• EDITOR’S NOTE •

O

ur minds wander into the past, the present and the future. Add to that the wonderful authenticity of family cultures and geographic cultures. It all creates a rich life, a vibrant community and much to appreciate. With summer behind us, it’s time to celebrate and appreciate daily life in the neighbourhood. The diversity of a Toronto neighbourhood is unlike any other. It’s rich in character, in personality and constantly shifting into the future while remaining reverent to the past. And you know, a neighbourhood and the house one lives in is important to just about everyone – particularly if you’re Sarah Richardson, our cover story subject. TV personality and noted designer, Richardson talks with writer

Izabela Jaroszynski about her own midtown home and about her new show uncovering the hidden treasures of houses in need. And when you visit a neighbour and want to bring a present? Sarah says think useful, simple thoughtful. With the fall season of course comes a different array of choices in the kitchen. We present a full menu, from the oysters at John & Sons Oyster House, to apple recipes to hearty fall beers and wines to complement your meal. Dreaming of your next vacation already? Well, let us take you to Marrakech with our feature on Africa’s most vibrant northern city. The fall of course brings children back to school and back to routines far removed from summer fun. While little Johnny and John-

ny’s parents are happy to see the youngster back in class it can actually be a stressful time for the family pet. Pia Lauretti delves into how best to ease the transition for the family pet. Who knew. We urge you all this fall to take part in your community life. Contribute to the betterment of the neighbourhood around you. And never forget to appreciate exactly why you live in the community you do. Take a look at the Out & About calendar, and find more to do in your neighbourhood at www.insidetoronto.com We enjoy bringing you this neighbourhood magazine. We’d love to hear what you think. You can look forward to the next edition of GoodLife, distributed in early November.

YONGE STREET MISSION:

THE FACE OF CHANGE Seeing is Believing Program

When Prince Charles visited the Yonge Street Mission he, and a panel of like-minded philanthropists, discussed finding radical intervention strategies to impact youth employment. Kadeem Reid, who frequented the Mission’s Evergreen Centre for Street-Involved Youth benefitted from its Connecting Youth to Work (CYTW) program. Like the Prince’s Seeing is Believing program set up by the Prince’s Charities Canada (PCC), the CYTW program focuses on the well-being of disadvantaged youth through employment training and job preparation. After training, successful candidates are placed in internships that may lead to full-time work. The Prince’s visit had an impact on the youth as he showed a genuine interest in their stories. When Kadeem addressed the Prince, he humbly spoke of school issues, criminal charges, and being shot seven times. This nearly life-ending moment proved to be Kadeem’s most life-changing.

Kadeem went on to complete the CYTW program, and then participated in the African Canadian Legal Clinic’s Youth Justice Education Program. In February 2013, he secured a position as a Youth Justice Worker. At the Yonge Street Mission, our goal is to see change and transformation in the lives of our community members. Kadeem wanted the opportunity to seek change when he spoke in front of the Prince. We are thrilled that he will now have that opportunity and are very proud of what Kadeem has been able to accomplish! By supporting the Mission, you become the face of change for thousands of vulnerable people who can’t face poverty alone. We need you to eradicate poverty!

By izabela jaroszynski arah Richardson is looking her home’s kitchen with a critical eye these days. “I love to cook and I want our kitchen to be a great gathering space as the kids get bigger so I want it to be the best use of space possible,” says the awardwinning designer and television personality. With limited square footage and odd angles, the kitchen is Richardson’s biggest design challenge in her family’s beautiful mid-century home. “Just try designing a kitchen with angled walls when everything in a kitchen is a box,” she says. If anyone can make it work, it’s Richardson. Famous for her one-of-a-kind designs and dramatic transformations, the HGTV host of such shows as Design Inc, Sarah’s House and Sarah 101 is not one to shy away from a challenge. “Let’s just say I’ve got my thinking cap on and am considering another change,” she says of her

kitchen. Her family – husband Alexander Younger and their two daughters – is used to changes in the home’s design. Richardson admits to using the house as a lab of sorts, experimenting with colour combinations, fabrics and furnishings. “I’m not constantly changing everything, but when the urge strikes, it’s hard to resist,” she says. Being impulsive and creative is all part of the job, she says. In addition to hosting, co-creating and co-producing four successful HGTV series,

‘I’ve designed rooms around a piece of art, a carpet, a vintage or unique piece of furniture, or even just a concept of a feeling for how you want to live in a space.’ – Sarah Richardson

Richardson is owner of her own high-demand design business – Sarah Richardson Design, in Toronto – and has a growing line of signature products such as custom furniture and a new fabric collection for Kravet. “If you don’t act on impulse as a designer, and if you overthink every decision, you’ll never get anything done,” she says. “I prefer to be spontaneous and see what unfolds, so I’ve designed rooms around a piece of art, a carpet, a vintage or antique piece of furniture, or even just a concept of a feeling for how you want to live in a space. There’s no rule to what works and you have to be open to a fluid channel of creativity.” This fall, Richardson is using her creative force to launch yet another design series that is likely to prove as successful as her other efforts. Real Potential, which premieres on HGTV Canada Sept. 19, is part property show, part renovation show and part design show. >>

In looking for a functional living space to call home, the Toronto homeowners were challenged with seeing the ‘real potential’ of this room. Sarah Richardson helped them realize the beauty in what they now call their dream home. These before and after shots are from the premiere episode of ‘Real Potential,’ airing Sept. 19 at 9 p.m. on HGTV.

Sitting down with Sarah GoodLife: What are your top three hostess gifts?

GoodLife: What’s your favourite meal?

