Max Boyce Welsh Icon

Max Boyce, the Welsh icon, plus special guests return to the road in Autumn 2012! There probably is not a household in Wales that has not heard of Max Boyce and his catchy rugby inspired songs. Max has now been touring the world for more than 30 years entertaining people in his own imitable style. From Swansea to Sydney, from Newport to New Zealand, Max has taken his humorous look on life to all corners of the English-speaking world. His records, TV shows and DVDs have sold in their millions including ‘Doctors Papers’ which soared to number 1 in the album charts making it the first and only comedy album ever to do so. Subsequently he has been awarded 6 gold discs, an MBE and his BBC TV series ‘Max Boyce’s World Cup Journey’ was also nominated for a BAFTA award. In March 2011, BBC filmed Max Boyce ‘Live at Treorchy’ at the Park and Dare Theatre in the Rhondda Valley. Quarry Power Half a century ago, the scrap line at the Penrhyn Quarry Railway near Bethesda was photographed but, remarkably, the locos which looked so sorry for themselves while awaiting the scrap man have now been restored to their former glory. We are celebrating by bringing the engines back, in steam and lined up as they were 50 years ago. We will be running them in a cavalcade at Beddgelert so they can all be seen and photographed against the backdrop of Snowdonia. Restored Penrhyn Scrap line locos will be in action over the 40 miles of the F&WHR. There will be the added attraction of the chance to see the locos running in convoy the length of the Welsh Highland from Caernarfon to Porthmadog, and onto both the FR and the Welsh Highland Heritage Railway over the course of

Aled Williams A little about me... I was brought up in the village of Llandegfan on Anglesey and attended David Hughes School in Menai Bridge. During my summer holidays I spent my time in the kitchen with my Nain. We used to bake cakes, bara brith and many different pastries, and from a young age I found a passion for cooking. After school I attended Coleg Menai’s catering collage where I won student of the year in 2000. After finishing my training I worked at the Bulls’s Head restaurant in Beaumaris and gained valuable experience from Chef Keith Rothwell. My next place of work was Plas Bodegroes in Pwllheli. I was intrigued and excited to work in a restaurant that held a Michelin star. Chef Chris Chown is renowned for being one of the best chefs Wales has ever produced and will always be a huge influence on my career. It was with Chris I understood the benefits of supporting local producers and truly understood about quality ingredients. I left Plas Bodegroes in 2006 to start what was a huge year in my career. I started working in Sydney Australia for a three month placement followed by some time back packing down the east coast. I returned to work in Wales in Ynyshir Hall which also held a Michelin star. Adam Simmonds is a fantastic and extremely gifted chef. While I was in mid Wales I was offered the opportunity to work at Midsummer House in Cambridge. The

restaurant held two Michelin stars so it was a great opportunity for me to see what it took to achieve the second star. It was while I was working in Cambridge that I entered the Gordon Ramsay scholarship in November 2006. The competition was held over 3 days with a series of cooking tasks in front of a live audience at the Good Food Show in Birmingham. The judges included Gordon himself and many of the most respected chefs in the industry. After a hard weekend of cooking I was crowned the winner and am the only Welsh chef to hold the title. I found myself doing demonstrations with Gordon and then appearing on GMTV next to one of the best chefs in the world and a culinary great. It was the start of many doors opening to me. As part of the prize I worked at Gordon’s signature 3 star Michelin restaurant Royal Hospital Road in London. I was also flown to Sydney to work with one of his friends Matt Moran in ARIA and spent some time in a vineyard in Adelaide. The next prize was to work in New York in Gordon

50g unsalted butter

350g white leek, finely sliced

100g onion, peeled, finely sliced

2 garlic cloves, peeled, finely sliced

150g Maris Piper potatoes, peeled, thinly sliced

150g green leek, finely sliced

100ml whipping cream

500ml of ham or vegetable stock

melt the butter in a large saucepan and fry the white leek, onion and garlic for 5-6 minutes, or until softened. Add the sliced potato and cook for five minutes, then add the sliced green leek and cook for a further five minutes.

