RECIPES FOR INTERNATIONAL WEEK US Southern Biscuits and Gravy

Gravy

Biscuits

4 servings

Ingredients • 1 tbsp bacon fat • 1 tbsp flour • 142 ml whole milk • 142 ml heavy cream • 0.25 tsp salt • 0.25 tsp adobo seasoning • 0.5 tsp black pepper • 225 g bratwurst diced

Ingredients • 113 g butter (frozen) • 352 g flour • 4.125 tsp baking powder • 0.688 tsp salt • 284 ml cold piimä • 2 tbsp butter, melted

Adapted from a recipe from howtofeedaloon. com

Instructions 1. Add the bacon fat to a large skillet over medium-high heat 2. Once hot, add the flour and stir until incorporated. (Should resemble wet sand). Cook, stirring frequently, for 2 minutes. 3. Carefully add the milk and the cream and stir with a spoon until starting to thicken, about 4 to 6 minutes. 4. Add the salt, seasoning and pepper and then the cooked sausage. 5. Taste and add more salt, if desired. 6. Pour the sausage over the warm biscuits and serve at once.

Instructions 1. Pre-heat oven to 243°C. Take butter out of freezer and let thaw about 5 minutes. 2. Using the large holes of a box grater, grate the butter. 3. Add the butter to the flour, baking powder, and salt and toss together. Place back in freezer for another 15 minutes. 4. Pour the buttermilk into the flour/butter mixture and stir until just incorporated. Batter will be somewhat sticky. 5. Turn dough out onto lightly flour cool surface and add a little more flour, if too wet. 6. Using a floured rolling pin, roll the dough into a rectangle. Fold over one side and roll out again. Repeat two more times. 7. The dough should be about 1.27 cm thick. Using a biscuit cutter, cut out the biscuits and place in a cake pan snuggly against each other. 8. Bake for 15 to 20 minutes until lightly golden on top. Remove from oven and brush melted butter over the top.

Swiss recipe for International week: Fondue Instructions 1. Rub the inside of the fondue pot with the halves of garlic. 2. Add the wine and lemon juice to the pot and heat until it’s boiled. Lower the heat and gradually stir in the cheeses until they’re melted, stirring all the time. 3. If using kirsch, blend with the cornflour, otherwise use water. Add to the cheese mixture and cook gently until the mixture is smooth - don't let it boil or it will get burnt. 4. Using the fondue prongs, dip the bread cubes into the cheese and serve.

Ingredients • 1 clove garlic • halved 290ml/½ pint white wine 1 tsp lemon juice 225g/8oz • emmental cheese grated 225g/8oz gruyere cheese grated 1 tsp • cornflour 1 tbsp • kirsch(optional) • cubed bread pieces, for dipping


Italian recipe for International week: Tiramisu

Ingredients • 100g of sugar • 300 g of cookies • 300 g of coffee and cocoa • 4 eggs powder. • 500g of mascarpone Instructions 1. In the beginning we put the eggs in a bowl, but dividing the yolk from the white part and after that start mixing until it becomes like a kind of foam. 2. While the mixer is moving you can keep adding the mascarpone slowly. 3. After that start adding the sugar slowly as well. The outcome must be thick when it is done. 4. When all of this is done try to make the cream on top well spread. 5. Add on top the cookies and the cold coffee. To the coffee you might add a spoon of sugar. 6. ON top of the cookies add a layer of mascarpone cream. 7. So you add one more level and Voila put it in the fridge for a couple of hours!

Russian recipe for International week: Russian salad Ingredients • 4 potatoes • 2 carrots • 1 onion • boiled sausage - 300g • 4 eggs

canned green peas - 100g 3 salted or pickled cucumbers mayonnaise - 300g salt, pepper, fresh herbs (parsley, dill) – to taste

Instructions 1. Potatoes and carrots, not peeled, wash thoroughly, put in a pot with cold salted water. Put eggs as well. 2. Bring it all to boil. 3. Take out eggs in 8-10 minutes (they should be hard-boiled). 4. Continue to cook until vegetables are soft (but not over-cooked). 5. Cool and clean the cooked vegetables and eggs. 6. Peel potatoes and carrots and dice them. Peel and chop the eggs. Also dice sausage and cucumber. Peel and finely chop the onion. 7. Put all the ingredients in a bowl, add salt, pepper, mayonnaise and stir. 8. Sprinkle with fresh herbs.

