I

t is 2012, and for most of us, freedom rings true. Freedom rings as true as it ever has for people in this country or any country for that matter. We eat, sleep, study, and roam freely without any vicious force constantly imposing on our will to be human. It is 2012 and for some of us, freedom is still a dream, a dream that quenches the thirst in some instances, say in a political election or financially, but quickly is taken away, to assume its role as a dream.

Trayvon Martin is exactly the kind of event that causes this freedom that most of us take for granted as reality, to revert back to a dream. Hopefully by now, most people have an idea what accompanies the name Trayvon Martin, 17 year-old black high school student, walking home at night, armed with Skittles and George Zimmeran, his murderer, making presumptuous, heinous assumptions about Martin’s danger, armed with a handgun, shoots him in the chest on the sidewalk, and of course, the Sanford City Police department who refuses to see the event as it is, a murder. In the ensuing months, Martin’s family and friends mourned their son’s death and grieved the absence of justice. The social conscious, well-informed readers and news followers grew upset and impassioned, wanting to do something, and now the news trickles through, towards passive listeners on newsfeeds and timelines. Regardless of where one may fall in relation to the Martin case, understand that there is no distance too far in which one does not play a role. There was once a time in the history of the world, where ignorance was once excusable, tolerable even. Now is not that time and if anything, modern day technology has created a global stage in which WE, the consumers, the readers, the texters, the travelers, the students, the people, all play a role. The role may not always be on the front lines of a megaphone chanting, sign wielding mob, nor does it imply that all of our time and efforts are dedicated to “the cause.” What it does mean is that silence is not an option. Holocaust survivor and Jewish writer, Elie Wiesel understood this on a level that is of the utmost profundity: “to remain silent and indifferent is the greatest sin of all.” Silence is no longer an option. Silence is not an option for Troy Davis, urban public schools, Kony2012, and now more than ever, silence is not an option for Trayvon Martin. The Trayvon Martin case shook me as I hope it did all of its followers. It shook me because unlike Kony2012, the victim of the Martin case was me. The victim was me because of the fact that Martin, before this night, most likely heard freedom ring true. He felt safe to walk home, he wasn’t denied service at the 7-11, and he lived in the same neighborhood as Zimmeran but nevertheless, the freedom under which he operated, failed him as it continues to fail all of us if we continue to remain silent. In no way am I attempting to compare tragedies. A life is a life is a life, regardless of who’s it is, in what country, or skin color. Ugandan refugees, indigenous people in South America, Trayvon Martin, or an unfortunate loved one that may happen to suffer from injustice are the people that need support, require thought, and call for voices. Indifference is not an option, silence is inexcusable, and apathy is a form of hatred. Stand for anything and say something. By: Jordan T. Pierce the Night…

A Cry for Justice

F

rom “Hoodies on the court,” to “Hoodies on the Hill,” protesters of all nationalities peacefully occupy streets and cities around the globe demanding justice in the case of 17-year old, Trayvon Martin, who was fatally shot in Sanford, Florida, just north of Orlando. The February 26, 2012 killing by Geroge Zimmerman, a neighborhood watch captain of an unregistered association, and the subsequent Sanford Police Department’s fumbling of the facts and the evidence surrounding the case, contribute to the mounting frustration of protesters almost daily. Answers that are slow to come, and a resolve even slower, juxtapose the increased anxiety and anticipation of the potential outcome of what is proving to be a landmark case that has caught the attention of the nation and the world. Landmark because of the law in Florida (Statutes 776.013 and 776.032) since 2005, which vaguely describes how a person feeling threatened is allowed to defend themselves and subsequently be immune from prosecution under certain circumstances; and ambiguously ascribes responsibility to the citizen, law enforcement, the judge, the jury, or neither to determine its applicability to a situation. In recent weeks, marches and rallies from New York to London show demonstrators donning “hoodies for justice,” pleading for the arrest, charge, and subsequent conviction of Martin’s 28-year old, “911 serial-caller” killer. George Zimmerman claims he was defending himself, while the majority of others believe Trayvon, an unarmed, Skittles™-sporting and Arizona Iced Tea™toting teen was simply minding his business, one rainy night in Florida. During the NBA’s 2012 All Star Game weekend in Orlando, Florida, only a few miles southwest of Sanford, a scuffle ensued, a cry for help rang out, and a shot pierced the night. A shot that would pierce the sensitivities of millions around the globe, penetrating the once –removed emotions connected with the struggles for justice won by the Civil Rights Movement of the 1960’s. The news of the devastation would gradually seep beyond the streets of Sanford before it would ring out as a rallying cry for a modern-day movement borne on 6

