History is told through the sacrifices and selflessness actions of others. But history is being made each and every day. And our beautiful city is home to people who are making a change, taking a stand, and helping us grow. Leta Neustaedter Hailing from Reno, Nevada, Leta Neustaedter is natural-born advocate. From a young age, Leta and her sister were involved in marches and protests; not simply as an act of rebellion, but rather, Leta and her family saw this as a way to get involved and be an engaged citizen. “I remember boycotting grapes due to their treatment of farmworkers, and boycotting Nestle due to their dangerous exploitive practices in Africa, marching for gay rights back when Pride was first created, phone banks, mail drops, parade floats—all were various forms of engaging and using our voices and resources for what we believed in,” said Leta. “Being outspoken, standing up for what I believe in, pushing back against the status quo, it is in my blood, I don’t know another way to live,” Leta explained. And it is this exact mentality that prompted her to start Metamorphosis Performing Arts Studio. With a lengthy history in social work, Leta understood the power of performance and the positive impact it can have on mental health. Not to mention, she is incredibly talented—in art, music, writing, and as an educator. Metamorphosis (on Main Street) became a way to open the doors of wellness and potential for the Treasure Valley and beyond. “I have been an activist all my life, I am a Black woman, and I am a social worker concerned about policies, systems, and social justice. The shifts in our country over the past several years—as well as the expanding reach of social media—have created an opportunity and a need for me to find a platform to advocate and educate.” For Leta, it comes first-nature to stand up against oppression, to fight for equality, to break down systematic oppression, and to create a place where art and healing can co-exist. Carlie Young Sometimes we have to hit a low point in order to reach our potentials. For Carlie Young, she knew that all too well. “In 2010, I got sober. I knew I was living a life I was no longer proud of and had come to the "bottom.” Waking up that morning I made a vow to be different and to no longer be ashamed. I knew I would never drink again. That was nine years ago and that promise to myself has become a catalyst of strength for others,” Carlie recalled. Rather than let alcohol consume her life, Carlie pulled herself up and dove head first into something that she was truly passionate about: fitness. Fast forward to 2019, and Carlie just opened her first brick-and-mortar gym—Heart and Core Fitness Studio off Fairview—and is the proud trainer of Carlie’s Angels, a competitive bodybuilding team. Fitness became a motivation, a goal, something to focus on after sobriety, but she quickly learned that she could use her story to inspire others to do the same. By being open, honest, and transparent, Carlie quickly earns the trust and respect of her (over the years) hundreds of clients. “When you’re a kid, you believe you can be anything that you want. But when you get older, that mindset begins to fade. I’m here to remind people that you need to keep that childlike ability to dream and believe,” said Carlie. We love your inspiration, Carlie! Jimmy Hallyburton Boise Bike Project (BBP) founder and CEO, Jimmy Hallyburton, is taking the next step on his mission for climate change awareness and youth advocacy by running for city council. Born and raised in Boise, Jimmy grew up in a house built by his grandpa in the early 50s. It’s safe to say he’s a native. After traveling a while as a firefighter, Jimmy saw a need to speak out and enact positive change in his home town. “I’ve had the opportunity to interact with thousands of people from all walks of life. Refugees, homeless, low-income—and I believe there needs to be a way to make everybody’s voice heard. Everyone deserves a place at the table,” Jimmy said. So, he has made it his goal to do just that. Throughout his campaign, Jimmy has started committees that can help advocate and educate, while bringing the historically-unheard and under-represented voices to the forefront of politics and daily life here in Boise. What’s more, is Jimmy is a firm proponent of creating access to clean air and water for all. He plans to propose a series of interconnected pathways using canal access roads, giving more people access to not only recreation, but also the option for alternative modes of travel, like biking to work. “These networks of pathways could connect us to our surrounding communities like Meridian,” Jimmy explained. “We really are living in a window where we can make Boise what we want it to become, while addressing access (to clean air and water) and making sure everybody’s voices are heard, moving toward a future that includes all of Boise.” So true, Jimmy, thank you! HANDMADE IDAHO HOLIDAY MARKET A curated shopping experience featuring local artists BY ERIKA HEEREN