Belgian recipe for International week: Waffles

Ingredients • 500 g butter • 1 kg of flour • 1/2 litre of milk • 6 eggs • 20 gr salt • 35 g yeast (not powdered) • 70 gr of Fine sugar in block • 700 gr of Pearl Sugar Instructions Preparation: 1. In a bowl put the flour. 2. In this hole you will put the eggs, and the yeast . 3. Then gradually you put the milk in and mix the centre of the bowl. 4. When it is already well mixed you add the sugar and salt. Under no circumstances can salt touch the yeast. 5. When everything is homogeneous you put the butter. 6. Here you have to knead with your fingers when you put the butter and that you have to do for a good 5 minutes ( and your dough will stick but less and less that the butter will be incorporated). 7. Let your dough rest in the bowl. Make a ball and put a towel on it for a good half an hour in a warm place. 8. Then you take it back you incorporate the pearled sugar with it. And you just mix it so that the sugar goes everywhere and not too long otherwise you'll damage the dough. 9. Cover for at least 1h30. 10. When it's done you put them in your waffle cooker 3-5 minutes.

IB&M Network Discussions Days Kouvola Campus 12-13.11.2018 At the start of the combined Global Entrepreneurship Week and International Week, there were meetings with partners of the International Business & Management university partner network (IB&M), hosted by Marja-Liisa Neuvonen-Rauhala of Xamk. In case you haven’t heard of the IB&M network, it consists, at present, of our education partners from Croatia (University of Rijeka), France (University Claude Bernard Lyon 1), Germany (Jade Hochschule), and Netherlands (NHL Stenden University of Applied Sciences). The network was set up many years ago, with the intention of increasing exchange opportunities for Business students of all the partners, through matching curriculums and Ersamus mobility. In addition to this, there has been the added-value of intensive study weeks and short projects that students can carry out at the partner institutions without having to study abroad for 1-2 semesters. During the meetings it was discussed how the cooperation between the various partners has been performing and how exchange practices have worked – both for students and lecturers. In addition to this, there have been discussions related to expanding the network to other partners that would give extra benefit to the current network, and in particular, our students. The discussions continued into the evenings with dinner at Hotel Vaakuuna in Kouvola on Monday, and a wonderful visit to Tykkimäki sauna and snacks at Käyrälampi lake on Tuesday evening, with several German students from Jade joining in. Even though it was only +4C, most participants at least tried a dip in the lake between sauna sessions and all had a great time. Currently, there are various short-term workshop projects happening at each university, each year that students of each partner can participate. These workshops range from cultural visits to company analysis and presentations. Many students have reported the benefits of participation is such intensive weeks – for studies and enjoyment. It is hoped that over the coming months, Insider will bring you various articles and reports from the IB&M network partners and their activities, in particular, we will be keeping you informed of these special intensive weeks and the projects that you can participate in. FASHION SHOW

The fashion show was held at Paja on the 14th of November 2019. It was an event we all were waiting for. to see amazing designs. These amazing designs was made by Russian and Finnish designers. A lot of work has been put through just to showcase their wonderful designs to our guests. 10:30am: In the morning, models for the fashion show where very excited to have their hair and makeup done. They departed from the Paja Gallery to KSAO, Utinkatu 44, 45200 Kouvola. 15:00pm: The models were transported back to Xamk Kouvola Campus at Paja, where they had a free dinner. 15:30pm: Catwalk and rehearsals followed. Make-up correction and hair fixing were made before the proper shows starts. 17:30pm: Models stayed backstage until the show starts. Lights off,

18:00pm: The Main event starts The whole show begins. Lights off, camera on, music waving through our hears as the models began to catwalk through the runway. More than 30 designs were exposed. It was amazing seeing the creativity of our Xamk designers. Guessed were astonished at the creativity Xamk designers had. There was an online stream view on the event on Instagram. Over 150 people official hashtag for the fashion show is #intro2018. Models and guests were encouraged to share their photos on Instagram and Facebook. The official photos will be shared on Xamk Instagram account (@xamkfi) and all other social media platforms.

