THE SOUTH COAST STYLE COVER ICON

Marcell Coetzee Marcell, who grew up in Hibberdene, is quickly rising through the ranks towards rugby stardom. His love of the game kicked off during early childhood. But barefoot rugby at break-time was only the beginning for Marcell. With the passionate mentorship of role models like his father, Dries, who once played for “The Bobbies” and his Suid Natal Primary School coaches, this young man’s ball skills soon matched his enthusiasm. After failing to make it to Craven Week Marcell refused to give up. Once matriculating from Port Natal High School in 2009, he went on to join the Sharks Academy in 2010. It was turnover ball! He kept gaining ground and once Marcell eventually made the coveted Sharks team he

won possession of a whole new ball game… While his eyes were on the ball a number of unions in South Africa had their eyes on him, especially during the Absa Currie Cup in 2011. Continuing with the Sharks, all his hard work and dedication started to pay off. His striking performances for the Sharks in all 12 games of the Vodacom Super Rugby tournament in 2012 helped to launch his career to the next level. He would soon lock shoulders with an even greater challenge. He was selected as one of the 32-man Springbok squad to face England in the Castle series in 2012. Marcell Coetzee’s green and gold dream was beginning to come true…

LIVING IN

AND LOVING IT!

SPENDS THE MORNING WITH MARCELL COETZEE AT HIS PARENTS’ FARMHOUSE NEAR HIBBERDENE ON THE SOUTH COAST.

MARCELL WITH HIS MATCH MEMORABILIA

Few things beat the warmth and sincerity of true South African hospitality... After being shown around by Marcell’s dad (we are looking for the perfect location for our cover shot), we stand admiring the spectacular view of rolling sugarcane fields, then stroll to the veranda as Marcell’s mother arrives with a generous tray of refreshments. She returns to the kitchen to bake a couple of milk tarts, which Marcell plans to take to Bismark du Plessis that evening, in celebration of his birthday. She loves preparing treats for her son and his teammates, some of whom are regular visitors to the farm.

Who do you want to see on the Summer Cover of South Coast Style? Email: info@southcoaststyle.co.za

8

We admire all his match memorabilia then settle down for a chat. What strikes us most about Marcell is his down-to-earth approach to life and keen sense of humour. He has strong family values and shares a close relationship with his father Dries, mother Delia and siblings Andrea and Armand (Chappie), who are all fervent supporters.

THE SARDINE RUN

Once a year, between June and July, thousands upon thousands of tiny, silvery Sardines move up the South Coast Shores.

fish spice and seasoning, then set aside to cool. After discarding the bones, return the sardines to the tomato/chilli sauce. Now add the egg, mashed potato and onion. Combine the ingredients by hand. Form into balls (bites). Roll in a mixture of breadcrumbs and seasoned cake flour and set aside. Deep fry the bites until the crumbs have turned a crispy brown. Garnish with lemon wedges and fresh coriander (dhanya) or curry leaves. Serve hot or cold with a selection of dipping sauces such as sweet chilli, peri-peri and soya and honey. Variation: For an oriental bite, add one fresh chilli (chopped, de-seeded) and/or fresh dhanya to the recipe. The same recipe can be used to form patties for a delightfully different fish burger. This classic French beef stew makes great use of cheaper cuts like chuck steak. The long, slow cooking in red wine leaves you with a rich and gratifying dish, best served on creamy mashed potatoes.

Method 1. Heat 1 T of the oil in a large saucepan. Add the garlic, carrot, onion and celery and cook for 2-3 minutes. Add the wine, thyme, garlic, 2 bay leaves and allspice. Bring to the boil and simmer for 15 minutes. Allow to cool. 2. Place the beef in a large bowl and pour over the wine marinade. Cover and refrigerate overnight. 3. Preheat the oven to 150°C. Drain the beef from the marinade and reserve the marinade. 4. Heat 25g butter and 1 T of the oil in a large frying pan. Add the bacon and cook until golden brown. Add the onions and transfer to a large oven-proof casserole dish. 5. Heat 1 T oil in a large frying pan. Pat dry the cubes of beef from the marinade mixture. Brown the beef cubes in the pan, in batches and transfer to the casserole dish. 6. Stir in the remaining marinade mixture, beef stock and mushroom soup powder into the casserole dish. Bring to the boil, cover and place in the oven for 3-3½ hours or until the beef is very tender. 7. Halfway through cooking, heat the remaining oil and butter in a large frying pan and cook the mushrooms until just browned. Add the brandy and cook for a few minutes. 8. Add the mushrooms to the casserole dish, stir and return to the oven for another 30 minutes.

