From The Editor What a fantastic month May is! It's my birthday! It's also the only month of the year where you get two bank holidays, which always lightens everyone's spirits. In this month's issue of the face of Chelmsford we are focusing on men. We have a full male grooming feature, where we review everything from the basics of a haircut and a wet shave with Man About Town, right through to the classic men's wardrobe. We are also introducing our newest feature, 'Behind the Scenes', where I share my experiences of being backstage and looking at how events run at some of Chelmsford's favourite places. I'm also jetting off to New York this month to go to the Affordable Arts Fair, so you may well hear about it in our next issue! For the latest issue, and every previous issue, visit our website and you can refer back to some of the great articles that you may have missed or simply want to re-read. THE REJUVENATION REVOLUTION PHOTO REJUVENATION by Jane Holloway carried out every 3-4 weeks depending on the individual. Having worked with many IPL systems, my favourite one is the Harmony System by Alma Lasers, which is the one I have preferred to work with over the last couple of years. This system is a platform machine where it offers several different treatments including hair reduction, red vein treatment, acne reduction, skin tightening and many others. The system works with interconnecting handsets to the machine to perform the many services it offers including IPL and Laser treatments.

Most of us find that we suffer with some kind of skin imperfection, whether it is broken capillaries, red veins, sun damage, pigmentation, acne scarring, or general discolouration. To help conceal these imperfections many people tend to wear make up to make their skin look even and clear. Rather than concealing the skin, many people wish to treat the imperfections and that is when photo rejuvenation comes in. Professional photo rejuvenation treatments work with IPL, which stands for Intense Pulse Light. In the treatment the light is pulsed onto the skin and it is attracted to the imperfection. Treatments are quick and simple and are

Photo rejuvenation treatments can make a real difference to the clarity and evenness of the skin. Just look at the pictures opposite to see the difference that the treatment can make. This lady suffers with quite bad sun damage; the skin has become very discoloured and looks very dull. After a few sessions of the IPL treatment, the skin looks dramatically better and definitely years younger. The skin looks more even, the texture has improved and lines have become softer from the boost of collagen that the treatment produces. Separate areas of the skin can be treated as well as the entire face. Some people may just need to have the redness on their cheeks treated, others will want to have the pigmentation on the neck treated or acne scars on the temples. The treatments can be prescriptive according to what the concerns are. This way the best results can be attained for the clarity of your skin.

The treatment process is fairly simple. The skin is treated according to the treatment plan designed in the consultation. The session will always begin with the area being cleansed and then treated by the IPL. The IPL is extremely quick and the whole face can be treated in approximately 5 minutes. You would have this done over a course of 4 to 6 treatments depending on your skin and the results required. IPL treatments are always carried out after a thorough consultation and a patch test which are generally free of charge. The consultation is there for you to understand the treatment and how it works. The patch test is carried out so that the therapist can assess the skin's sensitivity to the IPL and so that you know how it will feel on the skin. Again, it is also important that before you start any professional skin treatments always try to have proper before and after pictures taken of your skin. I can't stress this enough. My favourite system for imaging is Beau Visage system which takes very clear pictures, and shows different aspects of the skin including pigmentation, capillary

damage (e.g. broken capillaries and sensitivity) and sun damage. Photographic evidence is handy to have, as this ensures that you can look at the skin critically and really see what the skin is like before any treatment and what improvements have been made after the course. Professional advice and aftercare should always be included in the consultation for these types of treatments. It is important that this advice is followed to ensure that there are no adverse side effects to the treatment and to help you avoid getting the same problems again. To get the best results for your skin always visit a professional centre for photo rejuvenation treatments. The Gym with a Twist by Jasmine Wright When Chris Elms opened his first fitness club in Braintree, his idea was not to have a place that felt impersonal and where members would just do the same workout that they were told to do in their induction every time they come in. Instead, he had a revolutionary idea - why not open a gym that had the same paying scheme as a normal gym or health club but offer unlimited personal training, thus giving people the benefit of having a one to one work out every time they came in. With having a personal trainer every visit, each session would be varied from the last. The other benefit of having this unique PT (personal training) concept is that it gives you the encouragement to come and train as it is booked in the diary, where as with normal gyms the intention could be to go but there is no extra encouragement to actually attend. The PT concept was so popular that Chris opened a centre in Chelmsford during Summer 2007. The centre is located in Pontlands Park Hotel in Great Baddow. Considering I use the gym and do personal training I went to see how this new combination of the two worked. I was welcomed into the centre by professional, friendly personal trainers. A consultation was done by Taz, my personal trainer for the session. After finding out what my concerns, likes and dislikes were when it came to training he started my workout. Some of the exercises were done with machines and some were done with weights or on the mats, which proved to show that there is a good variety in the sessions. Taz appreciated the fact that I was not a huge fan of doing cardio exercises on their own so he incorporated it in with my resistance training. I worked on the whole body with a range of exercises that I assumed I wouldn't have a problem with. I was doing leg presses with 10 second pauses in between doing sets of 10, 9, 8, 7 etc. That was challenging to say the least! Other exercises were just as hard like playing catch with a ball. That may sound easy in normal circumstances but when the ball is a medicine ball (form of gym ball) the exercise can be taxing. Me being a sucker for pain, however, went through it and actually really enjoyed the whole session. After my thorough workout I finished with some stretching, which I would not have normally done at the gym even though it is important to do. Being with a personal trainer, however, everything was done properly from the warm up to the cool down. The Chris Elms personal fitness clubs are worthwhile to join. His concept is available for all different types of fitness and is especially ideal for those who want to go to the gym but find it intimidating or need that extra push to go. The friendly atmosphere welcomes all. Chris is currently doing a special offer where you get two free introductory PT sessions at the club so you can decide if you wish to join as a member. Natural Skincare - Lavender Essential Oil by Sarah Perry Lavender essential oil or Lavandula angustifolia is extracted from the beautiful blue/violet lavender plant. It has a well-loved sweet aroma that blends well with other essential oils. Although almost all essential oils cannot be applied neat on the skin, lavender oil is one of the very few that can be. It can also be blended in a carrier oil such as sweet almond oil. Lavender has many healing properties and can be used to treat: Migraines, headaches, stress, eczema, sleeplessness, anxiety, aching muscles, cuts and wounds, bites/stings, minor burns, digestion and more. Ways to benefit from lavender essential oil: Relaxing Bath: Add a couple of drops into a full bath and relax. You can buy a preblended oil, such as peace bath and body oil by face aromatherapy which contains lavender essential oil amongst other essential oils. Oil Burner: To gently breathe in the incredibly soothing aroma, apply just a couple of drops into an oil burner with water and light the candle below. This will release the vapors of the oil into the environment and spread a sense of calm through the room. Room Spray: Fill a spray bottle with water, add up to 10 drops of lavender oil and shake well before each use. You can also mix in some alcohol e.g. vodka for preserving the spray for longer but this is optional, just don't drink it! Perfume: For an alternative to alcohol and artificially fragranced perfume, add 1 drop to a carrier oil and pour into a new 'roll on bottle'. Pot Pourri: Freshen up tired pot pourri by adding a drop or two and mixing thoroughly. As with all ingredients, artificial or natural, each person's skin sensitivities differ from others. Therefore we would always recommend patch testing a small amount on the skin. Essential and carrier oils are available from Face @ 7-9 Broomfield Road, Chelmsford, Essex CM1 1SY; Tel: 01245 496578 or shop online at www.shopatface.com

