Family-owned Blackthorn Salt sources and processes organic sea salt flakes on the coast of Ayr, where the only ingredient – seawater – is evaporated on the country’s only working thorn tower, resulting in a crystal laden brine. This concentrated liquid is then slowly reduced to create a salt that, according to Great Taste judges, “tastes like the sea, but has a deeper complex mellowness derived from minerals and blackthorn tannins.” Unlike most northern European salt making processes, the thorn tower is a natural and environmentally sensitive extraction method. 120g boxes are available to trade for £2.88 with an RRP of £3.90, while a 240g container can be bought for £4.81, with an RRP of £6.40.