GoodLife: Who would be your dream dinner guest?

Sarah Richardson: A great bottle of maple syrup, for homemade weekend blueberry pancakes, a beautiful scented bar of soap or a bottle of delicious olive oil. Useful, simple, thoughtful.

Sarah Richardson: My best and favourite meals are the fast and fresh ones that blend flavours and inspire great conversation at the table.

Sarah Richardson: My husband’s late father, whom I never met, but would love to be able to turn back time and have him at the table with our daughters and my mother-in-law. That would be true, pure joy for my family.

GoodLifeMagazine.ca | 15

>> “In my new series, I uncover the hidden potential of not-so-pretty houses by touring three homes with prospective buyers,” she says. “I share my real estate know-how, my construction and design experience and advice and my innovative thinking on matters of style to help buyers see past the one disaster room that’s preventing them from seeing themselves living in the home.” Once the buyers decided on one home and purchase it, Richardson and her team enter to transform the house into a dream home. “Real Potential is a triple threat of real estate, renovation and remodelling,” Richardson says. “All done Sarah-style.” It is this unique “Sarah-style” that has viewers around the world tuning in to Richardson’s wildly popular shows and duplicating her luxurious, thoughtful designs. Since launching her first television show 13 years ago, Richardson has reached viewers in more than 100 countries. Her approach to design is practical and creative, but it is Richardson’s infectious onscreen personality that has made the design maven so popular. Despite the many projects she has on the go,

Richardson is very family oriented and spends most weekends at the family’s remote Georgian Bay cottage. Early mornings are her favourite, she says. “I love mornings because they are a wonderful time to be with my kids when everyone is fresh and excited about the day ahead,” she said. “I especially love the relaxed indulgence of lazy weekend mornings in the country.” The family enjoys many activities and Richardson relishes in those moments they can spend together. Her favourites? “Making a great meal, lighting a big fire, baking with my daughters, taking a walk and a bike ride and generally just letting the day unfold without the pressure and rush of a programmed workday,” Richardson says. On those rare weekends they spend in the city, the family still likes to get outdoors, taking a walk in the ravine or playing in the park. Or they indulge in one of Richardson’s other favourite things: entertaining friends. “I’m a wing-it person in the kitchen,” she says. “One of my favourite challenges is opening a near empty fridge and creating something delicious.” GL

J

ohn Belknap takes a friendly approach to his laid-back, classic oyster bar, John & Sons Oyster House. Belknap, together with Head Chef Alyssa Becker, brings his East Coast heritage and country upbringing to midtown Toronto. GoodLife: What sparked your love of oysters? John Belknap: When I was catering I was a bartender, pouring drinks for people, but whenever you started opening oysters at an event or party it really started changing the mood – it really elevated the party. It’s pretty special and unique opening a live product, right from the sea. People are always asking questions. Oysters really seem to change any party. 18 | Goodlife - September • October 2013

John & Sons Oyster House brings Maritime hospitality to midtown with the opening of its second oyster bar

GoodLife: How would you describe John & Sons?

BY ANTOINE TEDESCO Photography by nick perry

John Belknap: I want it to be a local, neighbourhood oyster bar, with our focus mainly on the sea. We want to offer people a little bit of an escape. At the end of the day, we’re a restaurant, we serve food, and there’s lots of restaurants in Toronto that serve really good food. I wanted to offer something a little different with oysters and our seafood focus and keep the atmosphere very relaxed. When you’re opening a restaurant it has to complement the neighbourhood you’re in – you can’t force a concept anywhere. Our theme is we want you to feel like you’re out of the city, sitting next to an ocean. The fact that we can get our prod-

uct direct from the ocean, mixed with the decor, the location and the attitude I try to instill in our staff – a little more laid back East Coast friendly atmosphere. GoodLife: What is the food philosophy at John & Sons? Alyssa Becker: We try to create dishes that are sustainable, which is a big part of our mandate. We try to serve fresh, sustainable seafood, staying seasonal with what we provide locally, and with our oysters. The food is accessible, it’s inviting, >>

• IN THE KITCHEN •

>> and we offer a casual, warm Maritime feel to that cuisine.

it’s important to have them involved to make the place successful, be a part of it and supportive.

GoodLife: What does your French training bring to this East Coast-inspired oyster house?

GoodLife: On the website it says you want to stay ‘classic’ – what does that mean to you?

Alyssa Becker: French cooking is the base technique for all classic cooking. Except for baking the bread, we do all of our sauces, all our stocks, all our vinaigrettes, everything in-house so the core training for all that comes back to French culinary. I come from a mixed background – my dad’s side is Alsatian, my mom’s side is British Guyanese – so you’ll see the specials I create for this location a lot of them have a Caribbean flare mixed with classic French cuisine. We also have a lot of Asian influences on the menu. The plates aren’t overly fancy, per se, but everything on that plate is made from scratch, made in-house. There’s a lot of care and a lot of time that goes into each element of the dish.

John Belknap: What bugs me is the term ‘food trends’ – I hate that people refer to food as ‘trendy’. I’m not a very trendy person, so I wanted to offer a place that’s not a trend-based restaurant. I wanted to make the place feel like it was here 20 years ago and it’ll be here 20 years from now. I wanted to serve a menu with food that you could have had 20 years ago, with tweaks of course, but I didn’t want to be a trendy restaurant that was just to capture a market for a moment. It’s also not all seafood, like our delicious chicken, because not everyone loves seafood so it allows our guests to enjoy some food and gives our chefs some creative outlets.

