Nectarine Plum Cobbler MAKES 4 SERVINGS This raw version of a cobbler has a sweet, saucy fruit layer topped with crunchy nuts. While other fruits can easily be substituted for the nectarines, make sure you make the sauce from plums to create the right texture. Try this dessert with a scoop of Maple Walnut Ice Cream (see following recipe) for a special treat. 6 RIPE NECTARINES, PITTED AND SLICED INTO THIN WEDGES 6 RIPE RED OR BLACK PLUMS, PEELED, PITTED, AND CHOPPED JUICE OF

SEEDS FROM 1 VANILLA BEAN, SCRAPED 1 CUP ALMONDS, SOAKED IN WATER, FOR 8–12 HOURS, RINSED, AND DRAINED 1 CUP CASHEWS, SOAKED IN WATER, FOR 2–4 HOURS, RINSED, AND DRAINED 6–8 LARGE DATES, PITTED AND CHOPPED TEASPOON GROUND NUTMEG TEASPOON GROUND CINNAMON DASH OF SEA SALT

1. Arrange the sliced nectarines in the bottom of a baking dish; set aside. 2. Place the plums, lemon juice, and vanilla seeds in a blender, and process until smooth. Pour over the nectarines. 3. Place the rest of the ingredients in a food processor, and pulse until the mixture resembles crumbs. 4. Spoon the crumble over the fruit and chill until served.
