Wine Wine is an alcoholic beverage made from fermented grapes or other fruits. The natural chemical balance of grapes lets them ferment without the addition of sugars, acids, enzymes, water, or other nutrients. Yeast consumes the sugars in the grapes and converts them into alcohol and carbon dioxide. Different varieties of grapes and strains of yeasts produce different styles of wine. The well-known variations result from the very complex interactions between the biochemical development of the fruit, reactions involved in fermentation, terroir and subsequent appellation, along with human intervention in the overall process. The final product may contain tens of thousands of chemical compounds in amounts varying from a few percent to a few parts per billion.

Champagne Champagne is a sparkling wine produced from grapes grown in the Champagne region of France following rules that demand secondary fermentation of the wine in the bottle to create carbonation. Some use the term champagne as a generic term for sparkling wine, but the majority of countries reserve the term exclusively for sparkling wines that come from Champagne and are produced under the rules of the appellation.

Joseph Perrier has always been connected with history, on occasions which have been both high profile and private. The House has always celebrated human achievements, from the inauguration of Concorde in 1976 and more recently the presentation of the Nobel prize for medicine. The «Cuvées Royales» celebrate the relationship with Queen Victoria and King Edward VII, a distinction we still proudly feature on the labels today. Every day, whether notable or not, the philosophy of Joseph Perrier remains the same: fully seize the moment, follow

the truth and enjoy simple perfection, whilst encouraging others with a similar outlook. Our objective is not to increase the yields in so doing, rather to use the minimum necessary to improve the health and balance in the vineyards, always being careful to study and create a programme for each parcel individually. We feel that our champagne truly remains a hand-made product. Each bottle effectively passes through 10 pairs of hands in its’ production and this respects the ways of the past and continues the feeling that we are still making an artisanal product today.

The true expression of the House style. Elegant, fresh, light, well-balanced with good length, this is the perfect celebration champagne. Blend: 35% Chardonnay, 35% Pinot Noir and 30% Pinot Meunier, with around 20% reserve wine. 20 different villages are used, based on our own vineyards in Cumières, Damery, Hautvillers and Verneuil. Aged: Average of 3 years age. On the nose the aromas are fine, delicate and complex, with notes of apple and pear. Fresh attack, lots of life, and is yet supple, round and most refreshing on the finish.

Blend: 100% Chardonnay, with approximately 15% of reserve wines. Vineyards in the Grand Crus of the Côte des Blancs - Chouilly, Le Mesnil-sur-Oger, Bergèresles-Vertus, with some of our Chardonnay from Cumières and from the region around Bassuet. Ageing: 5 years minimum.The nose is elegant and complex. There are aromas of white flowers, apricot and mirabelle plums. The palate has plenty of fresh citrus notes and lively acidity, some touches of spice and vanilla, rich brioche elements and a long lemony finish.

Blend: 25% Chardonnay and 75% Pinot Noir and Pinot Meunier, of which around 12% is AOC Cumières Rouge. The fruit is from 15 different villages but based on the family vineyard holdings in the villages of Cumières, Damery, Hautvillers and Verneuil. Ageing: minimum 3 years. At first the nose shows both red and black fruits. There are notes of wild violet followed by a touch of liquorice. There is ripeness and breeding on the palate, with hints of sweet red fruits. There is energy and elegance together here with a long finish with just a touch of menthol.

Blend: 52% Chardonnay. 48% Pinot Noir all from Premier and Grand Cru villages. The nose opens with a fresh and soft appeal, followed by a delicious complex combination of aromas: butter, soft spices dried fruits with grilled almonds and with ripe citrus and apricot notes. A touch of fresh mineral character dominates with some subtle evolved points. On the palate there is a fine fruity yet vinous element, lively yet perfectly balanced. Flavours of spice, dried fruits and ripe fresh fruits over caramel abound tied together by the firm mineral back-bone.

TOP WINES OF BORDEAUX “LEFT BANK” BORDEAUX The west side of the Garonne River is predominantly Cabernet Sauvignon. The wines taste of black currant, pencil lead, violet, tobacco, cocoa, and licorice with dense structured tannins. Many will age 20 years.

BORDEAUX BLANC This blend is mostly Sémillon and Sauvignon Blanc and tastes of citrus, chamomile, grapefruit, and beeswax. Bolder Bordeaux Blanc come from Pessac-Léognan and Graves. Lighter Bordeaux Blanc come from Entre-DeuxMers.

