Back in its heyday, Frank Sinatra, Marilyn Monroe, Judy Garland, Sammy Davis Jr., Bette Davis, Humphrey Bogart and Lassie were among the celebrated habitués of The Pump Room, an elegant Chicago supper club where the swells of yesteryear liked to eat, drink and hang out when they were in town. In November 2017, only four months after the venerable 80-year-old establishment closed its doors, it was reborn as Booth One, named for the coveted corner banquette that was once the prime perch for Ol’ Blue Eyes and friends. Inside the Ambassador Chicago hotel, beneath orb light fixtures designed to resemble Champagne bubbles, beside walls covered with black-and-white photos of former A-list regulars, diners now order from Chef/Partner Doug Psaltis’ menu of Continental classics (beef Wellington, Dover sole) and modern American interpretations (seafood tower of king crab, caviar, prawns, sea urchin and oysters; Asian-inflected salmon tournedos with sesame seeds and Brussels sprouts leaves; and crispy duck with new potatoes, gribiche and frisée). Preor post-dinner cocktails and wine can be enjoyed in the newly renovated bar with a gold double-vaulted ceiling. Still glam after all these years. 1301 N.
