top players, you’d be wrong. They are here to serve any expat, male or female, of any standard, keen enough to commit to 2-3 Challenge matches per month, from novices through to the best.

So what are future plans? Energies for the future will be devoted to moving in three principal directions. Firstly increasing membership, secondly to adopt database and Internet server technology to put the process into the hands of the players themselves, registering and reporting of results would all be their responsibility with the system itself validating the data, updating the Ladder in real time and making all data query-able, from the simplest question like, “What are my (or someone else’s) last three months results to graphing the ladder positions of myself and maybe three others over the last year?” The third direction is to increase the attractiveness of the TBJ by adding a couple of dimensions to it, the first being “Tangga Malam” or “Ladder Nights” which they plan to hold once a month in rotation in all the two table bars, when players could turn up and play anyone else there subject only to how far they are apart on the ladder. The second is to have quarterly knock out competition for 8 players; the first event will be in April and involve the Top 8 on the Ladder as at the end of March.