Are you ready for the holiday shopping season? If you’re looking for something uniquely local, you will want to visit the Handmade Idaho Holiday Market, Saturday, November 23rd and Sunday, November 24th at the El Korah Shrine on Idaho Street in Boise. Event creator Angela Stewart is the owner of Ladybug Press, a letterpress and screen printing business located in Boise. After leaving a corporate design career, Stewart thrived in the Idaho arts community and an environment of creativity. “I loved being able to make something, that’s something I’ve always loved…my business background is as an entrepreneur, but it has grown over the years. There are so many artists that aren’t able to get into the larger shows, we need to have more options [as a community],” Stewart explains. While Stewart acknowledged that there are other holiday markets and artist markets in the area, very few are completely locally focused. Even fewer are strict about their handmade requirements. Stewart and her team of fellow creators decided to create a holiday market specifically for artists based in Idaho who handcraft each part of every product they sell. She meticulously reviewed each artist booth submission to ensure a diverse range of products. “This is a juried, curated show. We rated each vendor based on how much of the product they actually make. We tried to give higher priority to a more handmade craft versus just a designed craft. We have some exceptions, like excellent illustrators, who don’t print their work – but a lot of our artists make everything from the raw materials,” says Stewart. For the discerning shopper, this means eye-catching décor and one-of-a-kind gifts certain to delight every loved one on your list. At the market, you can expect handmade goods from every genre. You’ll be able to find jewelry, bath and body products, and even artisan food and beverage products. Stewart noted that if you are looking for hand-painted mugs, carved wooden spoons, knives, handbags, or knitted items – you’ll be very happy 28


Interior Design in a Pop-Up Setting A special pop-up shop is soon opening its door in the 15th & Grove Building, next to Big City Coffee in the Linen District of downtown Boise. At Grant: A Home Shop, you will find a collection of new, custom and vintage home goods curated by Maren Swank of Maren Baker Design and Kate Chudy of Pepper Design Co. The two designers have sourced a unique mix of product from local makers and exclusive sources, creating a one-of-a-kind shop. Expect a homelike layout in the converted space, with high quality items displayed in a way that shows you what the products could look like in your own space. “There will be a blend of vintage, new, and custom home products,” says founder Maren Swank. “You’ll find different themes and items like art pieces, books, accessories, lighting, rugs, and furniture.” Everything from upholstered pieces to smaller decorative items will be available for purchase, and custom orders are accepted for certain products.

Wear Boise, Sawtooth Glass Project, and Banana Ink will all have booths at the market. Stewart hopes that the event continues to grow. She is looking forward to taking on new artists and more established artists to promote collaboration in the community. There is a waitlist for vendors for this year’s, but Stewart encourages interested artists to submit their information for consideration in the future. The Handmade Idaho Holiday Market will be held on from 10:00 am to 5:00 pm on Saturday, November 23rd, and from 10:00 am to 4:00 pm on Sunday, November 24th. There is no charge for admission. You can also attend a special preview night on Friday, November 22nd from 6:00 pm to 8:00 pm. In addition to more than sixty vendors, attendees will be treated to samples from a local winery, live music, and more. For holiday shoppers, expect a few holiday décor items – specifically for Christmas and Thanksgiving. “It’s not a Christmas shop per se,” Baker explained, “but you can use a lot of these things for the holidays.” Grant: A Home Shop will be open every Thursday, Friday, and Saturday from November 7th through December 21st from 10:00 am to 5:00 pm at 1420 W. Grove Street Suite 3 in Boise. On November 7th and December 5th, the shop will hold extended hours for the First Thursday festivities. Additional times can be reserved by appointment. The designers plan to host a pop-up shop three times per year, each featuring an all-new inventory of hand-selected items. PROTECT, PRESERVE, AND GROW Tree canopy in Boise’s north end BY CHELSEA CHAMBERS PHOTOGRAPHY EMMA THOMPSON