RESPONSIBLE FISHING

Enjoy Nature’s Bounty KwaZulu-Natal’s diverse marine life, moderate water temperatures and pristine coastline make it a popular fishing destination for deep-sea fishermen and shore anglers alike. Fishing hotspots include Kosi Bay, Cape Vidal, the St. Lucia estuary, Sodwana Bay and Maphelana. There are also a number of famous fishing haunts along the South Coast, with a number of piers, lagoons, estuaries and ski-boat launch sites within easy reach. The Sandspit in Port Shepstone, Orange Rocks in Uvongo, North Bank in Umkomaas and Splash Rock in Port Edward are all well known. Popular line-fish range from cold water species such as Galjoen, Garrick and Salmon to warm-water game fish (that arrive with the warm Mozambican current) such as Kingfish, Barracuda and Grunter. Seventy per cent of all fish caught by shore anglers in KwaZulu-Natal are Shad (a popular eating fish).

Responsibly! The Marine Living Resources Act is national legislation that replaced the Sea Fisheries Act and KwaZulu-Natal Nature Conservation Ordinance. Responsibility for the enforcement of the Act in KwaZulu-Natal has been delegated to KZN Wildlife. As the Act is a consolidation of previous legislation, most fishermen are familiar with the regulations. A summary of bag and size limits can be found on www.kznwildlife.com

PERMITS Each person harvesting any marine resource, including all line-fishing, requires a permit to do so. The harvesting of intertidal resources in KwaZulu-Natal requires a specific permit issued by KZN Wildlife. Permits are available at any Post Office and are valid for 365 days from the date of issue. The enforced fish size and

bag limits that have been introduced make allowance for anglers to catch a diversity of fish, whilst allowing the fish at least one season to breed (to increase population) and minimising exploitation of any species. Sanctuary areas have been set aside inside marine reserves to act as a ‘nursery’ from which marine life can disperse and stock up other areas.

When you think of the words The Cellar, images of a subterranean cache of eminent quaffables (that’s wine, not beer, in plain English) springs to mind. This Boutique Restaurant is not below ground, but it is certainly above par. A pathway of pavers leads you to an elegantly lit, tastefully decorated, cosy fine dining restaurant.

Where would you expect to find a certified, authentic Tuscan restaurant in South Africa? Well, you can forget about the trendy Joburg jaunts or Durban diners, and head south, slightly inland to Trafalgar. Settled at the end of a banana tree lined avenue, is a bona fide Italian experience.

TASTE | WINTER 2013

The menu boasts an array of contemporary fusion food, from salt and pepper squid to pea and mint spring rolls and melanzane to start. For your main, I recommend the Thai prawns in a coconut curry sauce dressed with shavings of fried popadums, Potato Gnocchi in a rendered tomato and roast garlic emulsion, bacon wrapped pork fillet and their signature dish – the generously proportioned Cellar Fillet. If you have room, there’s a small but discerning selection of after dinner treats. For me, the medley of home-made ice-creams hits the spot, leaving you comfortably replete. The fine end to the fine dining is the opportunity to chat (and of-course compliment) chef and owner Dylan Smith, whose personal culinary creative stamp is an unmistakeable part of the whole experience.

