I

f you’re like me, you like good food, but you also like value. That’s what keeps me coming back to some of my favorite restaurants. They’re consistently good, delivering quality food that rarely varies in taste or quantity. But they’re also reasonably priced, so they’re not going to blow up anybody’s budget if you take your wife or family out to eat. Finding the right price has to be one of the toughest jobs for a restaurant owner. If you have the best food in the world, but you price it just a little too high, you’re not going to get customers to stick with you. That’s why daily deals can be a good way to introduce customers to your eatery and convince them to come back again and again. I’m particularly pleased that most of the restaurants in Dining Out have specials that will save you some money and also let you sample some of their dishes. It makes good business sense. Many of the restaurants who advertise in Dining Out also have Happy Hour specials, so you can relax and enjoy a drink or appetizer at a significant discount during specific hours. I hope you’ll take advantage of these specials and work your way around the High Desert sampling the food and drink at these establishments. There’s a lot of great food out there. Six reasons why you should not skip ladies’ night out

reat friends stand by us through situations thick or thin, and may be the first ones we turn to for some extra support. But friends are good for more than honestly assessing wardrobe choices or picking you up in a rainstorm when your car breaks down on the side of the road. According to the Mayo Clinic, friends

can be beneficial to your health. Good friends can increase your sense of purpose and boost your happiness. They’re also available to help you cope with trauma or tragedy and might just give you the push you need to change unhealthy lifestyle habits. Women who have close girlfriends may find that ladies’ night out is the

ideal way to reconnect and find the time to let loose and have fun. When done responsibly, a ladies’ night out can make for the perfect evening. And while you might be pressed for time and tempted to skip a night out on the town with your girlfriends, the following are just a few reasons why you should keep those plans. 1) Cut down on stress. Laughing and talking with friends can dramatically cut down on stress. A landmark UCLA study conducted in 2002 concluded that girlfriends are stress-busters for women and have an impact on their overall mood. Oxytocin, a mood-elevating hormone, is released when women are around their

friends, increasing feelings of euphoria. Considering stress can take its toll on physical and mental health, enjoying an evening out with friends can be a fun and simple way to combat stress. 2) Let it all hang out. Ladies’ night out allows women to put their cards on the table whether they’re discussing mundane fashion trends or looking for some heartfelt advice. Chances are your friends will not judge you, and you won’t have to bite your tongue like you might have to when sharing your concerns with other people. 3) Connect with other adults. Parents of young children may appreciate ladies’ night out for the chance to get out of the

house. You also may enjoy conversations that do not focus on school or kids. Ladies’ night out is also a great opportunity to enjoy a meal, drink and/or movie without being interrupted by little ones. 4) Ladies’ night out can help you keep in touch with yourself. According to Irene S. Levine, Ph.D., creator of The Friendship Blog and author of “Best Friends Forever: Surviving a Break-Up With Your Best Friend,” other women shape you as a person. Female friends provide virtual mirrors that allow you to see who you are and who you want to become. Maintaining that connection to yourself can be just as important as staying connected with your

friends. 5) Enjoy a chance to catch up in person. Many people now do the bulk of their communicating via texting or email. Ladies’ night out presents an opportunity to converse face-to-face. That means not having to exert energy trying to infer tone or meaning behind emails or wondering if those emoticons are masking something unsaid. 6) Have some fun. One of the key benefits of going out with girlfriends is that you’ll have your partners in crime ready to join you for a night of unbridled fun. Karaoke, dancing or crowd-watching is even better when you have friends backing you up.

ortillas are a staple of Latin cooking and have been for quite some time, dating as far back as 10,000 BC. Tortillas were prominent during the time of the Aztecs, the dominant people in the area of Mesoamerica, which would be later known as Mexico. The name tortilla can be traced to Spanish explorers who reached the highlands of Mexico in the sixteenth century looking for gold and land. These explorers discovered a wealth of new foods, such as chocolate, peanuts, vanilla, beans, squash, avocados, coconuts, corn, tomatoes, and, of course, tortillas. The word tortilla comes from the Spanish word torta, meaning round cake. Tortillas aren’t cakes but

flatbreads made from corn or flour. The original method of preparing tortillas involved kneading a cornmeal dough, called masa, on a stone called a metate.

Homemade Corn Tortillas

Makes 12 tortillas

2 cups masa harina 1 1/4 cups of warm water (this may vary depending on air humidity and other conditions) 2 pieces of round plastic cut out from a bag (freezer bags are ideal for this purpose) Use a wooden bowl to combine the masa harina and water. Mix well until the water is absorbed evenly and the dough forms a ball. You are looking for a soft dough consistency; it should not stick to your hands. If it does, add a little more masa harina. If it looks dry, breakable or crumbly, add more water. Cover with a moist towel to prevent the dough from drying.

