Trini Rum Punch

1 part lime juice (freshly squeezed is best)

2 parts simple syrup (simple syrup is made from one

part water to one part sugar)

3 parts rum (I prefer white rum, but whatever you

have on hand is good, once it’s rum)

4 parts water

A few dashes of Angostura bitters

A pinch of nutmeg (do not omit!)

Something pretty as garnish (lime wedge,

pineapple slice, basil leaf or cocktail umbrella)

One of sour, two of sweet, three of strong and four of weak – an easy rhyme used to remember this rum punch recipe from the Islands of Trinidad and Tobago.

In a pitcher, combine lime juice, simple syrup, rum and water. Stir well. Add four-five generous dashes of Angostura bitters. Half full glasses with ice.

Pour punch into glasses and add a pinch of nutmeg into each glass.

Put on your favorite soca tune, garnish your drink and enjoy both merrily, but slowly… after all, it is called rum punch!
