Michael Deane Wild Mushrooms on Toast with Bacon & Slow Poached Egg INGREDIENTS 2 slices Kingsmill 50|50 (crusts removed and cut into rounds) Sunflower or vegetable oil 4oz mixed wild mushrooms 2 slow cooked free range duck eggs 2 slices pancetta bacon 1oz low fat butter Chopped chervil & tarragon to garnish METHOD 1. Slow cook the duck eggs at 62ยบC for 40 minutes. 2. Season mushrooms with salt & pepper and pan fry in low fat butter for 1 minute. Remove. 3. Pan fry bread in mushroom pan on both sides. Remove. 4. Grill bacon until crispy. 5. Mix mushrooms with chopped herbs and place on top of fried bread. 6. Top with grilled bacon & duck egg.

Taste of Ulster Charter Each establishment that has met the standards and passed the inspection by Taste of Ulster adheres to the following Charter. Article 1 The member’s duty is to source, use and promote local food where possible. Article 2 The member must not intentionally mislead the customer’s good faith by serving food not sourced from the local origin stated. Article 3 A member must work to deliver a positive experience for domestic and foreign visitors. Article 4 A member must display the correct Taste of Ulster certificate and plaque in their establishment. Article 5 A member must engage in Taste of Ulster activities and events where possible. Article 6 A member should inform and educate their staff of the provenance of local food in their establishment. Nick Price Chairman, Taste of Ulster Taste of Ulster was set up to identify and unify high quality provision in the industry, and through this re-launch we have the opportunity not only to put ourselves on the global market but also to boost the local economy and support the agricultural community. The existence of a brand such as Taste Of Ulster is imperative to ensure consumers can be confident of what they are being served when they sit down to a meal anywhere in Northern Ireland. Members sign up to the Taste of Ulster Charter that asks them to source where possible local foods, sometimes this is an effort, but that is part of the challenge. Every ÂŁ5 spent on the local economy has a multiplying effect of three, which means rather than spending it on imports you get a ÂŁ15 benefit to the local economy. Members also have a sense of identity and belonging. It shows locals and visitors what they care about and they are serious about sourcing locally. This year will not be an easy one for anyone in business. Some people are very positive and say that a downturn is an opportunity to reassess our businesses and focus even harder on controlling costs and giving our customers value for money. One way of doing this is to talk to our suppliers and find out what is in season, good value, tasty and local, in order to give our local economy a helping hand at the same time. The members of Taste of Ulster would like to extend a warm welcome to our visitors. Our guide has been one of the most successful we have ever distributed and this year we have had to increase our print run even more due to its popularity. We hope you have a great experience on your journey through this part of Ireland and enjoy the people and our produce. If we can sell it to people that come and visit us then there is the potential to export. The food tourism industry is starting to become an important issue and we have to get policies in place now. We need to be at the top, we have the finest produce here and through the support of Taste of Ulster the top is not out of reach. I am delighted to be in a position to make a difference and to push Taste of Ulster forward.

Michael Bell Executive Director, Taste of Ulster 2009 sees Taste of Ulster in its 19th year and I am delighted that membership has continued to increase. With 122 successful establishments featured in this year’s guide, never before have we been able to offer so many quality establishments. Customers can be confident that no matter where they are in Northern Ireland they can visit a Taste of Ulster establishment and sit down to a meal of quality Ulster cuisine using only the best locally sourced products! As a subsidiary of Northern Ireland Food & Drink Association, the vision of Taste of Ulster is to develop and celebrate excellence in local cuisine and hospitality. Our aim is to promote good restaurants; hotels and other eating places as well as quality producers who we believe offer excellence in local food, service and authentic innovative Ulster cuisine. To become a Taste of Ulster member all applicants must sign a Charter committing them to source local foods as much as possible. Each establishment is then independently inspected by a ‘mystery shopper’. Only those applicants who pass their inspection and prove they are Taste of Ulster creditable will make it into the guide and become a Taste of Ulster member. Inspections are not easy and this year’s standard has been the toughest yet! Despite this application for membership has grown by 12 per cent from last year with actual membership rising by an encouraging 9 per cent. The failure rate each year shows that Taste of Ulster is committed to offering customers only the best. Customers can be sure each establishment featured in the guide has been willing to test themselves against the tough Taste of Ulster standard, a testament to their dedication to delivering the best. Taste of Ulster is guided by a varied steering group, chaired by one of its original members, Nick Price of Nicks Warehouse. The steering group is committed to the pursuit of excellence in food preparation, service and the potential of food in Northern Ireland. COUNTY ANTRIM makes up the northeast of Ulster and is known for its breath taking views and dynamic atmosphere. County Antrim is famous for its coast road which has been voted fifth in Jacobs Creek’s must-see destinations, beating the likes of the Grand Canyon. Peppered with woodlands and waterfalls it is easy to see why this shoreline has become a favourite driving route. Separated from Scotland’s coastline by only a 13-mile channel, the highest point of Antrim, Torr Head, is drenched in history. In the first century the hill was occupied by Dunwarry Fort and in World War Two it was used as a look-out post. Today it remains the only fixed net salmon fishery still in use along the coast. But for all the scenic wonders in Antrim, the county has become the ultimate shopping destination in Ireland. Boasting some of the most exclusive boutiques in Europe as well as some of the most popular high street shops it has something for everybody. Antrim’s nightlife is gaining a reputation with its large and historical auditoriums, drawing in some of the biggest acts and productions in the world. TOP THREE ATTRACTIONS

