Frederick Douglass, an inspirational figure in history Influential and inspirational figures abound throughout African-American history. One of the more notable such figures is the abolitionist leader Frederick Douglass, who was born into slavery but would grow up to become a noted intellectual and ardent supporter of causes ranging from the abolition of slavery to women's rights to Irish rule. Born in Talbot County, Maryland around 1818 (the exact year of Douglass' birth is unknown), Douglass' mother was a slave and his father likely a white plantation owner. Douglass was separated from his mother at a very young age, a practice that was not uncommon at the time, and sent to live with his maternal grandmother, Betty Bailey. That arrangement did not last long, as Douglass was soon living in the home of a white plantation owner, who may or may not have been Douglass' father. Douglass eventually found himself living in Baltimore with Hugh and Sophia Auld, the latter of whom would begin to teach the young Frederick Douglass the alphabet, ignoring the ban on teaching slaves. Though Hugh Auld would object to his wife teaching a slave child and demand she stop, the limited exposure to reading and writing had been enough to stir Douglass, who would learn to read and write from white children in the neighborhood and by teaching himself. Once Douglass learned to read, he became an avid reader, reading newspapers and political writings that would help shape his anti-slavery stance in the years to come. In addition, Douglass would use his literacy to help other slaves follow in his footsteps, teaching them

to read and write at a weekly church service. In 1833, Douglass was taken from Hugh Auld and returned to work for Thomas Auld, who would send the teenaged Douglass to notorious "slave-breaker" Edward Covey, who routinely and viciously abused Douglass until a physical confrontation between the two would force Covey to stop abusing Douglass once and for all. In 1838, desperate to flee slavey, Douglass finally succeeded in doing so on his third attempt, when he escaped on a train using a false identification with the help of a woman named Anna Murray, who would soon become Douglass' wife. The couple would eventually settle in Massachusetts, where Douglass would become heavily involved in the abolitionist movement, sharing his story. In 1845, Douglass' first autobiography, "Narrative of the Life of Frederick Douglass, an American Slave," was published and became a bestseller. The book remains required reading for many of today's high school students. Though the book was a success, Douglass' status as a runaway slave still put him in danger of being recaptured, a reality that forced Douglass to depart for Ireland, where he would spend two years speaking of the ills of slavery. Douglass also frequently spoke in England, where a group of his supporters collected funds to purchase his freedom. By 1847, Douglass was a free man and returned to the United States. Upon his return to the United States, Douglass became even more heavily involved in the abolitionist movement, producing abolitionist newspapers and supporting women's rights.

With the arrival of the Civil War, Douglass had risen to a level of such prominence that he consulted with President Abraham Lincoln, who still did not earn the famed abolitionist's vote in 1864 election because of Lincoln's unwillingness to publicly endorse suffrage for freed black men. Following the war, Douglass was appointed to numerous political positions, even becoming the first AfricanAmerican nominated for the vice presidency of the United States in 1872, though Douglass had no knowledge of the nomination and did not campaign. Douglass would pass away in 1895, leaving behind an enduring legacy that remains one of the more inspiring and influential tales in American history.

President's Day inspired by George Washington President's Day is an American holiday that is celebrated each year on the third Monday in February. School children typically get the day off from school, and many professionals also get the day off from work. Established in 1800, President's Day once went by a different name. Known as Washington's Birthday, which is still the legal name of the holiday, this day was meant to celebrate the first President of the United States, George Washington, whose birthday was February 22. Congress declared that day a federal holiday more than 200 years ago, and eventually the holiday grew to become a celebration of President Abraham Lincoln, who was born on February 12, as well. The holiday is now a celebration of the lives and accomplishments of every U.S. president. Few Americans would be hard pressed to identify George Washington's visage, which is depicted on some American currency, including the $1 bill. Born in 1732 to Virginia planters, Washington's interests included western expansion, which he was able to take part as a teenager, helping to survey the Shenandoah lands at the age of 16. Washington was also interested in military arts, and he was commissioned a lieutenant colonel in 1754, eventually playing a role in what became the French and Indian War. In 1759, Washington was serving in the Virginia House of Burgesses, an assembly of elected representatives of the English colonies in North America. Growing frustrated with and feeling exploited by British regulations, Washington voiced his resistance to restrictions placed on colonists,
who were moving toward what would become the American Revolution. At the Second Continental Congress, which assembled in 1775, Washington was elected Commander-in-Chief of the Continental Army, taking command of troops at Cambridge, Massachusetts on July 3, 1775. Under Washington's command, the Continental Army would ultimately succeed, winning the colonists their independence from British rule. In 1787, Washington presided over the Constitutional Convention in Philadelphia, where the new Constitution was ratified. Within two years Washington was unanimously elected as the first President of the United States. Though the current two-term limit was not law at the end of Washington's second term, he chose to retire from the Presidency anyway, leaving office in 1797. He would retire to his Virginia home at Mount Vernon, where he still engaged in various business dealings. Within three years of his retirement, however, Washington would fall ill of a throat infection that ultimately took his life on December 14, 1799. In addition to providing the inspiration for President's Day, Washington's legacy is that of a hero who led an army of colonists to a victory over a dominant empire. The Washington Monument and Mount Rushmore are two of the more notable monuments honoring the first President of the United States. In addition, the nation's capital of Washington, D.C. is so named in honor of George Washington.

