What’s in the Highlands and the Islands

The arresting views of the Scottish Highlands and Islands of Orkey, Shetland and the Hebrides, from the mountain ranges of the Grampian Mountains to the wild beaches of Harris and Lewis, make it hard to believe the area could also be blessed with fine food and drink. Yet, the region’s produce is unparalleled, as are its fine cheeses, handcrafted spirits and wild flower honeys. As it turns out, you can have it all.

The UK’s most northerly mainland distillery, Dunnet Bay Distillers, set in the historic county of Caithness, was founded in 2014 by Claire and Martin Murray. The couple use foraged and home-grown botanicals to create small batch premium spirits, including Rock Rose Gin and Holy Grass Vodka (RRP £35). Concerned with sustainability, the operation runs on solar energy, recycles used botanicals, keeps unnecessary packaging to a minimum and conserves water where possible. The gins can be purchased in recyclable refill pouches as well as in the original 70cl ceramic bottles, each one wax-sealed by hand.

Located in the foothills of Ben Wyvis in the Scottish Highlands, the GlenWyvis Distillery is the world’s first community-owned, sustainably run distillery producing Highland single malt whisky and craft gin. The distillery runs on renewable energy from wind, rain and sun, while a biomass boiler supplies steam for two small copper stills. The GlenWyvis Single Malt Whisky is available in cases of six bottles for £39 + VAT per bottle, with an RRP of £59.95. GoodWill Gin, distilled with local hawthorn, can be bought in cases of six bottles for £23.40 + VAT per bottle, with an RRP of £36.99.

Founded in 2015, Lussa Drinks Company is the brainchild of three Jura residents passionate about growing plants, who also happen to have a shared love for gin. Lussa Gin contains 15 local botanicals - frozen rather than dried prior to the distillation process, to maintain freshness - including water mint, bog myrtle and Scots pine, ground elder, sea lettuce, honeysuckle and elderflower, rose petals and rosehip. A case of 12 x 20cl bottles can be bought wholesale for £145.80 + VAT, with an RRP of £17.50 per bottle. A case of 6 x 70cl is priced at £171.90 + VAT for trade, with an RRP of £40 per bottle.

Kirkness & Gorie

Orkney

Founded in 1859, the famed grocer and wine shop in Kirknall was named after owner James Kirkness, and later, when his daughter took over, after her and her husband, John Gorie.

In the 1900s, Kirkness & Gorie forged a reputation for stocking speciality items from far-flung territories like France, Germany and further afield, which it continues to do, at least in so far as wine is concerned.

Since then, the shop’s range of artisanal Scottish produce has grown to include more local cheeses (as well as English, Welsh and Irish ones), more Scottish whisky, and a selection from the budding gin distilleries on the Island.