the backs of generals of justice, while being walked out by the feet of a new generation of protestors whose simplistic petition is “is there really liberty and justice for all?” Trayvon Martin’s death devastated his unsuspecting family, while alerting a sleeping democracy that something in Sanford “just ain’t right!” The harsh reality is that Sanford’s issue is only symptomatic of Florida’s condition, and the nation’s case at large. It appears the heart of our society may have experienced a blockage…a build-up of suppressed, calcifying social ills, stressing the temporary stints that were only in place long enough to stave off another cardiac arrest. Only this time, families, governments, and citizens everywhere are looking for a permanent resolve. Trayvon Martin’s death may very well be one of this period’s stress tests required to prove the strength of our society’s stability, or to reveal the reality of its vulnerability...vulnerability to prejudices and pronounced ignorance, apathy and lethargy. Another black youth has lost his life, another mother her son, and another father, the image of himself, in the boy who will never mature to manhood. As the world watches and waits for the law to be clarified, re-defined or even repealed and justice to prevail, the parents of Trayvon Martin (Tracy Martin and Sybrina Fulton) stand mourning in the midst of a chain of solidarity from sea to shining sea, hoping that their confidence in our justice system will be strengthened and not shattered, with the arrest and subsequent conviction of George Zimmerman, Trayvon Martin’s assailant. Our hearts grieve with the entire Martin and Fulton families as we await the sound of justice and the echo of freedom ringing from the streets of Sanford, Florida to the steps of Capital Hill. In the meantime, just as a shot pierced the night on that dreadful February evening, rise up in the night and pray for peace within our streets, and stand up in the day to demand accountability and responsibility from those occupying elected seats. Do this with your voice, and more profoundly with your vote.

C.A.R.V.E. I

can't really think of anyone in my circle who has a life that is as busy as mine. I'm sure there are some, but I just don't know them. This week I finally came to grips with the fact that I am legitimately a busy person. Being busy isn't necessarily a bad thing; it's busy without balance and or boundaries that creates and cultivates chaos in our lives. I have discovered something very profound in my own life- so profound in fact, that I felt the need to share it. In my time of reflection I quickly began to realize that in all of my busy-ness, I have neglected to take time for me!! Such neglect can cause a person to lose touch with who they really are and all of the things they enjoy in life. If the truth be told, it probably isn't so much that we lose who we are, as much as it is us losing sight of the guide markers that help us to navigate to the person we are supposed to become. I believe that there are so many important things in our lives that go undone because we do not give them proper attention. It can be as simple as committing to reading your bible daily. If we do not set aside time each day, we could look up and realize we haven't read our bible (outside of the church setting) in days...weeks...maybe even MONTHS! This doesn’t just go for spiritual things but it goes for natural things as well. Americans spend millions upon millions of dollars on gym memberships that they do not consistently use... Why? Because they do not “carve” the time out of their schedule to give attention to their health. Some of us (myself included) do not rest properly or even get proper relaxation time because 8

we do not “C.A.R.V.E” out the time. We C.A.R.V.E. Out time for the things that we give priority to. In order to redefine our lives we have to realign our priorities. I am writing about this because it is an area that I struggle with personally at times. I have three books that I should have completed a long time ago. But because I have not C.A.R.V.E.D. out the time to make it happen, the books that should already be on the store shelves are still sitting unfinished on the hard drive of my computer. I want to introduce to you the C.A.R.V.E. principle and challenge you to implement it into your everyday life.