Valentine's Day facts, superstitions Every February 14th people around the world exchange gifts, chocolates and romantic greetings for a day set aside for lovers. Many traditions are followed, all in the name of St. Valentine. Still, people may not understand why such customs are upheld. Much of the history of Valentine's Day and St. Valentine himself is shrouded in mystery, and much of what's widely accepted is inaccurate. though they have been usually verbal in nature. •Valentine's Day is celebrated in the United States, Canada, Mexico, the United Kingdom, France, and Australia. •Valentine's Day and Mother's Day are the most popular holidays to give flowers. •According to Hallmark, women purchase 85 percent of all valentines. •According to the Greeting Card Association, an estimated one billion Valentine's Day cards are sent each year, making Valentine's Day the second largest card-sending holiday of the year behind Christmas. •Candy was among the earliest Valentine's Day gifts and remains a popular gift today. •Some tales suggest that the type of bird a girl watches on Valentine's Day predicts her future husband. Freezing food for storage is a way to stretch budget Freezing food for storage is an ideal way to stretch budgets and plan ahead for meals when time is of the essence. Storing foods in the freezer also saves money by reducing spoilage and the amount of food that ends up in the trash. Putting food on ice has been a popular storage method for centuries. Despite myths that abound about frozen foods, nutritional content in most food is not lost during the freezing process, and frozen produce is just as healthy as fresh items. Some other foods may not taste as good or retain their distinctive texture when frozen, but knowing how and when to freeze is the key. Seafood: Most of the seafood avail-
able at markets undergoes a process called "twice freezing," an acceptable and cost-saving measure. Fish caught at sea is immediately frozen for shipping. It is then thawed, cleaned and processed, after which it is frozen again and sent to market locations. Once frozen fish has been thawed for use in meals, it is unadvisable to refreeze leftovers. The same can be said for meat or poultry that has been previously frozen. Otherwise you may notice the taste and texture are quite different from fresh foods. Watery foods: Fruits, soft cheeses and water-rich produce like celery or cucumbers should stay out of the freezer. While they may freeze well and fast, upon thaw-
ing you can be left with mushy, limp and watery results. Eggs: Do not freeze eggs in their shells. During the freezing process, the eggs will expand and the shells will crack. This can pose a food-storage issue. It is better to eat eggs fresh. Fried foods: Fried foods will not retain their crispiness after freezing and thawing if they are already cooked. If you must prepare fried foods in advance, coat the uncooked foods in a breading material and then freeze. When you're ready to fry, remove the items from the freezer and cook. Dairy: Milk will freeze and thaw well, but other dairy products may not hold up
as well. Some dairy products may separate upon thawing and curdle. Cream cheese, sour cream and mayonnaise will lose their smooth consistency after being frozen. Stick to harder cheeses, such as cheddar, for freezing. And if you must freeze cheese, use it in foods that will be cooked, like casseroles or pasta dishes, instead of being served on its own. When freezing any foods, keep in mind that liquid will expand. Leave adequate room for expansion in the storage container. Unless the original container (such as a milk carton) has enough room, you may need to transfer foods to another container before freezing.
Health benefits of caffeine could outweigh negatives
The pitfalls of caffeine consumption are well known, but the various health benefits of caffeine are often overlooked. Excessive caffeine can make a person jittery and unable to fall asleep. However, caffeine can also prevent disease by boosting the immune system. Caffeine is a bitter, white crystalline xanthine alkaloid that acts as a psychoactive stimulant drug. It is a naturally produced plant product that is most often found in coffee beans, tea and cocoa. Whether caffeine addiction is real or not is open for debate; however, regular coffee drinkers who stop drinking coffee have experienced caffeine withdrawal symptoms. In the last 60 years, researchers have conducted thousands of studies on caffeine and they're continuing to study whether or not it's addictive. Though few might be willing to say with certainty that caffeine is "good" for you, caffeine does have its strong points. Fights damage-causing free radicals: Free radicals are molecules in the body that can attack healthy cells and cause damage that precipitates disease. Antioxidants are substances that eliminate free radicals in the body. Recent studies have shown that caffeine's antioxidant activity actually fights free radicals quite well. In a study published in The Journal of Physical Chemistry B, the different chemical mechanisms of caffeine were studied in relation to free radicals. Researcher Jorge Rafael
Leon-Carmona of Mexico found that a mechanism called radical adduct formation, or RAF, was the main reason caffeine can protect against damage from free radicals. Improves memory and brain function: Harvard University researchers have determined that men who drink four cups of caffeinated coffee a day are half as likely to develop Parkinson's disease as those who don't. The results are believed to be linked to caffeine's stimulation of dopamine production in the body. Dopamine is a brain chemical that is responsible for alertness, problem-solving capabilities and feelings of pleasure. An Austrian study says caffeine can boost cognitive abilities for about 45 minutes, which means it may help individuals score better on tests or perform better in business meetings. There is also evidence that caffeine can delay or prevent the onset of Alzheimer's disease. That's because caffeine can block adenosine receptors in the brain. Adenosine slows down the neurological system so that the body can relax. However, adenosine may also contribute to the buildup of amyloid-beta, a toxic brain plaque that's associated with Alzheimer's disease. Helps the heart: Although caffeine can cause blood pressure to rise because it constricts the arteries, caffeine does not appear to contribute much to the development of heart disease. In fact, scientists at Brooklyn College found people who drank four cups of caffeinated coffee daily had a 53 percent lower risk of dying of heart dis-
ease than those who didn't consume a cup of Joe. Individuals who do not already have hypertension can tolerate moderate coffee drinking, and over time their bodies actually may become accustomed to the temporary rise in blood pressure. Aids with type 2 diabetes risk reduction: More than 125,000 participants were studied in a 20-year look at coffee consumption and its potential relationship to type 2 diabetes. Researchers at the Harvard School of Public Health and Brigham & Women's Hospital have found individuals who drank caffeinated coffee lowered their risk for type 2 diabetes considerably. Men saw a 50 percent reduced risk, and women saw their risk reduced by 30. Alleviates headaches: Caffeine is often a hidden component of analgesics. Working in conjunction with the pain medication, caffeine helps the body absorb the pain reliever more efficiently. This requires a smaller amount of the drug and brings relief faster. Some other people surmise that since caffeine is a natural mood booster, it also helps the body to feel better faster. Following this line of thinking, caffeine may help to prevent other pain associated with exercise, fibromyalgia and arthritis. Sometimes caffeine is seen as the villain in a healthy living plan. Yet there is much research and ever-evolving theories that caffeine may be more help than hindrance.

