my frequent visits to the island, one of the ever-present conversation topics is what new eateries have sprung up and next, which are worth a try? The island’s gourmets also ruminate over our burgeoning reputation as a culinary destination. But, is this reality or myth?

Are chefs truly pushing the boundaries and creating offerings that set the island apart?

To address this quandary, I have arranged to meet two chefs who helm recently launched innovative restaurants. I plan to delve a little into how they conceptualise their signature dishes to maintain their leading-edge positions on the island.

I begin with a welcome morning coffee and croissant with Mark Jones, Executive Chef of the iconic, The Nai Harn.

Mark joined the hotel in 2016 and has

been a pioneer in evolving the hotel’s restaurants which include the beachfront, Rocksalt, Japanese Hansha, and the less publicised, but equally standout, Cosmo – which for an all-day dining restaurant offers us an insight into the painstaking research Mark undertakes in all his offerings; from the now legendary chicken sausage at breakfast, through to evening and the stellar Rangers Valley Black Market Wagyu Sirloin, marble score 6.

PRIME at Rock Salt, The Nai Harn

This penchant for great beef and chargrilling was one of the shared sparks which led to the recently launched Prime, a labour of love undertaken by both Mark and his effervescent General Manager, Frank Grassman. It is their flagship restaurant and I am keen to hear Mark’s philosophy behind his thoughtful and clever menu. “We began, wanting to create an experience restaurant, affording spectacular oceanfront views, as all our outlets do. We set our hearts on an exclusive, 14-seat eatery with an open kitchen containing a custom designed chargrill, where we would cook in front of the diner a variety of premium fish and meats.” Mark is exceptionally pleased with the end result and one of his personal favourites, his cold smoked native Hebridean salmon. “In my opinion it is unequalled on the island; it grows in Continued on next page...

cold and stormy waters which results in a robust, lean and firm flesh; this breed’s ancestral blood line stretches back a millenia. Our preparation is incredibly labour intensive and accompaniments, such as fresh root wasabi mayonnaise, truly accentuate. When I recommend it to diners, it never fails to impress!” Of course, at the heart of Prime is quality beef. But Mark surprises me by pointing out that, “In addition to premium steaks, we also love to showcase secondary cuts such as lesser seen flank. Our Stanbroke Diamantina, from a family owned farm, is grain fed for 400 days, resulting in an uber tender and flavourful cut, perfectly matched with duck fat cooked potatoes and chimichurri sauce.”

Mark adds, “Another uncommon cut is my short rib, pasture raised and aged for 120 days. Firstly, I marinate it in salt, brown sugar, smoked Spanish paprika, red capsicum flakes, star anise and a secret ingredient for four days and then it is cooked in sous vide for 48 hours at 61 degrees Celsius. It is then glazed with signature BBQ sauce and baked in our wood-fired oven, resulting in a crunchy caramelised bark on the outside and meat so tender it falls off the bone.”

In the high season, for the true meat aficionados, he also adds a unique 1kg+ 45-day dry-aged côte de boeuf which has been grain fed for 270 days. Whilst assigned a relatively low marble score of 3, Mark informs me that, “even Chefs tend to rate it around 6 or even 7!”

I look forward to ordering on my next visit, however for now must head north to The Pavilions, where I have a meeting with Chef Rey Arboleda, yet another passionate kitchen wizard! Arriving, I am escorted into an intimate salon – the venue for Rey’s recently launched

Cote de Boeuf, PRIME at Rock Salt

Picasso Dessert Table, about which I will later solicit details. Rey joined The Pavilions as Culinary Director to implement an innovative new concept for the hotel’s signature restaurant, The Plantation Club, in addition to raising culinary standards across the resort.

I have read a great deal about Rey’s approach to modern Thai cooking but he informs me that contrary to certain reviews, “I am not reinventing Thai

classics, but capturing the essence of the original recipes whilst elevating with modern techniques. A dish that exemplifies what I am truly about is my Pla Goong Mapraow Krut – chargrilled and smoked mantis prawns with freshly grated coconut. Using live local mantis prawns with their delicate flesh adds finesse and lifts the dish to an ethereal level.” Rey continues, “Or my Singhol Gai Curry, inspired by King Rama II’s travels to Sri Lanka, in which I have

chosen to use a slow roasted free-range chicken. I sous vide the breast, then roast it off and this perfectly preserves the flavours and succulence of this organically fed Klong Phai Farm chicken.”

