philosophies align with their own: beer from Paddock Wood. wine from Living Sky Winery and vodka from Last Mountain Distillery. “These companies care as much about their product as we do,” says Harper, who by all accounts, is an artisan in his own right. He has an instinct for knowing just the right beverage to pair with meals to complete the customer’s festival of senses. The minute you walk into Kergano’s, you can feel an almost spiritual vibe. Tyco says its source is from the restaurant’s namesake, a close friend who passed too young, and whose personal passion and love for life embodies everything that Kergano’s strives to be. “We’re all about positive energy,” says Tyco. “You can even see it in our logo - a peace sign, a heart, the flower of life. If you can give good energy, you’re going to get good energy.” At the heart of that energy, and at the core of Kergano’s, is the passion that both Tim and Tyco share for delicious, well-prepared food. They source locally available products, and also grow a lot of their own food right on the premises. While not every tomato or fresh herb may be home-grown, each and every ingredient is carefully selected to ensure that only the best and the freshest goes into everything they make. “I’m really conscious about where all of our food comes from,” says Tim. “Our menu changes with the seasons, and with what is fresh and available at the time.” Even their meats are sourced locally, and butchered and smoked onsite using freshly cut red willow, through a process that has been handed down through generations. Not a single element is left to chance. “I want everyone to leave feel content and satisfied,” says Tim. “I want them to feel that this was more than just a good meal. I want them to leave feeling that they were fed, spiritually, mentally and physically, and that all of their senses were awakened.” “Our guest book and the comments left by people from around the world make up our resumé,” says Tyco. “There are things that work and things that don’t work… and this works.” “It’s really a festival for your senses,” says Tyco. “When you walk into Kergano’s, our home becomes yours, and you become family.” FLR
