What’ s better than a ‘throw it in the oven ’ style tray of roast vege & sausages? Try this Pork & Fennel tray bake from our market Manager Steph Strahan ’ s kitchen, full of fresh market vege of your choice direct from the grower to your table!

Pork & Fennel Sausage & Winter Vege Tray bake

Ingredients

·Pre-heat oven to 180 fan bake and prepare large baking tray. ·Chop root vegetables of your choice (cupful per person) ·Roast in tray with wedges of red onion and Fennell bulb and olive oil for 20 minutes. ·Chop brassica veges of choice (see what’ s on offer at the market!) and toss through a mixture of crushed garlic, mustard, relish and olive oil. ·Layer sausages on top and bake for a further 30 minutes. ·If you want an extra treat- ten minutes before the end of baking add slices of garlic Haloumi until melted, golden and delicious!! ENJOY

1 or 2 packets of Foxy Bangers Pork & fennel sausages (depends on how hungry you are!) Mixed root vegetables – Pumpkin, Kumara, potatoes, Parsnip Mixed brassica veges – cauliflower, brussel sprouts, savoy cabbage, broccoli 2 Red onions 1 Fennel Bulb 3-4 Garlic cloves 2 Tbsp Dijon mustard 2 Tbsp Debbies Garden Pear Relish (or another substitute with a sweet relish of your liking) Cartwheel Creamery ’ s garlic Haloumi cheese Olive oil – JUNO’ s garlic Olive Oil to drizzle over once finished!