Perfectly Groomed by John Holloway The traditional days of barber shops and male grooming are returning. In a world where appearance can be so important, it's no wonder that men are seeing the light, ditching the scruffy just-got-out-of-bed look and are opting for a clean-cut-finish that get all the ladies swooning. This feature has been created especially for all you male Chelmsfordians. We'd love to know your thoughts so if you go along and try any of these great services let us know on info@thefaceofchelmsford.com. John Holloway the Man About Town An average man is said to shave more than 20,000 times between the ages of 15 and 75. The average shaving time, equates to over 5 months of actual time. For many men, shaving has become a nasty habit that is begrudgingly carried out to ensure that our betrothed do not receive any unnecessary stubble rash should we get too close. Shave and a haircut? We all know the phrase, but when was the last time we actually had one? How many of us have ever had one? The classic straight-razor and hot towel shave has lost a lot of ground over the years to disposable razors and the ease of maintaining a five o'clock shadow sported by stylish men and lazy men alike, over the world. Anybody who's never had a professional straight razor shave, I'd recommend, it. You'll never have a closer shave or a nicer shave. Those who want to experience the real thing need to visit Chelmsford's newest traditional male grooming establishment, Man About Town. Man About Town, the gentleman's barber, is located in the heart of Chelmsford, opposite Mustard. With a great blend of contemporary and traditional styles, Man About Town has some great artefacts including traditional 1950's barber's chairs, an antique till and a Union Jack sofa. I submitted to the warm towel and straight razor, courtesy of Stuart Matthews who had been shaving whiskers at the exclusive department store, Liberty on Regent Street, London. He Qualified at Alan D Hairdressing in Soho, London. Stuart believes that the straight razor shave is making a big comeback, as it is not only the best shave that you can get, but that it really is a relaxing male treatment that really helps you feel alive, especially if you have it and walk out on a winters day. He says that many women now buy their partners a gift certificate for a shave as a birthday or holiday gift. "It makes you feel relaxed" Stuart says as he wrapped my face in a warm towel, and then washes the face with Proroso 'shaving soap', which is free from any artificial colours and is

h e a l t h | b e a u t y | h a i r | s h o p p i n g | family | r e l a x i n g | l i v i n g | d i n i n g

dermatologically tested. The soap was removed with the warm towel. Then oil is applied to the face and massaged in. Then comes the luxurious hot lather followed by the first touch of the straight razor. Stuart stretches the skin to protect it from being cut and shaves in the direction of the hair growth.

