PICTISH THRONE EXHIBITION from 1 April An opportunity to see this recreation of a Pictish throne, the first to be made in over 1000 years, by master craftsman Adrian McCurdy, who took his lines from ancient stone carvings.

10TH ANNIVERSARY EXHIBITION from 20 April A special exhibition marking ten years since the opening of the Castle Gallery, with about twenty new watercolour paintings and wood engravings by GILLIAN JONES, an artist who has been associated with the gallery since before it’s opening and even helped paint it’s walls! This is Gillian’s first solo show in over a decade, and is eagerly awaited by admirers of her work, including the musician and artist Donnie Munro who will be opening the exhibition. He describes Gillian’s work as ‘poetic, dynamic and deeply engaging. They bring to the viewer a real sense of the pleasure with which the artist has engaged with the landscapes of her native Highlands and Islands. The Scottish Gaidhealtachd is emerging as an area which has a strong, tangible and distinct visual culture of which Gillian Jones is both inheritor and exciting exponent.’

WAY OF THE WARRIOR to 23 April Way of the Warrior is a visually stunning touring exhibition of movie arms and armour, used in epic historical blockbuster movies. All the movie armour and costumes are historically based, many representing highly accurate reconstructions of warrior equipment and weapons spanning the last 2500 years. The exhibition includes props from some of the biggest historical movies including Gladiator, Alexander, King Arthur, Kingdom of Heaven, The Last Samurai, Saving Private Ryan and Black Hawk Down. To complement the exhibition, some of the collections of the museum are show to give a Highland perspective to the displays. Targes, broadswords and a ‘Brown Bess’ flintlock are just some of the Highland warrior’s armoury that will be included. HIGHLAND DEAF COMMUNICATION PROJECT An exhibition of photographs and a DVD capturing the unique style of signing used by older deaf signers in the Highlands. The signers talk about their lives, memories, and growing up deaf in the Highlands. It is the first time deaf Highlanders have been included in a social history recording and is probably going to be the only record of ‘fingerspelling’ (their particular way of signing) ever made. inverness.highland.museum

ica • www.whatsonmoray.com THE TIN ROAD @ Moray Art Centre, until Sat 30 Apr An exhibition of digital prints and mixed media work exploring ideas and themes found in the stories and recollections of Scotland’s Travelling people - tinsmiths, horse dealers, hawkers, pearl fishers, and itinerant labourers who made their living on the road. It’s a way of life that’s all but disappeared, but storyteller Bob Pegg from the Black Isle is one of the people who’s kept the tales alive and enlisted long time friend and collaborator John Hodkinson to create a series of digital prints to represent the stories visually. Hodkinson says ,“I wanted to explore ways of illustrating stories using contemporary media and approaches, and avoiding consciously nostalgic, sentimental or well established visual clichés.”.

Each print has been created digitally of mixed

media constructions from found objects, which relate to individual stories. As Hodkinson says “The stories used various methods to drive them forward, personal memory and anecdote, specific landscapes, metaphor and so on, and I have used equivalent visual techniques in driving the images.” The eponymous work The Tin Road is an elegy based on a phrase of Alec Williamson’s whilst reminiscing about days on the road, as the old ways were changing, and it was “the end of the days of tin, horses, and plastic coming in.” Another, entitled “Outwitting the Devil”, as told by Alec Williamson tells of an Englishman, an Irishman and a Scotsman and their contract with the Devil. Hodkinson says of his work “In my ‘retelling’ of these stories, the viewer must look out upon the world from within the focus of a unique point of view, ‘hearing’ or telling these stories in his or her own way.” www.morayartcentre.org

He had more in common with his good friend (and for many the finest comedian of the past fifty years) Bill Hicks or his musical heroes, The Smiths, managing to wrench humour from the most melancholy situations. As team captain on Never Mind The Buzzcocks and with acting appearances in the likes of The Last Detective and even Corrie as well as his own sitcom, he was a gloomier, more surreal prototype for someone like Alan Davies, but, as the century turned he pretty much faded from view. Now he’s back, slightly portlier than before, but still just as searingly funny, with a show entitled “Ducks And Other Mistakes I’ve Made” We expect he’s about to teach the young bucks a thing or two about how comedy should be done.

