FROM THE DIRECTOR

Learning Beyond the Walls The 2011-2012 academic year is off to an exciting start in the School of Hospitality. This fall, our classes are full, with more than 600 students in our program as majors, minors or certificate students. These students are actively involved in the classroom, building their industry knowledge and critical thinking abilities, and they also are involved outside the classroom in learning experiences that apply information in the real-world and promote networking with industry leaders, which is vital to the building of interpersonal skills and career opportunities.

This semester, members of our student associations have taken advantage of a number of learning experiences through their organizations. Members of our Student Chapter of the American Hotel and Lodging Association attended the New York Hotel Show in November. Student members of the International Association of Exhibitions and Events (IAEE) also have been active, with speakers including several alumni who work in the exhibition and event sectors.

The Student Chapter of the Club Managers Association of America (CMAA) was involved in the Officer Initiation Dinner for the Georgia Chapter of CMAA. In February, students will attend the Club Managers World Conference in New Orleans.

Hands-on learning has also been evident in real-world events planned and executed by Deborah Robbe’s fall classes. Events such as tailgating before football and basketball games bring to life the many dimensions of event management, from design and determining themes to securing entertainment, handling crowd control, arranging food and beverage, and dealing with logistics and legalities.

The School of Hospitality also provides opportunities for students to increase their global perspective. Three students spent spring semester in France at the Université de Savoie’s hospitality and tourism program. See the story about one student’s experience on pg. 6. This issue also features the adventures of Melissa Kauffman, who spent fall semester in Macao, China, at the Institute for Tourism Studies. Her story is on pg. 4.

The fall semester Industry Board meeting was held in September. The School’s energetic and involved board members are a vital part of learning opportunities provided to hospitality majors, who are required to work in the industry prior to graduation. In addition to providing internships and job opportunities, Industry Board members also speak to our classes and host student groups for tours and visits to their companies. The faculty joins me in sincerely thanking our board members for their outstanding support and involvement. The names and companies of our Industry Board are listed in this issue.

If you are not involved with the School of Hospitality and would like to be, please let us know. We always welcome interest and involvement in our program as we prepare future leaders for the exciting and dynamic hospitality industry.

EUROPEAN STYLE ‘TRIP OF A LIFE TIME’ OPENS WORLD OF POSSIBILITIES

O

ur annual Maymester European Hospitality Experience continues to be a huge success for both our students and the School of Hospitality. During our 2011 study abroad trip, 22 students spent 15 days exploring European hospitality businesses, attending lectures and events, and visiting major tourism destinations throughout France, Monaco, Italy, Switzerland and Germany.

Our study abroad program is designed to introduce students to European hospitality by exploring a variety of hospitality businesses. The program incorporates tours of major hospitality operations with an emphasis on marketing, tourism, customer service and sustainable, environmentally proactive practices.

Prior to departing, students attend classroom lectures on travel safety and security and hear from international guest speakers from the hospitality industry.

Once overseas, the class studies various European cultures and is able to learn about their approach to hospitality through dining experiences and site visits to major tourist venues.

Many students who have attended the European Hospitality Experience say the experience changed their lives forever (see right).

The sights, sounds, smells, tastes and feel of these European countries opened their eyes to just how large our world is and how critical it is to spend time abroad. With more and more U.S. businesses expanding into global markets, a study abroad experience should be on every college student’s resume.

Preparing students for success upon graduation is one of the goals of the Cecil B. Day School of Hospitality Administration, and this study abroad experience offers dividends and rewards long after the participants return to U.S. soil.

ased in Atlanta, the Global Soap Project was founded in 2009 by Derreck Kayongo, a humanitarian relief expert whose own family fled Uganda and the tyranny of Idi Amin in 1979. During this tragic and oppressive era, close to one million people lost their lives. Many, like Derreck, were displaced in refugee camps.

Today, millions of people around the world still live in compromised environments, with limited or no access to clean water and soap. The Global Soap Project raises awareness about this lack of sanitation and its consequences.

Recycling soap is a simple concept that provides enormous benefits. With 4.6 million hotel rooms in the United States, an estimated 2.6 million soap bars are discarded every day. By participating in the program, hoteliers are diverting tons of waste from the landfill and bolstering environmental sustainability programs. Hotel managers, housekeepers and guests become more environmentally conscious and more sensitive to the needs of vulnerable populations across the globe.

The Global Soap Project collects discarded soap from hotels and lodging establishments. The soap is then sorted, reprocessed and remolded into new bars to be distributed around the world to vulnerable populations such as refugees, orphans and disaster victims.

