JARRELL’S HOMETOWN VETERINARIAN Compassion Veterinary Hospital Opens Doors

Growing up on a farm in Jarrell, Dr. Melissa Havemann had one goal – to serve her community as a compassionate, caring veterinarian. “It was always my dream to come back and be THE Jarrell hometown doc.”

From starting out on the family farm to working at an equine veterinary clinic in Salado at the age of 12, to helping start a mixed animal practice in San Angelo and now opening a hospital here in Jarrell, Dr. Havemann’s animal care journey has come full circle. With her roots in Jarrell, she wants her neighbors to know Compassion Veterinary Hospital is “100 percent locally, privately owned. We are not corporate. I’m here for the community and it’s not just a job for me, it’s a lifestyle. It’s so rewarding to help animals, to be able to see their improvements and be the reason for those improvements.”

When it came to deciding her clinic’s name, Dr. Havemann says compassion is “just who I am. That’s how I practice medicine. Whenever pet owners have to make the tough decisions, I am right there in the trenches with them,” she says, adding that “every decision is made with compassion for the pet and their owner. It’s not just a numbers game.”

DREAM TEAM

Coming August, Compassion Veterinary Hospital will open its doors at the Sonterra Center with a special group of animal lovers coming on board with Dr. Havemann. “The exciting thing about this clinic is that it’s become a family thing.” Tyler Johns, Dr. Havemann’s brother, will be the customer service representative and welcoming face when you walk into the hospital. Angel Wolfe, who has previously worked as Dr. Havemann’s go-to technician for several years, moved to Jarrell to become her practice manager, while Dr. Havemann’s former technician Lindsey Pearson will be joining the team on their exciting beginnings.

“It’s the beginning of our dream team. I’m so excited about our team because in the veterinary world, there are ‘unicorn clinics’ that people become a part of and never leave because who the clinic is fulfills them professionally and personally. My dream is to build that kind of practice and team where we all go to work loving what we’re doing.”

ALL-INCLUSIVE PROGRAMS AND SERVICES

Ranging from dogs, cats, rabbits, gerbils, and guinea pigs to small farm animals, Compassion Veterinary Hospital serves “anything that can fit through the front door and isn’t a reptile or creepy crawly.” The facility provides wellness and preventative veterinary care, urgent/emergency medicine, surgery, dentistry, client education, nutritional therapy, and behavioral counseling. Same-day appointments are also available. Dr. Havemann plans to incorporate large animal services in the near future, which will take place in the form of house calls. She says, “Our mission is to provide compassionate and exceptional veterinary services with the highest standards of care through unparalleled client services based on exemplary team members in a positive work environment.”

Compassion Veterinary Hospital also provides cold laser therapy and two unique wellness programs. The Wellness for Life and Free Vaccines for Life programs take the burden of vaccine costs off pet owners, who are only required to pay for an annual exam and initial enrollment fee in order to receive free core vaccines and discounted parasite prevention as well as other discounted services. The Wellness for Life program is an additional package that provides heavily discounted bloodwork and diagnostic imaging throughout the pet’s lifetime. “I’m really excited about these programs. It’s going to revolutionize veterinary medicine. People typically put the focus on vaccines and not exams,” Dr. Havemann says. “Vaccines are important but exams and diagnostics are what catch diseases early on. Preventative wellness care in general is our primary focus. By being proactive with annual screenings we don’t have to be reactive in a crisis event.”

Keep Your Home Safe While On Vacation

DON'T BROADCAST

Keep your house looking as if you're home.

• Keep a car in your driveway or parking spot. If you're driving, ask neighbors to park in front of your house.

• Don't shut all your blinds and drapes. Leave them in their usual position, but make sure nothing valuable can be seen through the windows.

• Set light timers to come on at the normal afterwork time. For a new twist, there's FakeTV, a small electronic device that simulates real television lighting (faketv.com).

• Don't let mail and newspapers pile up outside your door. Rely on friends, or arrange to have your mail held by filling out an online form at holdmail.usps. com/holdmail.