It’s the early 1900s. Boise slowly begins to spread its wings and stretch out of its mining roots. The allure of the Gold Rush lay the foundation for what is now our beautiful and bustling City of Trees. An oasis in the high desert, the Boise River gave life to a variety of trees, making Boise stand out against the surrounding sagebrush. Early settlers saw Boise’s tree-lined potential and helped shape the budding city. The North End—Boise’s most densely treed neighborhood—was once just groves of maples and other trees. Before the boom of Harrison Boulevard, before the unique architecture and beautiful landscaping. In fact, the trees were planted long before the homes were built. Which is one of the reasons that the North End Neighborhood Association (NENA) jumped at the opportunity to be a part of Boise’s Community Forestry Plan. The plan encompasses the city’s overall goal for urban forestry maintenance and involves each neighborhood and city center—bringing them all into the fold over time. For now, the North End is the first neighborhood association to be involved in the plan, partially due to their personal forestry goals. “Our main objectives are to increase tree density and diversity, while safely preserving the trees we have,” said Mark Baltes, President of NENA. By working closely with the City of Boise and establishing a partnership with the Treasure Valley Canopy Network (TVCN), NENA will have a better chance of caring for and maintaining their vast network of trees. 30

“This plan definitely has its challenges,” remarks Lance Davisson of TVCN. “Things like tree age, water consumption, and open space needs each play a role in the Community Forestry Plan. But our partnerships with community groups like NENA can help get things going. Our goals are to collaborate, innovate, and create a sustainable network of urban forestry throughout Boise.” There is currently 16% tree coverage in Boise, and it is the City’s goal to have 20% by 2025 and increase tree density on both private and public lands. “You have to think before you plant. Danica Thurber experienced what most 12-year-olds will never have to- the passing of a parent. It was October 20, 2003 when her father passed away, leaving her mother to be the primary caretaker of the household that included her, her little sister and brother. A year later, another tragic event happened as her grandmother was diagnosed with cancer, later passing away the following year. Thurber found herself struggling with grief and depression as a young teenager, and began processing those feelings through art. Thurber grew up artistic as both of her parents were creative, and found that with no one to talk to, art was her primary outlet. She became obsessed with capturing memories of her father and copying those photos realistically. “I think I was afraid to lose the memories, and copying photos realistically was a concrete way to express myself,� Thurber wrote. When she began to attend college at Washington State University, she found all feelings of grief quickly catch up to her. She began intense counseling, and found 34


New this year is “Holidays After Loss: Art to Help You Thrive” which will help students explore different healthy coping skills for the holiday season. “My goal with Project Grief is to offer the guidance and community that I wish I had when I went through loss. Art is an amazing tool for helping grievers cope with the things of life that can’t be put into words,” she wrote. Thurber also hosts workshops and has a goal to teach more art projects in the Treasure Valley. The next Project Grief workshop is Holidays After Loss, a two-part art workshop focusing on dealing with loss during the holidays. her paintings being more “dark and desperate, but also honest.” Later in college, she became a peer mentor and found herself in a group of friends who had lost one of both of their parents. She began mentoring the younger women in the group, and when emotions welled up, she would bring out paper and crayons and encourage them to draw with her. Afterwards, they’d discuss what they drew while she would ask about the meaning behind their drawings. “I found that in the simple process of creating, and then talking about what they made, the younger student unknowingly exposed their struggles, or guided themselves to their own small breakthrough,” Thurber wrote. She began to study how artists in different cultures use art to express grief. She focused on this concept during her undergraduate senior thesis, where she compiled her artwork and lined up everything she could on the walls of a gallery. She found that she could see where she was hiding or editing her grief and where she was dealing with it. “I saw that the grief process paralleled the artistic process, and if someone struggled at a certain point in their grief process, they likely struggled at a similar point in their art process (and vice versa),” she wrote. “Even more amazing to me, I discovered that finding breakthrough in the art process might also help someone find breakthrough in their own lives.” Through the encouragement of her husband and brother, she took the knowledge and skill she had, and Project Grief was born. Project Grief is an online school that launched in spring 2018 that teaches art as a tool for grief recovery. The master course, which has 10 lessons, lead students from being a grief victim to becoming a grief artist. Project Grief is suitable even if you have no art background, as Thurber said ““Grief art” is its own genre – it’s all about the process that the artist goes through.” 35