Scrape, scrape, scrape. The blade moves down to the throat and every effort is made to forget about Sweeney Todd and just enjoy the experience. Hot lather is reapplied, then Stuart shaves in the other direction. While some guys might get by with the current triple blade store-bought razor and shaving cream, there are times when a straight razor classic 'wet shave' is the only way to go. Stuart offers a great service for wedding parties which is new for 2010, where they are offering the ultimate wedding package. Specifically designed for the groom, best man, ushers and father of the bride and groom, a tailored package which includes exclusive use of the salon, haircuts, and traditional wet shaves for all parties, food, soft drinks and alcoholic beverages. This is great for the groom and his guests to kick back relax and enjoy a stylish male grooming experience before the big day. As for the haircut experience, I can easily say that it was by far the best that I have had for many, many years. Having been offered a choice of drinks including Becks, Guinness, coffee, tea or water, I relaxed in the chair with a perfect cup of coffee. As I listened to a good selection of music ranging from Oasis, Paul Weller and the Stone Roses to classic tunes from the Rat Pack, Stuart washed and then cut my hair with precision and ease. The end result was finished off with a bit of hair putty that comes from the extensive range of Man About Town's own range of products. Overall I was very pleased with the time spent in Man About Town. I was relaxed and unhurried. The shave was great, the haircut was perfect and most importantly, my wife seemed very pleased to see me emerge relaxed, satisfied and most importantly, in significantly better groomed condition than when I first entered! If you haven't yet been to Man About Town then drop in, it's definitely worth a visit! Male Grooming – Hair Colour by John Holloway A man went into a salon to get his hair coloured. I know this because I was there, and the place was Empire Hair Salon on New London Road. I was wondering why this man was getting his hair coloured. I understand why women dye their hair. Usually it's to do with having a new look, or to compliment the latest fashion trends, creating a new style, or to simply get noticed. For a woman it's quite a common occurrence. And it's not unusual for teens, both boys and girls, to change their hair colour, and often quite dramatically. Purple. Jet Black. Pink. Colours that are both vivid and in stark contrast to their natural hair colour. It's a harmless rite of passage so to speak, an attempt to identify and express some individuality. From what I recall, it was a bit of fun as well. This man was now being shown a massive 3 foot high hair colour book that had all sorts of coloured hair samples in it. He realised that the thought of colouring his hair is not one that he normally has. He felt obliged to ask if many men had their hair coloured. The stylist said no, but that it was on the increase. He was told that the benefits for a man having his hair coloured really depends on the man. For some it's to have a new look, for others it's to hide the grey. For many though, it is for the simple reason of enhancing their appearance. Like baldness and going grey it is no longer a social taboo and rightly so. Nowadays, neither is hair colouring. But for those that have hair, colour occasionally adds a bit of variety, allowing men to alter their style, safe in the knowledge that the colouring can be permanent or semi permanent and that eventually it will grow out. Natural hair colour can be brightened by adding in some new colour. The natural variance in the tones or shades of someone's hair colour can be made more or less noticeable as well. Hair colouring doesn't have to be dramatic to be effective. After the man chose his colour, it was applied and he was left to sit and read, enjoying a coffee while the colour took to his hair. He would only be sitting there for about 20/30 minutes because a heated dome like device was comfortably positioned above his head to reduce the waiting time by half. Once done, the colour was rinsed out, the hair was thoroughly washed and conditioned and the man had his hair dried, styled, and then was asked to look in the mirror. Hmmm, not bad! It was obvious that the man was pleased. Not too dramatic, the little grey he had was blended away nicely. I personally liked it. More importantly I thought my wife would like it too! After all, this random man was me. Hair Colour from £15.00 Empire 55-57 New London Road, Chelmsford, CM2 0ND 01245 352962 www.empiresalons.co.uk

T h e C l a s s i c W a r d r o b e by Zara Ali

As fashion trends keep changing, it is hard to keep on top of what to and what not to wear. However, as women have the classic 'little black dress', men also have key items in their wardrobe so they can always look their best. I visited Zagger Fashion Group in Baddow Road, Chelmsford and met up with manager Paul Dafforn who has 20 years experience within the fashion retail industry and fifteen of those at Zagger. I wanted to get a broader perspective of items which a man should buy in the current climate and Paul gave me some advice on each of the categories below: Item 1: The Black Suit This is a must. The black suit can be worn on many occasions - parties, weddings, interviews etc. The jacket can be used separately and worn with jeans. Why black? Why not! Black goes with everything! Paul suggested a regular fit, single breasted black suit with side vents and flat fronted trousers. My particular favourite was the Hugo Boss suit. Item 2: The White Shirt A fantastic accessory to any suit. The white shirt can be worn with or without a tie, but collar shape is important. The white shirt can be worn underneath a suit or with a piece of knitwear. He showed me a wide range of white shirts in various fits and fabrics. His personal favourite is the slim fit Poggianti shirt in cotton stretch. Item 3: The 'Jeans' A pet hate for many women is loose ill fitting jeans on a guy. A pair of jeans should fit well on both the waist and hips and finish on the shoe without too much gather. Bearing in mind we are talking about the classic wardrobe, the ideal colour for jeans should be a mid or dark blue. Jeans are a personal purchase. I was impressed to see such a large selection of over 40 styles of denim at Zagger. It is recommended to try a few styles of jeans first, so that you can find the right pair that suit you. Item 4: Knitwear Knitwear is versatile in every way. V-neck jumpers can be worn with either a shirt or a t-shirt for a smart or casual look. Stick to black, charcoal or navy in extra fine merino wool or cotton. Paul showed me a range of knitwear including luxurious plain colours from John Smedley and styles in brighter colours from Ralph Lauren and Lyle & Scott. Item 5: The Shoes 63% of women say that a man's look is ruined by scuffed, worn and dirty shoes. A man should own at least one pair of smart black shoes. This is an essential wardrobe item, whether it is a plain lace up or a loafer. Both will do the trick with either a suit or a pair of jeans. Brown shoes soften the look and tend to work better with jeans and colours such as navy and charcoal. Paul explained that he often gives advice to his customers on style, colour and fit, so that they can find the perfect pair of shoes. There is a wide range of both smart and casual footwear in the store. These are just some of the basic items a man should have. To build up the wardrobe it can be an idea to seek professional advice on what to wear and how to wear it - that way you can't go wrong! For more information and advice Paul can be contacted at the store or on 01245 262194. 20 Baddow Road, Chelmsford, CM2 0DG www.zagger.co.uk

