Claude and Uli, who owned and operated Hilton Head’s La Normandie Restaurant for ten years, now hold forth in their Moss Creek Village restaurant, just over the Hilton Head bridge. Chef Clause, a native of Normandie, France, has cooked in some of the world’s best kitchens, including Maxim’s in Paris, the Connaught (Chef Saucier) in London and Ernie’s in San Francisco. Culinary school graduate Uli orchestrates matters in the dining room, welcomes guests and makes them feel very much at home.

Claude and Uli’s uses only the freshest and highest quality ingredients to create the wonderful food for which they have received numerous accolades. They offer in-house preparation of just about everything that is served, inclusing all bread, pastries, appetizers, entrees and desserts. Cahill’s Market and “Chicken Kitchen” is owned and operated by third and fourth generation Blufftonians. We are located on the scenic May River Road in Bluffton, South Carolina – one mile west of Historic Old Town. Located on property purchased by Grandma Cahill in 1918, we continue to be a working farm. In-season vegetables are grown throughout the year. Once harvested, the vegetables are sold in our country market and used in our home cooked dishes prepared in the “Chicken Kitchen.” Along with our own homegrown vegetables, Cahill’s Market stocks inseason produce from local and regional suppliers. We have a large selection of Vidalia Onion dressings, sauces and pickles. Ingredients: 8 ears corn Kosher salt Preparation: Heat the grill to medium.

Grilled Corn

Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of kosher salt for 10 minutes. Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels.

Thanks to the droves of visitors that come during vacation season, Hilton Head Island and nearby Bluffton have more than 300 restaurants to choose from. Here is the skinny on recently opened establishments. Taste Restaurant & Lounge

Taste Restaurant & Lounge, located next to The Jazz Corner in The Village at Wexford, exudes elegance at every turn. Guests are greeted at the door with a stylish custom made water fountain. To the left is an elegant dining room with contemporary furniture and original artwork from Peter Karis, Peter Max and David Wendel. Custom-made glass chandeliers from Cynthia Levy hang from the ceiling. To the right of the water fountain is a lively lounge and a regal eight-person Chef’s Table. The unique decor of Taste Restaurant & Lounge sets the stage for chef Nick Fazio’s menu of imaginative contemporary Southern dishes. Many locals know Fazio from his time as executive chef of Robert Irvine’s eat! He was named Hilton Head’s best chef in Hilton Head Monthly’s 2012 Readers’ Choice Awards and is focused on using fresh, local seafood and produce. He is also overnighting fresh seafood, such as wahoo and tuna, from Hawaii. “We want to be the best restaurant on this island,” Miller said. “We want to be the restaurant everybody wants to come to with the best chef, the best service and the best ambiance.” The drink menu features an extensive list of California wines, many available by the glass, to go with classical contemporary cocktails. Happy hour is 5-7 p.m. Monday through Friday in the lounge area. The dining room closes at 10 p.m. each night but the lounge area will remain open until 11 p.m. through the week and then midnight on Friday and Saturday. The restaurant is closed on Sunday. It takes time to mince garlic, but I don’t buy anything in jars. All of our herbs are fresh and we buy everything local.” The friendship between Murray and Chef Langevin is the perfect culinary blend between food, passion and business. Murray’s successful business career allowed him to dine at some of the world’s finest restaurants. His culinary passion eventually led to him to purchase two large restaurants in the New England area. After he relocated to Hilton Head in 2004, he decided to open a restaurant in the Lowcountry. During one of his many trips to Charleston, he ate at a restaurant where Langevin was the chef. The two hit it off immediately and an epicurean relationship was formed. In October 2013, Murray purchased Little Venice at Shelter Cove and called on Chef Langevin to help turn it into an outstanding Italian restaurant. The menu at Lucky Rooster is 25 percent adventurous, 50 percent of what Rollison’s signature seasonal progressive Southern food and 25 percent standards. Rollison lights up when he talks about his slow-cooking approach and about ingredients, like the short rib dish. “We make them with a tonkatsu sauce with a mix of fruits and vegetables that creates a sweetness and gives the ribs a real depth of flavor,” he said. After working in local restaurants for more than 20 years, Jennifer and Aaron Dempsey decided to open their own place -- an Italian bistro and pizzeria called Orobello’s. Named after Jennifer’s grandparents, the restaurant specializes in fresh, homemade Italian cuisine infused with southern hospitality. Each pizza is hand-tossed. “We make our own dough,” Jennifer Dempsey said. “We never use anything frozen. Everything that we use is the highest quality ingredients. A few big changes have come to The Big Bamboo Café. The popular restaurant and bar has expanded its outside deck on the second level of Coligny Plaza, adding about 50 feet to the front of the restaurant.
