Crystal Seas Seafood, Pass Christian CHARGRILLED OYSTERS
3 Tbsp. flour 6 Tbsp. butter 1 cup sharp cheese, grated 1 tsp. salt 1 tsp. lemon juice 1/2 tsp. mild horseradish 1/2 cup buttered breadcrumbs Paprika
2 lbs. butter or margarine 1 Tbsp. Italian seasoning 1 Tbsp. white pepper 1 Tbsp. black pepper 1 Tbsp olive oil Hot sauce to taste Parmesan cheese 48 oysters on the half shell Bring butter or margarine to room temperature. Stir in all ingredients except Parmesan cheese. Preheat grill to medium high. Place oysters on the grill. Once the natural juice of the oyster begins to bubble, spoon some of the butter mixture on the hot oyster. When the edges of the oysters begin to curl, put the desired amount of Parmesan cheese on top of the oysters. Once the cheese has melted, take the oysters off the grill and serve them piping hot.
Preheat oven to 400 degrees. Melt butter, add flour and stir until smooth. Add milk and remaining ingredients, mixing well. Pour into buttered baking dish. Sprinkle with buttered breadcrumbs and paprika. Bake for 20-30 minutes. CRAB CAKES
SHRIMP AND CRAB CASSEROLE
4 slices bread, crust removed 2 Tbsp. mayonnaise 2 tsp. Old Bay Seasoning 1/2 tsp. prepared mustard 1 egg, beaten 1 lb. lump crabmeat
1 lb. jumbo lump crabmeat 1 lb. small shrimp 1 tsp. prepared mustard 1 1/2 cups milk
Crumble bread in a large bowl. Mix in mayonnaise, Old Bay, mustard and egg. Gently stir in the crabmeat. Shape into approximately 4 patties. Broil for 10 minutes or pan fry until golden brown.

Our family always eats oysters raw and grilled. Very rarely do we eat them other than the way God gave them to us because they are so delicious just the way they are with a little hot sauce or cocktail sauce.
