December is of course also the Christmas edition, and this month’s magazine is crammed full of Christmas events, recipes and articles, so there’s something for everyone. Starting with the recipes, this month we’ve given you two - both Christmas pudding recipes – one for those of you who would like an alternative to a traditional “plum” pudding, and a second one to help you use up any leftover Christmas pudding, or even Christmas cake. I hope you enjoy them both – do let me know what you think of them. On to the events, and one event you really must not miss is the Tudor Yuletide on Saturday 2nd December. This Christmas fair promises to be the highlight of the year with plenty to see and eat and buy. And if you would like to be a “Yuletide trader” then give Helen Moody at Enchant & Allure a call to arrange your pitch! On a more serious note, Christmas is a time to spend with your family, but there are many people – especially senior citizens – who will spend Christmas alone. Spare a thought for them, and if you can, perhaps contact your local church or Age UK to find out how you can help to make a lonely person’s Christmas a little happier. Animal charities are also super-busy at this time of year, so gifts of pet food or donations are especially welcome. And on that note, I will leave you to enjoy this month’s magazine. Have a wonderful Christmas and a happy and prosperous New Year.

Dementia Support and Advice As a dementia progresses, life can become increasingly difficult for both the person diagnosed AND their loved ones. Ongoing changes in relation to a person’s cognitive abilities, behaviour and communication skills all take a toll on everyone involved. With my qualifications and experience in working with those with dementia, I attempt to identify, monitor and assist with current problems - be they environmental, behavioural or cognitive. In many cases I hope to be able to not only aid understanding, but offer practical suggestions or strategies to adopt or employ. I especially look to provide emotional and practical support to the main carer and to assist in furthering their knowledge and understanding of the dementia in question, thereby improving their ability to: both look after and have the very best of relations possible, with the person diagnosed.

No one should be alone at Christmas

he festive season is usually a time for celebration with those you love, but for too many older people it can reinforce feelings of loss, loneliness and of life passing them by. Imagine spending Christmas Day completely alone, unable to leave your home and with nothing but your television for company. It’s a depressing thought, but it’s also the stark reality for approximately 1 million older people across the country. People can become socially isolated for a variety of reasons and many older people go for long periods of time without seeing or speaking to anyone.

Winter’s Promise

I

n the unseasonably warm days of October I witnessed a killing. It was made more brutal and painful to watch because of the fragility and beauty of the victim. A hornet had caught a Red Admiral butterfly. In doing so the hornet answered my question in September: were they after the sugars from the windfall pears, or the butterflies? Watching the struggle between the two insects, my first reaction was to intervene. I didn’t. For what I was witnessing was a natural course of events; the hornet has to live too, it has its place in the order of life. And so I walked away from the grizzly scene not wishing to watch the hornet eat its lunch. Walking out onto the Hills early on the morning of Storm Ophelia I noticed that the sheep in the deer park had corralled themselves into a perfect circle as if they were a wagon train defending themselves

against attack. Perhaps they knew something the forecasters didn’t and were preparing for Ophelia’s worst. Was this going to be another Michael Fish moment? Thankfully, not here, but others suffered at Ophelia’s hands. Apart from the red sun, caused apparently by dust and debris from wildfires in Iberia and Saharan dust, there was little to get excited about. The storm moved on and in the callous way of extreme weather events, the following day was brilliant and bright, as though nothing had happened. October faded into the mists of November, the red admirals disappeared. With Halloween came shorter days, the winter nights drew in. A time to stay indoors by the fire with a hot drink and crumpets smothered in butter and honey. For some people it’s a time of melancholy, the world seems lifeless, with nothing to look forward to except Christmas. But look closely and the promise of light