GoodLife: It’s called John & Sons, you’re John and you have two sons – what does family mean to you? John Belknap: I really wanted to have the family involved – in everything we do. The biggest part of my life is family. We have a farm just outside of Collingwood, driving up you always see barns with the farmer’s name & Sons or Daughters, and I thought it would be great to incorporate that. My sons are two and almost one so they won’t be working in the business for a while, but I think

GoodLife: What are some of the fears / misconceptions when it comes to oysters? John Belknap: It’s funny, because there were two teenagers here with their family and I asked them if they wanted oysters. One of the sons looked pretty apprehensive. So many people have never had oysters, so you bring one over and they don’t know what it is, it looks odd, the texture freaks people out. I’m happy to say most people, once they try oysters, are pleasantly surprised by it. For me, you should eat your first oyster at an oyster house. GL

Drizzle 1/4 cup caramel sauce over apples and top with crumble mix. Bake for 30 to 40 minutes or until topping is golden brown and apples are tender when pierced with a fork. Remove from oven and drizzle with remaining caramel sauce before serving. ~ Recipe courtesy of www.tenderflake.ca

Preparation In a skillet over medium heat, cook bacon in batches until cooked through but not crispy. Transfer to a paper-towel lined plate and let cool. Heat oven to 375 F. Cut each strip of bacon in half to make 24 small strips. Spread each strip with 1/2 tsp mustard and wrap around an apple wedge and piece of cheese. Secure with toothpick. Repeat with remaining ingredients.

Arrange bites on a parchment lined baking sheet. Bake in oven just until bacon starts to bubble and cheese begins to melt, about three to five minutes. Do not overcook. Serve immediately. Chef tip: If Oka cheese is unavailable, Gorgonzola makes a savoury substitute. ~ Recipe courtesy of www.onapples.com

ntertaining when the seasons change can be hard. The siren call of fall’s earthy rich comfort foods beckon, but to be honest, who wants to eat a heavy, rich, slow-braised roast with root vegetables when it is still 25 C outside? There is a way to host in the transition time that makes the most of the season and the beautiful early fall setting. It’s possible to dazzle your guests without wishing the rest of the summer away. Late summer and early autumn are prime harvest seasons for produce so there is no better time to visit the local farmers’ market and stock up on regional gems. Often the best menus come from simple, high-quality ingredients, so let the provisions available inspire your choices. In addition to the abundance of great, fresh local ingredients, early fall is a sweet spot in the year to host for practical reasons. Everyone is settling into their postsummer schedules, yet calendars aren’t fully spoken for – a reality that seems to sneak up just before Thanksgiving. Invite guests a few weeks in advance from when you

plan to host and let your invitation set the tone for the evening. A casual phone call conveys a much different mood than a formal mailed invitation. Use your invitation as a means to establish how casual or formal the evening will be. Once you have surveyed the market and are inspired to create a menu, consider choosing dishes you know and trust. Test-driving a new recipe that goes rogue when company is an hour away can make for a stressful evening. In addition to planning a menu to minimize the risk of upheaval, consider a menu that allows you to spend as little time in the kitchen and as much time as possible with your guests. While most dinner parties inevitably end up turning into kitchen gatherings, no guest wants to see their host sweat – literally or figuratively. Tackle whatever prep work you can in advance and break down larger, more daunting tasks into smaller daily to-dos. If you are able to do a bit of shopping and a bit of chopping in advanced, by the time the day of your dinner comes around, you’ll be pleasantly surprised at how little there is to do.

fresh hosting ideas Do ...

... look for smart shortcuts. If you are hosting midweek (or any night, for that matter) you can order a fabulous charcuterie platter, rather than shop for all the elements to make one. ... be ready for whatever Mother Nature throws your way. Anticipate your guests’ needs and be ready to tuck away wet umbrellas and anything else they need to unburden themselves. If you’re planning on hosting outside, have some cozy blankets on hand for when the temperature dips in the evening. ... welcome guests into a fresh, cozy-lit place and immediately offer them a cocktail. Starting the evening with an aperitif sets a convivial tone. ... plan your evening so you have some grace time. Fifteen extra minutes can go a long way in prep and clean time, or better yet, give you a reprieve to freshen up, put on some music and pour a glass of wine for yourself before your guests arrive.

Don’t ...

... feel compelled to serve the wine your guests have brought along. If you have painstakingly selected the wines to pair with your menu, simply thank them for it and promise to pull it out when you have the perfect dish planned to go with it. ... overestimate how much time you’ll have on the evening you host. Make the most of the week leading up to your party. Shelf-stable items can be purchased weeks out; meats, produce and flowers a few days in advance. ... forget to enjoy yourself. Good food with good company is the stuff life is made of. Don’t let the planning involved in hosting a dinner take away from that sentiment. It is worth it in spades. hat would you like to be when you grow up?” It’s one of life’s eternal questions and one Scott Frederic Staiman continues to grapple with even after dabbling in and establishing not one, but three careers for himself, including journalist, entrepreneur and artist. After an aspiring career as a reporter didn’t pan out and with an ever thriving popcorn empire, it’s Staiman’s passion for art that has endured since his childhood. “It’s been a serendipitous journey,” says a jovial Staiman, who is better known in the art world as ‘Frederic’, his artist moniker.