Create a space for yourself each day to pursue your personal aspirations

Assertively protect those moments as your own. Remember that a lot of people may not embrace this process because it means you take some of your Attention off of them and their needs. Value your right to do something for YOU. Examine and celebrate your progress often. Tracking your progress reveals that progress is actually taking place. Celebrating your progress provides the fuel to make more progress. There is an old colloquialism that says, “It's a poor frog that won't praise his own pond.” I am challenging everyone to take the C.A.R.V.E. challenge with me for 30 days. A LifePath Man

S

ince coming to prison in 2003, I’ve tried to maintain a position where I could give back to others. In every institution, I’ve spent my days in an education department helping men obtain their GED’s. For me, it is a wonderful feeling to watch men of all ages realize they are truly intelligent. I believe the Word of God to be true, and Jesus clearly stated in Matthew 25:29, “For everyone who has, more shall be given, and he will have an abundance; but from one who does not have, even what he does have shall be taken away.” (NASB) As years passed, I came to realize that I wanted to give a little more of myself to the men living behind these prison walls. Recently, I’ve been able to participate in a project that allows me to give back in a way I could never imagine in prison. As a participant in the LifePath Group Project, I, along with many other men, am able to help mentor individuals by promoting human excellence. With the sincerity, true support from administration, security, sponsors, and favor from Jesus Christ, we are able to help the reduction of recidivism. Basically, we assist men to become ex-felons before they are released from prison. You may ask “how is this possible?” Naturally, anytime you have likeminded individuals in a community attempting to network permanent, positive change for success, you create and begin to realize the gifts they posses, as well as the purpose of those gifts in their lives. With the help of some genuinely changed men, I am able to participate in many programs that not only facilitate skills to function properly in society, but invoke critical thinking in the minds of men. Since the LifePath Group Project’s inception, program

participation and graduation have increased at this institution, especially with the young Adult Men (Y.A.M). The Y.A.M.S are still our future, no matter how much we don’t want to accept it. It is essential that we help them realize that prison is meant to be a lesson and they still have a chance to make a difference in society. First, we must help them realize their potential. When volunteers, supporters, and sponsors such as Pastor Dana Jackson come to visit us in this place, offering words of empowerment, encouragement, hope, and faith, we rejoice. We are thankful for her surprise visit to our most recent graduation (2-10-12) to support and congratulate the Y.A.M.’s and other LifePath men who obtained not only their GED’s, but their state certification in carpentry and as inmate teaching assistants as well. This is what brings me joy, knowing that I’m using what the Lord gave me, helps me to become a better man, a LifePath Man. A LifePath Man finds responsible solutions for life’s challenges. We say and agree that a LifePath Man Mentors, Advocates, and Networks permanent, positive change for success. NOW! LifePath produces men who not only know what’s right, but will do what is right, even in the face of adversity.

About the program Strengthening our Sons is a male youth leadership program created to empower young males with essential skills for success. Our mission is to equip young males with social, professional, and personal life skills that will help them in their personal life growth.

Our program works with young males between the ages of 9 and 19. The program meets every Thursday evening and some Saturdays. The program provides group and 1 on 1 mentoring with hands-on exposure and interaction with working professional males. Our mentors also use a curriculum that focuses on building essential skills needed so our young males become productive, positive, and conscience men. SOS works in 3 age groups

Is Going Green in Burials Leaving “Green” in the Survivors Pockets?

