This magazine celebrates the astonishing café culture and atmosphere thriving at the heart of Earlwood, offering enlightening material. It is offered free for the satisfaction of our valued supporters and will be made available to the wider community through various distributors. In this first issue, we speak to Maria Tziomakis from Frappe who tells us about the journey toward building such a great business. Earlwood resident Bai Antoniou also enlightens us with his journey and dedication toward becoming a professional soccer player.

W’ Maria Maria Tziomakis, general manager of Frappe Café Bar, has established a buzzing café that has become Earlwood’s most well known coffee shop. With a wide spread of marketing presence and special consideration as to what customers are offered, Maria has turned this two year old business into the go to place for anyone around the area. After winning the Small Business Award in the Canterbury region after few months of establishment, Maria has shown her success and strives to make Frappe Café bar bigger and better.

Q. Tell us how it all started and how you decided to start your business?

A. The main idea for us was to incorporate the

Greek lifestyle and way of life into a café here in Australia. The owners of Frappe travel to Greece all the time, going back and forth, from café to café, which ultimately really inspired them to build their own small café just like in Greece. Who doesn’t like relaxing with a good coffee on a hot summers day. From the menus to the aesthetics of the shop, we attempted to create that feeling that you get when you’re on holidays. After countless months of retrieving recipes for all the favourite Greek dishes and ingredients for the specialised drinks, we started to build. It was a long process but it was all worth it. Like we say here at Frappe Café Bar, ‘It’s not just a coffee, it’s a life style.”

Q. The taverna nights and the Sunday night DJ, where did those ideas come from?

A. Our customers come to Frappe in order to

relax and have a good time with delicious coffee and food. Our main goal was to incorporate the Greek lifestyle and atmosphere into our small business, and we succeeded. Everyone who has been to Greece knows about the taverna’s and the great music, so why not bring it to Earlwood? After 8| FRAPPE CAFE BAR

enjoying the specialised food for the taverna night, the tables are pushed to the side, the bouzoukia come out and the Greek dancing begins. It really does make you feel like you’re in Greece.

Q. How far will you take Frappe Café Bar? Any

plans for the near future you should be telling us about?

A. We’re more than happy with the way Frappe

has turned out. In just two short years we managed to create a successful and very popular café. There are some new things upcoming within the next year, you will all just have to wait and see what we have in the works!

Q. Frappe Café Bar is a great achievement. You should be proud.

A. I’m so proud to be a part of this café. To see

how far we have come in just two short years is amazing. All our hard work and our dedication paid off, and I would have never thought we would come this far. I would like to believe that we have all managed to create a wonderful atmosphere where our customers feel comfortable. Everyone here can say it’s like our second home and I couldn’t ask for anything to change.

Knock-Knock, Who’s There, Mary, Mary who? Mary-Christmas! O n Christmas Eve, children, especially boys, often go out singing ‘kalanda’ (carols) in the streets. They play drums and triangles as they sing. Sometimes they will also carry model boats decorated with nuts which are painted gold. Carrying a boat is a very old custom in the Greek Islands. If the children sing well, they might be given money, nuts, sweets and dried figs to eat. Christmas Trees are becoming more popular in Greece. Every December, in the city of Thessaloniki (which is the second biggest city Greece) a huge Christmas Tree and three masted sailing ship are put up. It’s a popular tourist attraction. Going to a Midnight Mass Service on Christmas Eve is very important for most Greeks. After the service people can go home and end their Advent fast. The main Christmas meal is often Lamb or pork, roasted in an oven or over an open spit (arni). It’s often served with spinach and cheese pie and various salads and vegetables. Other Christmas and new year foods include ‘Baklava’ (a sweet pastry made of filo pastry filled with chopped nuts and sweetened with syrup or honey), Kataifi (a pastry made from a special form of shredded filo dough and flavored with nuts and cinnamon), Theeples (a kind of fried pastry). A traditional table decoration is loaves of ‘christopsomo’ (Christ bread). It’s a round sweet loaf and the crust is often decorated with what the family do for a living (if you’re a fisherman there would be fish, etc.). 10| FRAPPE CAFE BAR


Christopsomo: Greek Christmas Bread In Greek: Χριστόψωμο, pronounced hree-STOHP-soh-moh Christopsomo, or Christ’s Bread, is considered a sacred tradition in many Greek Orthodox homes, and the care with which it is made is said to ensure the well-being of the home in the year to come. BAI ANTONIOU EARLWOOD’S NEXT UPRISING STAR his selection into the Australian U/13 National team in 2010. The young star participated in the Asian Festival of Football where his team competed against Malaysia, Vietnam, Singapore, Indonesia and numerous others around the Asian coasts.