When I met Jodeen Revere at Push and Pour Coffee in Garden City one Monday afternoon, I knew I was in for an interesting conversation. A cursory Internet search revealed that this multifaceted woman is the daughter of legendary rocker Paul Revere (of the popular 60s band); a beloved former yoga instructor; current actor and Thai massage therapist, writer of the blog That’s Me in the Corner, and a self-described “kitchen witch.” I also read about Revere’s experiences with breast cancer, which would lead to a new passion: RaDiAnt Body Butter. "I do not like the violent language around cancer: ‘Kill it. Destroy it. War on cancer,’” Revere told me. She’s a petite, glowing 58 years young, with a quick mind that is open to new experiences. “Of course, I do not want to have cancer, and I wish to live, but I see it as a visitor that is here to teach

me to see my life through a new lens. Living with cancer give me a new perspective.” Her f irst two diagnoses and treatments coincided with her father’s brain cancer, which ultimately ended his life in 2014, while she went into remission. Then, almost f ive years later, she found another lump. “The body butter was born from my desperate response to radiation therapy side effects,” Revere said. “My skin burned, cracked, and peeled—and all that the medical world could give me was this horrible petrochemical jelly—like a toxic oil spill--that did nothing to nourish and heal my skin.” Revere decided to turn to nature for a better solution. Be thankful for your teeth Leaves falling from trees in autumn remind me to be thankful for the teeth I have. Sound odd? It comes from the fact that our baby teeth are referred to as deciduous teeth. Like trees? Yes, like trees! Our baby teeth fall out the way leaves fall off a tree. Deciduous. Plus it’s a fun word to say, right? But our baby teeth fall out as our permanent teeth move in behind them. We get one set of permanent teeth and they’re usually in place by age 12. Think about all of the things you go through in life from age 12. Playing with friends, sports teams, bike riding, and so many other things that might have an impact on your teeth. If you’re well into adulthood and still have all of your teeth, good job! Not everyone can say that. What’s the big deal? You have 32 teeth, right? So what if you lose one or two? Your teeth play a bigger role than just chew food. Teeth are an integral part of the structure of the jaw bone. Tooth loss means more than a space in your gum line, it’s a loss of structural support that affects the way you look, chew and speak; it weakens the teeth on either side of the space, and allows the underlying jawbone to deteriorate. Yes, there are ways to replace missing teeth: bridges, implants, and dentures to name a few. But these are expensive, time consuming, and sometimes require filing down the healthy teeth on either side of the space in order to support the dental replacement device. Your own real teeth are best and as you age it’s more and more important to properly take care of them. Preventive care, like brushing twice a day (for 2 minutes each time) and flossing at least once a day is effective in maintaining your oral health at home. If you’re a smoker please consider quitting. Besides the risk you run with lung and throat cancers, tobacco use (of any kind!) is associated with bad breath, yellow teeth, tooth and gum damage that can lead to tooth loss, oral cancer, and a host of other oral diseases. And yes, this includes vaping! Get regular checkups and oral cancer screenings from your dentist and ask about other ways to improve your oral health. Be thankful for your teeth, they’re the only ones you get!