JON FRATELLI @ The Loft, Forres, Sat 09 Apr After The Fratellis, frontman Jon embarked on what was for many of us an even more rewarding project in the form of the lushly torchy, Brel-esque pop of Codeine Velvet Club. Their gig at Ironworks remains one of the finest performances we’ve seen at that venue. Sadly CVC seem to have disbanded and he’s playing solo these days with songs from his impressive “Psycho Jukebox” album. With material written throughout his career it verges from 60s pop to twisted psychedelia by way of a few late night weepies, showing that he retains an eclectic creativity.

“The Imaginarium of Cookery” Chapter One Signature Bread: THIS IS WHAT I TALK ABOUT WHEN I TALK ABOUT BREAD: Over the next few months I am taking part in two ultra marathons over 53 and 55 miles. Carbohydrates are essential over long runs so I munch on this bread with banana every morning. This gives you a sustained energy release throughout the run. John McCruden, Chapter One, Forres Bread, in one form or another, has been one of the principal forms of food for man from earliest times. The trade of the baker, then, is one of the oldest crafts in the world. Loaves and rolls have been found in ancient Egyptian tombs. In the British Museum’s Egyptian galleries you can see actual loaves which were made and baked over 5,000 years ago. Also on display are grains of wheat which ripened in those ancient summers under the Pharaohs. Wheat has been found in pits where human settlements flourished 8,000 years ago. Bread, both leavened and unleavened, is mentioned in the Bible many times. The ancient Greeks and Romans knew bread for a staple food even in those day’s people argued whether white or brown bread was best. Further back, in the Stone Age, people made solid cakes from stone-crushed barley and wheat. A millstone used for grinding corn has been found, that is thought to be 7,500 years old. At the restaurant we bake fresh bread twice a day. The first bake starts early in the morning at 7am it’s the first thing we prepare when we arrive. Chapter One has a distinct flavour we use only the finest 00 flour, good quality olive oil and we only ever use fresh yeast. When the bread starts to prove the yeast molecules react with the sugar and flour and the dough begins to rise. At this point the dough is like a living organism you can feel it pulsating in your hand. It is really satisfying when baking bread from four basic ingredients you can create amazing shapes and flavours

INGREDIENTS: Bread/dough: 2kg strong flour

60g yeast

200ml olive oil

200g sugar

10g salt

250g mozzarella cheese

1 litre warm water

1 egg for glazing

2 large red onions finely chopped Tomato paste: 200g tomato puree

100g fresh garlic

25g mixed dried herbs

200g sun dried tomatoes

METHOD: Paste: Place in a food processor and blitz for 1 minute till smooth Bread: Place flour, olive oil and yeast in a mixing bowl, cream yeast with sugar and 200ml water. Make a well in the middle of the flour and pour this mixture in wait for 20 minutes until the yeast mixture starts to froth. Mix in the remaining water using your hand or dough hook on the electric mixer knead flour mixture into a firm dough. Knead this dough for a further 10 minutes to release the gluten in the flour this will give the dough elasticity. Cover the bowl with cling film and leave for 45 minutes to prove. The bread will double in size, knock the dough back down and tip on to a floured table. Roll the dough out into a large rectangular shape. Spread the tomato mixture thinly over the surface of the dough, sprinkle the mozzarella cheese and red onion over the tomato mixture. Roll the dough so it resembles a swiss roll. Cut into approx 5cm slices, place on a baking sheet with greaseproof paper. Brush with egg wash. Sit on top of the hob or warm place until the bread doubles in size. Place in preheated oven at 180C for 20-25 minutes.

The Review: THE WATERSIDE 19 NESS BANK INVERNESS 01463 233065 It’s Thursday night bellringing at the Cathedral and the participants appear to be exploring some sort of free jazz experimental interpretation of campanology. Either that or there’s been a terrible accident and they’re trying to send out a clatterily discordant cry for help regarding frayed ropes and someone tangled in the clanger (technical term). Whatever, it’s quite a noise cascading across the city night and emanating barely fifty yards from the Waterside. It says quite something for their glazing that all is peaceful in the hotel restaurant’s nice conservatory with a lovely view over the river of said cathedral and the

welcoming lights of Eden Court. This stretch is a veritable hive of culinary activity, with - in addition to The Waterside - Nico’s Brasserie, Abstract and Contrast all offering choices for diners with money to spend and, even though it’s still early evening, out of season, they all seem to have a fair few customers. We notice on arriving that The Waterside currently offer no set menu (there is an option earlier in the form of the so called “High Tea” which runs from 4 to 6, with a basic choice of steak pie, macaroni cheese and the like for a tenner), so we set about taking our pick from the a la carte menu which certainly seems to adhere to Head Chef Lara McLeod’s intent to “source the best local ingredients and freshly prepare the dishes with care and imagination.” There are plenty of Scottish ingredients in evidence

