WELCOME MESSAGES Message from the 20th Biennial International Congress and Exhibition Local Organising Committee Chair The South African Association for Food Science and Technology is proud to bring you the 20th Biennial International Congress and Exhibition that will take place in Pretoria at the CSIR International Conference Centre from 7-9 October 2013. It will be followed by a postcongress International Commission on Microbiological Specifications for Foods (ICMSF) workshop on the 10th of October 2013. We are particularly excited that this, our first event since the outstanding IUFoST Congress in 2010, will be addressing the theme “Out of Africa - Global Food Science and Technology”. This gives us the opportunity to showcase local achievements and emphasise the important role and impact that Africa in general, and South Africa in particular, have in the food science and technology world today. Africa is regarded as the food basket of the future and global food players increasingly recognise this. Don’t miss this unique opportunity to find out what Food Science and Technology can offer Africa and the rest of the world. The Congress will consist of a series of workshops (including at least 15 international speakers), a trade exhibition and advanced/progressive plenary sessions and lectures featuring the best of South Africa’s as well as Africa’s food scientists and technologists in addition to contributions from distinguished invited international food scientists. Message from the SAAFoST President It is a great pleasure and honour to invite you to take part in the 20th SAAFoST Biennial Congress and Exhibition to be held in Pretoria from 7-9 October 2013. The SAAFoST Biennial Congress and Exhibition is again taking its expected place in conference calendar in South Africa. The last time the South African food science and technology fraternity had to gather was at the successfully hosted IUFoST World Congress in Cape Town in 2010, so it is high-time that the Biennial Congress again provides us the opportunity to gather again. The SAAFoST Biennial Congress has a proud tradition of being the premier food science and technology event in Southern Africa, and this year will be no different. The Congress will again attract the major role players in the South African food industry, top academics, researchers and young scientists from near and far and bring them together in a melting pot of the latest research, innovation, ingredients, technology, trends, regulations and networking. We will have at least 15 international speakers. The committee has taken an innovative approach to the programme structure to give participants the most value for their money. We also, for the first time, have a new product development competition for students based on the theme of our congress. WORKSHOPS / SYMPOSIA / SPECIAL SESSIONS Monday, 7 October 2013 IUFoST Food Security and Sustainability Symposium Industry Novel Ingredients and Technologies Showcase (dependent on interest and participation of industry) Tuesday, 8 October 2013 Sensory and Consumer Science Symposium The symposium will focus on the use of Sensory and Consumer Science to “walk in the shoes” of the customers and consumers that buy and consume the products manufactured by the food industry. It is vital for food companies to have a deep understanding of how their customers/consumers use and experience products in order to meet preferences and needs. The symposium will include presentations focusing on the sensory experience of ‘food products in use’ and the ‘consumers that use these products’. ILSI Water Quality and Safety Symposium Wednesday, 9 October 2013 Leadership Workshop for Young Professionals led by Barbara Byrd Keenan (CEO, IFT) International Commission on Microbiological Safety for Foods (ICMSF) Food Safety Risk Management Symposium Thursday, 10 October 2013 International Commission on Microbiological Safety for Foods (ICMSF) Post Congress Workshop To benefit optimally from this workshop, participants have to attend the congress as well. The International Commission on Microbiological Specifications for Foods (ICMSF) and the South African Association for Food Science and Technology (SAAFoST) are partnering to bring to South Africa, endorsed training materials and courses to explain these risk-based rules and to provide practical training in their implementation with the aim of: 1. Facilitating trade in the different regions in Africa as well as internationally; 2. Improving food safety at a national level, i.e., domestic markets; 3. Enabling innovation in food processing. The Post-Congress workshop is intended to provide participants with an understanding of the international rules for establishing microbiological criteria for foods in international trade, modern food safety risk management concepts, and practical tools to aid in their implementation. NB: Please bring your own laptop to the workshop. This workshop will comprise lectures and useful practical exercises requiring the use of personal laptops, and working in small groups. Prior to this workshop, participants will be sent instructions for downloading software and setting up their laptops. A maximum of 60 participants can be accommodated. This workshop includes: 1. The limitations of microbiological