For the Man That Has Everything –

How About A Manicure? by John Holloway That's right, a manicure. Years ago, in the good old days, a man's masculinity could be shown by his torn and worn hands. Those days are gone. More and more men, with growing regularity are taking part in the services that had previously only been offered in spas and beauty salons. The increasing popularity of a male manicure therefore makes perfect sense. After all, the word 'man' IS in the title! What exactly is a manicure? A “manicure” is a treat for hands and nails. A standard manicure would involve cleaning, filing and shaping of the nails, some cuticle work and finally, buffing of the nails to give them some shine. For women, the application of polish usually finishes the treatment. The manicure procedure itself is regulated and can only be performed by qualified professionals due to the fact that the skin is being manipulated and sometimes trimmed and because there is a possible risk of infection whenever tools are used on multiple clients; so proper regulation and sanitation is critical.

exfoliate the skin and to prepare the nails and cuticles to be trimmed and shaped. It felt more like a massage and was quite relaxing, actually. My nails and cuticles were then trimmed and shaped. There was nothing painful, nothing uncomfortable and surprisingly, nothing unmanly, so to speak. Rather the experience as a whole was very relaxing and I did leave knowing that my hands did look much nicer than before. I have always tried to keep my nails neat and trimmed and make sure that they were relatively clean, but the results from Chelmer Springs was undoubtedly superior to anything that I have achieved trying to do it myself, and it was far more relaxing! For the man that wants to be better groomed and for the man that has everything, I can definitely recommend a manicure at Chelmer Springs. Men's Manicure costs £18.00

What makes a good manicure? What is it about having someone else clean and groom your hands and nails that can quickly and inexpensively make you feel indulged? I went to Chelmer Springs located inside the Riverside Leisure Centre, to answer this question and to find out just what a male's manicure was all about.

After being shown into the room, I was asked to take off my wedding ring, my watch, to roll up my sleeves and to sit down and relax. I wondered what exactly, was I about to experience? Before me lay bowls, some clippers, an assortment of nail files, and some sticks that had a slant on the end.

Later appointments available by request.

My hands were soaked in warm water and then softly cleansed with a mineral salt scrub. This was to help

Male Pedicure by John Holloway If you are a man who has always turned your nose up at the idea, then seriously think again. There are a lot of 'manly men' out there who seem to think it is manly enough. A regular pedicure fits in so easily with everything else that we do in an effort to lead a healthier life! I have never really questioned whether or not a man should or shouldn't get a pedicure. That is until I visited Apollo Nails on Broomfield Road and found myself actually getting one; and I felt quite comfortable. My feet were soaking in a bubbling hot bath and the rest of my body was relaxing in a massage chair. I asked the therapist how many men came in for a pedicure and was quite surprised to hear that she had lots of regulars from all walks of life, from guys who commute in and out of London to local builders. As the therapist went about the pedicure routine, I was completely at ease and developed a good list of reasons to get a pedicure: 1. Sex Appeal: Let's face it, many women and some men DO like it when a man cares about the way he looks. Making an effort in one's appearance says we care just enough. 2. It Feels Good: Although the actual pedicure feels good on its own, this one came with a mini-massage component that made it feel really quite nice. 3. Stress Free: Taking time to get a pedicure can give a man some down time to relax and take his mind off some of the day to day stresses of everyday life. This is good for a healthy heart! 4. Healthy Feet: During pedicures, dead skin is exfoliated away to help diminish calluses and potential dead skin build-up that can lead to bigger problems down the line. Also the cuticles are cleaned up as well, which eliminates painful and unsightly hangnails. 5. It Looks Good: If a man is tough on his feet (basically anyone that walks around a lot in shoes or boots is a great example of this), they can end up looking a bit worn and unattractive. A regular pedicure would help keep feet looking their best at all times. 6. A Softer Touch: This one really benefits women as much as men. A pedicure promotes softer skin on the feet, which makes that touch of the feet between the sheets that little bit sweeter. 7. Fine & Dandy!

nterior angl e rt design gallery

Essex based art gallery proves the Eastern region can become famous for art and culture! Chelmsford based art gallery Interior Angle, has taken fine art generated in the Eastern region, including Suffolk and Essex, to the next level, showcasing the work of artists at the prestigious Glasgow Art Fair, selected by the National Gallery of Scotland and other fine art notorieties. Eye catching and humorous, the Dandies caused a stir with all who visited the fair and provided a unique experience for all. These cheeky, light hearted, full of adventure, life sized figures are an example of the unique collections being developed by the gallery for national and international exposure. Paul Richardson, artist of the Dandy Boys, is based in Suffolk and regularly undertakes public art commissions. He created the Dandies especially for the gallery's exhibition at the fair. The Dandy Boy's were groups of fishermen in the 60's who started to develop a uniquely flamboyant style for their night out in port. They were earning a good weekly wage and could afford to dress up when they were off the boats. Paul introduces to you The Dandy Boys and other characters unveiled, for the first time, at the Glasgow Art Fair. Interior Angle art design gallery, based in Wells Street, Chelmsford, have been in Chelmsford for 15 years and offer a unique cutting edge range of art and design. They boasted front page coverage on the Glasgow Herald and represented the fair in extensive press. The concept is to provide artwork to educate on how art can transform a space and be a part of everyone's existence. Lifestyle solutions for a personal or commercial space give art a clear precedence in every day modern life. Boasting a collection of high quality contemporary art, Interior Angle introduced an urban theme to the fair which welcomed a fresh approach to selling fine art. Art within design is central to the vision of the gallery with compositions selected for

