Mischievous elves take over Caterham Valley this Christmas

B

ringing a sprinkle of Christmas magic to Caterham Valley this festive season, Santa’s elves will be taking over the town to see who has been naughty and who has been nice. The Caterham Valley Christmas Elves Takeover, which offers a month of free family fun until December 23rd, will see the mischievous little elves hiding in shops and businesses around the town. Families are invited to follow a fairytale adventure to find them all and there will be special prizes awarded for those who are successful.

“Having taken a break from their hard work up at the North Pole, Caterham Valley’s team of cheeky elves will be moving in to some of the town’s bestloved shops with their report cards for Father Christmas at the ready,” says Andrew Browne, chairman of Caterham BID (known as Caterham Valley For You) who are organising the event. “We look forward to welcoming visitors to Caterham Valley as they attempt to hunt down our impish guests and take advantage of the great offers in our pubs, restaurants and shops in the build-up to Christmas.” On the elf trail Elf hunters can collect their trail sheets at pick-up points around the town (for full details, see www. caterhamvalley.co.uk) and the trail will run throughout the Christmas shopping season. The challenge for explorers and their parents will be to track down

as many of the elf team as possible and make a note of the situations that they have got themselves caught up in. Handmade in Surrey, the woollen elves will be fetchingly adorned in the distinctive blue and green colours of Caterham Valley For You, and bring an additional fun element to festive shopping. Elf-hunters are actively encouraged to enter into the playful spirit of proceedings and share their Caterham #elfies on Instagram, Twitter and Facebook, where the best photos will be shared. The Caterham BID brings together local businesses and uses its collective influence to help improve Caterham as a place to shop, work and visit. And welcome to the December issue of The Link. December is of course also the Christmas edition, and this month’s magazine is crammed full of Christmas events, recipes and articles, so there’s something for everyone. Starting with the recipes, we’ve given you two Christmas pudding recipes – one for those of you who would like an alternative to a traditional “plum” pudding, and a second one to help you use up any leftover Christmas pudding, or even Christmas cake. I hope you enjoy them both – do let me know what you think of them. As always at this time of year, there are loads of charity and fund-raising markets, hosted by local churches and schools, so do go along and support them – and get your Christmas shopping done at the same time. Christmas is a time to spend with your family, but there are many people – especially senior citizens – who will spend Christmas alone. Spare a thought for them, and if you can, perhaps contact your local church or Age UK to find out how you can help to make a lonely person’s Christmas a little happier. Animal charities are also super-busy during this time of year, so gifts of pet food or donations are especially welcome. And on that note, I will leave you to enjoy this month’s magazine. Have a wonderful Christmas and a happy and prosperous New Year.

To give, or not to give . . . Christmas gift advice from Champ Consultants

T

he festive season is once again upon us. You may be thinking of treating your staff to a Christmas party, perhaps buying them a Christmas gift or even be treated yourself by your clients. How does this Christmas season affect your company and its potential tax liability? We all like to be treated as well as to treat and so we will consider a few bits that we may encounter this festive season. When your company receives a gift If you can reasonably assume that the gift is a genuine no-strings-attached gift then you can be sure to assume it is not taxable. However what you do next with it may have a tax implication. If a cash gift is passed by the company to the directors or employees it has to be treated as taxable salary. However, if the gift is a non-cash one and is worth up to £250 it can usually be given to the director or employees free of tax and national insurance.

Gifts to your employees As an employer you may decide it is nice to treat your staff to a Christmas gift and a way to say “thank you” for their support throughout the year. What you give your staff will depend on how it is taxed. Cash – if you add a bit extra to the salary or put some cash in an envelope to say thanks, this is to be taxed income and treated as additional salary, thus liable to tax and national insurance. Vouchers – if the vouchers are to be used at the discretion of your employee or even at a shop of their choice this is treated as salary. Gifts – an actual present is not liable to tax or national insurance assuming it is of a reasonable value. HMRC do not state a specific amount as being reasonable but you can assume that £50 would be fine. 