Bushmills Founded in 1608, The Old Bushmills Distillery is the oldest whiskey maker in the world, and the only distillery that uses 100 per cent malted barley in its whiskies in Ireland. Taking its name from nearby River Bush, it is well worth a visit. Carrick-a-Rede Rope Bridge Hovering over an 80 feet drop into the sea, the famous Carricka-Rede rope bridge was made of a single rope handrail with widely spaced slats. Used by fishermen travelling back and forth from the small island it was fitted with a safer caged bridge for tourists to cross. The Giant's Causeway Situated along the coast of Antrim, the Giant's Causeway is world-famous for its spectacular rock formations, which are uniquely hexagonal. There are many theories explaining the shape of the rocks, but the local favourite is down to a naughty giant called Finn McCool. DID YOU KNOW? La Girona, a ship of the 1588 Spanish Armada sank of Lacada Point in County Antrim.

Dobbins Inn Hotel

Carriages in Larne gives new meaning to homegrown. The restaurant sources everything locally and even their salad is grown in the restaurant garden. The team of chefs cure all the bacon on the premises, age their own steaks and make their own corned beef and sausages.

Built in the 15th Century by the Norman Knight Regional D’Aubin the building has taken on many faces. It was a Goal, an Armoury and an Inn. In 1946 it became the hotel it is today complete with resident ghost Maud.

The family-run business has been serving the area for over 20 years and some of the staff have been working in Carriages for as long as 18 years, creating a warm and welcoming atmosphere. Also with four self-catering flats visitors can spend the night. Starting off as a pizzeria, Carriages developed the menu to include traditional Irish cuisine and now serves freshly cooked steaks, cured gammon and king ribs. The train-themed restaurant comes complete with original train seats and windows. They also have railway carriage booths and a function room. The walls are adorned with trainthemed posters and art.

The restaurant in Dobbins serves authentic Irish cuisine sourced from local producers. The seasonal menu is described as a fusion of traditional Irish with a twist. The Paul Jones Bar, with a mainly nautical theme, is a setting for dining as well, with daily specials and a host of money saving offers. The newly refurbished Las Rosas Restaurant has a Mediterranean slant where you can relax with a selection of Tapas or bring a group for the popular Table Grande and pass the night with an unforgettable experience of favours.

Once an old coaching inn, McGeown’s has quite a history. Situated in the idyllic village of Glenavy, the pub has been offering shelter to locals and visitors for centuries. According to local lore King William of Orange’s second-in-command Duke Frederick of Schomberg stayed at McGeown’s when it was a coaching inn before heading to the Battle of the Boyne.

The hotel was built in 1848 as a Coaching Inn by Lady Londonderry - hence the name - and celebrated its 160th anniversary last year. The hotel has established a reputation for good home-cooked food, simply and freshly prepared. The hotel, with its Georgian charm and friendly welcome, is a popular dining spot for locals in the area.

Mauds ice-cream was started over 25 years ago as part of a family grocery business in Carnmoney, County Antrim. The ice-cream was named after Maud, the head of the family at the time. The menu offers a vast array of dishes from a daily special two course meal to the traditional Ulster fry, using homemade potato and soda bread. As Oakley Fayre is in close proximity to the coast, the fish dishes are of a very high quality. Included on the menu are freshly battered cod and the delicious open prawn sandwich. There is also a take-out option for busy people on a short lunch break, and a fresh salad bar.

Ten years ago the former pub underwent a mammoth transformation. The gastro pub serves bar snacks and light meals all day. The food is presented and cooked to perfection, with a highly impressive vegetarian menu and fish featuring as a specialty.

The cafe is also a bakery and the fresh cream pastries and traybakes prove very popular with customers.

Staff take special pride in using organic produce and the pork, ham and bacon all comes from nearby Forthill Farm, which is run by Kenny Gracey in Tandragee. THE largest of the six counties of Northern Ireland, County Tyrone historically stretched as far north as the River Foyle. Like the other counties in Ulster, Tyrone has a long and distinguished history. Tullyhogue Fort, near Cookstown was once home to the ancient crowning site of the Chieftain of Ulster. Set in a former 100-year-old Church Hall, the Cathedral-style wooden ceiling and the gothic-type stained glass windows give a wonderful and historical ambience to the interior of the listed building. For those coming to the award-winning restaurant for the first time the dazzling 19th century glass windows will take your breath away.

The decor gives maximum impact with a theme of warm maroon drapes and midnight blue banners embossed with gold heraldic design inspired by 11th century Bayuex tapestry. Head Chef, Suzanne Scott believes eating should be for sheer pleasure and indulging a reputation for dramatic presentation she buys as much local, fresh produce as possible.

Since opening its doors three years ago, Head Chef Seamus O’Donnell has been brought his 15 years of expertise to the Grillhouse and his speciality is pork ribs cooked in his own special sauce. The menu at the Yankee Star is extensive, serving all day breakfasts, panini, wraps, toasties, burgers and salads throughout the day and T-bone steaks, homemade racks of ribs, chicken, salmon and pork in the evenings. All the produce is sourced locally and is of the finest quality.