• Don't change your voice mail message when you are gone. Tell only those who need to know, and those friends and family you trust, that you're going away. Instruct your kids to do the same.

BEFORE YOU HEAD TO THE AIRPORT

• Thieves prowl airport parking lots (especially longterm lots) for cars and valuables to steal. Anything with your name and address on it could be pay dirt for a thief. Don't leave your GPS device, either, unless you want to leave a set of directions for the criminal to get back to your house.

• Taking a car service or taxi to the airport means the driver will already know your address and that you will be away. Don't provide any more information than absolutely necessary.

SOCIAL MEDIA

• Insurance companies warn social media sites have become a popular hunting ground for would-be burglars. If you can't refrain from sharing while vacationing, be careful who sees your posts by checking privacy settings.

• Think twice before you check in on a social network. Foursquare and review sites can put your whereabouts into a cyberspace anyone can view.

LOCKDOWN DETAILS

• Good deadbolt locks are the hardest for burglars to breach. Go through each room before departure and be sure everything is locked.

• Two home entrances commonly overlooked when going away are the door leading from the attached garage into your house and any pet door you've installed.

• Unplug the power to your automatic garage door to keep thieves from opening it with a universal remote.

• If you have an alarm system, remember to engage it when you leave, and inform the alarm company in advance of the dates you will be away. If no one is expected to be in your house during that period and your alarm goes off, in most cases the company will respond by automatically sending the police.

• Alarm.com (free) hooks up with your existing home security system to alert you in real time if there's any movement or security breach in the system.

• ISentry (free) turns the webcam on your home computer into a surveillance system - although it will only monitor the area in which the cam is pointed. When motion is detected, the app notifies you on your phone. Similar: AtHome Camera (free) and iCam ($4.99) stream video from home cameras to multiple devices.

WWII Hero Honored with Congressional Medal

Unit, the group was later given the moniker Merrill’s Marauders after its commanding officer, Frank D. Merrill. Through months of combat, the Marauders endured illness, exhaustion, heat, monsoons, and a 1,000-mile trek through dense, nearly impenetrable jungles. When they ultimately captured the airfield in 1944, their numbers had plummeted from 3,000 to 200, and fewer than 120 returned home alive.

One of these heroes, Donald L. Hale, was honored with the Congressional Gold Medal — the highest civilian honor given by Congress — during a ceremony last month at Congressman John Carter’s office.

When he was discharged from the Army, Donald took a few months to recover then served as a flight line mechanic in the Air Force until his retirement in 1967. He died in 1997. He and all his brothers received the Purple Heart for their service.

FREEDOM FIGHTERS

While all of Merrill’s Marauders were honored with Congressional Medals during a virtual ceremony in May 2022, Rusty wanted to wait until she could accept the medal for her dad in person, saying, “It’s bigger than a video."

On June 1, she and her family finally had that opportunity. “It is a major honor to accept it on my dad’s behalf. We are extremely proud. I can’t explain the emotions when we final-

office.”

She adds that her dad, along with most men of his generation, were humble and didn’t ask for awards or recognition.

“They did what every man did — fight for our freedoms.”

Congressman Carter called her dad’s presence a blessing for all who knew him, and “his commitment to his nation helped keep us free.”

Col. Wilson also praised the dedi cation of Merrill’s Marauders. “Right now, at this point in time, our na tion needs more of that. I know there’s enough of our young people serving today to be our Marauders of tomorrow.”

Cooking with Your Constable

It’s been more than three years since COVID-19 reshaped our everyday lives through health fears and pandemic restrictions. In the midst of these challenges, many stepped up to spread hope, whether by donating to local nonprofits, running errands for people who couldn’t leave their homes, or for Williamson County Constable Paul Leal, starting a cooking livestream on Facebook.

Constable Leal remembers the palpable feeling of fear and frustration during the early days of the lockdown when he served as a law enforcement presence at the Taylor H-E-B. He was stationed there to maintain order when the lines wrapped around the building and emotions ran high. “I started seeing people getting discouraged about not finding what they needed to feed their families,” he recalls.

