D. Tell, PR%F Awards

LAS VEGAS – June 24, 2019 – More than 30 spirit industry leaders and upwards of 500 spirits brands participated in the inaugural PR%F Awards and PR%F Awards Design Distinction during a two-day blind-tasting point-rating competition at Tivoli Village in Las Vegas this week. The awards competition was open to spirits brands, domestic and international, with nearly 100 categories to enter. In addition, a selection of spirits brands also participated in a design award program to crown top labels, bottles and creative marketing. All spirits were rated on a proprietary 100-point system crowning medals to those who scored 70 points or above. (Bronze: 70 – 79 (Daily Drinker); Silver: 80-89 (Praise); Gold: 90-95 (Highly Recommended); Double Gold: 96-99 (Superlative) and Century Award: 100 Points-A Perfect Score (Highest Honor, Unparalleled, Peerless.) All spirits were evaluated in NEAT, the official judging glass, scientifically designed to deliver the best aromas for evaluation and enjoyment. Three spirits and two mixers were crowned Century Award winners; each earning a perfect 100-point score – Hardy Legend 1863, Michel Couvreur Candid Malt Whiskey; Galliano L’Apertivo Italian Amaro Bitter; Anna’s Kitchen Cranberry Mint Shrub; and Anna’s Kitchen Apple Cider Ginger Shrub. “It was an remarkable two days of introducing new spirits brands to spirits buyers and collectively discussing the current trends of the beverage industry with the most talented minds in the industry,” said Michele Tell, Executive Director of PR%F Awards. “We are honored to have crowned so many brands with medals and accolades, and to honor the top five rated as ‘perfect’ with a Century Award,” she said. The idea behind the PR%F Awards was to create an avenue to introduce emerging spirits brands to key decision makers in the liquor industry, and therefore, all PR%F judges were mainstream liquor buyers, distributors, and industry leaders with buying decision capability. Our judges hailed from 11 different states and hospitality arenas – Delta Sky Clubs/Delta Airlines, Young’s Market Company, The Sugar Factory, Hard Rock International, Southern Glazer’s Wine & Spirits, Spec’s, Breakthru Beverage Group, Good Spirits Distribution, BevStrat, Inc., Liquid Distributors-GA, Burke Distribution, RLED, LLC, Caesars Palace, Boyd Gaming, Sheraton, ARK 1521, The Strat Casino Hotel & Tower, Downtown Project-DTP, Alicart Restaurant Group (Carmine’s Italian, Virgil’s BBQ), Giordano’s Pizza-Corporate and Marque Media.

“The beverage industry is ever-changing and we saw those trends firsthand with the amount of flavored whiskeys, readyserve cocktails, gins and organic/kosher and health-based products that entered the PR%F Awards 2019,” said Michael S. Politz, publisher of Food and Beverage Magazine, title sponsor of the PR%F Awards. “I was especially pleased to see how many women-owned brands entered this year. It’s an exciting time to be a part of the beverage industry,” he said. During the event, NYC based podcast shows – The Rogues on the Road and The Hangover Takeover – all top-rated podcasts on the F & B Podcast Network of shows interviewed judges, sponsors and industry leaders during the PR%F Awards competition added excitement and media hoopla with interviews and podcasting revere.

TRENDS IN THE INDUSTRY

Barbecuing With My Outdoor Kitchen

I’m paying more attention to learning more about barbecuing. You can find so much information on the internet on any topic you can think of and barbecuing is no exception. I read articles and watch videos about barbecuing and get all kinds of recipe ideas from all kinds of sites. Just google “barbecue recipes” and you’ll see what I mean. You’ll find tons of great stuff and I particularly like the videos because they show you exactly what to do. You can even find barbecuing videos, of all places. So having the outdoor kitchen has definitely spurred m to learn more.

Ever since I’ve built my outdoor kitchen I’ve found that my barbecuing skills are getting better and better. I’m not sure what to attribute it to but it’s probably a combination of the following. I’m barbecuing more. Since I spent all that money on the outdoor kitchen I’m certainly not going to let it go to waste. I find myself thinking up reasons to barbecue something or smoke something or just plain COOK something outside. Because of this my barbecuing skills are getting better just through the practice.

Now, that I have the outdoor kitchen I can have much bigger parties. This means that a lot more people are here and that, in turn, means a couple of things. First, you can’t invite a bunch of people over to your house and then not know what you’re doing. These people are going to be hungry and are going to expect be fed and not just a bunch of slop so this puts the pressure on you to deliver the goods. Second, because of this pressure, you don’t want to mess up because the embarrassment factor would be even greater. 10

Food & Beverage Magazine July

It’s one thing to mess up cooking a few hamburgers when the next door neighbors are over but it’s another kettle of fish, so to speak, when you have 20 people expecting great barbecued ribs. You see what I mean? Everyone’s expectations are higher and so you have to deliver. Also, when people come in for the first time and see this really nice outdoor kitchen with the grills and rotisserie and the smokers and refrigerators and everything else they’re really impressed. It also tends to raise their expectation levels. When they see a kitchen this impressive they just naturally figure that the chef is going to be as good as the equipment looks, or something like that.

So this whole experience has had a very positive effect on my cooking skills. Fortunately for me, I haven’t had any major mishaps yet but I’ve come close a couple of times. Like when the roast took a lot longer than I thought it was supposed to. Thank god we had plenty of beer and no one had to drive far. But other than that, things have been pretty smooth. I haven’t tried to overreach myself too, which is important. So the moral of the story is: if you want to improve your cooking skills, get an outdoor kitchen.