W

ith so much uncertainty regarding the economy and its recovery, the majority of Americans are re-thinking their expenditures, including how they lay to rest a loved one. The new trend in funeral services is “green burials” where the consumer hopes to have a limited impact on the environment and our natural resources, while in turn reducing the costs for the survivors on funeral expenses. One does not have to be a ‘tree-hugger’ to want to know more information on green burials, but have a desire to leave more money for loved ones opposed to it being buried in the ground from purchasing over-priced caskets and miscellaneous fees that do not help bring closure to grieving families and friends. Green burials were a common practice among United States pioneers, who were often buried directly into the ground when caskets were not available; but green burials are becoming a more popular alternative to traditional burials/funerals. So what really is a green burial? Green burials have reduced impacts on the environment and are intended to provide environmental and ecological benefits over time. Examples of green burials involve preparing the body for burial without embalming fluid or other ecologically harmful chemicals, using a biodegradable casket made from natural materials such as willow, bamboo, or paper, and burying the casket in a land conservation site. The foliage around the burial site such as trees, shrubs and flowers are nourished by the decomposing body or biodegradable casket, which over time becomes part of the environment. Environmentalist who are concerned with exposure to harmful chemicals such as formaldehyde, commonly used to preserve corpses, want to reduce the amounts of these chemicals that can possibly contaminate our soil, water, and food supplies. So now that you know what a green burial entails, how can you make an informed decision if this is the right option for you or a loved one? First and foremost, the funeral services industry is a business and savvy funeral home owners know how to capitalize on the trend of green burials to increase their profit margins. Being a subject matter expert in the industry I have surveyed many funeral homes on the cost of green burials and often times they offer cremation from $250 to a few thousand dollars; please be advised that this cost often does not include transport fees, the urn, and other incidental fees. Many individuals have strong feelings against cremation and may

prefer to purchase an eco-friendly or biodegradable casket and even go a step further and be buried on family land opposed to a traditional cemetery. These are all viable options for green burials, but the consumer has to make sure they read the fine print and look for hidden costs that will increase that bargain green burial into thousands of dollars. The increase in consumers requesting green burials has caused an uptick in complaints to regulatory agencies against funeral homes where some have proven to be valid. One complaint that I recently was informed about is where a funeral home required embalming prior to cremation and also made the grieving family rent a casket in order to perform the funeral service. The Florida Department of Financial Services, the Division of Funeral, Cemetery and Consumer Services oversee funeral services in the state of Florida and it is not required to be embalmed in Florida; the law states either the body be embalmed or refrigerated within 24 hours of death. Not to mention, Florida does not require an urn for ashes, more less a casket. The example that I provided demonstrates the need for consumers to be vigilant and know their rights. There are many reputable funeral homes in Florida and throughout the United States, but with any profession there are those that will prey on the naiveté of a consumer to increase their profits. The best advice that I can provide is do your homework early and know your rights; inform family and friends on how you wish to be laid to rest and stipulate your wants and what you are willing to pay. From personal experience, once you spend thousands of dollars on the funeral of a loved one and the body is placed in the ground or has been transformed into ashes, there is no getting that money back; just consider it money that the survivors will not have to pay for everyday living expenses and moving on with their lives. I understand you recently recorded a new album in 2012 entitled "BELIEVE." Why did you decide to call it that? I am so excited about BELIEVE! It’s been a LONG time in the works and I am glad to finally share what God has placed on my heart. Life for each one of us is a journey…a journey of FAITH! With this CD I want to encourage people along that journey. I want the music of BELIEVE to inspire listeners to Believe IN God, Believe the WORD of GOD and to Believe God for the IMPOSSIBLE! We live in a time when people are searching and they think that there are so many options. But with BELIEVE, I am boldly declaring that there is only ONE TRUTH (The Word of God) and ONE WAY (Jesus Christ)! I want to lead people to have faith in, and not be ashamed of, the only unchangeable, unshakeable foundation…The Gospel of Jesus Christ! It’s funny because I thought this project was about me building faith in others, but God has also used the process to increase and strengthen my faith as well. So, I not only SING Believe, I am living it! [Recently recorded, February 18, 2012 at The Gathering Place Church in Sanford, Florida.] What are some of the songs on the project and who are some of the people that will be a part of the album? There are 2 so far that are really special to me. One of them I wrote and it’s called WHO YOU ARE. This song is an anthem about who God is and my desire to share Him with the world! My favorite line in the song says: “We will never stop singing ‘til the whole world knows who you are!” We can’t stop spreading the news of His goodness and power when there are people out there who don’t know about this hope that we have. The other song was written by my friend, Chris Allen, while he was the Youth Worship Leader at First Baptist Orlando. It’s called GOD IS BIGGER and it’s actually my current single. I heard Chris and his band perform the song and it just resonated in my spirit. God is BIGGER than anything we will ever face…every sickness, every difficulty, and even every sin. Now, that’s something to shout from the rooftops! I love this song! I have some great friends who partnered with me on this CD. Local artists and worship leaders who I am blessed to have in my life…LaRue Howard, John Wilds (Master’s Touch International Church), Matt Perkins (Faith Assembly), just to name a few. Many know you as a recording artist but few know you as a humanitarian. You recently helped put a homeless family, who was featured on CBS 60 Minutes, in their own home. Tell us about your outreach ministry, THE BELIEVE PROJECT, and that awesome experience. I have always had a strong desire to help people. Very early on in this journey God spoke