Frederic ‘All of my work is informed by politics, scenery, music. Some of my work is pure abstract or an abstract expression of some theme, some story.’ – Frederic Frederic, a veteran artist of 40 years, opened his first gallery a decade ago, The Blue Dot in Toronto’s Distillery District where he exhibited not only his own work but that of other artists such as internationally known Jamali, “the mystical expressionist,” and Australia’s beloved Ken Done, among others. He sold The Blue Dot in 2009 before open-

ing his new studio/gallery, Frederic Inside, on Davenport Road, just east of Avenue Road, in March 2012, where he exhibits his own pieces. He favours working with metal, wood and paints and these days paints predominantly acrylic abstract. “All of my work is informed by politics, scenery, music. Some of my work is pure abstract or an abstract expression of some theme, some story or something,” he says. When he’s painting, Frederic calls himself prolific; however, “I’m not one to get up at the break of dawn to paint,” he says. “I’m not remotely that type of person,” he says. “I can go two to three months without painting, then, all of a sudden I’ll hear >>

something that will really make me passionate.” The changing of seasons especially grabs Frederic, particularly the fall because of its “explosion” of colours. “It gives me a buzz when the winds are blowing; the colours are just screaming,” he says. “There’s something really energetic about that. I can get energetic after a big snowfall, too.” Frederic knows he’s in a fortunate position. “I’ve never been a struggling artist because I’ve made my living elsewhere,” he admits. Only a brave few can eke out a living as an artist, he acknowledges. Three decades ago, he founded Kernels Popcorn (based at York and Eglinton) after reading a Time >>

magazine story about a burst in retail foods. “I read the article and I said, ‘Popcorn,’” recalls Frederic. In 1983, Kernels Popcorn vowed to “change old popcorn forever...with sensational tastes and flavours nobody imagined.” In spite of his day job, Frederic still manages to find time to paint. “It’s no great science,” says the self-taught artist. “I’ve purposely not gone to other galleries to look at other people’s art. Zuccardi Q Tempranillo 2009 $19.95 (Argentina) A killer vintage of a fan favourite. Inky hued, with vanilla-laced black cherry, mint and violet aromas. ost great wineries have several ascending levels of wine, ranging from affordable to ultra premium. Many people do not realize this, thinking what is always on the shelf represents the winery’s entire scope. My two featured wines give us a glimpse into the rarified atmosphere. Among the giant raft of new Vintages wines today is Zuccardi Q Tempranillo. You may know this Argentine winery because they make Fuzion, with five excellent value wines for $7.95 to $9.95. Fuzion took Ontario by storm several years ago. Fuzion also has a secondary tier of organic wines at $12.95 to $13.95, which are tasty. Next up is the Q line, at $19.95. These are wines of distinction, full of elegance and refined flavours. The Q Tempranillo is a stunner so don’t be shy about trying it. Aussie winery d’Arenberg also makes many tiers of wine. At the upper end are shiraz such as The Little Venice Single Vineyard ($69.95) and Dead Arm ($45), which come and go at the LCBO. The latest release at Vintages, d’Arenberg’s The High Trellis Cab, is a knockout red for under $20. Readers may be familiar with the terrific value Rodney Strong wines from Sonoma offer for under $20. They have a large upper tier of great reds, too. I recall first tasting their Symmetry (called Meritage then) in the 1990s and have followed it slavishly ever since. Think of Symmetry as a red for a special occasion, a romantic evening perhaps. Rodney Strong 2009 Symmetry (No. 641142, $59.95, 93) is back and it is gorgeous, with lavishly rich aromas and flavours of vanilla, violets, black cherry and cassis. This blend of cab sauv, cab franc, malbec and merlot has endless layers, which play like a kaleidoscope of fluctuating flavours in the glass. Also in this Vintages offering is Nickel & Nickel 2009 Cab (No. 292300, $115.95, 91) with lovely mocha complexity, and Cade 2009 Cab (#325027, $105, 91) with potent cassis and blackberry prowess. The Symmetry blows both these Napa giants out of the water. So that’s our theory of wine relativity for today. Happy wine hunting!

D’Arenberg The High Trellis 2010 Cabernet Sauvignon $19.95 (Australia) Makers of the mythic Dead Arm Shiraz have a winner with black plum, black pepper, vanilla and kirsch aromas and full mouth-coating black cherry, vanilla bean, mocha flavours and a minty cherry finish. Beer

A

s the temperature dips, lovers of craft beer turn to heartier flavours. Of the many varieties sampled, the GoodLife tasting panel selected its favourites, but many are worth mentioning: Marzen-style Oktoberfest (Mill Street Brewery, Toronto) pours a clear light amber with minimal head and boasts a malty aroma with hints of bread and caramel. It drinks smoothly with little in the way of aftertaste. (3.5 out of 5) Smokin’ Banana Peels (Beau’s All Natural Brewing Company, Vankleek Hill) is pale straw in colour, with a nose full of banana and clove. Rauchbier is an acquired taste and this beer isn’t for everyone. (3 out of 5)

Pouring brilliantly clear with moderate carbonation, Port Credit Holiday Honey (Olde Credit Brewing Company, Mississauga) has a malty aroma, a bit of spiciness with notes of bread and light caramel. (3 out of 5) Wellington Arkell Best Bitter (Wellington Brewery, Guelph) has some potential. Round and smooth, molasses is the boldest flavour, with a sweet aftertaste that could stand some bite. (2.5 out of 5) Steam Whistle Premium Pilsner (Steam Whistle Brewing, Toronto) is a beer best served ice cold. A faintly hoppy pilsner with a floral note that makes for a light-bodied, crisp beer. Perfect for late summer/early fall. (2.5 out of 5)

Two Weeks Notice Beau’s All Natural Brewing Company, Vankleek

County Dark Ale W e l l i n g t o n B r e w e r y, Guelph

Crazy Canuck Great Lakes Brewery, Toronto

King Pilsner King Brewery, Nobleton

A German porter brewed with lager yeast, this rich Beau’s pours velvet dark. Bold, bright and light, without relying on excess carbonation, it starts with the taste of caramelized coffee and finishes with a nutty bite. Perfect to share with a friend, or sip on a crisp afternoon while you forget about Monday morning for awhile.