On a moonlit night, you can catch glimpses of the Mpenjati Lagoon as it empties into the Indian Ocean. Marisa Toniolo and Andrea Boffi own and run this piece of Italy in Africa. They also cook all the food on the menu, with the help of personally trained cooks, some of whom have been with this dynamic duo since the restaurant opened just over six years ago. The food is genuine Italian. From the freshly made pasta, to the sauces that accompany it, you won’t get better than this. Try the squid ink linguine with grilled calamari in a tomato concasse, deep fried olives and Italianstyle, slow-cooked Red Roman fish dish. The vegetarian ravioli is also a must have. While there isn’t a smorgasbord of desserts, the crème brulee and flour-free, freshly baked Torta Peperina , a chocolate cake with a hint of chilli (add a shot of Kalua) are essential, no questions asked!

IT’S A MATTER OF TASTE

A REVIEW BY TERENCE PILLAY

Burlesque Café

26

It’s a South Coast staple. You can’t arrive in this neck of the woods and not eat at The Waffle House at least once during your stay. But don’t limit your view to the sickly sweet waffle treats that you’re used to.

From the street, the neon lights in the upstairs window of Burlesque Café compels you to make a pit stop even if you were planning to just drive by. This treasure trove of cullinary delight is sandwiched between antique and collectable stores, which could well have served as rich pickings for the creative eye that designed the interior.

TASTE | WINTER 2013

At this home of waffles, the humble, tasty, grid-shaped waffle has become a type of cuisine in its own right. The hummus and fried brinjal waffle, with red wine and fig preserve is every bit as lovely as the image it conjures before it hits your palate, as is the nut and lentil paté, made to order with roasted macadamian nuts and lentils and served with a pineapple and ginger compote. The cream cheese and avocado waffle is a special, also made to order, and is the ideal light lunch escape in the middle of a busy work day. The waffles are sugar-free, and in the move towards a healthier meal, you can also request an egg, gluten or dairy-free waffle. And if you’re a dyed-in-the-wool purist, there are dessert waffles. I recommend the Banoffee, fresh slices of banana with a homemade caramel sauce.

The day I visited, I opted to sit in the courtyard among the anthology of assorted outdoor relics... To nibble on, start with the mini mezze platter, which includes roasted peppers, home-made hummus, tszatziki, falafels, olives marinated in a piquant vinaigrette, luscious slices of tomato dressed with fresh mozzarella cheese, grilled brinjals, feta, deli salami, an avocado and cream cheese stack and assortment of flat breads. The lunch menu is vast and varied, and there are generous daily blackboard specials for those wanting something different. The home-made gourmet burgers are a must and come in beef, potato and prawn and vegetarian varieties, all of which is enveloped in a large ciabatta bun and served with new potatoes and a fresh side salad. Wash these down with their tart home-made lemonade or zesty ginger beer.

The flu jab is undeniably the best precautionary measure to ward off those nasty flu viruses this winter, but how can you protect your family from other germs? Your immune system works around the clock to defend your body from invasion, so why not give it a helping hand...

LIVING

1. Take a vitamin C supplement or a natural immune support formula including Echinacea. 2. Keep a bottle of hand sanitizer in your handbag and cubbyhole of your car (for easy access) to keep your hands germ-free. 3. Healthy housekeeping is key. Wash your linens regularly, wipe down the furniture down and open up the windows to let the sunshine and fresh air in.

“Giving each other time and respect to discuss each other´s work opens up a creative dialogue, allowing us to stimulate one another to reach stronger expression´s.”

FOCUS ON THE

Three Duarte Artists

Izidro Duarte, son Everett Duarte and his wife Frances Schandera-Duarte. Connected by family and inspired by creativity, these three professional artists work together at one address for six months of the year. Everett and Frances spend the remainder of the year in Germany painting and exhibiting in Europe.

Established and well respected artist Izidro Duarte has over time undergone many exploratory changes in technique and idiom but the depiction of the human figure has always remained constant. Exploring fresh methods of expression keeps him from stagnation – his two and three dimensional sculptures are a reflection of this. German artist Frances Schandera-Duarte without any figurative context, manages to direct the living surfaces of her work with delicate structures, creating dream-like mindscapes. Everett Paul Duarte is a contemporary abstract artist who´s paintings celebrate life, colour and spirit in an organic way. Since 2007 Everett and Frances collaborated and formed a new artist called Mpenja, this work focuses on their shared love for Africa. The three Duarte´s are represented internationally in public and private collections.