Preheat a griddle or heavy skillet over a medium flame. This has to be ready when you start pressing the tortillas. Using a tortilla press or a heavy dish, place a ball of the dough about 1 1/2 inches in diameter between the two plastic pieces and press to form a 6-inch round tortilla. Open the tortilla press or remove the heavy dish, if using, to press the tortillas and peel the top plastic off. If the pressed tortilla has an uneven edge, then the dough is too dry and you will need to add a little water and mix well. Lift the plastic with the pressed tortilla, place the dough in your hand closer to your fingers and carefully

peel the plastic off the dough. If the dough doesn’t come off easily, then the dough could be a little too wet. Add some more masa harina to the dough mix again until it becomes easier to handle. Place the tortilla on the griddle and cook for 45 seconds. The edge will begin to dry out. Turn over and continue to cook for 1 minute until brown patches form. Turn over again and cook for another 15 seconds. The cooking time is about 2 minutes. Cook until the tortilla begins to puff. Tap the tortilla lightly with your fingertips to allow even puffing. Wrap with a napkin or clean towel and serve.

PPLE VALLEY — Customer loyalty and a reputable environment can help a business not only survive, but thrive. This is the case at Los Domingos Restaurant, where a menu full of variety, a friendly staff and an atmosphere built by and for family is tantamount to success. Claude Atalla co-owns and runs Los Domingos with his brother, Maxim. Los Domingos also has a location of the same name in Barstow. Atalla says it’s the restaurant’s reputation that brings in scores of regular and returning customers and all sorts of first-time diners every day. “People come in and they immediately feel like family,” Atalla told Dining Out recently. “We do get new people in here on a daily basis, and we have many who have been really loyal from the beginning. “If it wasn’t for them, we wouldn’t have made it in this location.” This Apple Valley location opened in October 2007 — just as the national economy was headed for a near-collapse — and is still standing a decade later, proof of the reputation Atalla touts proudly. Part of Los Domingos’ reputation, naturally, is its food. “Our variety is pretty good,” Atalla says, noting the menu’s pages feature

a lot of seafood, several varieties of steaks “from porterhouse to ribeye,” burgers and all of the dishes one might expect at a casual local Mexican restaurant. “We have just about everything on our menu that somebody could want.” He mentions their steaks again, primarily the ribeye, which is “a choice cut that’s better than some of the steakhouses (in the High Desert), especially for a Mexican restaurant.” A notable specialty at Los Domingos is the variety of fajitas, which are popular among customers as they’re seasoned with a seven-spice blend mixed in-house. “Our seasoning really sets us apart,” Atalla says. The Los Domingos Fajitas, a signature dish which features a mix of steak, chicken and shrimp, is a particular favorite among regulars and new customers. If fajitas on any day of the week isn’t enough, the restaurant offers Taco Tuesday every week, “a really busy day for us,” Atalla says, with full-size tacos with shredded beef, ground beef or chicken. On Wednesdays, Los Domingos offers half-price margaritas, in addition to happy hour from 3 to 7 p.m. Monday through F r i d ay. rant. The Wednesday sessions start at 7 p.m and are geared for the whole family with “plenty of kids coming to sing their hearts out,” Atalla said. Karaoke on Friday begins at 8 p.m.

They have live bands playing classic rock music from 8 p.m. to midnight on Saturdays. On Sundays, the restaurant offers its champagne brunch from 9 to 2:30 p.m. with many of the menu favorites and

restaurant specialties. And as the NFL season begins this week, Atalla says Los Domingos’ 10 TVs will be showing all the games with the NFL Ticket. For late games on Sunday (after brunch

Dining Out has written about one of those creative dishes, Peter’s “Signature Roll,” made special by the inclusion of Spring Mix — an unusual ingredient for sushi rolls in general, but certainly one that makes Peter’s Signature Roll a standout in particular. The roll also includes avocado, Cajun seared

salmon and fresh, crispy cucumber with the salad greens, then neatly rolled in a bed of sushi rice and sheet of nori seaweed. At our recent visit, a nearby diner ordered another unusual option, the Teriyaki Chicken Sushi Roll, and it looked and smelled delicious. We will say that it did not last long on its plate. Whether you enjoy dining at the Sushi Bar,

selecting favorites from the more than two dozen sushi roll options or like to order combination dishes to enjoy there or to take home, Ninja Sushi can accommodate. Of course, you’ll find popular Combination Bento Specials at Ninja Sushi — a two -item combo lunch for $7.99 or a three-item combo for $10.99. Each combo comes in a Bento box

with rice, salad and a serving of delicious miso soup. Entrees, also served with rice, salad and miso soup, are available in Teriyaki, Katsu, Teppan or Tempura styles, and if you enjoy appetizers and salad, check out the menu selections.
