EDITORS NOTE

The Summer sun is blazing and the temperatures, for the most part, remain over 30 with humidity. The dog days of Summer have officially started. With Fall being my favourite season, I’m starting to think about golden hues and cooler evenings.

Not so long ago, I thrived in the Summer months. I took on the biggest and best music festivals in Ontario and returned home many weekends sun-kissed and ready for a REAL vacation to unwind. This year, I took it down a notch (or ten) and ventured to a small festival in Bothwell, Ontario. Quite honestly, I had the best time I’ve ever had.

As with anything in life, things change as we age and grow. As a Grandmother to a two-year old boy, I’m looking forward to taking my Grandson to his first Fall Fair or roaming the fields looking for that perfect pumpkin or group of gourds to add to my outdoor backyard decor.

This Summer I realized that it’s okay that our preferences on how we celebrate Summer changes. No more tents for me!

We have another exciting change at our office. On July 25, 2023, our Graphic Designer Jacqueline Diaz Keller and her husband Riley welcomed a beautiful baby boy named Anthony. We want to wish them a huge congratulations and lots of health, wealth, and happy times ahead. We will miss you Jackie!

While the Real Estate market appears to be on stable ground, changes in interest rates and seasons also affect both buyers and sellers. Now is the perfect time to start planning ahead! By doing small changes to your home, one can reap many rewards for your own peace of mind or even for an upcoming sale. (It’s also a lot cooler for the DIY’ers.)

I know many of our readers are eagerly preparing their kids for Back to School. End of Summer can prove to be difficult as we tend to have many last minute Summer plans, but are fully aware that our children require some sense of routine to make their return to school transition a success. This can lead to a lot of stress and anxiety for both parent and child. In this issue, we offer some great tips on how to make the next few weeks a breeze (or a little more bearable).

Yes, life, like the seasons, is ever changing. We either resist it or conform and embrace it. I hope that you enjoy our final days of Summer, while welcoming and enjoying the beautiful and unpredictable days of September.

Grill/Oven Time: 15-18 minutes

Total Time: 30-38 minutes

INGREDIENTS

• 1 226g (8oz) Inside Round Noble Premium Bison Steak

• Zest and juice of one lime

• 1/2 tbsp (15ml) olive oil

• 1 clove garlic, minced

• Salt & Black Pepper to taste

• 5 large tortillas

• 1 250g package plain cream cheese, softened

DIRECTIONS

Place the steak in a deep container, and add the lime zest and juice, olive oil, garlic clove, and black pepper to taste. Cover and refrigerate overnight. Preheat grill to high heat (400-500° F). Season steak with salt to taste just before grilling. Grill until your preferred level of doneness (130-140° F for medium rare). Allow the steak to rest before chopping into small pieces. Excluding the tortillas, combine remaining ingredients in a bowl, and stir well to combine. Add the chopped steak,

and mix well. Divide the mixture evenly among the tortillas.

PRO TIP: use an offset spatula to make smearing the mixture much easier! Smear the mixture evenly across the tortilla. Roll tightly. Cut the tortilla into 1 inch pieces, and place the pieces on a parchment lined baking tray. Bake (or grill) in a preheated 400° oven (or grill) for 12-15 minutes, until lightly browned. Serve with salsa and sour cream.