ROOM FOR EVERY FAMILY New Ronald McDonald House will serve three times as many BY MONICA PIERCE

If you find yourself caring for an ill or injured child, having to travel far from home to receive the necessary treatment, you shouldn’t have to worry about things like where to sleep, what to eat, or how to get some laundry done. Ronald McDonald House Charities of Idaho (RMHC of Idaho) is dedicated to supporting families who find themselves in such arduous scenarios by offering a safe and comfortable place to stay that is located near treatment facilities, as well as providing resources and support for the whole family so they can focus on caring for their child. 42

The first Idaho Ronald McDonald House opened on February 1, 1988 with four bedrooms serving such families in need. Over 31 years later, RMHC of Idaho currently operates a 17-room House in Boise, a recently-opened Ronald McDonald Family Room located within the walls of the Eastern Idaho Regional Medical Center in Idaho Falls, plus two Happy Wheels Hospitality Carts in Boise and one in Twin Falls. Although the name is recognized nationally and even globally, RMHC of Idaho is a local Idaho-based nonprofit. It is managed by its own board of directors and run by a lean team of eleven full-time staff and raises all funds through donations and fundraising. While it has helped thousands of families over the years, RMHC of Idaho has recently seen a steady increase in demand and, according to executive director Mindy Plumlee, about five to ten qualifying families currently go unserved each day. In an effort to keep ahead of the demand curve, RMHC of Idaho conducted an in-depth study to evaluate future needs for their services. Evaluating population growth as well as expansion plans of partners like Saint Alphonsus who is growing their pediatric specialties and St. Luke’s who recently opened the St. Luke’s Children’s Idaho Elks Pavilion for pediatric outpatient services, RMHC of Idaho determined that a much larger Ronald McDonald House was in order if they were to continue to meet the needs of our region. Before building a new facility, RMHC of Idaho first needed to obtain a larger piece of property. The property would need to be in close proximity to medical services and RMHC of Idaho needed to be able to purchase the property in order to continue independent operation. Identifying this ideal one-acre property just steps away from St. Luke’s Children’s Hospital, RMHC of Idaho entered into a “land swap” deal with the owner, St. Luke’s. RMHC of Idaho has taken over ownership of the property and, in turn, St. Luke’s will take over ownership and operation of the current Ronald McDonald House, converting it into a facility that offers housing to families of adult patients - a service St. Luke’s has offered previously and is thrilled to be able to offer once again. With an ideal piece of property secured at 139 E. Warm Springs Avenue, work began on the new House. RMHC of Idaho commissioned local firm and long-time RMHC supporter Cole Architects for design and Engineered Structures, Inc. (ESI) for construction of the new House. The team broke ground on February 1, 2019 and is on track to meet its aggressive plan for completion by February 1, 2020, precisely 32 years after the opening of the first Ronald McDonald House in Idaho.

Compared to the current House’s 14,000 square feet which serves 17 families each night, the new house will be 40,000 square feet, consisting of 47 guest rooms, private day rooms, community gathering spaces, and four kitchens. The entire project will cost $15.3 million, including all furniture, fixtures and equipment. Thanks to an amazing community of donors and supporters, as of October 10, RMHC of Idaho has already raised an impressive $12 million and they are on track to raise the remainder. As one might imagine, furnishing a 40,000 square foot house is not an easy - or inexpensive - task. That is why RMHC of Idaho has created a “housewarming wish list” where community members can sign up to buy all sorts of items including sheets, towels, dishes, lamps, irons,