the aesthetic qualities and contemporary visualisation, as well as conceptual development. RESTAURANT REVIEW OF BARDA Barda Restaurant & Bar is situated in the heart of Chelmsford's West End on Broomfield Road. The restaurant and bar is close to the train station and with easy parking it's a great place to eat during the day for lunch or an evening meal. The restaurant is wood panelled, simple and elegant, with art from Interior Angle, which is regularly changed. This modern, minimalistic venue feels comfortable, relaxed and stylish all at the same time. The choice on the menu at Barda gives an excellent selection of meat, game and fish, with an appetizing vegetarian option. The food looked extremely appetizing, with our starters served on slate tiles, the food tasted as good as it looked. The skate was particularly good, full of flavour and at the same time light and delicate. The welsh beef was cooked to perfection and accompanied with roasted tomatoes, asparagus, and fine beans with a light tempura batter, I'd definitely recommend trying it! A FEW THINGS ABOUT BARDA...

Travel Journal-Normandy by Jane & John Holloway

Normandy – France Language – French Currency – Euros

For a short break across the channel, we discovered a great part of France that could provide us with the ability to relax, take in a few sights and enjoy some good food. Normandy! An area that is steeped in history, from Roman times through to the D-Day landings. The name of Normandy is derived by the settlement and conquest by the Vikings, the ‘Northmen’. Today the 350 mile coastline is strewn with a whole range of attractive seaside resorts rich in culture, history and great food! We left England via the channel tunnel and arrived at our destination in just over three hours. La Cheneviere is an 18th

Century Chateau that has been fully restored and converted into a hotel and restaurant. The perfect place to relax and unwind, yet close enough to the many famous sites of the area. The food is simply incredible, all of the vegetables and herbs are sourced from the hotels own garden. One night after dinner, we were offered a selection of cheeses from the cheese board and were amazed to see no less than 35 different types of cheese wheeled before us. We had never seen so many cheeses on a cheese board! It was hard to choose which ones to try, so we took the bold decision between us to try every single one. From the

recognisable locally produced Camembert to Eposisses de Bourgogne, which has been named one of the smelliest cheeses in the world and has even been banned from taking on public transport in France!

As a whole, Normandy has a reputation for good food and this is well deserved. Seafood, like Moules Mariniere, Sole Normandy and great dishes using locally caught scallops, crayfish and prawns are readily available. It's customary to wash it all down with a glass of local apple cider, but we preferred the local white wine.

cathedral. As the first city to be liberated by the Allies it was spared the massive bombing that many of the other cities suffered. The Bayeux tapestry tells the story about the invasion of England by William the Conqueror in 1066 and was mostly likely commissioned in the 1070’s. Embroidered in woollen threads, the tapestry is about the length of a football pitch, measuring 230 feet long. The tapestry was originally housed in Bayeux Cathedral, which itself was consecrated in 1077. As a national monument of France, the gothic cathedral has a crypt that has been unaltered since the 11th century. Architecturally, the building is quite impressive and is surrounded by narrow medieval streets lined with old timbered houses. There are many other things to do in the area, and it is definitely worth visiting.

We ventured out one day to visit the DDay beaches, and this was definitely worth a visit. It was quite amazing to look up the cliffs and realise that, somehow, Allied soldiers managed to scale them and secure a vantage point from which the liberation of Europe could begin. We also visited the historic town of Bayeux with its famous tapestry and

INTRODUCING:

The Best of British (in Chelmsford) by Jane and John Holloway

This month we visited Richard at the restaurant in New London Road to find out a bit more about spring lamb and to taste a seasonal dish made by their head chef. The dish prepared was a rack of lamb, which was cooked pink, served with a rich cranberry sauce and accompanied with seasonal vegetables of carrots, parsnips and broccoli. The dish was full of flavour and the lamb was extremely succulent, if fact it was so good that the bones looked like they had been completely stripped, when they were finished. They are a game and poultry dealer that supply to the catering trade and provide home freezer supplies. They are a 3rd generation family butcher and were finalists in the Essex Food and Drink Awards for Best Butcher Category 2009. Lamb is available all year round, as it is imported from other countries, mainly New Zealand, but when it is in season British lamb is hard to beat. The lamb we had was extremely local and had only travelled a few miles from Latchingdon. When it comes to buying meat most of the supermarkets will source their lamb from a number of different farms and countries. If you purchase lamb from a good butcher's shop or a farmers' market, you can find out more about the lamb, so that you can buy the same quality again. When buying lamb always look for firm, pinkish meat with creamy white fat.

It surprises me how consistently underappreciated British cuisine is, not only throughout the world, but more so here within the UK. With a close proximity to London and some of the finest restaurants in the world serving authentic and traditionally prepared British food, Chelmsford has not only the residents that often visit these establishments, but the suppliers of such establishments to match. Only recently have more restaurants begun to appear in Chelmsford, that provide the high quality of food and service, but without the price, of their London counterparts. It is with great pleasure that The Face Of Chelmsford has teamed up with Richard Adams, owner of Mustard Bar & Bistro, (winner of the Best Restaurant Newcomer Award at the Essex Chronicle's Food & drink Awards 2009) to provide features that showcase some of the very best British food, drink and ingredients available throughout the year, right here in Chelmsford! From witnessing first-hand the start of the lambing season through to helping out with the autumn harvest, we will highlight just how abundant our local food suppliers are, and how they support our local community.