Savory Food

After people reached out to Constable Leal to express how enjoyable and helpful his live streams were, he decided to start streaming every Sunday at 6 pm. As the show evolved, the episodes were guided by the rule that the recipes had to be for 10 people for less than $15 with ingredients that could be bought at the store that day. When his wife was home, she joined him as a co-host, and their first stream together garnered over 3,000 viewers. At its peak, the show had around 7,000 people watching. “It took on its own life,” Constable Leal says.

...and a Sizzling Campaign

At the time, Leal was running for the position of constable, though campaigning was difficult because no one wanted face-to-face contact due to the pandemic. As a bit of a campaign strategy, he named his show Cooking with Your Next Constable and added a little bit of politics into the discussion. Still, he admits the show was mostly just cooking and having fun.

One night, while cooking dinner, Constable Leal had the idea to go live on Facebook to reassure his friends that everything would be okay. He propped his iPhone on a Lazy Susan, went live, and made a margarita. Within the next few days, people were begging him to go live again, and so, a few weeks later, he did. He says his main goal during his live streams was to tell people, “We’re going to get through this. We’ll be okay. And if you feel like you can’t find food, call me. I’ll help you.”

He started to invite other co-hosts onto his show, including Williamson County Judge Bill Gravell. Constable Leal also began to add a mini motivational sermon at the end of his streams where he told his viewers to “love those who love you and forgive the people who’ve done you wrong. We’re going to get through this, and we’ll be stronger.”

People began to send Constable Leal messages expressing how moved they were by his positivity, and they asked him to pray for their families. “My wife and I did 12 years of occupational ministry, so the preacher in me would come out.”

The show became so popular that people would pull up next to Constable Leal’s car at traffic lights and ask him what he was cooking that weekend. Those interactions showed him that he was reaching people and doing something good. “The mission at the time was to bring people hope,” he says. “And it made us get creative and think about what we could make.” Constable Leal says he spent a lot of time at the store walking up and down the aisles thinking about what he could make for his next stream. “I had to think outside the box,” he says.

When things began to return to normal and people started to go back to work, the views on Constable Leal’s show began to dwindle, and he decided to take a break. “It was a lot of fun, but it became a lot of work,” he says. He had also just won the election, so he wanted to focus on his new position, but to this day, he credits his election success to the show. “I’m from this area, and I’ve been a cop for 20 years, but that [show] opened a door that introduced me to thousands of people I would have never, ever met,” he says. “That’s the truth of it.”

You may have visited a chiropractor to treat back or neck pain, but have you considered treatment for migraines, digestion issues, or lack of sleep? These and all other healthy body functions rely on good neurological communication between the brain and the rest of the body. For some, that communication can become distorted due to misalignment of the spine due to accidents, injuries, or everyday activities like typing, vacuuming, lifting, and chair posture.

Fortunately, Dr. Taryn Buensalido, DC, has observed notable improvement in clients with a wide range of health issues following chiropractic treatment – a healing method that applies pressure to the spine, joints, and soft tissue to optimize communication from the brain to different parts of the body.

Oftentimes, clients will experience healing beyond the initial problem. Some will come in with back pain and later tell her they found relief from diarrhea or constipation as well – a result of a lower back adjustment that also improves lower intestine function. One couple, who she later

learned had been trying to get pregnant for years, came in for back pain and after receiving care for three months, shared that they were finally expecting.

HOW OFTEN SHOULD I GO?

Treatment frequency depends on the health issue, ranging from twice a week for up to six weeks for injuries and once a week for up to six weeks for chronic pain. “I’m totally welcoming to people who can only come once a month, but they shouldn’t expect to be out of pain super quickly,” Dr. Taryn says.

After the initial treatment, she recommends coming in at least once a month to maintain spinal alignment and stability.