LECTURES WITH KIM MAYA SUTTON FROM GERMANY

Kim Maya Sutton with her students from Germany Being critical in thinking is one of the most essential elements guiding you to successes. However, it takes a ton of hours and efforts to master it. The method is simple, but it requires consistency as you need to ask yourself What/Why/How/etc constantly, from small things in life to bigger scaled issues. Sisu, if that is what you are missing, or you need it, go for it – practice makes perfect. Participants were told to stand from South to North, West to East based on the countries where they are from. Then, they formed groups with different nationalities, as people react to a particular issue culturally-different. Groups on the left side discussed about what characteristics make the most horrible boss, while the other figured out how a person could the best-boss-ever. This method is called ‘thinking headstand’. Whenever you are stuck in a problem, why don’t you think reversely? It could be helpful and better since you can see a whole picture. After 25-30 minutes discussing, we shared our results and contributed more ideas. We were discussing about expats - employees who are sent to work abroad in a period of time – and the role of HR manager in helping them to get familiar easily to new countries and be ready to handle tasks. There were four (04) questions asked: What will expats ask/do researches for/prepare/bring? In the end, we collected a huge number of bullet points for a person from preparation to final step. Expats can ask anything from their companies, as long as it is reasonable and affordable. Our lecturer Kim Maya once requested a chocolate fountain when she was sent abroad, and she got it. In all cases, payment, duration, working schedule and dress code are common topics. Before departure, they should search for basic information about that country such as geography, weather, currency, language as well as culture knowledge and norms. Accommodations and working visa cannot be missed. Travel and working documents are the most important possession along with daily devices and clothes. Don’t forget to bring some gifts from your home country as it can create a good first impression. From the view of HR manager, he/ she can provide expats with information in advance. In some companies, carrying visas, accommodations and transportation are parts of HR department’s tasks. Personally, to handle culture shock and differences in a new country, culture pre-knowledge and carefulness are worth preparing. Text and Photo: Long Nguyen

INTERVIEW WITH TOMISLAV GALOVIĆ TOMISLAV GALOVIĆ Assistant Professor, Phd Faculty of Economics and Business Rijeka

How was your visit to Kouvola so far? This is my second time in Kouvola, so I already know some parts of the city. It’s good to be back in Kouvola. I have seen that the visual identity of this institution has been changed. I came here for an IBNM meeting and to promote one project of IBNM exchange and international business workshops. I can say a few words about this project. I work in Faculty of Economics and Business Rijeka. We offer graduate, undergraduate and post-graduate degrees which are taught completely in English. I am the project leader of every international business workshops. Next year will be the 4th. What is this about? It is a 5-day life learning program which includes students from various foreign countries, mostly from the EU. This program has several dimensions: educational, academic, and professional. The professional dimension includes lecturers from smaller companies so it’s not only the academic thing going on. We have calibrated our program towards the preferences of students. We know that students like to sleep a lot. We initiate our program at 10 o’ clock each day in the morning and we finish at 2 or 3 o’ clock so that students can have more time for their leisure activities in the afternoon. You can take time to explore the city and the beaches. You have time to learn about business negotiations, international negotiations, business communication, and business psychology but also you can go to the beach. We have nice beaches and weather in Croatia. It is one of the most famous destinations in the EU. Have you seen Game of Thrones? Maybe a few episodes. It was filmed in Dbrovnik besides other locations. I’ve seen in your trailer that there are very clear waters and the walking streets seem very pleasant. We were a destination for Austro-Hungarian kings in the past, so you can see their architecture as well in an area

