The best part is I can prepare these on a Sunday and I am set for the week. Anyone can do this with any flavour combination of tastes, textures and heat intensity. I often use leftover chilli and make Taco Salads in a Jar…the ideas are endless! Taco Salads
In one bowl mix cooked rice, one can of drained and rinsed corn and 1 cup of Sunset Gourmet’s Chipotle Black Bean & Corn Salsa. In a separate bowl mix one can of lentils and one can of chickpeas (both drained and rinsed), season with Sunset Gourmet’s Oh! So Onion. In your jars layer rice mixture first, then lentil and chickpeas. Add cherry tomatoes, chopped red and yellow peppers. Top with chopped raw cauliflower. Finish with a heaping dollop of Greek yogurt blended with Sunset Gourmet’s Cucumber Dill Dip Mix. Delicious and nutritious.