“RIGHT BANK” BORDEAUX The east side of the Garonne River is predominantly Merlot blended with Cabernet Franc. Wines taste of leather, strwberry, fig, plum, vanilla, grilled almonds, and smoke with silky refined tannins. Some will age 30 years.

RPSÉ AND CLAIRET Rich and deeply colored dry rosé wines with flavors of red currant, wild strawberry, peony, and rose hips. Clairet (“Clair-ett“) was the original style of Bordeaux during the 18th and 19th centuries.

CÔTES DE BORDEAUX Areas close to rivers are called “Côtes“ meaning “slope”. Wines are Merlot blends that taste of spycy red fruits, green bell pepper, and herbs with grippy bold tannin. Wines age 100 years.

SAUTERNAIS A group od dessert wine regions can be found alond Garonne River. The largest appellation is Sauternes, which produces viscous, honeyed, waxy, and peachy Sémillon-based wines.

The rigorous selection process undergone by the grand vin results in the creation of its younger brother, Amiral de Beychevelle. Despite being made from young vines, Amiral de Beychevelle benefits from the same growing techniques, meticulous sorting, and traditional barrel ageing.It has the same elegance and finesse as its older brother, but reveals its character more quickly, offering wine-enthusiasts the full vivacity of its youth. It can be kept for up to fifteen years, depending on the vintage.

This masterfully crafted wine offers both to the nose and the palate an abundance of rich and ripe flavours (spices, black fruits, cigar box aromas and toasty new oak). It is opulent, almost decadent in style, with exotic fruit overflowing from the glass ! Perfect for drinking now and will age beautifully for another 5-6 years. Ideal with with red meats (magret, game, rack of lamb, ...) and cheeses. Of course, excellent as well as pre-dinner drink!

It has its own unique style that sets it clearly apart from the Haut-Bailly range.

A beautiful structure provided by 70% Cabernet Sauvignon, intense fruit on the cherry shades of merlot, tannins melted by 14 months aging in oak barrels, an elegant freshness of the iconic 2011 vintage wine... it has everything a “great” of the Médoc. Intense and extensive aromatic spectrum. The freshness of the lemon and grapefruit zest, with delicate notes of passion fruits, is accompanied by subtle nuances of box, mentholated notes and hints of freshly cut hay. On the palate the wine is very well-balanced, concentrated in structure, revealing good acidity and a generous, full-flavoured fleshiness. The development of the aromas on the palate is characterised by a fruity freshness, which terminates in a long, lingering finish.

For Dourthe Nº1 red, the remarkable task of seeking out the finest terroirs is also undertaken in the extensive red Bordeaux vineyard to pinpoint exactly those areas where Merlot and Cabernet Sauvignon have the best chance of reaching full maturity. Forging strong partnerships with growers guarantees optimal and consistent fruit quality. From tending the vine all the way through to the harvest, the growers work in close collaboration with the Dourthe winemakers. The finest batches of Dourthe Nº1 mature 12 months in new French oak barriques where the tannins from oak integrate harmoniously with those present in the wine, adding roundness, balance and aromatic complexity.

Dourthe rises to the new challenge of creating Bordeaux rosé that is primarily different: a distinctive style, which as a result of its freshness and complexity, is totally unique. Its colour should be pale pink and bright; its aromas should be fruity, fresh, subtle and elegant, backed by a lively structure, but lacking in sharpness. The grapes are selected from terroirs suited to optimal maturity. A specific and unique vinification unveils its richness: a phase of cold pre-maceration, lasting just short of 6 hours precedes fermentation so that the perfectly ripe and healthy berries bring the required concentration of colour and aromas. After a cool fermentation, the wine is aged on its lees for 3 months to enhance the aromatic finesse of the wine.

Chardonnay produces mainly unoaked Chardonnay. Wines taste of yellow apple, pasion fruit, and citrus, with high acidity. At the Grand Cru Level, Chablis is made more toasty with oak.

At the Village level, wines taste rustic with notes of mushrooms, potting soil, and tart berries. Premier Cru and Grand Cru wines have moderate tannin with flavors od dried cranberry, candied hibiscus, vanilla, and rose.

