Understanding Saffron Grades
Saffron is given a score based on how it looks, smells, and tastes. There are three types of saffron: coupe, Mancha, and sierra. Coupe is the best and most expensive, with deep red threads that smell and taste strong. Mancha costs a little less than a car and has threads that aren't quite as bright. Sierra is the lowest quality. It has pale yellow threads that smell and taste less strong.

It's important to store saffron the right way so that it stays fresh and tasty. Store saffron in a container that keeps out air and direct light and heat. Ideal is a small glass jar with a lid that fits tight. Saffron should be stored in a cool, dry place, like a pantry or spice box. Don't put saffron in the fridge or freezer because the wetness there can make the threads less effective.