Skin Tips

Reviving Dry Feet

Tip 1 Help prevent the build up of dry skin on your feet by using a foot scrub regularly. Use after a soak in the bath or a foot spa as this will soften the skin. A foot file can also be used. Don't be tempted to over exfoliate, removing too much dry skin at one time can leave the skin feeling tender. Tip 2 If you have a build up of dry skin already, visit a reputable salon for a pedicure to have that dry skin treated. It is then much easier to keep on top of your home care maintenance. Tip 3 Don't forget to moisturise. Daily application of a rich moisturiser or a specific foot cream will help nourish the skin. For cracked heals apply twice a day.

Being Green by Jane Holloway £50.00 Just in the Bin On average each family in the UK throw away £50.00 worth of food every month. This equates to 3.6million tonnes of food every year and the most common items to be binned are salad, fruit and bread. We need to consider the effect this has to the planet, for wasted food has a huge impact when we look at the growing, processing, packaging, transporting, and refrigerating process of food that just ends up in the bin. In fact if we all stop wasting food in our fridges and cupboards that could have been eaten, the CO2 impact would actually be the equivalent of taking 1 in 4 I cars off the road. It's worth thinking about! Top tips to avoid food wastage; = Don't buy or cook more than you need = Eat up the leftovers for lunch the next day = Keep produce that goes off first at the front = Re-sort the fridge every time you refill it = Freeze items that you think you will not get time to eat

The Lunch Date Hello Sushi! Moshi, literally means 'hello' in Japanese. Moshi Sushi, a new restaurant that opened in February 2010 is Chelmsford's only sushi restaurant. Situated on the corner of High Chelmer, opposite Chelmsford's market at the multi storey, the restaurant is a perfect place to go to for lunch whether you are in town shopping or out for lunch from the office. Moshi Sushi offers lunch packs and a take away service, where all sushi is made fresh by sushi chef of 15 years, Mr Mohan. The restaurant offers dishes from a sushi belt and dishes made to order from the vast menu. Although some dishes have raw fish, most of them do not. There is a huge selection including many vegetable dishes, chicken, prawn and tasty noodles. The great thing with sushi bars is the speed in which you can go in and have something to eat. Simply walk in and grab a seat at the bar or a table. I always start with Miso soup and either pick up from the belt or order a dish straight from the server. My Three Favourite Dishes? Number 1. Fresh Crab and Mango Temaki @ £2.50 A beautifully presented temaki with tasty crab and fresh mango. Number 2. Ebi Tempura @ £5.95 A classic dish made with fresh king prawns that are lightly battered. Number 3. Chicken Yaki Udon Noodle @ £5.50 This dish was highly recommended to me and it definitely lived up to its reputation. The noodles were soft and full of flavour. I have enjoyed sushi for several years and I am delighted to now have a local restaurant to go to, whether it is for a quick lunch on my own, with friends or an evening out with the husband or family. I have been invited in one evening by the Chef to learn how to make sushi rolls, and be a sushi Sous Chef for the night! So watch out for the video podcast coming up on www.thefaceofchelmsford.com! I Wish You Enough

I never really thought that I'd spend as much time in airports as I do. I don't know why. I always wanted to be famous and that would mean lots of travel. But I'm not famous, yet I do see more than my share of airports. I love them and I hate them. I love them because of the people I get to watch. But they are also the same reason why I hate airports. It all comes down to "hello" and "goodbye." I must have mentioned this a few times while writing my stories. I have great difficulties with saying goodbye. Even as I write this I am experiencing that pounding sensation in my heart. If I am watching such a scene in a movie I am affected so much that I need to sit up and take a few deep breaths. So when faced with a challenge in my life I have been known to go to our local airport and watch people say goodbye. I figure nothing that is happening to me at the time could be as bad as having to say goodbye. Watching people cling to each other, crying, and holding each other in that last embrace makes me appreciate what I have even more. Seeing them finally pull apart, extending their arms until the tips of their fingers are the last to let go, is an image that stays forefront in my mind throughout the day. On one of my recent business trips, when I arrived at the counter to check in, the woman said, "How are you today?" I replied, "I am missing my wife already and I haven't even said goodbye." She then looked at my ticket and began to ask, "How long will you...Oh, my God. You will only be gone three days!" We all laughed. My problem was I still had to say goodbye. But I learn from goodbye moments, too. Recently I overheard a father and daughter in their last moments together. They had announced her departure and standing near the security gate, they hugged and he said, "I love you. I wish you enough." She in turn said, "Daddy, our life together has been more than enough. Your love is all I ever needed. I wish you enough, too, Daddy." They kissed and she left. He walked over toward the window where I was seated. Standing there I could see he wanted and needed to cry. I tried not to intrude on his privacy, but he welcomed me in by asking, "Did you ever say goodbye to someone knowing it would be forever?" "Yes, I have," I replied. Saying that brought back memories I had of expressing my love and appreciation for all my Dad had done for me. Recognizing that his days were limited, I took the time to tell him face to face how much he meant to me. So I knew what this man was experiencing. "Forgive me for asking, but why is this a forever goodbye?" I asked.