Regarding claiming back the VAT, this can be reclaimed for the employee element of the total costs only and not the part for guests. Therefore the VAT can be reclaimed for the cost of your employees but not your guests.

ocal residents will be coming together to remember loved ones at a Caterham Tree of Light service on Sunday 3rd December. The service, which takes place at Caterham United Reformed Church at 4pm, will include Christmas carols and readings, and has been jointly organised by the local St Catherine’s Hospice, and the Caterham United Reformed Church. The Tree of Light service offers bereaved family and friends an opportunity to reflect on the year that's passed and honour someone special by dedicating a star in their memory. Everyone who attends is invited to place a dedication star on the Tree of Light with an in memory donation for each star encouraged. By dedicating a star, you're not only remembering the person you love, you're also helping other people's loved ones. Your donations allow St Catherine's to help people to live as well The Link

The service is open to everyone in the local community, regardless of whether you’ve known someone cared for by the hospice. Last year, St Catherine’s cared for around 2,000 people, with 80 per cent of them in the comfort of their own homes, including across Caterham. Rev Lisa Rainier, Spiritual Care Lead for St Catherine’s, said: "Losing someone close can be one of life's hardest experiences and Christmas can be an especially difficult and poignant time of year. Traditionally, Christmas is a time to be with family and friends so Tree of Light is a great way to remind those who are bereaved that there are others who understand their feelings of loss. In

fact, many people tell me after attending a Tree of Light service they feel more able to appreciate and engage with the spirit of the festive season." he wonderful Christmas festival of goodwill and cheer is upon us, and family members are happily engaged in selecting presents for loved ones and friends. Family ties and friendships are renewed and strengthened at this time. Christmas plants that help to brighten and sparkle indoors are: Azalea, cactus, cyclamen, hyacinth and poinsettia. They should be of good quality and kept warm on their way home from the shops. Surprisingly, there are many garden flowers which are winter bloomers. Outdoors mahonia is a good example. Variegated plants such eleagnus, euonymus and holly add to the colour, and so do the red berries. In inclement weather flick through seed catalogues, and plan well ahead. Gardens are dormant and bare now, so it gives you an idea what design and colour should be introduced next year. As temperatures drop insulate non-frost-proof terracotta pots with bubble polythene. Exposed and vulnerable

shrubs and trees should be secured and protected.

• Maintain hygiene in the greenhouse.

Raising new plants and crops • Pinch out the growing tips of sweet pea seedlings.

• Remove dead leaves from ponds and protect fish with a heater.

• Plant garlic in a sunny spot in dry weather. • Dig a trench 30 cms deep for next year’s runner beans and sweet peas. • Cover rhubarb with dry leaves/ straw, and then with an upturned dustbin to exclude light, for an early crop. • Pot up spring-flowering perennials such as astilbe, dicentra, doronicum, lily-ofthe-valley, polyanthus and primroses. Grow on in a cold frame, unheated greenhouse or on a cool, bright windowsill. Christmas harvest Use well-stored home-grown fruit and vegetables for Christmas lunch, e.g. brussels sprouts, cabbage, carrots, cauliflower, kale, leeks, parsnips, spinach, swede and turnip. New potatoes and fruit are additions. Outdoors • Keep improving your soil with organic matter.

• Prune black, red and white currants, gooseberry, apple, pear and wisteria. • Repair and erect fences, arches and trellis (plants around are dormant now). • Provide fresh food and water for birds. Use gloves to scrub bird tables once a month to prevent E. coli and salmonella infections. The trading hut (shed on the Westway allotments, Caterham Hill) will be closed on Saturday 23rd December and Saturday 30th December. Otherwise you are welcome to visit us on Saturday mornings and perhaps pick up any items that are reasonably priced as possible Christmas presents!! For example, our pre-loved tools and vintage terracotta pots could make unusual and special Christmas presents. Why not give membership of the Society as a Christmas present - only £5 for the year, and includes the whole family.

These days many people continue to hang bunches of mistletoe on the front door or in the house. Another tradition required the plant to be kept in the house until it was replaced the following Christmas, to guarantee year-round luck to the inhabitants!

C

hristmas wouldn’t be quite the same without a kiss under the mistletoe! This iconic festive plant is a slowgrowing evergreen found high in the branches of trees. It continues to grow in winter and when mature can form a ball around a metre wide. Steeped in folklore, mistletoe is associated with many traditions and customs. The idea of kissing under the mistletoe may have originated in a Norse legend in which the goddess Frigga declared mistletoe a symbol of love. Perhaps this was because it

30

appears to grow magically from thin air! In medieval times, if enemies came upon each other under mistletoe, they would lay down their weapons and maintain a truce…until the next day at least! Kissing under the mistletoe became very popular in Victorian times, when a boy could win a kiss from a girl for each mistletoe berry he picked. But its association with Christmas is probably a matter of timing, as the berries appear close to the winter solstice.