to me and let me know that I was NOT “just” a singer. I knew that my impact on the Kingdom would go far beyond the platform. I know that we have a great message. But people cannot receive that message if they are starving, sick and don’t have a place to lay their heads. So I want to demonstrate the tangible love of God by also meeting their physical needs. That is a priority in my ministry. So with the BELIEVE CD, I also wanted to bless and impact the lives of 2 local families in need. My non-profit, outreach ministry, KINGDOM Ministries Global Missions Inc. does a great deal of work in the community, particularly with the Orlando Rescue Mission. So we went to the mission to partner with them to bless a well-deserving family and snatch them out of the grips of homelessness. The family we helped came to Orlando looking for work and ended up living out of their car. But now they are in their own home and we completely furnished every room for the Mom, Dad and their 3 precious daughters! It was nothing short of miraculous. God provided everything that we needed for this family…and RIGHT ON TIME! This experience increased my faith beyond measure. God showed me just how BIG He really is. He showed me how He specializes in impossible situations. My team and I were moved to tears as we watched God come through. It was AMAZING! The family shared their experience at the Live Recording and we also made a very special little girl’s dream come true. She is battling a life threatening illness. Her parents have 2 small children with rare conditions. But they have held on to their faith. So we wanted them to see their little girl live her dream of being a singer! She ministered a song with us on the night of the recording. She also recorded her own song in the studio that we put on the BELIEVE CD! That night was full of God’s amazing Glory! And we are believing for this little girl to be HEALED! What is your greatest desire to see in the Kingdom of God? Wow, that’s a LOADED question. There are so many desires I have as it relates to being used to advance the Kingdom of God, so many things that I want to do for Him. Ultimately my greatest desire is to see the lives and hearts of people restored and reconciled back to the Father. I want to see people BELIEVE! And I want to see them transformed as a result of their faith! I want to see people healed from sickness and delivered from the grips of darkness. I want to see the Gospel spread to places we never even knew about, in ways that we never could have imagined. I want to see God’s sovereign reign cover this whole earth! You have had the opportunity to travel around the world to some great places. Who are some of the people in the Music Industry that you have worked with? I have been very blessed to see places in the world that I had only read about in magazines or seen on TV. God birthed my desire to spread His Word and His love to the nations by allowing me to see His people in places like Africa, Brazil, France, Japan, Korea, Australia, New Zealand, the UK, and the Caribbean. I traveled internationally with Praise and Worship Pioneer Dr. Ron Kenoly. It was a wonderful opportunity to serve with him for several years and watch God develop the anointing and call on my life in the process. I’ve also served and worked with Martha Munizzi, William McDowell, Freddy Rodriguez, LaRue Howard, BJ Putnam, Clint Brown, Al Denson, the Kenoly Brothers and others. I can’t tell you how grateful I am that God chose me for this amazing journey. What is next in the ministry of Meka King? Well, the continuation of THE BELIEVE PROJECT Outreach. I plan to work on an all CCM (Contemporary Christian) recording. I love the fusion of Gospel and CCM that comes out of me. And for the next project I just want to explore the CCM side and share my ministry with another set of listeners. In the future I would love to take my mission and worship to various nations. I see a day when KINGDOM Ministries Global Missions will set up Crusades in different parts of the world where we will meet the people’s physical needs, invite them to receive the Lord and then usher them into His presence through music and worship. That vision is so much greater than me, and it seems pretty impossible. But I’m learning and witnessing everyday that GOD IS BIGGER! WITH Him, ALL THINGS ARE POSSIBLE! ;-)