The No. 1 cause of preventable death of children in Africa is unsanitary living conditions, mostly due to lack of soap and potable water. For children under age five, two of the leading causes of death are diarrhea and respiratory infections, many of which can be prevented with proper hygiene. Soap and clean water can reduce preventable deaths caused by diarrheal and respiratory diseases by more than 40 percent.

As of July 2011, more than 300 hotels across the U.S. are participating in the Global Soap Project. To date, more than 36,000 bars of soap have been sent to help people in Uganda, Haiti, Swaziland, Ghana and Kenya. Melissa Meets Macao

Student exchanges comfort zone for study abroad

T

his fall, the School of Hospitality’s very own Melissa Kauffman is 12 hours across the globe in Macao, China, studying at the Institute for Tourism Studies — one of the largest hospitality and tourism schools in the world. Melissa is our first exchange student to study in Macao, and we are pleased that she is there representing the Cecil B. Day School of Hospitality Administration.

Melissa said what motivated her to study at Macao was a desire to “conquer” the world. “I want to experience different cultures, different lifestyles, and learn from each person I meet,” she said.

“This school is the means for my learning more than what can be found in books.”

Macao, a former Portuguese colony located on China’s southern coast, offers an ideal environment for Melissa’s study abroad experience, due to the sustained growth and prosperity of its tourism and gaming industries. Most of Macao’s tourism revenue comes from visitors from mainland China, and today, Macao serves as a driving force within the hospitality industry of the Asia Pacific region.

While in Macao, Melissa is taking classes in tourism product management, marketing management, special interest tourism, and event management. She is also studying Cantonese, one of the main languages spoken in Macao. She admits that the language is difficult but feels the need to try to learn a new language while studying abroad. “I want to find many friends, grow as a person and learn more about other cultures,” she says.

When not in class or doing homework, Melissa and her new friends visit shops at casinos such as the MGM, the Wynn and the Venetian.

Melissa, a senior in the School of Hospitality, enrolled at Georgia State after serving four years in the U.S. Air Force. She is on track to graduate with a B.B.A. in hospitality administration in spring 2012.

After graduation, Melissa and her husband, Brad, hope to relocate abroad to travel and work so getting out of her comfort zone and seeing if she can handle the pressures of living abroad was one of the goals of her study abroad experience. She also wants to learn more on a global scale from her classmates, who are from many different backgrounds and countries.

Melissa’s career goal is to work in private clubs, specifically in catering and event management. “I like working with people on a personal level, getting to know people and helping them when they need something,” she says. She also plans to complete a Master of International Business from Georgia State, a degree that would make her a stronger leader within the hospitality industry.

Melissa’s advice for those looking into study abroad is to “be open to new experiences; embrace the different cultures, the food, and the people.”

She also suggests: “Keep yourself busy so you don’t get homesick. Find some extracurricular activities, which are great places to meet new people.”

Expanding Horizons Through Global Partnerships The Cecil B. Day School of Hospitality recently partnered with the Institute for Tourism Studies (IFT) in Macao as part of a new initiative to increase Georgia State’s presence in other nations. Building on a foundation established by GSU President Mark Becker; Debby Cannon, director of the School of Hospitality; and Joe Perdue, executive director of Global Hospitality Initiatives, the School of Hospitality has begun an international exchange agreement designed to expand the cultural horizon of our students.

Our agreement with the Institute for Tourism Studies encompasses both student and faculty exchanges, as well as research collaboration. The Institute for Tourism Studies is the first tourism education institution certified by the United Nations World Tourism Org anization.

IFT offers degree and professional programs in a wide range of tourism-related disciplines such as hospitality, tourism business, heritage, events, retail and marketing, leisure and entertainment, sports and recreation, creative and cultural studies, and culinary arts.

The Institute for Tourism Studies also delivers various programs at the executive and postgraduate levels in partnership with leading tourism schools in the world.

The Cecil B. Day School of Hospitality Administration and the Université de Savoie in France established a student exchange partnership in 2006, whereby J. Mack Robinson College of Business students can apply to study in France and take hospitality courses at Savoie during spring semester each year. Although classes are taught in English, students have the opportunity to be immersed in the French culture. A maximum of three students are accepted to this program each spring semester and preference is given to students who are proficient in French.

The Université de Savoie is located in the historic city of Chambéry in one of France’s leading regions for tourism. The town is at the foot of the French Alps, close to Europe’s most famous ski resorts, natural parks and only 10 kilometers from France’s largest natural lake.

One of our three 2011 exchange students, Alexzandra Fisher, sat down with us to relive her semester abroad. Here’s what she had to say. >>

What interested you about the program? >>The program is located in the French Alps, and I was drawn to the beauty of the country. I also loved that Chambéry, while it draws tourists because of its history, is not a “tourist town.” I was going to a rural town in France, and I would be able to experience what French culture would truly be like.

