Joanie takes a lot of her inspiration from her early years spent on Skye, collecting shells, stones, glass etc from the shore in front of her home, taking them back to make collages on the lawn. Her love of the shoreline and the sea has seen her create pieces that make comment on the decline of the fishing industry, in the Highlands, and in particular, Skye.

SHARMANKA, Gothic Kinetic, 17 Sep - 12 Oct Sharmanka (Russian for hurdy-gurdy) was founded by sculptormechanic Eduard Bersudsky and theatre director Tatyana Jakovskaya in St.Petersburg in 1989, but since relocating to Glasgow in 1996 it has gained a reputation as one of the city’s hidden treasures. And last time it toured to Inverness we found out exactly why. The carved figures and recycled scrap combine with haunting music and clever lighting to create the stuff of both dreams and nightmares. “The Imaginarium of Cookery” INGREDIENTS:

Surf and Turf The fillet can be cut into 1-2 inch thick portions, then grilled and served as-is. One can also find the fillet in stores already cut into portions and wrapped with bacon. High heat is the usual method for cooking the fillet. Either grilling, pan frying, broiling, or roasting is preferred. Bacon is often used in cooking the filet because of the low levels of fat found in the filet. Filets also have low levels of marbling, or internal fat. Bacon is wrapped around the filet and pinned closed with a wooden toothpick. This adds flavor and keeps the filet from drying out during the cooking process. Traditionally, filet mignon is seared on each side using intense heat for a short time and then transferred to a lower heat to cook the meat all the way through. Filet mignon is often served rarer than other meats. Those who prefer a more well-done steak can request a “butterflied” filet, meaning that meat is cut down the middle, and opened up to expose more of the meat to heat during the cooking process. Fillet steak is quite an expensive cut of meat so you really need to take care when cooking it. The meat we use at Chapter One has been hung for 28 days this adds extra flavour and unique taste. Fillet steak goes really well with large king prawns or lobster in this recipe we are going to combine them both..

4 x 240g fillet steaks 4 x large king prawns 100g onions chopped 100g plum tomatoes chopped 200ml white wine 200ml beef stock 1 x small loaf ciabatta bread 200g fresh grated parmesan 20g Dijon mustard 2 x cloves garlic 100ml Olive Oil 50g Butter Salt & Black Pepper

METHOD:

Brush the steaks with olive oil and season them. Heat a large non stick frying pan until you can feel the heat rising. Cook the steaks for about 2-3 minutes turning them to seal all over remove from the pan, season and allow to cool. To make sauce Using the same pan add 20ml olive oil and fry off onions, tomatoes and one chopped clove of garlic until soft add Dijon mustard and white wine then reduce for 1 minute so the alcohol can evaporate. Add beef stock and simmer for 5 minutes until the sauce thickens up. Set aside. Preparing the ciabatta bread cut into 4 half inch thick slices. Rub garlic into each slice of bread. Using the remaining olive oil drizzle over bread and shallow fry until golden and crispy. Take king prawns and slice straight down the middle through the shell. Season and set aside. On a baking tray place the fillets of beef spoon over sauce and sit the king prawns on top, placing in a pre heated oven at 200C/ gas mark 7 for 5 minutes. This should leave the beef pink and the prawns just cooked. If you like your beef cooked more simply add 2-3 minutes to the cooking time but take prawns off as they over cook. Set aside to rest for 1 minute take cruton and place in the centre of your serving plate place fillet on top and spoon sauce from the baking tray over the fillet, dust with parmesan cheese, serve with sautéed potatoes and salad. Parmesan wafer - 200g freshly grated parmesan cheese On a non stick baking sheet place a 3 inch metal ring and spoon 50g of cheese in, remove the ring. Bake in the oven at 200C for 6-8 minutes. Lift from baking sheet and place on kitchen towel to cool off.


EATING OUT Harbour Lights

Pitgaveny Quay, Lossiemouth 01343 814622 Firstly let me say what a beautiful place Lossiemouth is. Quaint yet not clichéd, expansive golden beaches backed by (increasing rare) accessible sand dunes, and some treasures of places to eat. Not least of which is the beautifully located Harbour Lights. Overlooking the marina, it is certainly a delight to eat outside on a fine day but you won’t be disappointed if the weather does not play ball as the interior is tastefully and elegantly decorated. Harbour Lights is doing that difficult job of trying to be all things to everyone coffee shop, sandwich bar and fine dining experience all in one - and I would say that they have cracked it quite comfortably. Our table of four ordered from all corners of the menu and we were not disappointed with anything - ranging from the delicious All Day Breakfast to the Aubergine Parmesan With Couscous followed by desserts from the lunchtime menu and even managing to fit in some of their award winning home baking too - which was well worth the effort. Each dish was well presented, and fresh, offering a pleasing balance of flavours. In the evenings here they change the atmosphere with tablecloths and candles to turn it into a sophisticated restaurant with a freshly prepared à la carte menu. (advisable to phone ahead for

opening times). Aside from a varied, interesting menu and a pleasant location and environment, one of the key qualities that sets Harbour Lights apart is their exceptional staff. All very well turned out, friendly and prepared to go the extra mile for customer satisfaction. (My one gripe was that I wasn’t told about the specials on offer and saw them too late, but we can put that down to an extremely busy day).

I asked my kids what they would improve about it and one said “I’d make them stop playing Kings Of Leon” - and lo and behold, the next track they played was the infinitely more acceptable Biffy Clyro. The other said “free stuff?” - and what do you know, they gave her a free lolly on the way out! I can’t promise it is a magical place where all wishes come true but I can promise you’ll have some fine food in a lovely atmosphere. n You must be “Buzzin” (no pun intended) having smashed the UK with your first single Buzzin? Followed by The Mack, both tracks feature classic samples - Nu Shooz and Mark Morrison - is this something close to your roots - what have been your influences? I am influenced by great songs that feel good. On the Mann’s World album, I wanted to create a great pop hip hop album that stayed true to who I am. We decided to keep a west coast influence as well because I that’s where I’m from. Me and JR really wanted to bring the listener back to when music was about feeling good. n Having already worked with 50 CENT, JASON DERULO and your boys SNOOP and Iyaz... have you more top collaborations or have you some solo moments on the forthcoming material?? We have a couple more features on this project that I’m excited about. T PAIN is on the album on the song Get It Girl, which is crazy. I also feature a new Artist from la named TY$ who is a on a fan favourite Reminice. But I also have a couple great solo songs. n The Highlands is alive in anticipation of your appearance at Miami Nightclub Inverness in September. I’m definitely down with working with artist from the UK. I’m good friends with DAPPY, LETHAL BIZZLE, WRETCH and CHIP. I wanna work with anybody who’s making good music, and I’m a fan of all those artists. n Music & work aside what does MANN do to relax...?? I love watching new movies. Kicking it with my friends is also something I enjoy doing alot.