Challenges facing farmers today and tomorrow Though farming was once big business in the United States, by 2012 less than 1 percent of Americans were professional farmers. Many challenges face today's farmers, many of which are largely unknown to the general public. Many people have an outdated view of a farm as a small, family-owned and operated parcel of land where livestock is raised in open pens and crops are handharvested when ripe. The reality is that modern-day farms have had to overhaul operations to meet demand and remain competitively priced while adapting to the ever-changing ways technology infiltrates all parts of life. Each of these factors present obstacles for today's farmers. Technology: Rural farming communities are expected to make an effort to integrate modern technology into an industry that has been around for centuries. But such a transition in rural areas, where communications systems may not be as up-to-date as those in urban areas, is not always so easy. According to the Manitoba Rural Adaptation Council, a shift from a resource-based to an information-based economy, compounded by the rapid introduction and expansion of new technology in the workplace, has altered farm operation and the skills in demand. Older workers who have been schooled in one way of agriculture may have a significant impact on labor supply and the vitality of farming as a career. Younger adults who are knowledgeable in technology may no longer seek out agricultural careers. Decrease in farming as an occupation: The United States Environmental Protection Agency says that only about 960,000 Americans claim farming as their principal occupation. As that figure has dwindled, the average age of farmers continues to rise, as the Bureau of Labor Statistics notes that roughly 40 percent of the farmers in this country are 55 years old or older. This has led to concerns about the long-term health of family farms throughout the United States.
Environmental concerns: Many farmers have come under scrutiny for how farming impacts the environment. A growing emphasis on sustainability and conservation has led many people to protest certain farming practices. Protesters claim that certain practices, such as raising livestock, can pollute water, while the use of fertilizers and chemical pesticides is bad for the environment. Many farmers, however, have altered their methods to be more environmentally friendly and self-sustainable in the process. Climate change is another environmental issue farmers must deal with. Strong storms and severe droughts have made farming even more challenging. Financial fall-out: The ongoing recession of the last half-decade has also affected farmers. In November of 2012, the United States Bureau of Labor Statistics indicated that the unemployment rate within the agriculture, forestry, fishing, and hunting industries was at 13.6 percent, far higher than the national unemployment rate. As a result, many farm families have found themselves stuck between a rock and a hard place, as rising costs for equipment and technology are being coupled with decreasing profits and rising unemployment. Further complicating matters is competition from corporations and international food producers who have made it difficult for family farmers to turn a significant profit. Many family farmers rely on loans and lines of credit to survive, but thanks to changes in the financial sector that saw banks become less willing to extend lines of credit, some farmers are facing bankruptcy. Though it can be easy for those who do not work in the agricultural industry to overlook the struggles facing today's agricultural professionals, a greater understanding of those struggles and the challenges that lay ahead can benefit the industry and its employees down the road.