TVs, clocks, cooking utensils - you name it. Even the smallest contribution will help towards that $15.3 million mark and ensure the new House is fully operational and able to serve its families. A conversation with Barbara Perry Bauer is as curiosity provoking and satisfying as a visit to a natural wonder. She makes you want to know more and to understand how Idaho came to be. Barbara has an astounding memory for dates, times, places, names and, well, her favorite topic—old things. Call her a history nerd, and you just made her day. She and her sister, Elizabeth Jacox, are the owners of TAG Historical Research and Consulting, a company that does just what the name says. Their service offerings are broad: historic site surveys and assessments for national historic registration nominations, documentation of sites before planning and construction begins, museum exhibits, interpretive signs, artifact collection management, tours tailored just for your organization and house and neighborhood histories. Want to read about agricultural silos? Barbara wrote a blog for her website that answers your questions. Want to read about Treasure Valley’s railways or legendary locals in history? Barbara and Elizabeth are book authors too. Want to learn why canals and irrigation ditches shaped the treasure valley? Barbara can explain the context and why this development was so important to forming what eventually became modern life in the valley. “Especially with all the new residents moving to Idaho, we want people to understand the special things about Idaho and its history,” says Barbara. “For me, it isn’t that the work we do is earth shattering. Our work reflects on the everyday lives of our community, both past and present.” People mistakenly think that today’s historians sit at a computer all day. “We rarely sit at a computer,” laughs Barbara. She describes wearing boots and tramping along irrigation canals in fields, walking cemeteries, visiting old mine sites, spending time in libraries to find old newspapers, searching archives and records in civic buildings and consulting on set with public television. “We are historians with blisters,” she laughs. To do their jobs, Barbara and Elizabeth team with such professionals as archeologists, engineers, attorneys, developers, realtors and local, state, and federal government officials. Barbara modestly states that while they have been successful because they have a strong background in state history (Elizabeth was the state photo archivist for 14 years) and have worked with some of Idaho’s premiere historians, and there are other historical research companies that also do this work. Barbara’s background includes working to manage fossils at a natural history museum, working for Buffalo Bill’s grandson and managing artifacts for a Plains Indian museum.

Listening to Barbara passionately describe her life’s work, reminds one that maybe parents should not be so quick to dissuade their children from a college major in history. Saying that she will always work as an historian, sharing her passion, rather than retire, she refers to her work as a jig saw puzzle with a missing piece, she says, “The story is never done. With over eight million tons of plastic dumped in our oceans each year, long-time friends Amaia Biain and Sarah Leoni have always tried to do their part to limit their use of plastic. But noting how often they forgot their reusable bags when shopping, the two began to brainstorm a more convenient and stylish way to fight the plastic battle. What they came up with was a to-go kit containing reusable bags and other supplies that can be used every day to reduce their need for disposable plastic. When Biain and Leoni’s kit caught the attention of their family and friends, the duo realized they could amplify their impact by making it available to others. As a nod to their shared Italian heritage and their lifelong reverence for nature, they named their company Paguro which means “hermit crab” in Italian; a creature known for being a great reuser. In early 2019, Biain and Leoni launched their flagship kit, the Crab Bag, which includes two compact, foldable grocery bags, three produce bags (small, medium and large), a boxed utensil set made from sturdy, biodegradable wheat straw, a stainless steel drinking straw with reusable metal straw cleaner and a handmade cloth napkin, all tucked nicely into a stylish, zippered canvas pouch that is hand-stamped with the Paguro logo. The bag can easily be kept in a purse, backpack, bike basket or glove compartment so it’s always ready for use when you need it. “What we’re offering with the Crab Bag is value and convenience, making it easy for people to reduce their environmental impact in a fun and practical way,” says Leoni. “Most people want to use less plastic but aren’t sure where to start. First-generation American, Lobo Lara, creates his Cumbia-style of music to unite and inspire others. His music tells stories through unique beats that move the body—mind and soul. In 2018, Lobo Lara released his first album, Immigrants, and the wave of success that followed was incredible. Shortly after his release, he was signed to a record label—Americano— with El Dusty, musician and producer from Corpus Christi and fellow Cumbia forerunner. With a record label behind his music, things began to move quickly and word of Lobo Lara’s unique musical talent began to spread. Soon, other notable figures in Cumbia, like Svani Quintanilla, took notice and joined with Lobo to create their own remixes of Paletas, one of Lobo’s hit songs. Rooted deep in Columbia culture and history, Cumbia is an expression of art and soul using two different musical mediums: percussion and wind instruments. Cumbia’s distinct sounds are a blending of three different cultures—African, Indigenous, and European. While the original roots of Cumbia are often debated, one thing is for sure: Cumbia is powerful and will absolutely get you on your feet. Lobo Lara was introduced to a wide variety of music styles as a child, and he attributes his eclectic music taste to his upbringing, where his parents would listen to a diverse array of Cumbia, disco, 80s electronic, Reggae, rock and roll, and a lot of rock styles from the 60s. 56