Wellington County Dark Ale is dark brown with ruby highlights. Its soft creamy head lingers as you enjoy the pint. On the nose there is roasted malt and dark chocolate. It’s malt forward, but the dark-roasted malts make it more bitter than sweet. It tastes of toasted bread, dark chocolate and a touch of liquorice. This robust flavourful ale is perfect for the fall.

Nightmare on Mill Street M i l l S t r e e t B r e w e r y, Toronto

Pairing suggestions: Spicy tandoori chicken or a plate of sharp hard cheeses Rating: 4.5 of 5

30 | Goodlife - September • October 2013

Pairing suggestions: Roasted meats, a hearty stew or enjoy it on its own Rating: 4 out of 5

Filled with sweet pumpkin pie flavours, this beer is definitely for the fall. Pouring a copper colour with a tan head and very little bubbles, the complex flavours of fall come screaming through – ginger, clove, nutmeg, caramel and much more. Slightly sweet, light-bodied with just enough bitterness to give this ale a smooth, balanced finish. Pairing suggestions: Hearty stew, roasted turkey with all the fixings, and spicy desserts Rating: 4 out of 5

Golden in colour with an orange hue and slight haze, Crazy Canuck has an aroma full of bold piney and citrusy American hop character. A Canadian Brewing Awards winner (Gold in 2010 and 2011; Silver in 2012), this aggressively bitter West Coast pale ale is wildly hoppy and dominated by flavours of grapefruit and soft bready malt. Pairing suggestion: grilled fish Rating: 4 out of 5

A complex Czech-style Pils Lager with herbal, lemony notes, it has a bready malt flavour that pours goldenyellow with the slightest of foam and a hint of spice. Using 100 per cent imported Bohemian malts, Saaz hops and a true strain of Czech yeast, this is a far more interesting pilsner than most. It’s crisp but fullbodied enough to keep up with heavier meals – and heavier expectations. Pairing suggestion: Schnitzel, bratwurst, sauerkraut – classic European meals Rating: 3.5 out of 5

The colour palette for the family room was pulled from the natural hues in the rug.

T

he rug is the room’s anchor. It was the foundation from which the room was built – unifying colour, form and func-

tion. “The rug was the first thing we bought for the main floor open-concept kitchen and family room,” says Sharyn Kastelic, a certified interior decorator. Kastelic is the owner and founder of Primed by Design, but started her career working in an architectural firm. It was during her early career she noted her keen interest and flair for design. While working at the firm by day, she enrolled and studied design at Humber College by night, 34 | Goodlife - September • October 2013

BY daniela piteo photography by adam dietrich graduating with honours. Each project Kastelic takes follows the mandate of her design business, which is to supersede the clients’ expectations. The rug may have been the first purchase in the Parkview Village home, but it was far from the first step in the project. “The first thing is always the planning stage and finding out what the client needs. You can’t possibly furnish a room without knowing what the homeowner is expecting as an end result,”

Kastelic says. “I spent a lot of time getting to know (the homeowner), her family and how she wanted to use this space.” First, she conducts an in-depth client interview. “I get to know their habits, how they entertain, how many people they need seating for. I figure out exactly what they need and then we begin to discuss colour, furnishings and incorporating existing pieces,” Kastelic says. And the homeowner of this house welcomed the advice. “I’m a busy career woman. I was going out, looking at furniture, and fabrics and I >>

couldn’t find what I was looking for. I didn’t have weekends to devote to it, so that is how I found Sharyn (through online research),” the homeowner says. “I just needed someone to coordinate, someone who will go out and tirelessly search. She brought forth things like lamps and rugs that I know I am not going to find in a retail store.” The homeowner’s main goal was expanding the kitchen and family room; she hired contractors to extend the square footage of her home by expanding into her spacious backyard. “When I started this project, it was only to have a bigger kitchen and I ended up doing these extra rooms, it was only because, if at some point, I do need to sell the house, I will get more money for it,” the homeowner says. The project was well underway before the homeowner contacted Kastelic, and in hindsight, her only regret with the renovation. “When you are designing an addition, it is important to have an interior decorator work with you from the beginning, not after the construction has been completed,” says the homeowner. “I put in these big windows and forgot how much it was going to cost to cover them. That’s why it’s nice to have the designer at the beginning of the renovation process, so you can really examine your priorities,” the homeowner says. The main floor living space is expansive, including a generous-sized kitchen and large family room. The autumnal colour palette was pulled from the family room rug, the first item purchased during the design project. The custom-made fabric for the window treatments and decorative throw pillows used the same warm family of colours, giving the large room an inviting feeling. Even some of the furniture featured in the open concept main room was custom-made because the homeowner wanted certain sizes that couldn’t be easily found in retail outlets. “It was very difficult to find exactly what we were looking for so we went with custom-made furniture,” Kastelic says. “This room needed bigger pieces to fit the space.” The chairs Kastelic chose for the homeowner are large and spacious, with a modern take on the classic wing-backed chair. “(The homeowner’s) style was traditional and we decided to go with an updated traditional look, so we worked with some of her furnishings,” says Kastelic. “We just added a few >> >>

