DEAD VELVET CAKE

I NG RE DI E NTS • 1 box Red Velvet cake, plus ingredients called for on box • 2 8-oz. packages cream cheese, softened • 1 stick butter, softened • 2 1/4 c. powdered sugar • 1 tsp. vanilla extract • 1/2 c. cold water • 2 tbsp. cornstarch • 1/2 c. light corn syrup • 1 tsp. vanilla extract • Red food coloring

DIRECTIONS 1. Preheat oven to 350º and butter and flour two 9” cake pans. Prepare red velvet cake batter according to box directions. Divide between two cake pans and bake according to instructions. 2. Make cream cheese frosting: In a large bowl, beat cream cheese and butter until light and fluffy, then add powdered sugar and vanilla and mix until combined. 3. Make “blood”: in a small saucepan, stir together water and cornstarch until fully combined. Turn on heat to medium and pour in corn syrup. Let simmer and stir frequently for 2 minutes. Remove from heat and stir in vanilla and red food coloring. 4. Place bottom cake on a cake plate and trim the dome of the cake. Add “blood” to the top layer, just enough to dampen the cake. Cut the dome off the second cake and place upside down on the bottom layer of cake. 5. Frost the entire outside of the cake with cream cheese frosting, making sure to make an extra smooth layer on top. Pour “blood” on the top and allow some to drip down the sides. Serve.

I NG RE DI E NTS For the topping: • 2 medium onions, thinly sliced • 1/4 cup all-purpose flour • 2 tablespoons panko bread crumbs • 1 teaspoon kosher salt • Nonstick cooking spray

DIRECTIONS

For beans and sauce: • 2 tablespoons plus 1 teaspoon kosher salt, divided • 1 pound fresh green beans, rinsed, trimmed and halved • 2 tablespoons unsalted butter • 12 ounces mushrooms, trimmed and cut into 1/2- inch pieces • 1/2 teaspoon freshly ground black pepper • 2 cloves garlic, minced • 1/4 teaspoon freshly ground nutmeg • 2 tablespoons all-purpose flour • 1 cup chicken broth

1. Preheat the oven to 47° F. 2. Combine onions, flour, panko & salt in a large mixing bowl & toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown (about 30 minutes). Toss the onions 2-3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400° F. 3. While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-qt saucepan. Add the beans & blanch for 5 minutes. Drain them & immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside. 4. Melt butter in a 12-inch cast iron skillet on medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper & cook, stirring occasionally, until the mushrooms begin to give up some of their liquid (about 5 minutes). Add the garlic & nutmeg and continue to cook for another 1-2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth & simmer for 1 minute. Decrease the heat to medium-low & add the half-and-half. Cook until the mixture thickens, stirring occasionally (6-8 minutes). 5. Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly (15 minutes). Remove and serve immediately. PCs know what it takes to carry each project from start to finish, connecting all the engines needed for a successful lighting upgrade. They are the bridge connecting Customers, Affiliates, Engineers, Contract Administrators, Procurement Managers, Warehouse Managers, Installation Team, Financing and Maintenance. A Project Coordinator’s job is endless and PCs are constantly aware of red flags that may threat the success of a project. It’s hard to imagine a day in the life of

UPCOMING EVENTS WEDNESDAY, OCTOBER 17 Every October, FES hosts a Bake Sale to gather donations and raise awareness for Breast Cancer. With goods backed (or bought) and sold by the team, the FES Bake Sale is always a hit! FES generously doubles the money raised by the team. The entire team should participate - whether with something homemade or store bought.

SATURDAY, OCTOBER 27 For Breast Cancer awareness Month, we are organizing a team to participate in a walk for the cure. Making Strides of Broward (Walk/Run for American Cancer Society) happens on Saturday, October 27th at Huizenga Plaza. Registration begins at 7:00AM & the face will begin at 8:30AM. WEDNESDAY, OCTOBER 31 On Wednesday, October 31st, wear your best Halloween Costume for our yearly Best Costume Competition. There will be a prize for the best costume, so dress to impress! There will also be a “Halloween Cube War” where teams of cubes/ work areas are encouraged to compete for who has the spookiest area (without compromising safety). The winning team will get free lunch!

WEDNESDAY, NOVEMBER 21 On Wednesday, November 21st, FES will be having a family-style company potluck. Everyone is encouraged to bring in a dish to share with the entire team! Further details coming in November.