on a series of dishes that, by their descriptions, give a homely twist to classical elegance. As a hotel restaurant rather than a standalone enterprise, many of the customers are perhaps also going to be residents, popping down from their rooms rather than going out to eat, so it’s a tricky balance to appeal to both people wanting something convenient and visitors on a night out. And, by and large, it’s something The Waterside pulls off. From a list of half a dozen options, I started with Isle Of Harris Mussels in White Wine, Onion, Garlic and Cream, something that’s also available as a main course. It comes served slightly incongruously in a rather old fashioned soup bowl that you sense might also serve as a receptacle for cornflakes at breakfast. Presentation 21 apart, they were nicely


cooked, moist with a perfectly seasoned sauce and showing the quality of perhaps the best mussels in the world to full effect. For me, the rather ordinary sliced bread provided to mop up the creamy juices reprsented a minor missed opportunity to further enhance the experience of the dish. My companion had Tempura King Prawns served with a “wasabe and soya” ( a double whammy of misspellings of wasabi and soy) oriental salad and pickled ginger. Again the quality of the seafood shone through and the batter coating the carefully butterflied prawns had an admirable lightness with a definite sense of Japanese authenticity. A far cry from the soggy cloaking that a lesser touch in the kitchen might have produced. The presence of beansprouts in the accompanying salad presumably accounted for the “oriental” part of the description and it was pronounced a definite winner. For mains there were lots of tempting choices and a spiced, braised lamb shank with chorizo and three bean casserole just lost out to my eventual selection, Pan Seared Tarradale Venison Haunch. Local ingredients again and a top quality piece of meat. I’d asked for it medium rare, but it came rather more towards the “well done” end of the spectrum. Fortunately it was till tender and not too gamey. Sometimes venison can end up tasting more like liver, but this was more delicately flavoursome, accompanied by a well made redcurrant sauce and a neat

take on the carrots, neeps and tatties trinity in the form of a “boulangere”, layered slices of the vegetables cooked in stock that not only looked good, but tasted great too. My companion went for sea bass, leading us into what Wikipedia later assured us is actually a global “ferocious” debate. Should it just be called bass or is there a river bass none of us have ever heard of? Apparently there is. The

Big Mouth or Black Bass, though native to USA is also found in South West France, so there is some merit in specifying sea bass after all. You can all sleep sound in your beds now and hopefully the ferocious debate has come to a peaceful conclusion without any governments being overthrown. And so to the dish itself, Pan Seared Sea Bass Fillets. Two fillets were perched flamboyantly on top of sautéed potatoes and curly kale, with brown shrimps and caper nutbrown butter along with what looked like a stripped plume from a dandy highwayman’s hat. Not a shy, retiring dish by any means. Once more it was a well cooked piece of fish and it’s always good to see a kitchen championing brown shrimps, the far tastier, if less glamorous, relative of the too often cotton-wooly pink version. It went down well,

though there were reservations about the butter, which rather overwhelmed everything else. My pudding was Soft Baked Lemon Meringue Pie – accompanied by a “lime anglaise”, (or citrusy custard), and a showering of chocolate powder. Soft baking a meringue is a risk because you can end up with something that looks not unlike shaving foam. Uncomfortably, I found this ‘foam’ had gritty granules of uncooked sugar in it. Underneath it all there was a disc of hard pastry and an eye-poppingly tart layer of lemon curd that even the strangely successful lime custard couldn’t have tamed even if it had rounded up a posse and come to the table heavily armed. Custard with attitude again put in an appearance in my companion’s dish, this time flavoured with calvados as an accompaniment to a nicely rustic looking (and tasting) Bramley Apple and Raspberry Crumble. There was also something billed as an “almond streusel” involved and the whole thing tasted pretty good. And at a mere £3.95 was remarkably good value. A nice, if not exactly life-changing meal, but a place that exhibits some accomplished cooking showcasing the best produce the Highlands has to offer in a fabluous setting. I would think offering a set price dinner might widen the appeal still further. Outside the bell-ringers toll on, the jazzbo beatnik spirit taking them goodness knows where. Time to go.