and new life is there, ready to be woken, ready to be born. In autumn and winter the cycle of life has begun again for many. The red deer hinds are already carrying their unborn calves. By Christmas the winter solstice has passed and minute by minute the days are lengthening. Before the end of February the vixens will have mated. ave you recently acquired a new puppy or kitten or thinking about getting one? Did you know, Leadon Vale Vets offer a free health check for all new puppies and kittens? Getting a new puppy is a very exciting time for the whole family and there will be a lot of information to take in, including: feeding regimes, vaccination status, how to socialise your puppy and much much more. Why not take advantage of our free health check for your puppy. At this appointment one of our vets will carry out a head to tail check of your puppy, discuss worming and flea treatment, address any questions you may have and all of this will give your puppy a pleasant experience of a trip to the vets. The majority of breeders re-home puppies at 8 weeks of age, by which time, some of them will have already had their first vaccination and they will be micro-chipped. The second part of the initial vaccination course is given 4 weeks after the first Ledbury Focus

injection. Microchipping can be done at the health check or vaccination appointment at a discounted rate which includes online registration by the practice. Whilst getting a new kitten is just as exciting for the family and there will be a lot of information to take on board, this tends to be less than you get when buying a puppy. Unlike puppy breeders, it is unlikely that kittens will be re-homed having started their vaccination course (unless they are from a rescue centre), so we recommend kittens start their vaccines at 9 weeks of age and the second part is given 3 weeks later. Your free kitten health check can be carried out either as soon as you get your kitten or at the first vaccination appointment.

hank you to everyone who emailed and called me over pruning apple trees, which I featured in November’s issue. I am pleased it has pointed you in the right direction. Don’t forget, you have until February for apple trees to be pruned. This is also the same with roses, so do not worry, you have not missed the boat and, as promised, here is some advice.

December is now with us, the winter is setting in, and it’s a good time to prune your roses. The aim is to remove damage and reduce height. Roses do not have a great root stock and the winter weather can cause damage with wind rocking the roots. First of all, you are looking to take out what I was taught are the three D’s: dead, diseased or

damage wood (as cleanly as possible). If you’re unsure if the wood is dead a simple way is to gently scratch the bark and if it is not green underneath then it is dead. This method can be followed from the top of a suspected stem all the way down to the base. Once the three D’s are cut out, they and all their leaves should be removed and burnt as they could contain disease such as ‘black spot’ or ‘rust’ that you do not want carrying onto next year’s growth. When pruning a stem cut just above a leaf bud, cutting away from the bud so that any rainwater runs away from the new bud. As a rough guide, a rose needs to be cut back to five buds from where this year’s growth started. It can then be reduced again in March back to the strongest looking bud. Following December’s pruning I would recommend a winter wash spray (a number of products are on the market) to help keep disease down to a minimum.

I would not recommend feeding, because if there are a few weeks where the winter weather is good, you don’t want the plant to put on new growth that is then going to be damaged by frosts. However, mulching around the base of the plant with either horse manure or leaf mulch will help to protect the roots. When to spray or not to spray? That is the question. Spraying roses is always best done to prevent diseases. If you have spent all this effort keeping them free of ‘black spot’ etc. then it would be a real shame to lose out through not catching diseases early.

hâteau la Tulipe de la Garde is a muchrespected winery that continues to receive prestigious awards for their wine productions and is situated between Saint-Émilion and the Dordogne River, in the Bordeaux region of France. Dating from the middle of the 14th century, the estate was purchased by Dutch rock star, writer-composer, Ilja Gort, during 1994. Having only a small amount of knowledge about winemaking, but wanting to live in a peaceful environment, Ilja developed the family business and can be justifiably proud of all achievements. Located north-east of Bordeaux, the climate of

this area enjoys a good amount of sunshine and grows numerous grape varietals, with highquality grapes, for producing exceptional wines. Château la Tulipe Bordeaux Supérieur is an excellent blend of Merlot, Cabernet Sauvignon and Cabernet Franc grapes. Aged in French oak barrels, this production has an intense red colour. Ripe, dark fruits, are in abundance for the bouquet. The smooth, dry palate sensations follow through, with a most impressive finish, to complete. A very pleasant and popular wine, having a richness to savour. The Company also produces wines under the 'Slurp' label. Slurp Cabernet Syrah Red has Cabernet Sauvignon and Syrah grapes utilised to great advantage. Ripe and juicy, this wine has many 'followers', being easy-drinking and with positive flavours. Smooth and popular, this production has a good body and is well-balanced. Slurp Chardonnay also has a good number of 'devotees'. West Mercia Police Drink/Drug Driving Campaign 2017 Don't Drink or use Drugs whilst Driving Campaign 2017 Ledbury Safer Neighbourhood Team will be visiting licensed premises to distribute leaflets and posters highlighting the consequences of driving a motor vehicle whilst under the influence of alcohol or drugs.

hroughout the festive period and over the new year West Mercia Police will operate the Christmas Don't Drink Drive & Don't Drug Drive Campaign.

