STEFANO PEREGO is a Milan-based architectural photographer known for capturing modernist, brutalist, and postmodern structures. His work highlights both the monumental and the intimate, inviting reflection on modernism’s ideals and contradictions in the built environment.

When Nick Gavin, a Manhattan-based real estate agent, acquired this cedar-shingleclad cottage on Shelter Island, New York, from the late interior designer Melvin Dwork, the 1700-square-foot one-bedroom home functioned as a private retreat for the then single Gavin. But after meeting and marrying model Katrin Thormann and expanding the family with their daughter Greta, Gavin called on New York firm Workstead, based in Brooklyn and Hudson, to update the exciting house to better accommodate them. Connected by a glass breezeway, the home and pavilion feature high pine-paneled church-style ceilings, interior shutters, and plenty of light. The pavilion functionsas the main bedroom, with a bathroom up a set of stairs split on either side of a long corridor, French doors, and tall windows. The original home, with an expanded kitchen, a sunroom furnished with a day bed, and beautiful millwork, retains Dworks lagoongreen tiled floors and two black-painted louvers above the living room windows between the fireplace. Outside, a pool and landscaping tie it all together.

ACCESS

Nestled in the serene embrace of the Italian Alps in the Aosta region, the Valpelline Valley is the longest in the area and offers a tranquil escape from the bustling tourist trails. Village life in the area is largely born out of farming, famed for creating Fontina cheese from the endless alpine pastures. The small village of Bionaz has retained its traditional character, only getting rudimental road access as late as 1953, which no doubt helped to keep this remote area an unspoiled beauty bar the vivid turquoise reservoir Place-Moulin.

From the village, the trail winds its way through dense forests, past cascading waterfalls, and across rugged terrain, offering a taste of the natural beauty that defines the region. The hike or ski tour is moderately challenging, requiring a good level of fitness and experience in mountain navigation. As the route leaves the forest, the scale of the surrounding alpine peaks becomes more apparent and the hut sits atop a rocky buttress which watches over the meandering Valpeline valley below.

From the moment Chentre Bionaz comes into view, it becomes evident that this is no ordinary mountain refuge. Its architecture is a fusion of traditional alpine aesthetics with a contemporary twist of minimalism. Constructed primarily from a metal structure with a beautiful dark wood front, the bivouac exudes a rugged charm, its weathered exterior blending seamlessly with the rocky landscape that surrounds it. The interior offers a surprising number of beds lining the back wall with additional sleeping on a mezzanine while still keeping an airy feel. There are two dining and sitting areas, and a collection of unique ornaments including a line of seven sculptured heads which stand high on the wooden walls above - which could be either comforting or a little eerie depending. The shelter is surrounded by towering peaks at all angles, and boasts a view long down the meandering valley to the lights of Bionaz village and beyond.

The bivouac, inaugurated in 2010, is dedicated to Carlo Chentre, mayor of Bionaz from 1974 to 1990 and president of the local ski club, and to Ettore Bionaz, mountaineer, mountain guide, pioneer of mountain rescue in Valpelline and avalanche dog handler. First warden of the Crête nearby Sèche refuge and on July 24, 1985 on the Mont Cerf glacier.

Whole grain

A delicious medium-coarse bread with extra chewiness from the whole grains. For this, I use whole spelt grains, which I cook the night before. This increases the digestibility and the soaking process makes the bread juicy in flavor.

Boil the whole grains the night before you’re going to make the dough. Bring to a boil and simmer for about 15 minutes to ensure there are no hard pieces left. Cover with a lid and leave until the next day.

12:00 Mix almost all the water, sourdough, and flour together in a bowl. Cover with a lid/kitchen towel.

12:30 Mix in the salt, the whole grains, and the remaining water. Cover with a lid/kitchen towel.

13:00 Fold the dough over itself. Take one edge of the dough, pull it up, and fold it over itself. Rotate the bowl a quarter turn and repeat until you’ve folded all the dough. Cover with a lid/kitchen towel.

13:30 Fold the dough a second time.

14:00 Fold the dough a third time.

14:30 Fold the dough a fourth time.

16:30 Divide the dough in two. Preshape.

17:00 Final shape. Place a plastic bag over the baskets and place in the refrigerator.

Bake the next day. Preheat your baking sheet for 1 hour in an oven set to 480°F (250°C), using the top and bottom elements. Score the bread, place it in the pot, and put the lid on. Reduce the heat to 450°F (230°C). After 20 minutes, remove the lid and bake for another 20 minutes. Repeat the procedure for the second bread.

Durum and olives

A light, crispy bread with delicious black olives. I usually make this recipe as four smaller breads with slightly pointed ends and bake them on a baking steel. If the olives you’re using are very large, you may want to cut them into smaller pieces.

14 oz. (400 g) sifted durum flour 50 %

14:00 Fold the dough a third time.

Take one of the proofing baskets out of the refrigerator. Roll out the dough onto a sheet of baking paper. Divide the dough lengthwise with a dough scraper. Flour the cut surface so that it’s “closed” by the flour and then turn the dough so that the floured cut is face down on the sheet of baking paper. Press the ends a little to make them pointy. Flour, score, and slide into the oven using a peel. Pour ½–1 cups (100–200 ml) of boiling water into your baking dish and close the oven door. Reduce the oven temperature to 450°F (230°C). Set a timer for 20 minutes. When the time is up, take out the baking dish with water. Bake the bread for about another 10 minutes. Repeat the procedure for the second piece of dough.