Rey, like Mark, loves to seek out secondary cuts such as pig cheek for his Kaeng Hang Ley – a Chiang Mai version with slow cooked Hua Hin Black Pork Cheek. Sourcing takes up a huge amount of Rey’s time to maintain quality and consistency, whilst pioneering local products such as scallops, frog legs and even goat.

This same attention to detail is extended to desserts, which include technical components such as nitro balloons, burnt mango, passion fruit curd and salted coconut gel. The pinnacle however is the Picasso Dessert Table rekindling memories of childhood flavours; chocolate cake, chilli, black sesame and peanut candy artfully assembled on tempered glass. Definitely worth advance booking!

(Thin rice noodles with poached crab meat in homemade yellow curry) Ingredients for yellow curry paste (serves 1) 7 large dried red chili | 10 dried bird’s eye chili | 1 cilantro root | 1½ tbsp thinly sliced lemongrass | 1½ tbsp thinly sliced galangal | 4 shallots, chopped | 5 cloves garlic | 1½ tsp thinly sliced kaffir lime zest | ½ tsp salt | ¼ tsp ground white pepper | 1½ tbsp roasted ground black pepper | 1 tsp roasted coriander seeds | ½ teaspoon shrimp paste | 1 ¼ inch piece fresh turmeric, peeled and chopped Other ingredients 250g crabmeat | 400g dried vermicelli | 2 tbsp vegetable oil | 2 cups coconut milk | 1½ tsp palm sugar | 1½ tsp fish sauce | 2 kaffir lime leaves | 100g betel leaves, thinly sliced | 10 whole betel leaves | red finger chili, finely sliced lengthwise Method Step 1: Make the curry paste, soak the dried chili in warm water for 15 minutes then drain and chop. Pound the chili and the remaining curry paste ingredients in a mortar with a pestle until smooth.

Step 2: Boil the vermicelli at medium heat for 1-2 minutes.

Drain and rinse under cold water. Set aside.

Step 3: Heat the oil in a pan and add 3 tbsp of the curry paste then cook for 2 minutes. Add coconut milk seasoned with the fish sauce, sugar and lime leaves, then add the sliced betel leaves and cook for 2 minutes. Add the crabmeat and gently stir for 1 minute.

Step 4: Ladle the curry into a serving bowl and place vermicelli roll on a betel leaf. Top with coconut milk cream and kaffir lime leaves thinly sliced.

Samet Nangshe Viewpoint Showcasing breathtaking views across Phang Nga Bay, Samet Nangshe is a local viewpoint that has gone from being an unknown hilltop to one of the most popular tourist attractions, centred in the tiny village of Tha Yu, tambon Khlong Kien, in Phang Nga province.

‘Discovered’ by a Thai photographer, Samet Nangshe has risen in popularity on social media and is currently one of the most visited locations outside of Phuket. The views from atop Samet Nanghse are outstanding, while the location is filled with unique photo opportunities.

Samet Nangshe consists of two viewpoints – a lower viewpoint and a higher one. Each offers spectacular views of Phang Nga Bay and the towering limestone karsts that jut out from the water. Although the viewpoint is stunning at most times of the day, it’s particularly beautiful at sunrise.

There is an entry fee to ascend the hill to the top of the viewpoint. Parking is available, and the family of the land owner sells some local snacks and refreshments at the bottom of the pathway.

Koh Panyi Koh Panyi is a charming fishing village consisting of stilt houses over the waters of the bay. The village is fully functional and is even home to a school as well as a charming mosque.

When visiting Koh Panyi, it’s highly recommended to break free from the crowds and wander the back areas of the village. Here, you’ll catch a glimpse into local life and how the residents of Koh Panyi spend their day-to-day lives. Wandering the back areas is a real eye opener. You’ll be witness to simple village life, such laundry being hung out to dry, young children riding bicycles across the wooden plank bridges, and the elderly sitting around having a chat while drinking Thai iced tea.

It’s important to take note of the signs hanging overhead as the back areas of the village turn into an intricate maze. The well-placed signs, written in English, serve to help visitors find their way back to the pier for departure.