It is an important consideration in every design project, hence it carried through the main open-concept living space and into the formal dining room. “When I started this project (the homeowner) had already painted her dining room but I suggested she wallpaper the room to add more depth to it,” Kastelic says. The homeowner was wary of her suggestion. “When I first bought this house there were three layers of wallpaper in some rooms and when Sharon suggested it, I thought, ‘Wallpaper, are you serious?’ but when she showed me the patterns I loved it,” the homeowner says. Kastelic was confident that the new quality of wallpaper would sway the homeowner’s decision. “Wallpaper has come a long way, in terms of the product and the design, so it is much easier to put up and take down than it used to be. this preconception that wallpaper is Granny’s thing, but it is so stylish to have a pattern on the walls and it adds so much interest and texture to walls. There is only so much you can do with paint,” Kastelic says. After the main floor was complete, Kastelic moved upstairs to decorate a relaxing, private getaway for the homeowner. The master bedroom features a raised fireplace. It adds an element of warmth to the room and allows the homeowner to enjoy the reddishorange glow from the comfort of her bed, again,

a piece of custom-made furniture. Prior to the home’s addition, the master bedroom was another small room in the three-bedroom home that has now been converted into a walk-in closet and laundry room. “I love having the laundry room upstairs,” the homeowner said. The addition also made way for a walk-in closet and ensuite bathroom, which the house did not originally feature. Kastelic’s work is not yet complete in the home, but she will return to add built-in shelving in the master bedroom and private home office. While the addition and design have added value to the Parkview Village house, the homeowner conceded Kastelic helped create the home of her dreams, and she’ll likely never leave. GL

I’ve put together a great team to give my clients the best structure and design in home renovation.” The moment a homeowner walks through the door to their dream house is the moment Steve Malfatti lives for. “I’m motivated by client satisfaction,“ says Malfatti, the owner of Tight Rein Construction Ltd.“I’ve dedicated my life to being a catalyst for my clients when it comes to their home renovations. I make sure they get the home they wantno matter the cost or size of the project.”

Tight Rein Construction Ltd. is just that, a tightly run construction business with Malfatti at the helm. As founder and president, he’s backed by four generations of commercial and home builders, and has put together a highly efficient team of innovative designers, expert construction workers, experienced tradesmen and an established architect. “I’ve put together a great team to give my clients the best structure and design in home renovation,” says Malfatti. Tight Rein Construction Ltd. is insured and an active member of the Better Business Bureau. From contemporary city homes to modern condos, the company has completed over 100 construction projects across the GTA, including homes, condos, and commercial buildings. Whether it’s a complete construction from the ground up or interior and exterior renovations,

Malfatti has designed his business to meet expected deadlines from start to finish. He makes himself available by cell phone 24 hours a day, and believes the secret to a successful home renovation is all in the scheduling. “The day my clients sign the contract is the day I start ordering the materials. We have a lot of material in stock before you even pay, which is a risk for me but it’s the best way to avoid a delay.” Tight Rein Construction Ltd. will finish a brand new house in four to five months, while renovating a washroom can take as little as two weeks. When it comes to design, the company’s registered designers, Gabriel Guiducci from Geometra Design Ltd., and Janine Shmuelevitz from Sisters In Sync, work one on one with homeowners to create a custom look. Offering trendy and new state-of-the-art materials, Tight Rein Construction Ltd. has made the design selection process easier for clients by building a 1,000 sq. ft. showroom at 33 Casebridge Court. Materials like stone, ceramic, hardwood flooring, pre-hung solid wood doors, sophisticated home entertainment and security systems, and fireplace and window designs are all on display. Plaster mouldings and wood trim are custom-made for clients, lending a personal touch to every room of the house. All hardwood floors and glues are eco-friendly. To protect clients and their families, no harmful chemicals are used in the renovation process. Working with high-end clients, Tight Rein Construction Ltd. connects with suppliers all over the world to import one-of-a-kind materials and furniture at the clients’request. “If you want it, we can get it,” assures Malfatti. “And we will get it at the best price.” Whether its a unique chandelier, or designer candles and rare rugs, the designers search the globe for the best in home design. “My architect and designers are well established in the GTA with reputations for having creative instinct,” says Malfatti. When it comes to his success, Malfatti credits his entire team. “We strive to make the renovation process for our clients less stressful by keeping materials in stock, maintaining a beautiful showroom and communicating with them throughout the entire process,” he says.“It’s all thanks to my team, suppliers and tradesmen, who care just as much as I do.”

W

ith a history that dates back to 1062, Marrakech, Morocco, has been at the crossroads of adventure for travellers for nearly a thousand years. And today, the sights, sounds and smells still provide even the most experienced traveller with a new-found sense of adventure, while giving one a chance to experience the unique culture of North Africa. While not the largest city in Morocco, Marrakech is arguably the most important, and is one of the busiest in Africa, serving as a major economic centre and tourist destination. Marrakech comprises of an old fortified city (the medina), bordered by modern neighbourhoods. Within the medina are a number of traditional Berber markets (souks), where almost every product imaginable can be found. The souk near the central square (Jamaa el Fna) is the largest in Morocco. The ramparts of Marrakech stretch for roughly 19 kilometres around the medina and originally provided fortifications. The walls are made of a distinct orange-red clay and chalk and are almost six metres high with 20 gates and 200 towers. You could spend a lifetime exploring the warrens of the medina and its souks, but for travellers look-