HEALING JOURNEY

A love for helping people relax as well as heal inspired Dr. Taryn to become a massage therapist and later, a chiropractor. After working at several clinics as a chiropractor, she and her friend decided to strike out on their own and rent a space where they could run their chiropractic and wellness centers together. Almost two years ago, Dr. Taryn, then a California resident, moved to Jarrell to be closer to family and searched for a new home for her chiropractic center, Intuitive Chiropractic & Wellness Center. “I really was torn between working for someone in Georgetown, Salado, or one of the other larger areas, but something kept on drawing me back to Jarrell. When you think of Texas barbecue, you might be surprised to learn that not all Texans smoke their meat the same way. Here are the five main styles of barbecue that showcase the diverse flavors and techniques found around the state. Whether you prefer the simplicity of Central Texas or the tangy sauces of East Texas, exploring the different barbecue styles is a delightful culinary journey through the Lone Star State.

As Daniel Vaughn writes in The Prophets of Smoked Meat: A Journey Through Texas Barbecue, “each individual style has a loose geographical origin, but none have strict boundaries.”

SOUTH-CENTRAL

This style blends elements from both Central and South Texas barbecue traditions. It typically includes a variety of meats such as brisket, sausage, pork ribs, and chicken. The meats are cooked low and slow over indirect heat, often with a mix of woods like oak and mesquite. South-Central Texas barbecue incorporates the use of sauces, both tangy and slightly sweet, to enhance the flavors.

South-Central Texas barbecue is typically served with a no-frills approach. Meats are presented on butcher paper or trays, often with white bread, pickles, onions, and jalapeños on the side. This traditional serving style adds to the authenticity and charm of the experience.

WEST TEXAS

West Texas barbecue, also referred to as “cowboy-style” barbecue, has a more rustic and simple approach. It involves direct grilling or smoking of meats, usually over mesquite wood. West Texas barbecue primarily features beef, particularly large cuts like whole beef shoulder or “cowboy” ribeye. The seasoning is minimal, allowing the natural flavors of the beef to shine.

West Texas barbecue often utilizes direct grilling or smoking methods. Pitmasters typically cook the meat directly over the fire or hot coals, resulting in a unique charred and smoky flavor.

CENTRAL TEXAS

Also known as Hill Country barbecue, this style is characterized by cooking meats over indirect heat from pecan, oak, or mesquite wood for up to 24 hours. Central Texas barbecue focuses on simple seasoning, allowing the meat’s natural flavors to shine. Brisket is the star of the show, but you’ll also find pork ribs, sausage, and other cuts. It is often served with white bread, pickles, onions, and tangy barbecue sauce on the side.

Lockhart, just east of San Marcos, is often referred to as the "Barbecue Capital of Texas." It is home to several iconic barbecue establishments, including Kreuz Market, Smitty's Market, and Black's Barbecue, each with its own rich history and unique barbecue style.

EAST TEXAS

East Texas barbecue features tender and juicy meats that are typically cooked with a tomato-based, sweet and tangy sauce. The style is heavily influenced by the unique flavor profiles of the African-American community. Pitmasters in this region often use hickory wood for smoking, resulting in a pronounced smoky flavor. Pork ribs, beef ribs, pulled pork, and sausage are popular menu items. East Texas barbecue is known for its emphasis on “fall-offthe-bone" tenderness.

Alongside delicious barbecue meats, East Texas barbecue often offers an array of classic Southern side dishes. These may include items like coleslaw, potato salad, baked beans, and cornbread, providing a well-rounded and satisfying meal.

SOUTH TEXAS

South Texas barbecue, also known as “barbacoa,” is heavily influenced by Mexican and Tex-Mex flavors. The focus is on slow-cooked, tender, and flavorful meats, often using traditional barbacoa techniques like underground pits or large enclosed pits. Beef, particularly beef head (cheek and tongue), is commonly used, along with goat and lamb. The meat is typically seasoned with a blend of spices, herbs, and marinades. “Forget about cheap white bread or a sleeve of saltines – fresh tortillas are the best vehicle for sopping up all that barbecue deliciousness,” Daniel writes.

South Texas barbecue is commonly served "family-style," with large cuts of meat placed on platters or trays for everyone to share. This communal dining experience is a cherished aspect of South Texas barbecue gatherings.