Outdoor kitchen plans almost always include a grill. You can go with the traditional charcoal or gas grill, or even a hybrid grill. Hybrid grills tend to more expensive, but the versatility may be worth the extra cost. There is even the option of electric grills. If you balk at this trend, consider the fact that tastes are expanding. www.fb101com

Now to end while having who’s, cooking employs that will help bear yet another process, that is topping that it at sauce. The truth is it’s the topmost sauce, and this one single can’t take out while barbecuing.Forms of sauce ranges according to this region. However, it is significantly different than ice cream or gelato. It does not contain any milk or butter fat in it. This is what makes it so unique from other types of iced treats. What’s more, it contains no type of animal product in it, including eggs, which is why vegans seem to enjoy it as well. What’s the Health Scoop? For those who are wondering if they should try out this treat, consider the healthy qualities it has. First off, it has significantly less fat than gelato or ice cream. It often has significantly less fat than other fruit-based treats as well such as popsicles. Overall, it does have sugars in it but it has so much less fat it could become your go-to option for a sweet treat that is still good for you. Be sure to check the label to know other health qualities of this product since they can range from one manufacturer to the next. 64

What Else You Should Know Sorbet is somewhat like sherbet, which is a cooled drink that is popular throughout the Middle East. However, when sherbet was brought to Europe, many of the chefs there changed it in various ways to create something different. In Europe, it would become granitas, ices, and sorbets. Each is slightly different, but all provide a rich taste that is hard to beat. For those who are looking for something tangy and vibrant, consider the benefits of enjoying blueberry sorbet. This densely textured treat is making its way into many grocery store shelves. You can also learn to make it, if you purchase the proper equipment. Be sure to try other flavors, too, since it is a versatile way of making fruit into something that feels as though it is completely bad for you. You may be surprised by just how good and flavorful this treat is.

Invivo Wines is the brainchild of New Zealand natives and childhood school friends, Tim Lightbourne and Rob Cameron (Invivo’s winemaker), both passionate about wine, the duo hatched their plan over too many drinks in a pub in 2007 when they discussed opening their own winery. Since the winery’s inception in 2008, they have made a name for themselves as New Zealand’s fastest-growing winery, with 850% sales growth since 2011. Invivo was named in Deloitte’s fast 50 growing companies and they currently sell in 17 countries. Invivo is approaching production this year of 2 million bottles annually. The boys’ ethos is to make wines that are approachable and appeal to both those new to wine and to the connoisseurs, all without the unnecessary complexity often associated with wine itself. Invivo tend to not use classic vineyard shots in their promotions, once using a giant Pinocchio on a billboard stating, “For a complex oak nose try Pinocchio, for a great Pinot Noir try Invivo!” Since launching their first wine, a Marlborough Sauvignon Blanc, in 2008 Invivo has been awarded over 150 medals in wine competition including

OUTDOOR COOKING

Whats the Best Way To

bbq chicken Barbecuing is a way of life for me. There is nothing better than barbecuing for family and friends and seeing the smiles on their faces, and well, them wanting more. You can never learn enough about improving your skills. Here is a tip on what’s the best way to BBQ chicken. One of best recipes for BBQ’ing chicken may not be something that would occur to you. Mainly, because it is off the wall and really doesn’t sound all that good until you bite into it. You can prepare this on a BBQ gas grill, conventional oven, charcoal, or wood pellet grill. This way of preparing it, either on the BBQ, or in the oven, involves using a Catalina-style dressing as a marinade, and Italian seasoning, plus garlic granules as a dry rub.

Most brands of Catalina-style dressing contain all the ingredients that you need for a tremendous marinade. For example, vinegar and onion, among other essential ingredients are a factor. Now, we will assume that you are barbecuing a whole chicken although this recipe will work just fine for chicken parts, or breasts. If you are cooking a whole chicken you will want to grill on indirect heat.

If you are barbecuing a whole chicken, remove excess parts from cavity •Wash the chicken thoroughly with water and pat dry •Place chicken in a leak-proof marinating container, don’t use aluminum foil •Rub the chicken with garlic granules, outside and in the cavity

LIFE IS ALL ABOUT VARIETY. You may want to experiment with different types of dry rubs, marinades, but this is a nice variation that everybody will like and never suspect that you used this type of dressing as a marinade. What’s the best way to BBQ chicken? There are a million different answers to that question. Everybody has their own idea. This is just another way to do it.

•Distribute an even amount of Catalina style dressing over the chicken and a generous amount in the cavity •Sprinkle a light amount of Italian seasoning over the bird, and more garlic granules, no need to rub in Refrigerate over night • Line a 9 ½ by 13 ½ metal pan with aluminum foil, you can do 2 chickens at once • Place chicken in the pan and pour remaining fluid from the marinating pan over the chicken • Let the chicken sit out at room temperature for at least thirty minutes, meanwhile • Start your barbecue on just one side of the grill and build up to 325 to 340 degrees • Cook on indirect heat for several hours, on the unheated side of the grill • Mop with the dressing after the first hour and each half hour after that • Check for doneness with a meat thermometer • Let the chicken sit out on the drain board for 15 minutes before carving

There are so many variations of chicken wings from hot and spicy to sweet and savour y. They are normally ser ved as a tasty appetizer or delicious snack. Chicken is one of the hardest meats to do on the barbecue. It is so easy to burn or over cook it. If you over cook it you have dr y saw dust like meat under cook it and you have the risk of getting food poisoning The main problem with chicken breasts is they are not even. You might get the one side cooked but the other side will be over cooked or vice versa.