One of the most enjoyable activities is to explore the medina and allow yourself to get lost in the surroundings – you never know what you will discover. ing to get the most out of a short stay, highlights include the Jamaa el Fna Square and its carnivallike atmosphere and the Badi Palace and its exquisite ruins as well as the Koutoubia Mosque; Ben Youssef Madrasa and Mosque; the Museum of Islamic Art; and the Saadian Tombs, built in the 16th century. While in Marrakech, I recommend staying at one of the city’s restored riads. A riad is a traditional Moroccan house or palace. They are large, square, multi-level dwellings built around a central courtyard. Historically, riads provided private spaces for families and today, many have been restored and converted into hotels or restaurants. For our stay in Marrakech, we spent a week in one of the rooms at the Riad el Ouarda, a beautiful

five-bedroom, three-story riad in the north end of Marrakech’s medina. This historic riad dates to the mid-1600s, but was recently updated to provide all of the modern amenities, while maintaining the character of a traditional riad. On the main level you can see some of the painted doors that remain from the building’s original construction. Breakfast is served on the rooftop patio that overlooks a nearby mosque and provides views of the snow-capped peaks of the Atlas Mountains. The courtyard of the riad has been converted to a plunge pool, offering the ultimate in refreshment after spending hours exploring the city. The well-appointed bedrooms have air conditioning, massive bathtubs and many have their own adjacent reception areas. The staff at Riad el Ouarda provides outstanding levels of service. The riad has a private chef who will prepare outstanding meals, serving them in the central courtyard surrounded by candles for the ultimate in romantic settings. The meals we enjoyed at the riad were some of the best we had in Morocco. The staff is also able to make dinner reservations at some of the unique area restaurants or arrange any tour – all you need to do is ask. >>

Throughout the souks, bags of brightly coloured spices, nuts and other food stuff appear around every corner. Each shop seems to have a different assortment available.

>> One of the most enjoyable activities is to explore the medina and allow yourself to get lost in the surroundings – you never know what you will discover. Unless you were born there, you will eventually need help navigating the maze of alleys in the medina. Every passage looks similar and they weave and turn in what seems like infinite directions. Even after spending a week navigating through the medina, we never were able to make it from Jamaa el Fna back to our riad through the souk. Fortunately, you don’t need to. There’s an army of young boys keeping an eye out for lost tourists who need a guide through the labyrinth – for a small fee of course. At first we tried to figure it out ourselves, but every time we eventually had one of the boys leading us back to Rue Bab Taghzoute, where one unique group of palm trees signalled we were back in our neighbourhood, and we could make our way to that nondescript grey door that led to our oasis of peace amid the chaos of Marrakech. Clockwise from above: Jamaa el Fna is the main square of Marrakech, and is used by locals and tourists alike at all hours of the day. While busy during the day, the square comes alive at night, as it transitions from orange juice vendors and snake charmers to food stalls; Riad el Ouarda was built in the 1600s and has been restored by the current owners. They have maintained as much of the original building as is feasible, including some of the carved and painted doors that date to the building’s original construction; the smaller shops at the outer edges of the souks, closer to the residential areas, tended to have smaller, less sophisticated displays. They focused more on addressing the needs of the people who need food and spices as part of their day-to-day lives; the one major deviation from the original design of the Riad el Ouarda courtyard was the addition of the plunge pool. In the evenings, the lighting in the pool’s courtyard gives the riad a magical quality.

step up to success Are you looking for ripped abs? Would you really love to run a 10k or a half marathon, or even a full marathon? The question is how badly do you want it? It’s time for you to make realistic short- and long-term goals. With the summer over we settle back into our regular routines so workouts should be scheduled like we do any other personal appointments. My 38 years in the fitness industry and working with clients have shown me that those who don’t write down their goals and schedule their workouts don’t succeed. People come and go at the gym every day without putting a lot of thought or effort into what they’re doing. Some even try to avoid sweat so they don’t need to blow dry their hair or so they can go back to work without a shower. Don’t sabotage your workout before it starts. Commit to hard work and commit to your goal. Do what it takes to reach your goal, stick to your plan and don’t make fitness choices based on others in the gym or what Oprah is doing. Prepare for your workout the day before by setting your alarm, checking the forecast, booking your class or trainer. Don’t wake up and hope your ripped abs will be waiting for you on your doorstep. You need to make it happen. You need to because nobody else is going to do it for you!

lfred Fitzpatrick and Robert Alexander Laidlaw were never acquainted, yet they have been inextricably bound to one another since 1986. Fitzpatrick was a pioneer in education, while Laidlaw was a savvy businessman. It is the house at 35 Jackes Ave., near Yonge Street and St. Clair Avenue, that brought the two men together. During the early 20th century, Fitzpatrick would work in Northern Ontario labour camps teaching miners, loggers and railway workers to read. Laidlaw, on the other hand, ran a successful business, the R. Laidlaw Lumber Company, from Toronto. It was Fitzpatrick who developed the labourerteacher, a person who would work alongside the men of various camps and teach them and their 52 | Goodlife - September • October 2013

families to read during the evening. By 1899, Fitzpatrick founded Frontier College with the aim of improving literacy. It was by coincidence only that Laidlaw’s family home in upper Rosedale would be the headquarters of the college in 1986. Frontier College alumni relations manager Phil Fernandez, a former teacher at the college, has long had an interest in the history of the school. “There is no real connection to Laidlaw and Frontier College,” Fernandez says. “He was a benefactor to a number of different charities in Toronto and was a board member at the Toronto General Hospital and the National Ballet of Canada.” The Laidlaw family home, now called the Gzowski House after famed Canadian writer Peter Gzowski, who was a champion of literacy, was originally bequeathed to the National Ballet of Canada and later sold to the college for one dollar.