Make your favorite recipes healthier
A healthy diet plays a significant role in a person's overall health. Without a healthy diet, men and women are more susceptible to disease and other potentially harmful ailments. But when many people think of a healthy diet, a lack of flavor is often one of the first things to come to mind. That's a common misconception, as a diet that's healthy and full of nutrients can simultaneously be flavorful. In fact, it's easy to enjoy many of your favorite dishes in a way that makes them much healthier. Oftentimes, a few minor alterations to a recipe is all it takes to turn the dish from high-risk to healthy. Trim the fat. No one wants to eat fat, but fat isn't entirely bad for you. Fat can help your body absorb vitamins A, D, E and K, and replacing fat with something like carbohydrates decreases how much these valuable vitamins are absorbed. In addition, dietary fat releases chemicals in the brain that make you feel full, reducing the likelihood that you will overeat. Those are just a few of the benefits of dietary fat, which is an essential element of a healthy diet. But overconsumption of dietary fat can be dangerous, and many people simply need to trim some fat from their diets. One way to do that is to reduce how much butter, shortening or oil you use when cooking. For some recipes, you may be able to cut suggested portions of such ingredients by half without replacing them; however, for others, especially those for baked goods, these items may have to be replaced. In the case of the latter, find a suggested alternative to high-fat items, and only use half of the high-fat item listed in the original recipe. Substitute healthier fare. Substituting items is another way to turn a favorite dish into a healthier dish without altering the flavor dramatically, if at all. For example, instead of cooking with enriched pasta, purchase whole-wheat or whole-grain pastas, which are higher in fiber and lower in calories. If a recipe calls for using milk, choose fat-free milk instead of whole milk. Doing so reduces your fat intake by nearly 8 grams per cup. Recipes can even be made healthier by simply cutting back on the main dish and adding more vegetables. Instead of using the recommended amount of meat or chicken, scale back and make up for it with additional vegetables. Change your methods. Certain cooking techniques are healthier than others. Frying foods or cooking with fat, oil or salt is not the healthiest way to prepare a meal. Some of your favorite dishes that call for frying or cooking in oil can be just as flavorful if you opt for healthier methods like braising, broiling, grilling, or steaming. When recipes call for basting foods in oil or drippings, forgo these unhealthy options and baste foods in vegetable juice or fat-free broth instead. What you use to cook can also be healthy or unhealthy. Nonstick cookware won't require you to use oil or butter to keep foods from sticking to the pan. Men and women who enjoy food and cooking their own meals can take several steps to make those meals healthier without sacrificing flavor. Many American men and women over the age of 50 who were affected by the recession and subsequent rise in unemployment are being advised to work until 70 instead of still aiming to retire at 65.That's because the Social Security benefit increases by 8 percent for every year an individual delays taking it after reaching full retirement. That increase extends all the way to age 70, making it advantageous for those men and women to delay taking their benefit if they can afford to do so.

A simple way to enjoy baked goods and save money is to create your own make-at-home version of baking mixes. This recipe is similar to those that you can buy at the grocery store. Having this easy baking mix helps speed up the process when you want to make anything from biscuits to muffins to banana nut bread. It's a simple, five-ingredient recipe that you can make to have on hand when you are in a hurry.