Heat the stock in a saucepan until boiling. Pour it on top of the vegetable mixture and simmer for 10-12 minutes, or until the vegetables are tender. Stir in the cream and blend the soup in a blender until smooth. Strain the soup through a fine sieve.

Thunder Island For some of the most iconic circuits in the world, you just need to speak their name to conjure up vivid visions of the sights, sounds and sensations that spell out the essence of ‘motor racing’ to true aficionados. Watkins Glen, Imola, Mount Fuji, Le Castellet, Monza, Le Mans, Spa-Francorchamps and Phillip Island are all more than just venues, they are part of the very fabric of motorsport and they are set apart from ‘ordinary’ circuits by more than just layout. We get on aeroplanes, trains and buses to travel for thousands of miles just to stand in those locations, because we don’t have anything comparable at home.

ut before you rush off to see the travel agent, have a look at one of the hidden gems of motorsport that’s right under your nose. Here in North Wales we are home to one of the most beautiful circuits anywhere in the world. That’s quite a big statement, but just look around Anglesey Circuit and you’ll find it difficult to argue the point. Comparisons are often drawn with Australia’s Phillip Island and whilst you might think that one of them has a better climate, it is worth pointing out that the one that has penguins is not attached to the Welsh coast by the two historic bridges over the Menai Strait. Anglesey Circuit is a purpose built racing circuit that came

into being largely due to one man having a dream and seeing it through to its conclusion. Richard Peacock is an ex-car racing driver who looked at this old army camp and saw possibilities, where others only saw run down buildings and sheep grazing next to the sea. He literally went and knocked on the door of the Bodorgan Estate offices and asked “Have you ever thought about making that old army camp into a permanent racing circuit?” He was pleasantly surprised by the positive reaction and pretty much agreed basic terms over a cup of tea. The original one mile circuit here was brought to life utilising the internal roads of the old camp and whilst that was good enough to get things started, it wasn’t the vision that Richard had

in mind when he dreamt about what he wanted to create. From 1993 to 2006 this circuit operated as a very “clubbie” venue using that old layout and steadily built a reputation for being friendly and welcoming to all of the clubs that used it. Richard had also surrounded himself with some very good people, all of whom are still here and very much a part of the success story. That was just the beginning, because all along plans were afoot to build something very special here in Anglesey. Dave Stewart, director of Thundersport GB, has known Richard for a long time and referring back to a meeting many years ago, he says “I have to admit that when he told me he was going to create one of the most demanding and rewarding drivers circuits from scratch, I probably looked at him as though he’d been drinking too much windscreen washer fluid. Like many others before me and since, I had underestimated this quietly spoken man and not only did he obtain the planning permissions required, he worked the oracle and got the finances together as well. The total cost to date is somewhere around six million pounds invested and there are always ideas in Richard’s head as to how he could spend more”. What you now see here is still not quite the finished article, as although the new pit lane complex consisting of a three storey

control tower and 22 garages has now been built, the ongoing development will not stop until the facilities here rival the very best circuits in the country. If at any time you should see a tall white haired chap wandering around watching the racing, talking to drivers or riders, taking an avid interest in the general goings on in the paddock or casting an appraising eye over some far flung part of the circuits environs, you might well be looking at the creator of this great circuit. Richard isn’t someone who got into circuit management for commercial reasons; he is one of the genuine motorsport aficionados and is just as interested in all forms of racing today as he was all those years ago when he was a young aspiring racer himself. ith our hectic schedules getting busier daily and the increasing pace of life, sometimes we need to stop and think about what we’re doing. On this note, we thought we would share with you, 10 ways to relax, clear and balance your mind and body and achieve a healthy work/life balance too! Before breakfast and before dinner, take 5 minutes to close your eyes and take some deep breaths. If you have the space then what’s even better is to get out into the garden and do this with the benefit of the fresh air. Who cares what the neighbours think?! If you don’t have time to do yoga every day, add on 5 mins of gentle stretching to get the nerve endings going and the limbs functioning. Enjoy that shower in the morning and don’t rush it. If it means getting out of bed 10 mins earlier, do that so that you can enjoy all those lovely products that just sit in the bathroom and never get used Take time to STOP for every meal. Enjoy your food, savour it and allow yourself to relax while eating.