BEER POTATOES

• Potatoes – use potatoes suitable for roasting (like Yukon Gold).

• Olive oil – use extra virgin olive oil.

• Beer – use a light beer like Pilsner.

• Breadcrumbs – use Panko for extra crunch.

Cut potatoes into wedges.

If using thin-skinned potatoes, there’s no need to peel them first, just make sure to wash them first.

Add potato wedges to a pot of salted water and place over medium heat.

Bring water to a boil and cook for 10-15 minutes or until cooked halfway. They should still be slightly hard in the middle.

Drain potatoes, then transfer onto a baking sheet. Carefully pat dry with paper towels.

Transfer potato wedges to a bowl and add olive oil and seasoning.

Stir to coat every potato wedge in oil.

Spread potatoes in a baking dish and pour over the beer. Bake for 30 minutes at 200°C/400°F, stirring halfway through.

Sprinkle potatoes with additional breadcrumbs before baking for an additional 10-15 minutes or until golden and crispy.

Add chopped and sautéed bacon to the potatoes and beer before baking or add grated cheddar cheese with the breadcrumbs before the last 15 minutes.

For extra flavor, use crushed potato chips instead of breadcrumbs.

Feel free to use your favorite seasoning and herbs.

If you prefer a more intense flavor, add crushed garlic before baking.

You can also substitute white wine for beer or for a non-alcoholic alternative, use non-alcoholic beer or chicken broth.

GRILLED PEACH SALSA

INGREDIENTS

• 4 peaches halved and pitted

• 4 heirloom tomatoes diced

• 1 bunch cilantro • 2 limes juiced

• 2 cloves garlic minced • 2 tbsp olive oil

• Kosher salt to taste

• ground black pepper to taste

Preheat your grill to high. Allow to heat up for 10-15 minutes. Brush the flesh sides of your peaches with olive oil. Sprinkle salt across flesh surface. Put the peaches, flesh-side down, on the grill. Cook for 10-20 minutes, or until grill sear makes start to appear on the fruit’s flesh. Remove the peaches from the grill and transfer to a cutting board. Allow them to cool for a few minutes and then dice them into small chunks. Transfer the chunks to a large bowl. Add the diced tomatoes, minced cilantro, lime juice, minced garlic, and olive oil. Combine well. Add salt to season. Add more lime juice if too salty. Enjoy either as a dip or as a meat topping.

GRILLED FRUIT kabobs with sweet & spicy glaze

INGREDIENTS

• about 2 cups diced watermelon

• about 2 cups diced pineapple

• about 1-pint strawberries, hulled

• 1 tbsp. honey

• 1 lime juiced

• 1/4–1/2 tsp. Cayenne (depending on how much you like spice)

• 1 pinch sea salt

Preheat your grill to medium-high heat, around 450F. Thread the fruit onto skewers. Remember to soak wood skewers in water for 30 minutes prior to grilling so that they don’t burn.

Lay the fruit skewers on the grill when it’s hot and grill for about 2-3 minutes per side, or until you get nice grill marks. Once all sides are grilled, remove the skewers from the grill.

Visually appealing and also a healthy and refreshing option for any occasion.

Thousands saddled up for the 79th annual Williamson County Sheriff’s Posse Rodeo at Solana Ranch Park on June 23-24. From bull riding, mutton bustin’, and steer saddling to a special appearance by rodeo clown Leon Coffee, this year’s schedule featured a variety of events that delighted rodeo goers of all ages.

There are many components the Williamson County Sheriff’s Posse (WCSP) relies on for a successful rodeo such as sponsors, vendors, stock contractors, fundraising, permits, inspections, as well as an army of volunteers. “WCSP is 100 percent volunteer, and we are committed to keeping this way of life alive and look forward to doing more in our new community, growing relationships with the city and other entities that are important to Jarrell,” WCSP Captain Chris Mattice says.

WCSP Corporal Kristen Ivicic adds that she is excited about future arena upgrades and next year’s festivities. “We can’t wait to see a bigger crowd for food and fun on June 28 and 29, 2024.”