Mistletoe is partially parasitic (a hemi-parasite), which means it produces its own food through photosynthesis, while also using a root system on a host tree to take in additional water and nutrients. Contrary to popular belief, mistletoe will not kill its host, but can weaken the branches it sits on. Mistletoe’s Latin name is Viscum album, alluding to its sticky (viscous) white (albus) berries. These take nearly two years to ripen, when they are eaten by the appropriately named mistle thrush, as well as blackcaps and fieldfares. The birds then help disperse the seeds in their droppings or by wiping the sticky berry pulp off their beaks onto branches. Indeed the very word mistletoe is thought by some to come from the Anglo Saxon ‘mistle’ meaning dung and ‘tan’ meaning twig.

However, it is doing quite well in gardens, parklands and on a host of other trees such as limes, poplars, blackthorn, hawthorn and willows. In fact some studies suggest that its distribution is changing and possibly increasing. You can help too, by encouraging mistletoe to grow on trees in your own garden. Finally, if you’re planning on puckering up under the mistletoe this Christmas, please buy yours from sustainable sources. And please make sure you wash your hands after touching the berries, as they are toxic to humans.

Movement in the Garden T

here are various options for getting movement into a garden, some are really obvious like a water feature, others are really more subtle such as encouraging wildlife in for, example birds, butterflies, etc., that can also bring the element of movement in. Plants are another instrument for bringing movement into a garden, the movement of leaves and the resulting rustling sounds they can bring, for example bamboo blowing in the wind, is an excellent way of bringing movement into a very small space.

Water features are a good option. You don’t necessarily have to install a pond to create a water feature, just water bubbling over a stone creates a rippling sound and promotes a relaxing environment. This is a cheap option with just some outside power needed. In turn, a pond with a waterfall can bring in birds as they will be encouraged to come in and bathe, bringing additional movement into a garden. The Japanese are experts in using the element of water in a garden and have a tipping water feature called a Deer Scarer, which is a bamboo chute that fills up with water from a pump and when full tips back and knocks against a rock. Giving movement and sound but not all the time. Increasing wildlife into a garden is reasonably easy: you can feed the animals to bring them in, i.e. birds, or create an environment for them to breed and nest, such as bird boxes. However, having a cat or a pet in a garden would have a detrimental effect on attempting this. If you are really restricted for space and large rustling leaves aren't really an option, but you still have some planting in the garden, putting things like windmills, wind chimes, suspended mobiles, etc. can bring in sound and movement. Nowadays you can also get things that move and are operated by sunlight. Solar powered

ornaments such as fluttering butterflies will rotate when the sun shines on the power cell making it flutter and move around. These are only a few pounds to buy from a garden centre, but will add some interest reasonably easily and cheaply into a very still garden. Planting: I have already mentioned bamboos as a way of adding movement, but some trees have the same effect. Anything with large leaves that can be caught by the breeze will obviously move around, for example an Indian Bean Tree (Catalpa bignonioides). Alternatively you can bring dead wood back to life, for example if you have a dead tree in the garden, rather than taking it out you could grow a vine up it. When the tendrils develop and hang off it they will then move around in the wind and make the space look alive again. This can also be done with a rose, a good strong climbing rose, a Kiftsgate or a Rambling Rector. These are very big climbing roses that will scramble up a dead tree and easily take over.

Another variety is a Banksia Rose which is a non prickly and highly scented rose. Any of these varieties will clamber all over the dead wood and give the visual appearance that the tree has been given a second life. If you have a pond then adding some reeds around the outside will contribute to movement when it is windy. Obviously make sure you get the correct ones, you don’t want something that is going to take over the pond or the roots are going to puncture the liner or base of the pond. If you have a straight forward flower bed and you want to create some movement in there, some fine grasses strategically placed around would be a good recommendation. These will give the impression that they are almost floating and moving around amongst the plants when there is a breeze. Next month I will look at arches and wooden structures.

Christmas Pudding Ice Cream Impress your guests with this showstopping Christmas dessert, as an alternative to a traditional Christmas pudding, and which can be made up to one month ahead

INGREDIENTS

For the boozy fruit 85g raisins 85g sultanas 85g pack dried cherries 100g fresh or frozen cranberries 6 tbsp brandy 2 tbsp dark muscovado sugar For the ice cream 2 cinnamon sticks, snapped in half ¼ tsp ground ginger ½ tsp freshly grated nutmeg ¼ tsp caraway seeds 4 cloves 600ml pot double cream 1 vanilla pod, split and seeds scraped out 3 large egg yolks 100g golden caster sugar oil, for greasing the bowl 6 ginger nut biscuits, broken into chunks zest ½ lemon and ½ an orange For the cranberry syrup topping 85g caster sugar 2 tbsp brandy 100g fresh or frozen cranberries Serves 8

Mix all of the boozy fruit ingredients together in a bowl, then microwave on High for 3 minutes, stir, then leave to cool completely overnight.