testing of foods and sampling plans (including some simple probability/ statistical theory to be able to evaluate the limitations of sampling) 2. Principles for the setting and interpreting of microbiological Standards, Guidelines and Specifications, 3. Training in sampling plan interpretation and design (involving training in basic statistics, e.g., Normal, Log Normal and Binomial distributions, and use of the ICMSF sampling plan spread sheet. People to attend should include HACCP Team Leaders, HACCP Team Members and Food Safety Auditors, Quality Management Leaders and Staff, Microbiologists, Law Enforcement Officers, Academics. ABSTRACT SUBMISSIONS Original Research Abstract Submissions Abstracts of original research, for presentation as orals or posters, or covering topics of commercial appeal, are to be presented at the 20th Biennial International Congress and Exhibition. Submitted abstracts should be original, topical and current. Original research papers are defined as those that cover specific, new and original research that have not been previously accepted for publication in a journal, presented in another conference or be under review at another conference. Commercial appeal abstracts can be defined as abstracts not covering original research, but rather focussing on either new applications of scientific research, review type papers, market research, consumer trends, regulatory guidelines or papers with a generic appeal to food industries, academia or consumers, but still based on sound science. These abstracts are not intended for advertising specific products, companies or services. Participants wishing to contribute to the scientific programme of the congress are kindly requested to submit their abstracts before the deadline date of 15th April 2013. All abstracts must be submitted online through the online submission system http://www.saafost2013.org.za/. Abstracts submitted by email, post or fax will not be accepted. The scientific programme committee will endeavour to schedule abstracts according to authors’ preferences but reserves the right to decide on the final form of presentation. Submission Guidelines To submit an abstract for oral or poster presentation: 1. Upon registering as a user on the online submission system an abstract template will be emailed to you. 2. Insert your abstract into the template. It is important that you do not enter any of the authors’ information into the template. This will be done during the submission process. You are to only include the title of your abstract and the body text. 3. Your presentation title should not exceed 50 words and your body text should not exceed 300 words. 4. You will then need to login to the online submission system and follow the steps. You will be required to enter the authors information, upload your abstract in the template provided, select whether you would like to do an oral presentation or poster presentation and select which topic best suits your abstract. Once you have answered all the mandatory questions you will click finish and a confirmation email with the abstract you uploaded onto the system will be sent to you. 5. You will be able to amend a submission up until the deadline date. You will need to login and click on your existing submission. Complete the steps and click finish to confirm your changes. Again a confirmation email will be sent to you with the abstract that was uploaded onto the system. 6. Industry Novel Ingredients and Technologies Showcase Oral presentations on behalf of commercial enterprises These presentations will form part of an Industry Novel Ingredient and Technology Showcase within the main SAAFoST programme entitled Novel Ingredients and Technologies. This will be open to all Congress delegates at no additional charge. There are only 7 x 30 minute slots available. These highly sought after slots will be allocated on a first come first served basis. However, in order to increase your company’s chance of being able to present a sponsorship of R 15 000.00 (excluding VAT) would be required. Please adhere to the following notes for presentations on behalf of commercial enterprises: Only use company logos in a discrete way. This is not a marketing presentation but rather an opportunity to share new ideas and technologies that your company may have developed, that you wish to convey to the audience. As this is a technical / scientific and not a commercial presentation, please do not mention prices, compare anything to your competitors or share where to buy the products. You may state that, if a delegate is interested in more information, they can contact you after the presentation. You will be required to submit an abstract (please exclude company logos in your abstract) by the submission deadline date of the 15th April 2013. ABSTRACT SUBMISSIONS Acceptance / Rejection of Abstracts The scientific programme committee will review all submitted abstracts and reserves the right to accept or reject any abstract. Selected abstracts will be presented as oral or poster presentations. Authors of abstracts accepted will receive notification and information regarding their presentation by the 31 May 2013. 20th Biennial International SAAFoST Congress Student Product Development Competition 2013 Objectives • •