The local residents of Koh Panyi are Muslim, and it’s estimated that about 360 families live in the settlement. The history of Koh Panyi is an interesting one. The stilt house village was actually built by Indonesia fishermen, and then settled by two seafaring Muslim families from Java. Today’s local residents of Koh Panyi are the descendants of those two families.

While most of the local residents of Koh Panyi earn a living from the fishing trade, the island itself thrives on tourism. Throughout the day, Koh Panyi hums with the sound of boats coming to and from the island. The boats drop tourists off to dine on fresh seafood at the restaurants closest to the main pier, while locals board long-tail boats and go about their daily lives.

It’s an interesting scene that further enhances the charm of Koh Panyi. Do make it a point to stop here while exploring Phang Nga Bay as the village is really interesting and gives an authentic taste of life in Thailand.

James Bond Island Perhaps the most famous island in Phang Nga Bay, James Bond Island is effectively two towering limestone karsts known as Koh Khao Ping Ghan and Koh Tapu in Thai. James Bond Island gained its name, and subsequent popularity, after being featured in the James Bond movie The Man with the Golden Gun in the early 1970s. James Bond Island is one of the must-see destinations for those visiting southern Thailand.

The island itself is a nature lovers’ dream, covered in lush, verdant vegetation; it’s interesting to note that succulents and cactus varieties actually grow out of the limestone.

A steep pathway has been cleared through the centre of the island, making exploration easier. The pathway also gives way to some spectacular peekaboo views of Phang Nga Bay. There’s a small summit halfway up, which is wonderful for photographs. This area tends to get crowded with visitors, so it’s best to practice patience if you want to capture a decent image.

Although James Bond Island is quite small, there are lots of things to see and explore. The limestone karsts are filled with nooks and crannies to crawl into and

take photographs from. However, do exercise caution and be careful as the morning mist can cause the limestone karsts to become very slippery.

Local vendors have set up selling the usual fare on the island’s east coast, where people admire the unusual shape of Koh Tapu (‘Nail Island’). There are very basic restroom facilities and the vendors do sell water and other refreshments. Arriving early to mid-morning at James Bond Island is best, as it tends to become quite crowded and overrun with day-trippers in the afternoon.

A popular activity on the way to James Bond Island is stopping to sea kayak through the various limestone karsts and caves that dot Phang Nga Bay. While this is generally included in any package tour to James Bond Island, it’s also possible to sea kayak on a solo tour of the bay. Simply speak with the long-tail boat driver, and he’ll be able to help arrange this activity.

Getting There

Sarasin Bridge connects the Phang Nga mainland with Phuket Island

A wide variety of Phuket tour operators have daily tours to Phang Nga Bay. Most provide transfer from hotel and guesthouse accommodation, while boats leave from Bang Rong Pier, near Ao Po. However, if you’re looking for more of a slow-moving local adventure, it’s highly recommended to make your own way to Phang Nga Bay. Drive yourself, stop off on the way to buy fresh fruit from a roadside stall, and once you’re in Phang Nga, negotiate a day rate with a long-tail boat driver who’ll be happy to ferry you to both James Bond Island and Koh Panyi. On the way back to Phuket in the late afternoon, stop off at Samet Nangshe for the viewpoint’s sensational views.

urchasing real estate in Thailand is not very different to other countries in the world, in that you will normally employ the services of a legal professional to assist you throughout the buying process.

Even if using a lawyer is not a statutory requirement, most people would agree that it is the right course of action, especially if you are buying in a foreign country.

A lawyer may not be able to check every minute detail of a given property, but they know how to check what’s important to tip the scales in your favour. Experienced law firms spot anything untoward, and will warn you against potential problems; whereas, inexperienced lawyers could potentially overlook the same danger signs, resulting in disaster for you further down the line.

Surprisingly, many people purchasing Phuket real estate decide to forego the use of a lawyer. Perhaps they feel that they are (or a friend is) competent enough to get through everything without expert help. Unsurprisingly, many of these people discover too late the mistakes they have made.

This is why due diligence is invaluable. A competent lawyer will check the title deed to ensure that the property ownership is valid, and that no loans exists against the property in question (this is especially important if the property is being purchased pre-construction).

However, this is now being challenged through issues such as trade tariff ‘wars’, states seeking control over data and technology by imposing restrictions on 5G technology market participants, wealth inequality, climate change dischord and supply chain realignment due to technological advancement.