Police will be working alongside both our sister organisations, Ambulance and Fire, in the hope of educating and persuading motorists not to drink or drug drive. The consequences of doing so can not only be financially dire to those caught, it can also be very tragic, leaving families with loved ones that are injured or killed as a result of an accident caused by a drink or drug driver. Those that are caught face severe penalties including long driving bans, heavy fines and greatly increased insurance premiums if they get their licence back.

Police Officers, including our road policing teams, will also be out and about in Ledbury to stop and interact with the public, and where necessary administer the tests. This is to ensure our roads remain safe over the festive period for the law abiding public.

have lived in Parkway for 10 years and love the warm friendly atmosphere of the hamlet itself and of Ledbury close-by. I feel lucky to live in such a wonderful place. My professional background is in biology and computing. I have worked my way up to a management position and I now run my own business from home. I hope these skills will be an asset to the council and that I can help to make a difference and give something back to the community I am fortunate enough to call home.

Citizens Advice Service Update Many have missed having a CAB office in Ledbury. The outreach service is now run by South Worcestershire Citizens Advice. They are in Ledbury on the first Tuesday of each month at Ledbury Community Hall, Lawnside Road. Anyone living in Ledbury can arrange a confidential appointment with an advisor for help with a wide range of issues – money advice/budgeting, welfare rights, housing, employment issues, consumer problems and much more. Trained, impartial advisors help to manage problems or simply provide accurate and timely information at no cost to the user.

T

his month, Herefordshire Wildlife Trust looks at some of the wildlife traditionally associated with the festive season in more detail . . . Robin The robin is one of the most familiar birds of Britain and a regular visitor to our gardens. Robins are also common in parks, scrub and woodland, making their presence known with a loud, territorial song. They sing from prominent perches

right through the winter, when both males and females sing and hold territories, and are fiercely territorial, driving off intruders and even fighting. During the breeding season, the female is allowed into the male's territory where she sets up a nest of dead leaves, moss and hair. Nests often crop up in the oddest of places such as plant pots, old wellies and shelves but ivy and other shrubs are their natural choice. Robins have been appearing on our Christmas cards since the practice of sending cards at this time of year was introduced in the mid-Nineteenth Century. This is credited to the fact that postmen, who wore red coats, were nicknamed ‘Robins’ or ‘Redbreasts’ so this jolly-looking bird became forever linked with festive

greetings. Earlier folktales also tell how the robin tended the fire warming baby Jesus in the stable; the fire’s flames making his breast glow red. Holly Holly is one of our most familiar evergreen trees, its bright red berries and glossy leaves bringing colour and life into our gardens and homes in winter, and especially at Christmas (the berries and thorny leaves are said to symbolise Jesus's blood on the crown of thorns). Our wildlife enjoys holly, too: the berries are an important food source for many birds like redwings and fieldfares, and mistle thrushes guard their own berry-laden bushes with such voracity that they'll chase off any potential thieves. The Norway Spruce has been commonly used as a Christmas Tree in Europe since the tradition was introduced by Prince Albert in the Nineteenth Century. Norway spruce trees provide a habitat for a variety of wildlife, including beetles, weevils and hoverflies. Caterpillars of moths which feed on the foliage include the spruce carpet, cloaked pug, dwarf pug and barred red. The cones are eaten by red squirrels where populations exist.

