BANANALISCIOUS NUTTY CUPCAKES • • • • • •
1 banana, sliced 1/2 cup sugar 1/4 cup peanut butter 1 tbsp butter 1/2 tsp vanilla extract 1/2 tsp baking soda

1 cup self-rising flour 1 cup mashed bananas 1 egg, beaten 1 cup peanut butter 1/2 cup icing sugar 1/4 cup cream 1/2 cup chopped peanuts

Pre-heat oven to 180°C. In a mixing bowl, combine the
flour, baking soda, and salt. In a separate bowl, beat the sugar and peanut butter. 2. Add the egg and banana, and continue to beat, adding the flour, baking soda and salt. 3. Divide evenly into a paperlined cupcake pan. Bake for 25 minutes. 4. While the cupcakes are

baking, melt the butter and add the banana slices into the pan. Cook until light brown. 5. Place the peanut butter in a small bowl and mix in the sugar with a spoon, adding the cream and peanuts gradually. 6. When the cakes are cool, apply the icing. Serve with strawberries and raspberries.
WARM STICKY DATE CUPCAKES WITH CARAMEL SAUCE • • • • • • • • • •
1/2 cup chopped dates 2/3 cup brown sugar 1/3 cup butter 1/2 tsp vanilla extract 1/2 tsp baking soda 3/4 cup self-raising flour 1/4 cup wheat flour 1/4 cup pecans, chopped 1 egg, beaten 1/4 cup whipped cream

Pre-heat oven to 180°C. Place dates, and half of the brown sugar and butter in a saucepan and stir until the butter is melted. Remove from the heat and leave to cool. 2. Add baking soda and vanilla extract and mix gently, then place the saucepan aside. In a mixing bowl, stir in both types of flour while adding the pecans – then add the beaten egg and dates to the mixture. 3. Add the saucepan mixture to the mixing bowl, stirring well. Divide evenly into a paper-lined cupcake pan, then bake for 25 minutes. 4. While the cupcakes are baking, stir the remaining brown sugar, cream and butter into a pan to create a thick sauce. When the cupcakes are cooked, cover with the caramel.