NBA All-Stars & others pitch in for Orlando charities

The NBA All-Star weekend in Orlando wrapped up with more than a narrow victory of West over East. In Tangelo Park, it left behind five newly renovated homes. At the Coalition for the Homeless, there was a new TV room, computer lab, repainted dorm rooms, and a new mural for the children’s play area. At Florida Hospital for Children, there were pediatric patients with a fresh dose of celebrity excitement to encourage them to keep fighting. And all across Central Florida, there were inspired Special Olympians, kids eager to get fit, MakeA-Wish families and Boys & Girls Clubs members with lifted spirits, and families that learned about healthy cooking and eating. The community service arm of the basketball league — the NBA Cares — had organized 3,000 volunteers over the four-day weekend, including NBA and WNBA players and former players, friends, relatives and such local groups as Hands On Orlando, Rebuilding Together Orlando, Share Our Strength, KaBOOM!, and employees from Kia Motors, adidas, HP and State Farm.

This will help to decrease the risk of skin cancer, discoloration of the skin, and sun burn, which is unsightly and uncomfortable. Sunscreen for the face differs from sunscreen for the body which can be a bit harsh on the face due to the higher levels of titanium oxide, especially if you are sensitive. So be sure to make sure the sunscreen is recommended for the face.

won’t rub off of your face. Sorry girls, there is no such product. I’ve been doing makeup for 11 years and I haven’t come across that product yet. Now, there are products that claim to last for up to 6, 8, even 12 hours, but these products will have subtle amounts of rub off. Going back to skincare, if you have oily skin the chances of having makeup rub off are a bit higher than a person with drier skin, because your skin produces more oil. In this case, I suggest using moisturizers for oily skin as well as a foundation primer. This really helps in keeping foundation fixed to the skin. Another effective way to prevent foundation meltoff is to avoid applying so much. Application is everything. I always tell women if you apply it heavy, it’s going to appear heavy; hence, major melt-off. So, a less is more approach is better for your skin and for the duration of your makeup.

Prohibits Certain Types of Petitioners

T

he Adam Walsh Child Protection and Safety Act (“Adam Walsh Act”) became law on July 27, 2006. It contains two important provisions that amended the Immigration and Nationality Act. The first provisions prohibit U.S. citizens and lawful permanent residents who have been convicted of any “specified offense against a minor” from filing a familybased immigrant petition on behalf of any beneficiary, unless the Secretary of Homeland Security (Secretary) determines, in his sole and unreviewable discretion, that the petitioner poses no risk to the beneficiary. The second provision bars U.S. citizens convicted of these offenses from filing nonimmigrant visa petitions to classify their fiancé(e)s, spouses, or minor children as eligible for “K” nonimmigrant status, unless the Secretary determines, in his sole and unreviewable discretion, that the petitioner poses no risk to the beneficiary. A petitioner who has been convicted of a specified offense against a minor is not simply prohibited from filing on behalf of a minor child; the petitioner is prohibited from filing on behalf of “any” family-based beneficiary. “Any beneficiary” includes a spouse, a fiancé(e), a parent, an unmarried child, an unmarried son or daughter over 21 years of age, an orphan, a married son or daughter, a brother or sister, and any derivative beneficiary permitted to apply for an immigrant visa on the basis of his or her relationship to the principal beneficiary of a family-based petition. The term “specified offense against a minor” means an offense against a minor (defined as an individual who has not attained the age of 18 years) that involves any of the following: (A) An offense (unless committed by a parent or guardian) involving kidnapping; (B) An offense (unless committed by a parent or guardian) involving false imprisonment; (C) Solicitation to engage in sexual conduct; (D) Use in a sexual performance;