Why did you decide to study in France? >>I’ve always been drawn to France. That sounds cheesy, I know, but for me it was something about the country. I am interested in the culture, the language, the way of life, the relaxed atmosphere that the French seem to have. For me, it was also the ability to speak French, though now it is far better than I could ever have imagined. I am a passionate person, and I knew I would fall in love with the people, the culture, the food and the scenery. Besides, I would be getting credit for experiencing the hospitality industry in another country.

What did you hope to get out of this experience? >>Personally, I wanted to discover what true French culture is all about. Professionally, I wanted to be able to globalize myself by interacting with others from around the world. My goal was to feel well rounded as a future hospitality leader. Having studied abroad, I definitely stand out from my fellow classmates.

What did you really get out of your time at Université de Savoie? >>I have found my ability to be more tolerant of others and to accept whatever challenges come my way. To do this, I had to step out of my comfort zone. No classroom here at GSU in Atlanta can teach this; my feet had to touch the ground for me to experience the differences of another culture. For me, it was a life-changing experience, and I would totally do it again.

Because I was attending the Université de Savoie as a foreign exchange student, there were other students from around the world studying alongside me. Our common language was mostly French, but we all found that it was the act of serving others through the hospitality industry that brought us together. Because of my time in France, I now have friends from across the globe, all of which are working in various segments of the hospitality industry.

What are your career goals beyond graduation? >>Well, I definitely want to continue working in the hospitality field, especially after seeing and experiencing another dynamic market twenty-three hundred miles away from Atlanta. My expected graduation date is spring 2012, so I am thinking about pursuing an International Business Certificate, or a master’s degree. I love to learn, and studying abroad inspired me to learn more about the world around me. I also want to continue to travel and educate myself about those whom I come in contact with.

Professionally, I would like to be an international hotel director or customer relations manager for an international hotel chain. It will be a perfect way to use my intercultural skills and my improved French language to serve others and meet the needs of those guests who will be staying at the hotel.

What advice would you give to those looking into our study abroad or global exchange program? >>If you are even remotely interested in the program, do some research, ask questions and get answers. The program at the Université de Savoie allows you to take courses in English or French, with basic French courses available for those looking to learn the language.

Being aware of the world around you is important knowledge, and having studied in France, having experienced hospitality in another country, is a phenomenal feeling. I’m so grateful to the School of Hospitality for this life changing opportunity. You owe it to yourself to check out the awesome study abroad programs offered. Hospitality Student Organizations The excitement and diversity of the hospitality industry is reflected in the clubs and professional organizations available to School of Hospitality Administration students. Joining one or more of these organizations demonstrates teamwork and helps students build leadership skills while establishing contacts with industry professionals. Club membership offers opportunities for networking with fellow students, former students and industry leaders. Club activities include tours of hospitality establishments, distinguished guest speakers, social events, conferences and more. And membership in professional organizations during college is linked to an increased chance of success after graduation.

The AH&LA student chapter at Georgia State helps students increase their industry knowledge, gives them access to a network of key hospitality executives, and exposes them to the endless opportunities available within the lodging industry. Members have an opportunity to delve into the world of hospitality and make a name for themselves while still in school. Membership also gives students an opportunity to attend conferences and events sponsored by the AH&LA parent organization.

The student chapter of The Global Soap Project is a community service student organization with close ties to the hotel industry. The parent organization recovers and recycles soap from American hotels and facilitates a process to sanitize, melt and remold it into new bars for distribution to refugee camps in Africa and elsewhere to improve the quality of life and health of refugees and displaced people. Scientific studies indicate that hand washing with soap can reduce the risk of disease by 42-65 percent.

Our mission as the student chapter is to educate the university community about the merits of the Global Soap Project, to recruit local hotels to participate, to raise money and awareness, and to build a solid organization at Georgia State. We aspire to advance the academic and professional development of our members, while helping displaced persons and refugees throughout the world.

Eta Sigma Delta Joe Perdue, Advisor Eta Sigma Delta is a scholastic honorary society for juniors and seniors in Hospitality Administration with a cumulative grade-point average of 3.0 or above. Eta Sigma Delta’s purpose is to recognize the scholastic and professional achievement of students in hospitality management, tourism and culinary arts. The International Association for Exhibitions and Events (IAEE) Jack Morris, Advisor The International Association for Exhibitions and Events (IAEE) is an organization for professionals in the event, tradeshow, meetings, venue and destination management segments of hospitality as well as convention services and hotel/venue sales and marketing.

IAEE is dedicated to educating students on the many facets of this industry as well as providing assistance in gaining industry experience. Members receive monthly updates on available jobs and internships as well as advice and assistance with placement. The Southeastern Chapter of IAEE welcomes student participation at its meetings and annual events.