A

t 12, he was labelled the game’s upcoming star. Four years later, Bai Antonio, 16, has received a scholarship for the NSW Institute of Sport after competing in countless football divisions all around the world. In 2010, Antonio played for the West Sydney Berries FC NSW Premier League, scoring the winning and only goal for the Grand Final of the NSW Elite State Competition against the undefeated Marconi Club. Spectators noticed Antonio’s potential, offering him scholarships to the under 14 Sydney Olympic FC NSW Premier League Club and most recently, the NSW Institute of Sport. The Earlwood resident has dedicated his life to football, training almost everyday to achieve his dream of becoming one of the best football players Australia has ever seen. Antonio’s international career was prompted by

Antonio’s coach stated Bai has leading qualities and significant drive and motivation to get him to where he wants to be: at the top of the ladder. Antonio has received countless awards from every team he has played for, including Best and Fairest Award, the Golden Boot award and the Highest Goal Scorer award. Currently enrolled in the Australian Institute of Sport, Antonio has a promising career path and a strong support network behind him. He truly is an upcoming star.

I

n Greek culture, food is much more than sustenance. Culture, comfort, family and life are extracted from Greek cuisine. When it came to food, the Ancient Greeks valued three things as the cornerstones of Greek cuisine: bread, wine and olive oil. These days, not much has changed. Commonly known as the Mediterranean diet, it is considered to be one of the healthiest models or eating. Greece has an ancient cooking tradition dating back several millennia, and over the centuries Greek cuisine has evolved absorbing numerous influences from other countries, as well as having influenced others. From one of the ancient civilisations on earth comes simply prepared food that uses the best of what’s in season and adds a little magic to allow the taste buds to tingle. Frappe Café Bar has a wide variety of seafood’s and meats, enlightening patrons with the Greek cuisine and Mediterranean taste. After many tactical trips to the UK and Greece, we have managed to mimic the homely atmosphere and impressive food, creating a café-culture anyone can call a second home.

Gemista (γεμιστά) is the well-known Greek recipe for stuffed tomatoes, bell peppers, zucchinis, potatoes and eggplants, and is one of the most popular vegetarian dishes in the summer. The simple dish is easily made at home being a perfectly balanced meal, bursting with fresh flavors. The vegetables surrounded by the sumptuous tomato sauce, melt in your mouth, and when you cut one open, the plumped up rice, having soaked up all the juices from the vegetables, slowly fall onto the sauce, creating the most amazing mouthful. The only thing you need to complete the picture is feta, good bread and a glass of red wine. Recipe for Gemista Serves 4 to 6 8 medium/large peppers
1/4 cup + 1/3 cup olive oil, separated
 1 1/4 cup wild rice
 1 cup + 1/2 cup chopped tomatoes, separated
 3/4 cup water
1 medium onion, finely chopped
 3 scallions, finely chopped
 1 carrot, finely chopped
 1/4 cup finely chopped dill
 4 medium potatoes, peeled, halved and quartered
 Salt and freshly ground peppers to taste


Directions Preheat the oven to 375 degrees. Lightly oil a large baking dish or tin. In a medium skillet, heat the 1/4-cup olive oil over medium high heat. Cook the onion, scallions and carrot until slightly softened, about 5 to 7 minutes. Stir in the rice and cook for a minute longer. Add the 1/2-cup chopped tomatoes, water and dill and continue to cook, stirring often, about 10 minutes longer. Remove from heat and season with salt and freshly ground pepper. Meanwhile, rinse peppers then cut a cap from the top and reserve. Clean the seeds from each pepper then place it in the baking tin, making sure to set its corresponding cap close by. Season the insides of the peppers lightly with salt and pepper. Fill each pepper (without packing) 1/2 to 2/3 full with the rice mixture. Top each pepper with its cap, securing with toothpicks if necessary. Arrange the potatoes in the baking tin around the stuffed peppers. Sprinkle peppers and potatoes with salt and pepper, drizzle remaining 1/3 cup olive oil on top then pour over the remaining 1 cup chopped tomatoes. Bake covered with foil, for 40 minutes, then remove foil and bake uncovered for 15 to 20 minutes longer until the potatoes are fork tender and the rice is done when tasted (add water to the baking dish as necessary during cooking).

There are many variations of this recipe for Gemista. Some add minced meat into the stuffing for a non-vegetarian option, or raisins for a sweeter option.

Anesi was established in 1988 as a tra-

ditional Greek taverna called “Plaka”(an old historical neighbourhood in the centre of Athens just under the Acropolis) with typical basket weave chairs, rustic timber tables, live Greek music and of course plenty of plate breaking. Anesi operated this way for the best part of 24years, with the only exception; a name change from the then owner Chris Koulinos around the year 2000 changed the name to Anesi Greek Taverna. Chris continued to entertain Greeks and Non Greeks of Sydney for the better part of a decade, with live bands, special guest singers from Greece, theme nights and an abundance of Dj line ups throughout the years. The current owners in May 2012 transformed Anesi Greek Taverna into an up market Lounge Bar, dropping the traditional Greek tavern name opting instead to call the newly refurbished venue Anesi Lounge Bar keeping in line with Lounge Bars around the world.