"I am old and she lives much too far away. I have challenges ahead and the reality is, the next trip back would be for my funeral," he said. "When you were saying goodbye I heard you say, "I wish you enough." May I ask what that means?" He began to smile. "That's a wish that has been handed down from other generations. My parents used to say it to everyone." He paused for a moment and looking up as if trying to remember it in detail, he smiled even more."When we said 'I wish you enough,' we wanted the other person to have a life filled with just enough good things to sustain them," he continued and then turning toward me he shared the following as if he were reciting it from memory. I wish you enough sun to keep your attitude bright. I wish you enough rain to appreciate the sun more. I wish you enough happiness to keep your spirit alive. I wish you enough pain so that the smallest joys in life appear much bigger. I wish you enough gain to satisfy your wanting. I wish you enough loss to appreciate all that you possess. I wish you enough "Hello's" to get you through the final "Goodbye." He then began to sob and walked away. My friends, I wish you enough! Gordon Scammell Photography A resident local artist for Chelmsford, Gordon Scammell produced a bold collection for the Chelmsford Arts Trail 2008. He has some amazing images on the gallery section of his website. In his early photographs he concentrated mainly on monochromatic images but his current portfolio now includes some amazing colour images. His subjects are always carefully chosen and often have a slight ominous feel, but with a pinch of vibrancy that together create a unique atmosphere. This, together with his love for urban & street portraiture, means there is something for everyone to relate to in his strong, artistic images.

Gordon has exhibited photographic work with Interior Angle since 2008. He started by selling limited edition photography and now contributes work to the exciting new range of Gallery Limited Edition Photography. He is also a prolific contributor to various stock photographic image libraries. In 2007 Gordon was selected from a field of 33,000 entries as a finalist in the Curry's/Daily Telegraph Digital Photographer of the Year competition – judged by David Bailey. He was also a finalist in 2008 and was further delighted to twice being a commended finalist for the prestigious British Landscape Photographer of the Year Competition. His 2009 image 'RUN' is currently part of an exhibition touring the UK and both of his finalist entries have been published in the 'Taking a View' books. www.gordonscammellphotography.com gordscam@yahoo.com

Behind the Scenes with Jane Holloway

At Totham Bangers written by Sarah Perry For our first ‘behind the scenes’ feature, we decided to try our hand at a new profession. The art of making sausages. To help us on our new experiment we visited Lou and John Griffiths of Totham Bangers. This family run business produces handmade sausages using the finest quality ingredients with no artificial colourings or flavourings. All pork used is from outside reared pigs sourced locally to Totham Bangers. We arrived at their sausage making facilities, which is where I decided to take a step back and hand the experience over to our very own editor, Jane Holloway – who apparently took to sausage making like a duck to water! After a thorough hand washing we were presented with chopped pork shoulder which was to be passed through a mincer. It was great to be able to see the meat prior to mincing as you are able to see its fine quality. The newly minced pork then needed to be stirred with its ingredients. Unlike store-bought sausages, very few ingredients need to be added for the Totham Banger traditional sausage so Jane simply added some rusk (breadcrumbs excluding the yeast), back fat, salt, ground pepper and a touch of preservative. ‘Let the stirring commence’, which turned out to be quite tiring for the arm muscles so she got a little help from John. The stirred meat is then ready to take on the form of a sausage. Totham Bangers opt for the traditional sausage skins which are soaked prior to use. The mixture is placed inside the machine which will extract the meat out through a tube and ‘hopefully’ into the sausage skin. After a few quick demos from Lou, Jane decided it was time to have a go. I have to admit she was actually pretty good, although we did have to turn down the speed of the machine to prevent producing jumbo sausages. The next step is to make twists every 4/5 inches to achieve the correct sausage length. After proudly packing her new produce in a tray and heat sealing with film, Jane could finally admire her hard work. Later that evening we held a taste test to try Jane’s sausages which were very tasty. The meat is so flavoursome, we highly recommend trying some for yourself, well maybe not Jane’s slightly misshapen ones but the real thing created by Lou and John. Visit their website for more information including which farmers markets they will be attending in the upcoming months. Their produce is also available at Olivers Nurseries in Witham and Poplar Nurseries in Marks Tey. SMILE!

