Soda Bread Ireland

From Upper Crust by Marie-Laure Fréchet ($40, Flammarion, 2021)
2 c 100 percent whole-wheat flour
O c plus 2 Tbsp bread flour
O c rolled oats 1 tsp baking soda 1 tsp salt 1¼ c buttermilk
1. Preheat oven to 400˚. 2. In a large mixing bowl, combine flours, oats, baking soda, and salt. Make a well in center and gradually pour in buttermilk. 3. Knead with your hands until a moist, but not sticky, dough comes together. Alternatively, knead in a stand mixer fitted with the dough hook for 5 minutes on speed 2.
4. Shape dough into a ball and place on a baking sheet lined with parchment paper. Lightly dust top of dough with flour and score a cross into the surface. Bake for 30 to 40 minutes, until golden. 5. Remove bread from oven and place it on a rack to cool.