The Côte d’Or produces mainly oaked Chardonnay. Wines taste of yellow apple, lemon curd, quince tart, vanilla, and hazelnut. look in the Côte de Beaune for high-quality Chardonnays produced in this style.

Just after the First World War, Olivier’s grandfather, Joseph Leflaive was faced with the failure of his steel factory in Saint-Etienne. His investments in Burgundy were all he had left and he decided to enlarge his wine estate. It became a family-run operation covering some 35 hectares. His son, Joseph Régis, was in insurance and along with his brother Vincent, decided to take over the reins in 1953. The estate soon began producing top-flight wines, mainly due to the arrival of air conditioning in Puligny in the 1970s. This was a major step for winemakers in this village which sits two meters above the water table and as such, had no underground cellars. The philosophy of Olivier Leflaive is to

produce simply great wines. There are no secrets to this – everything starts in the vines with good grapes. Olivier, Franck and their team are lucky to have strong relationships with some of the best winegrowers on the Côte, people who grow their vines with care and attention. The work of the team reflects the company’s family spirit. Since 1825, the Faiveley family has always cultivated the vineyards with the greatest respect for its terroirs in Côte de Nuits, Côte de Beaune and Côte Chalonnaise. A limpid, beautiful dark ruby-red colour. The complex and very pleasant nose proposes an array of fruity and fiery scents. This wine is round and fruity on the palate. The blended and silky tannins give long-lasting aromas on the finish. This Grand Cru has a full and balanced structure, pointing to good cellaring potential.

This is a classic Chablis, with lemon and oyster shell aromas. Broad, supple and creamy, offering a gently saline oyster shell quality. This fine-grained wine would make a lovely introduction to Chablis for the uninitiated.

The Puligny-Montrachet, pale yellow with green tints, is fresh and tense on the palate. We rediscover the aromas of peach, exotic fruits, and fudge already scented on the nose. It is balanced out by a certain minerality and fresh acidity. The vanilla finish is enchanting .

La Grola is the extraordinary result of the meeting of two great personalities: the hill of La Grola and the Valpolicella’s autochthonous grapes. The excellent exposure of the vineyards, which enjoy the sun’s warm rays and the cool breezes that come from nearby Lake Garda, allows the grapes to produce their very best. Careful, craftsman-like ageing in the cellar yields a red wine with great elegance, harmony and finesse that can evolve positively for over a decade.

On the top of the hill called La Grola lies a plateau of less than 3 hectares dazzling white in colour, due to its calcareous top soil, and planted exclusively with Corvina since the late 1970s. The premium quality viticultural techniques yield grapes with great personality and maturity. After over 4 years of ageing, the wine is still extraordinarily fresh and crisp with a full spectrum of aromas ranging from fruit to spices and officinal herbs.

The vineyard surrounds Villa della Torre, a splendid masterpiece of Renaissance architecture now owned by the family, and produces a full-bodied red wine that has an ageing potential of at least ten years. The blend is the historic combination of Corvina and Rondinella with the addition of a small quantity of Sangiovese.

The result of the Allegrini family’s expertise, a true classic of the appellation, this red wine embraces tradition, territory and the know-how of country ways. Corvina, Corvinone, Rondinella and Oseleta are left to air dry at least until December and are checked daily to ensure perfectly healthy grapes.

While Amarone aims for perfect craftsmanship and a full, pristine range of aromas, full rein is allowed to this category of wine to express all its natural exuberance. The nose is immediately almost bursting with fruit, followed by fresh floral notes and pepper. After prolonged ageing, the wine proffers more evolved nuances of fruit preserved in alcohol and aromatic herbs.

It was the realization of Giovanni Allegrini’s dream: he was the first to grasp the extraordinary potential of a vineyard that symbolizes the quintessential identity of an entire area. On the occasion of this anniversary, which encompasses such as important part of Allegrini’s history, the Company decided to commission Milo Manara, one of Italy’s best-loved ComicStrip artists, to interpret La Grola and the local legends that surround it. According to the ancient legend, it was on this amazing hill that Corvina Grapes borned, thanks to the miraculous intervention of a crow (“Grola” in Veronese dialect) that made ​​the fortune of that vineyard.