Mistletoe Mistletoe, the instigator of many a Christmas kiss, is also a winter treat for many birds such as the mistle thrush. Once the berries have passed through the thrush, the indigestible berries can be seen suspended from branches by a sticky serum which is how mistletoe spreads to new trees. To some minds, this creates a rather pretty decoration though the effect is somewhat ruined by knowing its origins! Ledbury Focus

Driving with a difference

Community Action Ledbury are appealing for volunteer drivers reimbursed for their mileage by the charity. They can choose to do as little or as much driving as they like. Sarah Beard says “We offer drivers jobs at least two days in advance and they can choose whether or not they do them.” Typically the volunteers commit to do one or two days per week. Volunteer driver Graham Every, who is also a Trustee, says: “I love it. You meet some amazing people and make a real difference. For some people the service is an absolute lifeline.”

We even take them to the pub.” The service makes a real difference to people's lives; helping with access to healthcare, staying independent and overcoming the isolation of living alone. The volunteer drivers use their own cars and are

Spokesperson Jan Long who was one of the founders of the shop in November 2013 said: “When we started it was really on a wing and a prayer and we heard tales of community shops closing within a year or two, so the early days were a real challenge. Yet despite our collective inexperience, the economic downturn and other uncertainties, we overcame the obstacles and achieved success on many levels, including going into partnership with Shabby Chic antiques that has

Christmas Pudding Ice Cream Impress your guests with this showstopping Christmas dessert, as an alternative to a traditional Christmas pudding, and which can be made up to one month ahead

INGREDIENTS

For the boozy fruit 85g raisins 85g sultanas 85g pack dried cherries 100g fresh or frozen cranberries 6 tbsp brandy 2 tbsp dark muscovado sugar For the ice cream 2 cinnamon sticks, snapped in half ¼ tsp ground ginger ½ tsp freshly grated nutmeg ¼ tsp caraway seeds 4 cloves 600ml pot double cream 1 vanilla pod, split and seeds scraped out 3 large egg yolks 100g golden caster sugar oil, for greasing the bowl 6 ginger nut biscuits, broken into chunks zest ½ lemon and ½ an orange For the cranberry syrup topping 85g caster sugar 2 tbsp brandy 100g fresh or frozen cranberries Serves 8

Mix all of the boozy fruit ingredients together in a bowl, then microwave on High for 3 minutes, stir, then leave to cool completely overnight.

For the ice cream Put the spices in a saucepan and gently heat for 3 minutes or so, stirring once or twice, until fragrant.

Tip in the cream and vanilla seeds, and bring to the boil. Meanwhile, whisk the yolks and sugar together.

Whisk the hot cream into the egg mix, then tip the mix into a clean pan and gently heat for 5-10 mins until it coats the back of a wooden spoon.

Pour everything into a bowl or plastic container and leave to cool completely. If possible, chill it overnight as this will infuse the ice cream with a stronger Christmassy spice flavour.

Pass the mix through a sieve into another container, then freeze for 5 hours, stirring in the frozen edges

To turn the pudding out, let it sit at room temperature for about 15 minutes, then turn onto a plate. Ease the cling film away.

Iced Christmas Pudding Mousse This recipe is a great way to use up leftover Christmas pudding, whilst adding a special twist . . .

METHOD To make the pudding yy Blitz together the chopped pudding and custard in a food processor. yy Whip the cream and sugar to soft peaks and stir into the flavoured custard. yy Pour the mix into a 1.2 litre/2 pint pudding basin, then cover and freeze overnight or for several hours. (The pudding can be frozen for up to 1 month.) For the sauce

INGREDIENTS For the pudding 450g Christmas pudding, roughly chopped into small pieces 500g carton ready-made custard 142ml carton double cream 25g caster or icing sugar For the orange sauce 4-6 tangerines or satsumas, peeled 300ml orange juice a splash or two of Grand Marnier or Cointreau (optional) 100g caster sugar To serve holly sprigs icing sugar for dusting Serves 8

yy Cut away the pith and peel from the tangerines or satsumas with a sharp knife, then cut either side of the membranes to release the segments. yy Bring the orange juice and caster sugar up to a boil, stirring occasionally, until the sugar is dissolved. Then boil hard for 20-25 mins, until reduced by about half to a thick syrupy consistency (like golden syrup). Watch it carefully so it doesn’t boil over, lowering the heat if necessary. yy Leave to cool, finishing with a splash or two of your chosen liqueur, if using. Can be kept chilled for 3-4 days. To serve yy Transfer the pudding to the fridge 30 minutes before serving, then dip the basin into hot water and turn the pudding out onto a chilled plate. yy Arrange some of the fruit segments around the base of the pudding, and some on top. Drizzle with some of the syrup and serve the rest separately. yy Finish the decoration with holly leaves and a dusting of icing sugar.