To encourage SAAFoST students to develop the critical-thinking skills necessary for developing food products using the principles of food science and technology. For students to, as part of a team, develop a food product from idea to concept (including e.g. costing, packaging, shelf life determination, mass-energy balance, consumer testing and product labeling).

ABSTRACT SUBMISSIONS Theme: “Out of Africa” Global Food Science and Technology Innovation and Solutions Background The project theme is that of the SAAFoST Congress 2013. The Product Development Competition aims to promote the application of food science and technology to the development of marketable African products. How can Food Science and Technology be leveraged to deliver interesting, safe, sustainable, affordable and authentic African products to the attention of the global world market? General Competition Rules Eligibility • • •

Undergraduate and Honors level Food Science/Food Technology students working as individuals or in teams. Entries must be students’ work. Lecturers may be consulted and referenced, but may not be a major contributor to the actual work. Industry support such as donation of ingredients or use of equipment is allowed and encouraged, but should be acknowledged.

What is expected? 1. Each project team to submit a well-motivated product development proposal according to the requirements of the competition by 15th April 2013 to Kerry Firmani at Kerryf@turnergroup.co.za 2. The proposal is limited to five (5) pages, not including the title page, the page for graph representation of the entry (photograph, drawing, flow-diagram, etc.), references, and one appendix page used at the discretion of the contestants. 3. The report must be typed, double-spaced, in 12-point font. All text and figures must fit on A4 paper. 4. There is no specific required format for the title page (not included in five (5) page limit), though it should include the title of report, team members and date. 5. References: All references have to be cited within the proposal using the Harvard method. The list of references is not included in the five (5) page limit. 6. The academic staff member that supervises the team should send the proposal by email to the competition chair (to be announced) by the due date including the following information in the body of the e-mail. • Team members’ names, degree/diploma programme, year of study • Sponsor companies, donors of goods, services, or money (if applicable) • Name, mailing address, phone number and e-mail address of the contact person to whom all correspondence should be directed. 7.

Evaluation of proposals: The judging panel will include members from industry and academia. The judges will be evaluating the rationale behind the proposed product, the scientific value of the proposed concept, the technical problem solving skills, the economic feasibility and the societal impact. Ultimately, the entry must benefit the quality of lives of people involved and should be applicable to the setting.

Each entry will be scored on a basis of 50 points, with the points to be distributed as follows: - Executive Summary 10 points - Background and motivation (rationale) 10 points - Product and Market Description 10 points - Brief technical details of manufacture 10 points - Expected Safety/Shelf Life/Product Quality Assurance-Control 10 points

All teams scoring 60% or higher for the proposal will be invited to present their final projects in poster format at the SAAFoST Congress held 7 - 9 October 2013 in Pretoria, South Africa. All competing teams will be informed of only their respective scores and judges’ comments by 31 May 2013.

ABSTRACT SUBMISSIONS Scoring Guidelines for Final Poster 1. Teams must compile a poster measuring 841mm x 1090 mm portrait that shows: • Project title and team members • Background on target market and/or the need/problem/opportunity addressed • Product and packaging description/example (if not perishable), expected shelf life, key sensory properties, key product label information. If applicable, teams are encouraged to display a sample of their product. This does not mean they will need to prepare samples for tasting, as they will not be evaluated on this aspect. • Basic product manufacturing flow diagram & equipment • Food Science and/or Technology challenges • Acknowledgements

The focus of this competition is applying food science and technology skills; therefore, judges will not award points for package graphics or other advertising material. All competing teams will be informed of only their respective scores and judges’ comments. All parts of the competition will be conducted in English.

Note: Patent rights belong to the individual teams and will be handled according to the respective University’s patent policy. Awards The top teams will receive prizes and will be featured on the SAAFoST website.

