As the clock strikes twelve, we will toast with champagne and enjoy the traditional lucky grapes in a vibrant, celebratory atmosphere.

“Mediterranean Splendour: a journey born of the sea and the land”

This menu is a living tribute to the essence of the Mediterranean, to its shining coasts, its salty breezes, and the treasures that nature offers so generously to those who know how to look closely. Each dish tells a fragment of this story, a journey that begins in the sea, ventures inland, and returns to its origins with the force of the purest flavours.

The reception begins with the elegance of champagne and small bites that recall the richness of our waters. The foie cappuccino awakens your senses, the red tuna blinis with sour cream and trout roe evoke calm tides, the gratinated sea urchin captures the intensity of the shoreline, and the roast beef brioche celebrates the meeting of tradition and sophistication.

The truffled sphere with cane honey offers the sweetness that the sun leaves upon our land.

The royal of lobster arrives as a tribute to the sea, accompanied by a hollandaise made with marine plankton, that unique ingredient formed in suspension in the marshes of Doñana. There, where the water sways between the mouth of the Guadalquivir and the serenity of the wetlands, the plankton is gathered with great respect, preserving its ancestral character. It is a concentrate of life that brings to the dish the deepest and most authentic perfume of the ocean. Tarragon and caviar complete the scene like brushstrokes of a peaceful seascape.

From the land comes a warm and comforting starter. The gently heated artichoke cream, parmesan foam, and Iberian pancetta recall the aromatic fields that border the coast, where agriculture lives in harmony with the breeze that arrives from the sea.

The wild sea bass, grilled over live flame, continues the journey from the depths of the Mediterranean to the fire. Its cauliflower cream and saffron emulsion tint the plate with the colours of coastal dawn, soft whites, intense yellows, and a fragrance that awakens your senses.

The refreshing pause of cava sorbet, kaffir lime, and yuzu air is a breath of marine wind, clean, bright, and sparkling, like sunlight on the surface of the water.

The meat course, a Wellington of retinta beef, pays homage to the livestock traditions of the peninsula, where fertile land nurtures animals of extraordinary quality. The mushrooms, foie, and truffle intertwine in an aromatic embrace, while the Périgourdine sauce and glazed carrot bring depth and harmony.

The sweet finale is a return to the origin, a cacao bean on violet crumble with almond praline ice cream, recalling the floral aromas that drift from the fields towards the sea at dusk.

The closing touches, petit fours, cava and gold jelly, truffles, and lucky grapes, form a luminous celebration of the Mediterranean, its culture, its history, and its nobility.

This menu is not only a gastronomic proposal. It is a sensory tale in which each ingredient speaks of the sea, the land, and the perfect balance between them. A true Mediterranean Splendour.