which is a 20-minute bus ride from my city. The area is called Opatija. But back to the program: Students listen to the lectures and are also involved in the discussion. One month before the start of this project students get a pre-assignment. It is often related to identify business and cultural customs of selected countries. So, they come prepared, they listen to the lectures from me and from representatives of the private sector, and all this knowledge is incorporated in their workshops. The students practice negotiating as a representative from a firm and negotiate with another company or other students. This year I would like to organize some company visits. This would be added value for the students. When they finish the program, they receive a 6 ECTS stamped diploma and an IBNM (Erasmus) network diploma. Just to spark some interest for our readers: when dealing with negotiations would you say appearance is important? This could be your advantage but if your attitude is not so good, I think people do not focus on your appearance. Be aware of your verbal and non-verbal communication, they make a difference. Controlling your emotions: be aware of your good emotions and bad emotions. I think these psychological aspects are more essential. Know your goals, strategy and mission and know how to achieve those. You must expect the unexpected. If everything works as planned, it just becomes boring. Where can people sign up? MEET THE BELOVED FOREIGN LECTURERS!

The traditional International Week at XAMK cannot be complete without the intriguing session with the foreign lecturers from different countries. This year, we had the honor to welcome three amicable people who traveled all the way from France and Croatia to attend our International Week. Lecturers Laurence Collaud and Tiphaine Rolland from IUT Lyon 1 greeted us with the friendliest introduction. They shared with us their experience in Kouvola thus far, on the weather and the overall atmosphere of the town. It was then followed by a thorough but not less interesting PowerPoint on Claude Bernard University Lyon 1 as well as the city of Lyon itself. Information about the population, weather, things to do in the city and the campus location, facilities and events of the university were excellently elaborated. As I am aware, Claude Bernard University Lyon 1 and XAMK have long been close-knit partners since both universities receive lots of exchange students each year. I was lucky to snap this lovely picture of them! Right after that, we welcomed Assistant Professor Tomislav Galovic from EFRI International Business Workshops Rijeka, University of Rijeka, Croatia. He gave us a very fascinating presentation about the city of Rijeka – one of the largest cities in Croatia and the university, especially the EFRI International Business Workshops. We got to know about the program through a short clip compilation of former participants

all around Europe as well as a well-made pitch from Professor Galovic as well. Unlike University of Lyon 1, there has not been many students from XAMK who went on exchange to Croatia and vice-versa so I think this is a great opportunity to know more about the school since Rijeka is a beautiful city with a very hectic and flamboyant vibe. The lecturers from these two universities have given me and all the students who attended the class an overview of their home schools. This is such a distinctive factor of XAMK’s International Week as it helps to create a friendly relationship between the two universities. ROWLING FANTASY, ACTION / BUDGET: $200 MILLION The 2nd chapter of the Harry Potter prologue has finally hit the theaters. Oh, have we waited for it. The story about the boy who lived is forever in our hearts, and no matter where we are from, what our religion is or what we eat for breakfast – the amazing world that was so masterfully built by J.K. Rowling will stay and outlive all of us. When Fantastic Beasts was announced, millions of Harry Potter fans were extremely excited, and the first part delivered a new look on the series, a good one. The 2nd one… meh. David Yates, the director of the last four Harry Potter movies and the first Fantastic Beasts installment, probably failed to understand what was going on here. And really, all those story lines are all over the place. Dozens of sudden relatives, when we find out that each hero is somehow connected to the other by blood, add up to this feeling of “what is going on here?”. This is the biggest downfall of the film. Even if you pay close attention, it will be difficult for you to understand everything, because there is just so much going on. You can also add to this the fact that they have completely negated the emotional ending of the first film by just one sentence said by Jacob… However, The Crimes of Grindelwald is not awful. The movie is beautiful, it really is. Special effects are breath-taking. We saw a little bit of Jude Law as Albus Dumbledore and even more of Johnny Depp as Gellert Grindelwald. While the former wasn’t really a scene stealer, the latter clearly turned out to be one. Johnny Depp has not been amazing in the past years but here, he reminded us that he is still considered an amazing actor for a reason. Overall, everything that’s said above plus the fact that this movie has raised so many questions and failed to answer any (so we all go and pay to see the third movie), therefore felt like a prequel inside the prequel, left a bad taste in the mouth. Rowling was heavily involved in the creation process and wrote the script, and knowing how proficient J.K. is in story-telling, one could expect more from The Crimes of Grindelwald. And yes, the movie title is heavily misleading!