When you arrive in Bolgheri and begin to move along its most famous roads, the celebrated cypress-lined boulevard, the shady and evocative Bolgherese road, you realize that this is not flat terrain but rather a continuous series of terraces, rises, and declivities which, from the hills to the east, slope gradually and sweetly towards the sea.

Bright ruby red colour with intense aromas of violets, raspberries, red currants and sweet cherries with underlying hints of liquorice and cumin. The taste is warm and full-bodied with fine, long tannins and a long, spicy finish.

Il Marzocco 2014 displays intense aromas of hawthorn, citron and lemon zest, underlined by hints of exotic fruit and subtle spices. It has a full, luscious flavour, with a refreshing acidity and a long, mineral finish.

Indicative blend: Primarily Sangiovese, but with up to 15% Cabernet Sauvignon. Several important critics have rated this Vino Nobile di Montepulciano wine highly: Wine Spectator gave the 2007 vintage a score of 93. When in 1984 Rita and Virgilio purchased the property that was to become Tua Rita, the land and the buildings on it were only to be the setting for a life together lived in contact with nature, farming nature’s bounty. It was their overwhelming passion for making wine that changed those plans. The couple tended the original two hectares of vineyard with such scrupulous care that Tua Rita became one of Italy’s first successful producers of vins de garage. In barely a decade, the hectares under vine had risen to nine, at the start of the new millennium there were twenty and today Tua Rita farms some thirty hectares planted to vine.

Growth has been driven by Rita and Virgilio’s enduring enthusiasm and an ever-deepening awareness of the potential of this estate nestling in the area, between the Tirrenian Sea and the Colline Metallifere, known as Val di Cornia. Estate and cellar went from strength to strength, driven by Rita and Virgilio’s commitment. Meanwhile the winery’s image was flourishing under the skilful hand of Stefano Frascolla, husband of the owners’ daughter Simena, who herself became involved in managing the enterprise following the death of her father in 2010. The estate’s name is a simple inversion of Rita Tua’s given name and surname.

Our single-variety Merlot takes its name from a stream that runs near the estate. Redigaffi is a benchmark wine that has achieved cult status around the world. Redigaffi features regularly in the catalogues of the world’s leading auctioneers, such as Christie’s and Sotheby’s, and is one of the few Italian wines included in the Liv-ex index.

Tua Rita’s single-variety Syrah triumphantly demonstrates just how much potential the grape has on the estate’s Suvereto terrain. A markedly Mediterranean character puts this Syrah among the variety’s most successful expressions in Italy, or indeed anywhere else.

Nice ruby color with light reflections tile (because of age) and with great intensity and middle layer. The nose aromas appreciate scrubland as thyme, rock rose, along with clove spice aromas make this wine has great complexity. Mouth sublime, elegant, velvety, berry compote very intense. Masters when combining wood and fruit. The touch of French oak wine makes it a truly great occasions. This wine is at its best.

This wine is grown in the western half of Castilla and Leon, with a continental climate, tempered by the influence of the Atlantic. Has an aging 15 months in American oak and then in bottle. Given ruby red color appears. The nose shows aromas of plum and toasty warm, with notes of cherry and licorice. The palate is round and fleshy. To serve this wine at a temperature of 17Âş. It is especially recommended for red meats, game, roasts, lamb, pork, vegetables.

The result is spectacular. An almost black, reminiscent of ripe cherries, with complex aromas (leather, hunting, red and black fruits spices), almost endless. The palate has great strength. Its structure makes it almost incredible edible. Long, round, elegant and classy. It can be drunk now but will improve over the years. We recommend decanting before serving.

The Bodegas Faustino wines show the love for the land and the expertise of a family of winemakers with a tradition in winemaking for over 150 years. The love and respect for nature are two of the pillars on which is based the winery´s philosophy. In recent years, there have been incorporating new viticulture practices that respect the environment and make our vineyards increasingly sustainable. Among others, precision viticulture in order to analyze the evolution of different areas in the same plot and act accordingly, disc harrow (makes the grass that is removed from the vineyard to join it again to the earth and become compost, favoring the natural cycle), incorporation of alternative treatments for plant protection products (sexual confusion and alternative compounds).