Mix up a batch of baking mix
To make 11 cups of mix you will need: 8 cups of flour (all purpose, wholewheat or a combination of the two) 1/4 cup plus 1 tablespoon baking powder 2 teaspoons salt 1 cup nonfat dry milk powder 1 1/2 cups shortening
liquid to dry ingredients and stir for 15 strokes or just until blended. A few lumps are OK. Bake in well-greased muffin tin at 400 F for 20 minutes for 10-12 medium muffins. For apple muffins, add 3/4 cup peeled, diced apples, 1/4 teaspoon cinnamon and a dash of nutmeg. •To use in your home recipes, use 1 1/2 cups of Easy Baking Mix for each cup of flour in the recipe. Leave out the leavening, salt, milk and fat in the recipe because they're already included in the mix -- a great shortcut for your favorite recipes! Combine the dry ingredients in a bowl. Sift to assure even distribution of the ingredients. Using a pastry blender, cut in shortening until the mix is the consistency of cornmeal. Easy Baking Mix can be stored in an airtight container in a cool, dry location and will stay fresh for several months. If you would like to keep it longer, store it in the refrigerator or freezer. If you use whole-wheat flour, the mix must be stored in the refrigerator or freezer because there is more fat in whole-wheat flour, and it can become rancid at room temperature. •To make biscuits, mix 2 cups of Easy Baking Mix with 1/2 to 2/3 cups of water. Use just enough water to make soft, nonsticky dough. Turn out onto a floured surface and knead about 10 times. Roll or pat out dough to 1/2-inch thickness. Cut out with a biscuit cutter and bake at 450 degrees F for 8-10 minutes or until lightly browned. •To make muffins, use 2 cups Easy Baking Mix, 1/4 cup sugar, 1 egg, beaten, and 1 cup of water. Stir sugar into mix. In separate bowl, mix water and egg. Add

1 (4-serving) package sugar-free cherry gelatin 1 (4-serving) package sugar-free vanilla cook-and-serve pudding mix 1 (16-ounce) can tart red cherries, packed in water, drained and 1/2 cup liquid reserved 1 1/4 cups water 3/4 cup biscuit reduced-fat baking mix 3 tablespoons unsweetened cocoa Sugar substitute, suitable for baking, to equal 1/2 cup sugar 3 tablespoons chopped pecans 1/3 cup plain fat-free yogurt 1/4 cup fat-free mayonnaise 1 teaspoon vanilla extract
1. Preheat oven to 400 F. Peel, core and cut pears into 1/2-inch-thick slices. In shallow 1 1/2-quart baking dish, toss pears with lemon juice, 1 tablespoon brown sugar and 1 teaspoon ground ginger; set aside. 2. In small bowl, stir flour, pecans, margarine or butter, and 1/4 cup packed brown sugar until mixture resembles coarse crumbs. Sprinkle flour mixture over pears. Bake pear mixture 30 minutes or until golden and bubbly. 3. Meanwhile, prepare Spiced Whipped Cream: In small bowl, with mixer at medium speed, beat heavy or whipping cream, sugar, cinnamon, nutmeg, allspice and 1/8 teaspoon ground ginger until stiff peaks form. Cover and refrigerate until ready to serve. 4. Serve crisp warm or cool on wire rack to serve later. To serve, spoon crisp into 4 dessert dishes. Top with Spiced Whipped Cream. Serves 4.

Drop by spoonfuls onto cherry mixture to form 6 mounds. 4. Bake for 25 to 30 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 6 servings.

On Feb. 24, 1836, in San Antonio, Texas, Colonel William Travis issues a call for help on behalf of Texan troops defending the Alamo, an old Spanish mission and fortress under attack by the Mexican army. Only 32 men from the nearby town of Gonzales responded to Travis' call for help. On Feb. 23, 1885, a 19-year-old man named John Lee is sent to the gallows in Exeter, England, for the murder of a rich older woman. Keeping marriage going strong The trend of long-married couples calling it quits has been growing. However, there are some steps couples can take to keep their relationships going strong. According to the AARP, divorces among people over the age of 50 have doubled since 1990. According to Susan Brown, codirector of the National Center for Family & Marriage Research at Bowling Green State University, one out of three Boomers will face their golden years unmarried. There are a number of reasons why divorce rates have skyrocketed among the over-50 set. Understanding just why these divorces are taking place and taking proactive steps to alleviate some of the divorce triggers can be a recipe for a happy marriage that continues throughout a couple's golden years. Increase accountability. Ours is a transient society where families no longer bat an eyelash over moving great distances away from other family members. As a result, Boomers may feel like they are not connected to children or grandchildren. With this in mind, they may feel less attached to their marriage or their responsibilities or believe that no one will get hurt by a divorce. Keeping families close and remaining in frequent contact can increase accountability and reduce the propensity for divorce. Get things out in the open. A major reason for a failed marriage is years of avoiding significant issues rather than addressing problems. Couples should make time to talk to each other about anything that might be bothering them rather than letting too many things slide. If these conversations turn into shouting matches, there is always the option of bringing in a third party to serve as a mediator. Spend time apart. After retirement, couples may find themselves spending hours upon hours in each other's compa-
