LA BIBLIOTECA PRIVATE TASTING ROOM With more than 200 agave spirits on beautiful display, La Biblioteca is an in-depth exploration of Mexico’s most iconic spirits, serving as the hallowed hall of agave spirits education. Mezcal, the original agave spirit, shares prominence with tequila, raicilla, sotol, bacanora, tuxca, comiteco and others. Tequila Master and Mezcologa Ana Martinez leads guests on a tasting journey of history and discovery through the various Mexican regions that grow the agave plants and distill their spirits. Her firsthand knowledge of the flavor profiles and the maestro tequilero themselves, leads her passionate orchestration. The spirits are paired with small bites for an hour experience or can be coordinated for a 5-course dinner. Ana Martinez certifies team members who must graduate with her instruction to lead tastings for guests. Allow us to create an agave tasting or dinner pairing for you or create a signature cocktail for your special occasion. Tasting events require advance reservations. Contact Concierge at Ext. 7118

Mio Sushi & Raw Bar

Sotol Agave Bar

Mediterranean favorites, with a distinct traditional Old-World feel.

Iconic flavors from all seven regions of Mexico.

Wood-fired fare—and flair—in an unforgettable seaside setting.

Fresh sushi and a swim-up bar at the Dolphin/Family Pool.

Inspired by Executive Chef Mauricio Lopez’ years spent cooking in the kitchens of Europe, Vela menus feature accents of Spain, France, and southern Italy with daily housemade pasta and flatbreads accented with produce from nearby Mira Flores Organic Farms and fresh catch from the surrounding sea following old world methods. The wine list is recognized by Wine Spectator highlighting European vineyards, California favorites and awardwinning Mexico varietals.

An open kitchen brings everyone into the action as dishes are crafted from scratch with ingredients supplied by local farmers, fishermen, and purveyors. With cuisine representing the best of all seven regions of Mexico, along with Baja wines and top-shelf margaritas, this stylish and lively spot overlooks the resort and reinforces the sense of place and warm Mexican hospitality that guests find throughout Hilton Los Cabos.

A casual poolside restaurant by day serving light fare and Mexican and American favorites, you can swim up to the bar at Leña for your favorite beverage and dine alfresco, or choose the shaded patio with panoramic views from the infinity pool to the sea. When the sun begins to set, Leña offers a sophisticated steak and seafood dinner menu highlighting the Pacific’s bounty and Baja regional favorites, with beef from U.S. cattle ranches. Find the perfect perch along the beachside open air patio and enjoy the colorful sky as Mother Nature puts on a show.

You don’t have to cross the Pacific for the freshest sushi— just make your way to the edge of the Dolphin Pool, where you’ll find Mio Sushi & Raw Bar. Casual and delicious at the same time with a swim-up bar and open air dining. Sushi Chef Jean-Pierre takes care to select only sushi grade fish and fresh seafood for his hand-crafted rolls, nigiri, sashimi and poke bowls. Taste the flavors of Japan’s noted cuisine by way of Baja.

An authentic tequileria with signature hand-muddled cocktails and rare agave spirits. The view starts here. Stroll into Sotol, and be captivated by hacienda style and design with large colonial arches framing the azure oceans where the Sea of Cortez meets the Pacific. Located in the lobby, the tequileria is a spot for daytime antojitos (bites) with cocktails and the perfect place to finish the evening with a nightcap. Mixologists serve customers from all over the world and are nimble with your favorite beverage or can introduce you to one of our specialties featuring agave spirits, including sotol.