Avoiding a race to the bottom If we apply a basic ecosystem theory to business, then Thailand is a mini-system inextricably linked to the wider global system. Therefore, the adoption of business standards must take into account both international and Thai standards to produce optimum results. In order to avoid an aggregate result of lowest common denominator standards, your operation standards and objectives must be analysed in the context of both international law and domestic law. If you are to understand your legal framework of operations correctly, then it would be wise to obtain legal advice on both.

Similarly, when conducting business, which involves international investment, international standards can be brought into a framework with good results, provided there is no conflict with Thai law. To establish this, an understanding of both Thai laws, other laws and international law is required.

For example, if a successful hotel and branded residence development company wishes to expand its operations into Thailand, it cannot do so without adapting its model and standards to conform. Whilst this seems obvious in its simplicity, the nuances of local laws may require a change in processes and standards which will affect budgeting and standards. Any contractual or corporate arrangement with a hotel brand would need to take these differences into account to be successful.

Corporate governance Corporate governance for investment situations also requires smart analysis and incorporation of standards. Businesspeople accustomed to a certain style of corporate governance may not be prepared for domestic differences in smallmedium enterprises in Thailand. Therefore, when setting up or acquiring an interest in a Thai company, and considering how that company will be managed, how decisions will be made, an alignment between your international corporate governance standards and expectations, and those domestically will be necessary.

Put the odds in your favour and manage your expectations for

a more fun day on the water

here are many factors to consider when it comes to planning any fishing trip. Location, target species available, facilities, weather, price and equipment to use just to name a few. Perhaps the most important thing in my opinion is to have a detailed plan and manage one’s expectations.

I try to plan ahead and be realistic every time I go fishing.

If you set lower and more realistic goals, then you put less pressure on yourself. Ultimately you will be relaxed and enjoy your day more as well as not make silly mistakes. I know this might sound like common sense, but you would be surprised by the number of people I meet who set themselves up for disappointment before they even wet a line – and then, when they finally get a golden opportunity, make a simple mistake with a lost prize as the result.

There are many resources available in this digital age so make sure to do your homework before you go fishing. All reliable fishing parks, charter skippers, fishing guides etc should have their own website and are probably on Trip Advisor, Google or Facebook. To confirm that the facts being shared are realistic, make sure to look for recent catch photos and reviews or even live videos. If fish photos are black and white, or if the weathered captain is a teenager in the fish pics, this could definitely be a bad sign.

I suggest that keeping a well-presented quality and fresh bait in the water for the maximum amount of time, or even increasing the number of rods/lines, will obviously increase your chances. It should be noted to always comply with local laws regarding number of lines allowed and all other conservation or fishery rules.

If you are not using your own equipment, don’t forget to check your equipment, lines and knots as you are ultimately responsible for your own success. I see a lot of anglers making the mistake of using line or knots which have become frayed during the day and don’t think to re-tie. This will always end in a lost fish story .

Control the factors you can and then put the odds in your favour for everything else. Make sure you have equipment which will land the biggest fish you can hook or you will be in for further disappointment if you spend a long time waiting for a bite and can’t land your dream fish once you connect.

Don’t be afraid to ask questions of what you can expect from the people who will actually be taking you fishing. I would assume that all fishing services want their clients to catch fish and it would be very rare to find one who would blatantly lie to a potential customer. Saying that, there might be a few who would stretch the truth or spin a yarn, but that’s a whole other topic for another day.

If you are fishing a new location, take note of guides’, owners’ or other anglers’ advice as they have already fished the water so could have valuable local knowledge. My suggestion is always to try what is recommended and then, if not successful after a reasonable amount of time, to make adjustments.

I hope this advice helps you to enjoy your fishing and also to be more successful. Remember that it’s not always about the catch report but to enjoy and learn from your experience and, most of all, cherish your fishing time with family and friends.

fter his victory in the Asian Faldo Golf Series in Vietnam, a British International School, Phuket (BISP) student was invited by Sir Nick Faldo to participate in a team competition in the U.S.A. Soon after, another pupil won the China Boys HSBC Open Golf Tournament in Guangzhou by 11 clear strokes, a swimmer won 10 Gold medals in the Penang State Championships, and yet some other students took part in the Youth Olympics in Buenos Aires, one of whom won a gold medal.