Take your lunch break away from the computer and the office Think about what you’re eating. It should suit your lifestyle and exercise routine. You might not be getting enough of the right fuel or you could be getting too much Build a routine for your meals and eat each meal at around the same time every day. It’s good for your body but also for your mind – perfect for a long and healthy life Prioritise your work – you can’t do everything in a day! Make a list which gives you a great sense of achievement at the end of the day. Rather than spending an extra hour at the office (which let’s be honest is often the least productive hour of the day), find an activity you like and do that instead. This month will see the launch of the spa’s new thermal suite which comprises an Experience Shower, Herbal Essences for the Sauna, and Ice Fountain and probably the most exciting of all – the Salt Inhalation Therapy Room. Replacing the spas steam room, the principles of salt inhalation are based upon the health benefits of a walk along the coast, breathing the ozone rich salty sea air. Anyone working with computer screens, or generally in offices surrounded by electrical equipment all day will be subjected to positive ions. Positive ions can induce headaches, migraines and feelings of lethargy. Salt vapour produces negative ions, which help to counteract these effects leaving you feeling invigorated. Our salt inhalation room will release particles of Anglesey Sea Salt – only the best will do!


The focus behind the thermal suite is an area with a variety of experiences that are soothing and balancing but at the same time detoxifying and invigorating. The herbal sauna is designed to enliven the senses the aromatic essences which can change daily or with the seasons. It is also a wonderful treat to enjoy before or after a massage or spa treatment. The experience shower will allow guests to choose between a gentle mist setting with colour therapy to create a cooling and refreshing experience. The Seventh Magpie Lesley Ann Sharrock was a freelance writer in the UK for several years before teaming up with her editor partner to run their own magazine publishing company for 16 years in London. Local poet’s first book a winner in the ‘International Rubery Book Awards 2012’ Personal trainer, Carol Mead, who runs Able Fitness in Menai Bridge, Anglesey, has just discovered that her second passion in life, poetry, is working out ! Spring

I became interested in gardening at quite an early age and, being a Libran, my birthday coincided with the spring bulb sales period, and one of my aunt’s always used to buy me bulbs as a birthday gift, and quite often they would be “prepared” hyacinth bulbs or “Paperwhite” Narcissus bulbs. This gave me just enough time to plant them and have them in flower for Christmas. In the case of hyacinths planting needs to occur before the end of September so that bulbs can produce a strong root system prior to flowering. “Prepared” hyacinths are bulbs which have undergone a heat treatment which allows them to be forced into flower earlier than normal. They are available in Garden Centres now and should be planted as soon as possible into bowls using bulb fibre. The tips of the bulbs should be slightly above the surface of the compost. Water them in (unless using pre-soaked bulb fibre). Remember that bulb bowls do not normally have drainage holes in the base, therefore iit is important to avoid overwatering which will lead to root death and rotting of the bulb. After planting they should be placed in a cool position; it does not need to be dark. This “cold period” is essential for good results and should last for 10 to 12 weeks. A sheltered position outdoors is fine but should be protected from vermine and heavy rain which could lead to waterlogging. Light frosts will not affect them adversely but if sharp frosts are forecast move into the garage for protection. During this period the bulbs will produce a mat of white fleshy roots but the growing point should only have grown an inch or so. From mid-December onwards they can be brought indoors and they will come into flower within a week or two. “Paperwhite” and “Soleil d’Or” Narcissus can be grown in a similar way but only need a cold period of about 6 weeks. If they are required for Christmas they are best planted at the end of October or early November.