“I truly thank my parents for giving me that diversity,” Lobo said. “Music is like food for me; I can’t have a cheeseburger every day.” Lobo Lara has always had a passion for music, but his musical journey began when he was 13. “I started recording freestyle and written raps on an MP3 player. I’ve been self-taught, so it took me a while to understand how music works. I’ve always teamed up with friends to make music, so I’ve had quite an intersecting journey. I started off with Electropop and from there it went to, Alternative, Hip-hop, Trip hop, psych pop and now Cumbia.” Lobo’s hit Paletas has been storming the Cumbia scene, with popular artists hoping to jump on the bandwagon. “As I was writing the album Immigrants, I wanted to create something super Colorful and Tropical, I was testing my abilities on writing pop music. It’s the first Cumbia Beat I created. After the beat was complete, I didn’t have any lyrics and it stayed like that for a couple months. The hook came to me when I heard a lady selling Tamales, she kept yelling out “Tamales!” That moment got me thinking… and it eventually went from Tamales to Paletas. Once that idea hit me, I started recording right away. berry Ginger Switchel, one of ERTH’s most popular beverages, which is based on an old Farmer’s Almanac recipe for “Haymaker’s Punch.” This was the delicious, refreshing, barely sweet beverage I had been waiting for since I decided to quit alcohol last year. I’m not alone in choosing sobriety for health reasons: So many people are now sober-curious that the New York Times ran a feature article on the movement last summer.

In a blog post for Medium, ERTH holistic nutritionist and master herbalist Sam Chaffin-Benson, who created the company with her partner, biologist, former chef, and craftbeer cellarman Eric Herrera, explained how they named their botanical craft soda company after an 8-day river trip: “Unlike naming a child, naming a business also allows I first discovered ERTH at the 8th Street Capitol City Farmer’s Market on a hot July day. When I sat down with Sam and Eric at Roots Zero Waste Market to discuss the growth of their popular beverage company, Eric told me more about the switchel I had tried. “It’s the original Gatorade,” he explained. “Farmers would drink this to stay hydrated in the hot fields.” The switchel, brewed in small batches of ginger, apple cider vinegar, and local honey, tastes a bit like a sparkling kombucha, refreshing and energizing.

If you’re waiting until Dry January to switch to nonalcoholic beverages, Eric pointed out that all of ERTH's all-natural, honey-sweetened locally sourced beverages are the ideal cocktail mixers—they’ve even provided pairing suggestions right on the cans. “If you’re going to drink alcohol, why not enjoy something that was designed to make you feel better after a hangover?” Eric laughed.

While Eric oversees the switchels, Sam’s passion is her complex botanical craft sodas. Sam and Eric reminded me that in the good old days, a soda was a medicinal drink designed as an elixir for a variety of ailments; by using natural locally sourced ingredients (when possible), they are creating a modern elixir as a healthy alternative to mass-produced, sugar-saturated sodas. Sam’s background as an herbalist using Western herbs within the Chinese formulaic system informs her unique and intentional combinations of ingredients.

As for my holiday party this year, I already know what I’ll be serving: An array of colorful botanical craft sodas from ERTH Beverage Company.