n this article, I share with you some of my top tips on how to keep yourself balanced, happy, healthy and stress-free throughout Christmas and New year. I will also share some self-help techniques that you can try for yourself. Nutrition When we are deficient in certain vitamins and minerals it can have serious implications for our health and well-being. I will often recommend supplements and remedies when appropriate for the individual. My go-to vitamins and minerals for this time of year include; Zinc, Vit D3 and Vit C for immunity and a good multi-mineral complex as we are often deficient in many minerals and these are important in a variety of different ways. Whilst I am not a fully qualified nutritionist I have trained in nutrition and use my Kinesiology testing to advise clients on basic nutrition that will complement the hands-on work we do. Get your lymphatic system moving The best way to get your lymph moving is to get your body moving. Gentle appropriate exercise stimulates the body on many levels releasing endorphins, getting the blood pumping around the body and getting the lymphatic system working at its best. Having a healthy lymphatic system helps the body eliminate toxins more efficiently which in turn helps the body feel better. Walking, swimming and also rebound exercise on a mini trampoline are my favourites! Rebounders are very

effective at getting the lymphatic system moving, and in building cardiovascular and muscular strength fast. 10 minutess on the rebounder is equivalent to 30 minutess jogging! Keep well hydrated We need water to help all of our organs function properly, protecting our joints, carrying oxygen from cell to cell, maintaining body temperature and a whole host of other vital functions. In practice, I have seen clients in chronic pain begin to drink more water and their pain levels significantly diminish. Take some time to feel good When we feel good we release a whole host of balancing hormones and neuropeptides from Oxytocin to Nitric Oxide. These help the body in so many ways. Essentially, they are helping our nervous system back into its parasympathetic state where healing and repair can occur. Try and do something you enjoy every day to help this process. A great example is spending time with loved ones and pets helping to release oxytocin, known as the bonding or love hormone! Take 5 minutes right now • Recall one thing that makes you smile. • Really get into thinking about whatever it is. • Pay attention to how this feels in your body. Do you feel heat anywhere? Are you beginning to feel a warm glow in your solar plexus area? Is your breathing slowing down?

• When you have spent about 2 mins thinking about whatever it is and experiencing how it makes you feel take your index finger and tap the space between your eyes whilst still thinking. Do this for around 30 seconds or more if it feels good. • This technique literally taps the thought and feeling in at a cellular level. Charity Christmas Card Shops Pop-Up in Ledbury to Support Good Causes

C

ards for Good Causes, the UK’s largest multi-charity Christmas card organisation, has opened a pop-up shop in Ledbury, getting the festive season under way. The shop will be open until the 15 December in Ledbury Heritage Centre on Church Lane. The shop sells charity Christmas cards and a gorgeous range of gifts, wrapping and advent calendars on behalf of over 30 national and local charities including Herefordshire Wildlife Trust and St Michael’s Hospice. Included in the range of cards is a selection of local Herefordshire scenes including two cards depicting lovely wintery scenes of Ledbury. Staffed by teams of local volunteers, the pop-up shop in Ledbury is part of a network of more than 300 shops run by Cards for Good Causes. National charities which benefit from sales in the shop include Cancer Research UK, Barnardo’s, NSPCC, Alzheimer’s Society and RNLI. Buying Christmas cards through Cards for Good Causes is the best way to get access to the widest selection of Christmas cards available. You’ll find fabulous gifts, decorations, wrapping and stocking fillers too. From colourful tea towels and festive napkins to traditional advent calendars and candles, Cards for Good Causes has a wide array of items that will get your Christmas off to a great start.