The Egon Müller estate has been in the hands of the Müller family since 1797. In the Mosel’s steep, slate vineyards, the winemaking master Egon Müller makes breathtaking Rieslings. The estate owns 8.3 of the 28 hectares of the famous Scharzhofberg vineyard in Germany’s Mosel-SaarRuwer region. The family exploits their single-vineyard holding to the fullest, and consequently is ranked among the region’s top wine producers. These wines are taut and racy, with dazzling fruit; they’re severely mineral and have an endless nish. Egon Müller’s wines are all made using estate-grown fruit from two parcels: 8.3 hectares of Scharzhof and 4 hectares of Le Gallais. The Scharzhofberg, or Scharzhof Mountain, is among the

nest Riesling sites in Germany and is considered Grand Cru. As such, it is allowed to be labeled with its vineyard name, or “Einzellage”, rather than its village name. The Müller holdings here include a parcel of un-grafted vines that were planted in the 19th century. These wines deliver at the highest level of quality and are without question among the world’s great wines. They are fine, balanced, authentic, and enjoyable young as well as after many years of cellaring. The Müller family added to its estate holdings by purchasing Weingut “Le Gallais” in Wiltingen in 1954. Egon Müller also belongs to Primum Familiae Vini, (The First Families of Wine), a small group of elite, familyowned producers where he is the only German member.

All Muller wines are Rieslings, but the Scharzhof is the property’s most accessible wine. The Scharzhof Riesling is made utilizing grapes from Muller’s Saarburg and Wawern vineyards, and from the Wiltinger Braunfels and Wiltinger Kupp vineyards. This wine is a sterling introduction to Riesling and to the Egon Muller range.

Scharzhofberg is one of the most famous vineyard sites in Germany, likely to have originally been planted by the Romans. Situated in Wiltingen, removed from the Saar in a side valley and facing south, its slopes are quite steep, with a 30–60% grade, and high, at 180-280 meters elevation. Formed from grey Devonian slate, the soils are very deep with no bedrock. This wine is always delicate, crisp and exquisite on the palate.

This wine displays stony minerality, hints of acacia and lilac, grilled exotic fruit, sweet stone fruits and bracing acidity all combined in perfect harmony. Due to tiny production and high demand, this wine very rare.

Spätlese means “late harvest” but at Egon Müller, the term is used for wines made from grapes of superior ripeness. Spätlese wines can carry more sugar without losing their balance. While they’re off-dry to semi-sweet when young, they reward cellaring with an incredible degree of complexity. The Scharzhofberger vineyard can develop into truly elegant wines that defy the categories of sweet and dry.

Rum Rum is a distilled alcoholic beverage made from sugarcane by products, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels. Rum can be referred to in Spanish by descriptors such as Ron Viejo (old rum) and ron añejo (aged rum). Oscietre (Acipenser Guldenstaedti and Acipenser Persicus)

The Oscietre caviar is elegant and bright. It is made from the egg of the sturgeon Acipenser Guldenstaedti which is native from the Black Sea, the Sea of Azov and the Caspian Sea. Its anthracite grains, good size, burst in the mouth while the flavours are gaining size and reveal hints of hazelnut and butter, a beautiful length characterised by a fine balance between iodine structure, notes of dried fruit and marine flavours. This caviar comes from a sturgeon farm located in Uruguay, which developed a program of sturgeon, essential to obtain the label “Semi-Wild Caviar”.

The Gold Schrenki caviar is considered to be the one with the firmest grain. It is made from the egg of the sturgeon Dauricus-Schrenkii which is native from the Amour River between Russia and China, it is a Sino-Russian Osciètres cousin of the Caspian Sea. It’s a caviar with big grains, amber coloured, khaki hues, very rolling and much firmer than any other caviars maintaining great delicacy. Its taste is fine, soft, with light almond tones and iodine. This Gold Schrenki caviar comes from a sturgeon farm located in China.

Baerii

Baerii (Acipenser Baeri)

The Oscietre caviar is elegant and bright. It is made from the egg of the sturgeon Acipenser Guldenstaedti which is native from the Black Sea, the Sea of Azov and the Caspian Sea. Its anthracite grains, good size, burst in the mouth while the flavours are gaining size and reveal hints of hazelnut and butter, a beautiful length characterised by a fine balance between iodine structure, notes of dried fruit and marine flavours. This caviar comes from a sturgeon farm located in Uruguay, which developed a program of sturgeon, essential to obtain the label “Semi-Wild Caviar”.