(E) Solicitation to practice prostitution; (F) Video voyeurism as described in section 1801 of Title 18, United States Code; (G) Possession, production, or distribution of child pornography; (H) Criminal sexual conduct involving a minor, or the use of the Internet to facilitate or attempt such conduct; or (I) Any conduct that by its nature is a sex offense against a minor. If, at any time prior to adjustment of status or consular processing, Immigration becomes aware that the petitioner has a conviction for a specified offense against a minor, steps may be taken to revoke the approved family-based immigrant visa petition or re-open and reconsider the petition. For immigrant visa petitions that have already been approved, revocation of the approval would be appropriate, if the petitioner has been convicted of a specified offense against a minor and the adjudicator finds that the petitioner poses any risk to the beneficiary. Eggs Benedict with Canadian Bacon and Spinach Ingredients Foolproof Hollandaise: 5 egg yolks* 1 lemon, juiced 2 tablespoons water Salt Pinch cayenne 1 pound hot, melted butter Extra-virgin olive oil 8 slices Canadian bacon 1 onion, minced 1 package cooked, frozen spinach, thawed and drained in a colander (press the spinach against the side of the colander to extract as much water as possible) 2 tablespoons heavy cream Salt and freshly ground black pepper 1 tablespoon white vinegar 8 eggs Parsley sprigs, for garnish

Direction 1. Put the English muffin halves on a baking sheet and brown on both sides under the broiler. Remove to a plate. Reduce the oven heat to 200 degrees F and put the English muffins in the oven to keep warm. 2. Heat 2 to 3 inches salted water to a simmer in a wide saucepan or deep skillet for the eggs; turn off the heat and cover to keep warm. 3. Meanwhile, make the hollandaise. Combine the egg yolks, lemon juice, water, salt and cayenne in a blender and blend until light and fluffy, about 1 minute. Then, with the blender going, drizzle in the melted butter in a thin stream. Taste for salt and lemon juice. To keep the sauce warm, put the whole blender jar in a bowl of warm water; set aside while you finish the dish. 4. When the potatoes are out of the oven, heat a 2-count of olive oil a large skillet over medium-high heat. Add half of the bacon slices and brown on both sides. Transfer to a plate lined with paper towels. Brown the remaining 4 slices and put the on the plate. Put the

bacon in the oven to keep warm. 5. Put the skillet back over medium heat. Add a 2-count of olive oil. Add the onion and cook until softened, 3 to 5 minutes. Add the spinach and give it all a stir; cook until warmed through, 3 to 4 minutes. Stir in the cream and simmer to reduce. Season with salt and pepper. 6. Return the water to a bare simmer. Add the vinegar and swirl a couple of times with a kitchen spoon. Then, first cracking each egg into a cup, gently drop 4 eggs into the simmering water and cook until just set, 3 to 5 minutes. 7. Meanwhile, get yourself 4 serving plates and put 2 muffin halves on each plate. Put a piece of bacon on each half and top with a spoonful of spinach. Remove the poached eggs with a slotted spoon and place on top of the spinach. Do the same with the remaining 4 eggs. Spoon the warm hollandaise sauce over and garnish with a parsley sprig. www .G ospel NOW. net