For the ice cream Put the spices in a saucepan and gently heat for 3 minutes or so, stirring once or twice, until fragrant.

Tip in the cream and vanilla seeds, and bring to the boil. Meanwhile, whisk the yolks and sugar together.

yy

Whisk the hot cream into the egg mix, then tip the mix into a clean pan and gently heat for 5-10 mins until it coats the back of a wooden spoon.

Pour everything into a bowl or plastic container and leave to cool completely. If possible, chill it overnight as this will infuse the ice cream with a stronger Christmassy spice flavour.

Pass the mix through a sieve into another container, then freeze for 5 hours, stirring in the frozen edges

Oil a 1.2-litre pudding basin and line with cling film.

Drain the boozy fruit in a sieve, mix the fruit with the ginger nuts and zests, then quickly stir into the ice cream. Tip into the basin, cover the surface with cling film, then freeze for at least 6 hours.

METHOD To make the pudding yy Blitz together the chopped pudding and custard in a food processor. yy Whip the cream and sugar to soft peaks and stir into the flavoured custard. yy Pour the mix into a 1.2 litre/2 pint pudding basin, then cover and freeze overnight or for several hours. (The pudding can be frozen for up to 1 month.) For the sauce

INGREDIENTS For the pudding 450g Christmas pudding, roughly chopped into small pieces 500g carton ready-made custard 142ml carton double cream 25g caster or icing sugar For the orange sauce 4-6 tangerines or satsumas, peeled 300ml orange juice a splash or two of Grand Marnier or Cointreau (optional) 100g caster sugar To serve holly sprigs icing sugar for dusting Serves 8

yy Cut away the pith and peel from the tangerines or satsumas with a sharp knife, then cut either side of the membranes to release the segments. yy Bring the orange juice and caster sugar up to a boil, stirring occasionally, until the sugar is dissolved. Then boil hard for 20-25 mins, until reduced by about half to a thick syrupy consistency (like golden syrup). Watch it carefully so it doesn’t boil over, lowering the heat if necessary. yy Leave to cool, finishing with a splash or two of your chosen liqueur, if using. Can be kept chilled for 3-4 days. To serve yy Transfer the pudding to the fridge 30 minutes before serving, then dip the basin into hot water and turn the pudding out onto a chilled plate. yy Arrange some of the fruit segments around the base of the pudding, and some on top. Drizzle with some of the syrup and serve the rest separately. yy Finish the decoration with holly leaves and a dusting of icing sugar.

Winter’s Promise

I

n the unseasonably warm days of October I witnessed a killing. It was made more brutal and painful to watch because of the fragility and beauty of the victim. A hornet had caught a Red Admiral butterfly. In doing so the hornet answered my question in September: were they after the sugars from the windfall pears, or the butterflies? Watching the struggle between the two insects, my first reaction was to intervene. I didn’t. For what I was witnessing was a natural course of events; the hornet has to live too, it has its place in the order of life. And so I walked away from the grizzly scene not wishing to watch the hornet eat its lunch. Walking out onto the Hills early on the morning of Storm Ophelia I noticed that the sheep in the deer park had corralled themselves into a perfect circle as if they were a wagon train defending themselves

against attack. Perhaps they knew something the forecasters didn’t and were preparing for Ophelia’s worst. Was this going to be another Michael Fish moment? Thankfully, not here, but others suffered at Ophelia’s hands. Apart from the red sun, caused apparently by dust and debris from wildfires in Iberia and Saharan dust, there was little to get excited about. The storm moved on and in the callous way of extreme weather events, the following day was brilliant and bright, as though nothing had happened. October faded into the mists of November, the red admirals disappeared. With Halloween came shorter days, the winter nights drew in. A time to stay indoors by the fire with a hot drink and crumpets smothered in butter and honey. For some people it’s a time of melancholy, the world seems lifeless, with nothing to look forward to except Christmas. But look closely and the promise of light

and new life is there, ready to be woken, ready to be born. In autumn and winter the cycle of life has begun again for many. The red deer hinds are already carrying their unborn calves. By Christmas the winter solstice has passed and minute by minute the days are lengthening. Before the end of February the vixens will have mated. Grey-green hazel catkins have been waiting since autumn, cer-tain of the warmth and longer days of another Spring. Then they will bloom sending golden clouds of pollen on the wind. And, as if to cheer us all, the robin will sing all through winter, a lone herald before the real dawn chorus begins, when newborn fox cubs will lie safely in their den, and the red deer calves will be taking their first tee-tering steps in a strange new world.