REGISTRATION INFORMATION How to Register To register for the 20th SAAFoST International Congress and Exhibition in Pretoria, please visit the congress website: http://www.saafost2013.org.za/ or complete the enclosed registration form and return, to the Congress Secretariat. Pre-registration via the website will not be possible after 30th of September 2013. After this date only on-site registration will be accepted. It is essential that the instructions for payment of all fees involved are strictly followed. Every participant, including invited participants and accompanying persons, must be registered. Cancellation of Registration and Refund Policy The Congress Secretariat must be notified in writing of any cancellations. All approved refunds will be issued after the Congress. ACCOMMODATION Reservations Hotel accommodation can be reserved in Pretoria through the intermediary of Turners Conferences who has secured preferred rates for participants. All rates quoted on the hotel booking form are in South African Rands and are per room and per night, breakfast and service taxes included. The hotel category should be indicated on the hotel booking form. Please also indicate which other category we should book in case the chosen one is fully booked. Please note most of the hotels are in close proximity to the CSIR International Convention Centre in Pretoria. Confirmation of Hotel Reservation All hotel reservations will be confirmed to you in writing with the name of the hotel, the type of accommodation booked, the arrival and departure dates, the rate, and the deposit required. This will be accompanied by an invoice and request for payment. Payments A deposit equal to two nights stay is required to secure the hotel booking. The balance of the accommodation is to be settled directly with the hotel upon your arrival. Transportation Shuttle transport will be offered to all registered delegates and registered accompanying persons; between the appointed hotels and the CSIR International Convention Centre; for the duration of the congress, as well as to social functions. In Pretoria you will experience an African city of excellence – one which blends the depth of local culture and character with world class technology and infrastructure – all on the backdrop of natural splendour and architectural diversity. Sport, arts and culture, research and development, industry, learning and the business of running the nation are all captured in the daily lives of the city’s 2,5 million residents who make this city what it is. It is a city with a welcome as warm as its climate and, for very good reasons, named the best host city for the 2010 FIFA World Cup™. Tshwane covers 6 368 km² of Gauteng’s 19 055 km². It stretches almost 121 km from East to West and 108 km from North to South making it the third-largest city in the world in terms of land area, after New York and Tokyo/Yokohama. The city has about 2,5 million residents. Currency and Banks The unit of currency in South Africa is the South African Rand (ZAR) and is indicated with a capital R so that, for example, three Rand and fifty cents would be written R3.50. South Africa has a decimal currency system with one Rand equaling 100 cents. Denominations of Rand notes are R200, R100, R50, R20, and R10 and of the coins are R5, R2, R1, 50c, 20c, 10c and 5c. Electricity Supply The electricity supply in South Africa is 220-240 volts, 50 Hz. The connection for appliances is a round three-pin plug. Most hotels provide dual-voltage two-pin razor sockets (100-120 volts and 220-240 volts). Health There are no compulsory vaccination requirements for persons entering South Africa although a certificate for yellow fever may be required if you are entering from certain South American or sub-Saharan African countries. Certain parts of the country have been designated as malaria risk areas. If you intend travelling to one of these areas, it is essential that you take prophylaxis before arrival and whilst in the area. Protective clothing and insect repellents should also be used. Pretoria is a malaria risk free area. South African doctors and dentists are highly trained professionals and hospitals are well equipped. Participants are requested to make their own arrangements with respect to health insurance prior to departure and consult their local general practitioner for personal expert advice. For international travel and health advisories please visit the WHO website at www.who.int/ith or www.cdc.org. It is safe to drink tap water throughout South Africa. However, for those who prefer bottled mineral water, this is readily available in various stores. Smoking is prohibited by law in most public buildings in South Africa (airports, CSIR International Convention Centre, restaurants etc) except in designated smoking areas. Insurance The 20th SAAFoST International Congress and Exhibition accepts no liability for any personal injury, loss or damage of property belonging to or additional expenses incurred by congress participants either during the congress or as result of delays, strikes or any other circumstances. Passport holders from more than 80 countries, including USA, Canada, UK, Japan and the EU can visit South Africa without a visa. Information regarding visas can be obtained from your travel agent or the South African diplomatic or consular representative in your area. Passports should have at least 2 completely empty pages otherwise entry may be denied. Passports must be valid for at least 6 months after your intended date of departure. Delegates requiring visas, and who intend taking tours to neighboring Southern African countries, are advised to secure a multiple entry visa. Tourists must satisfy immigration officers that they have the means of support for the duration of their stay in the country and return /onward tickets. Visas cannot be obtained on arrival. Common sense will ensure a trouble free and enjoyable congress and vacation. The area around the CSIR Convention Centre and adjacent hotels is safe and well monitored at all times but we advise that you do not walk alone after dark in unpopulated streets. Ostentatious displays of wealth should be avoided at all times. Muslim-owned businesses close at noon on Fridays and re-open at 13h00 hours. Tipping Gratuities are expected in South Africa. is the South African Association for Food Scientists, Technologists and other professionals serving the food and allied industries, and ogranisations in South Africa. The association provides its members with valuable networking, knowledge-sharing events and publications. SAAFoST promotes education and professionalism and seeks to provide an appropriate legislative structure in the industry. The South African Association for Food Science and Technology (SAAFoST) was founded in 1960 after a group of industry and academic representatives identified a need for a professional association for South African food scientists. The original association was founded in Cape Town and branches were set up in the Cape and in Johannesburg in 1962 and then in Durban in 1973. From these small beginnings, SAAFoST has grown to become one of the most dynamic and well supported associations of its type in the world.