With Brighter, Whiter Teeth by Sarah Perry We are celebrating this year's National Smile Month campaign which will run in the UK and USA for the third time. It runs from the 16 May – 16 June 2010. Over the past few years the demand for brighter, whiter teeth has continued to grow and celebrities having teeth whitening seems quite normal. From gentle whitening to the extreme (not mentioning any names, Mr Simon Cowell) everybody seems interested in improving their gnashes. So what are our options? Although there are many home remedies to be found online, I would recommend discussing your teeth whitening wishes with a professional. I was invited by dentist Wayne Gin of Gin Dental Studio, who is well known for his 'gintle' art of dentistry, to experience a complete teeth whitening service plus the homecare kit. When I walked into the studio I was greeted by Emma and given a consultation form to fill out. Then came my favourite part: whilst waiting for your appointment you can use the super-high-tech massage chair in the waiting room to completely relax the body and mind. This is a great added benefit for those who feel nervous about visiting the dentist. Then Wayne Gin talked me through the treatment options and showed me some 'before' and 'after' photos to give me an idea of what results are achievable. The options which we discussed were: WY10 Laser whitening In-studio lightening procedures start with a 'before' photo being taken and a mouth piece inserted to keep the lips from touching the gums or teeth. A protective gel is then carefully applied to the gums and gum line to act as a barrier to the whitening agent. The whitening product is then brushed onto the teeth and you're ready for the development light. Laser lightening often requires a very large lamp on a stand hovering over the mouth. To some patients this can feel invasive so Wayne has invested in a small light that simply clips onto the mouth guard. Then it's time to sit back and relax for approximately 1 hour, while the system works its magic. Wayne offers you a choice of DVD's to watch to help the time pass. Every 10-15 minutes Wayne pops in to re-apply the whitening gel for maximum results. Once complete the gel products are removed and your 'after' photo is taken so that you can see the improved colour instantly. The improvement achieved will vary from person to person as some have more stained teeth from tea, coffee, wine etc. than others. This treatment costs £395.00 although it is currently available on special offer for just £295.00, for a limited time only. Smile strips. Smile strips provide a safe, fool-proof way of delivery teeth whitening in the comfort of your own home. To ensure you are suitable for this method and free from gum disease, it is necessary to have a dental check up prior to using this method. Upon approval you can take home your smile strips and get whitening! There are only a few whitening strip brands available in the market. Smile strips are professionally created and are totally safe to use. They use up to a maximum of 6% of the active ingredient so no damage is done to the teeth. The strips are also larger than other products so more of the teeth are covered. Inside each individual packet are two strips, one for lower teeth and one for upper teeth. To start my Smile Strips journey I open the pack and held up the larger strip (top row of teeth) and smile to lift the lips away from my teeth. Then I placed this over my teeth and gently pressed down and fold over any free edges. After repeating this on the lower teeth (altogether takes about 1 minute) I then ponder on what to do for the next 30 minutes which is the recommended time of usage. After watching a bout of Eastenders I remove the strips and brush my teeth to remove any residue. This can then be repeated daily or every other day depending on the results you wish to achieve. Most people see a result after 3 days however I noticed a difference from the first use. I was pleasantly surprised by the results and will definitely continue using them. Smile strips are only available from dentists. The price for 1 box of strips is £45.00 and contains 14 packs. D&A HAIRDRESSING by Jane Holloway

I was invited by Jay from D&A Hairdressing, which is based in Springfield Road, for a cut and blow dry treatment. I was keen to visit the salon owned by Della and Andrew as I met Della many years ago when I did my work experience at school! D&A Hairdressing salon has been open for 7 years and after the success of this branch, the second D&A Hairdressing salon opened its doors in Great Waltham over 2 years ago. The Great Waltham branch also has a beauty therapist in there as well. The salon is hustle and bustle free with a friendly, warm, cosy feel to it and the colours of cream and black compliment the natural wood. They also have avoided huge shelves of hundreds and hundreds of hair products for sale that some people can find imposing. Jay has been working at the salon for the last 2 years. Originally he was in the restaurant management trade but decided that it was time to finally follow his passion and go back to college and train as a hairdressersomething he had wanted to do for ages. After a quick consultation Jay washed my hair with the HEMPZ range of hair care products. This is more of a natural range compared to other hair products and is simply about beautiful, healthy hair. Each formula contains pure hemp seed oil and hemp extract, which is a rich source of essential amino acids and nutrients. Back to the chair I went and Jay cut my hair with precision and care. I went for a graduated style, with long layers. My hair was then blow dried with plenty of volume. They offer a variety of services including restyles, colour, perming, hair-up and hair extensions. The salon is open to men, women and children. They have a set pricelist where you pay for the service and not the stylist. The price for a cut and blow dry is a standard £35.00. For colouring hair D&A hairdressing use Infiniti products, which were developed to create an advanced formula with low ammonia content. It penetrates deep into the hair’s cortex producing up to 100% coverage of white and grey hair without damaging its structure. There is a wide range of natural and fashion shades that give shine and vibrancy to the hair. They also offer a range which is particularly good for people who have suffered with hair loss. Visit Jay and receive 20% off all hair services. He is available for appointments on Thursdays, Fridays and Saturdays. There is also easy parking at the salon with spaces just round the corner. D&A Hairdressing Open Tuesday through to Saturday with flexible opening hours for client appointments. 199 Springfield Road, Chelmsford. 01245 360080/ 07789185096 Main Road, Great Waltham, Chelmsford. 01245 360080/ 07789185096

Snack Attack The 'Smiliest' Gingerbread Men by Meghan Mari Ingredients 320g (11oz) plain flour 100g (3.5oz) butter 100g (3.5oz) dark muscovado sugar 4 tablespoons golden syrup 4 teaspoons ground ginger 1 teaspoon bicarbonate of soda Icing to decorate The Equipment needed Saucepan Rolling pin Cookie cutter Mixing bowl Hob or stove Oven Baking tray The Method First combine all the dry ingredients: flour, ginger and bicarbonate of soda, in a large mixing bowl and put to one side. Then put the butter, sugar and syrup in a pan and simply melt over a gentle heat. Keep stirring until all of the sugar has melted with the syrup and butter or until you have a smooth dark liquid in the bottom of the pan. Avoid letting it either boil or burn. Pour this into the dry ingredients and with a wooden spoon mix them together until they form a solid mass. You should now have a dark brown ball of pastry ready for cutting, if you can see white flecks of flour, then it needs more thorough mixing. Sprinkle your worktop with a little flour and place the ball of pastry on it for rolling. Roll this until it is around 5mm thick. Cut out your shapes and transfer them to a greased baking tray. Place in an oven pre-heated to 170 째C and bake for 10 minutes. Once baked, remove them from the trays and allow to cool. Decorate and enjoy! Alternatively pop into The Munch Box on Moulsham Street and pick up one of their tasty gingerbread men!