It was in the memoir True North by Jill Ker Conway, Fernandez says, that the Australian writer recalls the splendour of the Laidlaw home. “Bob Laidlaw lived in a beautifully proportioned grey stone house surrounded by romantic and imaginative gardens occupying a full block at the peak of a hill, which overlooked the city, a mile or so above Rosedale. The neighborhood was being transformed by the new highrise buildings being built on other side of 35 Jackes Ave. Our host seems untroubled by the change,” Fernandez reads from the memoir. The change to the Tudor Gothic revival style home has been dramatic, but Laidlaw himself was known for championing such causes as education and culture and would likely be pleased by the positive transformation. Frontier College currently offers a variety of literacy programs, coming a long way from its origi>> nal roots in labour camps.

Director of communications Abby Robins explains that the college trains university students to work with a number of different children and adults who have struggled with literacy. “We have programs for adults with developmental delays. In that program we do some really neat stuff where we teach them, for instance, how to vote Rail labourers in Brandon and Dauphin, Manitoba, in this photograph from the Frontier College archives. or how to read a map and get around on the TTC,” Robins says. CONSUMER FEATURE: WORLD OF COMFORT

Keeping comfortable is a delicate balance of maintaining your indoor environment.

THE SECRET TO A COMFORTABLE HOME BY TIMOTHY ING The single biggest investment, both emotionally and financially, that any of us is likely to make in our lives today is in the purchase of a house. It’s a daunting task and a decision that comes with both stress and elation. We take the time to make the house our home by adorning it with pictures and personal effects or dressing it up with furniture and accessories. We manicure the lawns, trim the trees and bushes and plant flowers. We decorate the both inside and outside with the different seasons and different holidays. We enjoy making the house look like a

show home and adding our personal touches here and there and say that it’s ours – a home is a place of comfort. But is that the only thing that makes us comfortable? What about the air you breathe or the temperature when it’s hot or cold outside? Isn’t that part of your comfort? One of the most important aspects of any home is often hidden away somewhere in the depths of the basement – your home comfort system. Is your home comfort system something you think about, or are you like most of – only thinking about our furnace, air conditioner or humidifier when it troubles us? Most homeowners agree with the idea that it costs less to maintain than it does to fix, or

even replace equipment. Do you remember the Fram Oil commercial: you can pay me now, or pay me later! Heating, Air Conditioning and the entire home comfort system have the same principles. These are the very machines that heat, cool, and if you’re smart, clean your home’s air to keep it healthy and pure. Maintaining this equipment is inexpensive and can be handled hassle free with the assistance of a good contractor. It has been proven through numerous studies, that having regular maintenance done on your home comfort equipment 1. Saves more money than it costs 2. Extends the life of the equipment, again saving you money over time 3. Reduces expensive service calls, which is not only money, but an aggravation when something goes wrong, especially in the winter when the furnace stops working at 2a.m. in the morning. That’s only one part of the need to keeping your home comfort system healthy. Homes can make you sick! Many people do not realize that homes built in the last 20 years have been using space age materials and improved methods of construction. This has caused many of the chemicals, odours and even molds and mildews to make their home inside yours instead of leaking out. These new tighter homes save money on energy, but they can cause health related concerns, even sickness. Many people suffer from allergy symptoms and these homes can exacerbate those symptoms. The good news is you can do something about poor home indoor air quality. It’s important to give your home comfort system a quality checkup and inspection on a regular basis by a professional HVAC contractor. ack to school means dramatic changes in family routines and schedules. Children have returned to the classroom, pets have been left home alone without the companionship they enjoyed throughout the summer. These sudden changes in family schedules can cause pets distress and result in behaviour problems, known as separation anxiety. Separation anxiety can be triggered by an owner preparing to leave, the act of leaving or while an owner is away from the home. Signs of pet separation anxiety include: u Destructive behaviour, such as chewing a favourite shoe u Howling, whining, barking or meowing excessively u Attempting to escape by scratching, clawing or chewing at doors and windows u Self mutilation (i.e. chewing body parts or ripping out hair) or excessive grooming u Urinating and defecating indoors, or urinating upon the owner’s arrival u Restlessness, panting and excessive drinking u Reduced appetite Pia Lauretti is the volunteer president of the Etobicoke Humane Society. Reduce separation anxiety in your cats and dogs Burn off energy before leaving: Take your dog for a brisk walk or engage your cat in lengthy play sessions, leaving your pet in a quiet, resting mode when you leave. Don’t make it a big deal: Expressing guilt, through excessive petting or communicating, when leaving will reinforce feelings of anxiety. Instead, avoid eye contact, touching and talking to your pet when leaving to send the message that separation is not a big deal, it’s just routine. Remain calm and assertive: Project confidence when leaving to reduce anxiety and let your pet know that everything will be OK when you go. Reward good behaviour: Treat your pet when they are quiet or keeping themselves entertained to reinforce this behavior. Turn on the TV or radio: The background noise of human voices and music can ease a pet’s feelings of loneliness. Train your pet to be alone: Routinely leave your pet alone for small increments of time to build up confidence. Start with five minutes, 10 minutes, 15 minutes and one hour, and continue to increase the time you spend away, so that your pet becomes familiar with solitude. Familiarize pets with anxiety triggers: If picking up your keys or putting on your shoes is an indicator you’re leaving, practice doing these things several times a day without actually leaving. By disassociating these triggers, they will no longer become separation anxiety activators. Add a furry friend: Many pets enjoy the company of another animal which can reduce anxiety and boredom. Visit www.etobicokehumanesociety.com to learn more about animals that need homes.
