hristmas is almost upon us and while I’m a sucker for all things festive I’ll be the first to admit that in my home the lead-up to December 25th can sometimes be quite frantic. This month, as we deck the halls and turn our thoughts to family, food and festivities, E attempts to take the stress out of the holiday season. For head-turning party dresses see pages 16 & 17; for beauty gift set ideas see page 19; for decorating your home tips see page 26, and turn to pages 40 & 41 for festive baking recipes. Also this month E chats to award-winning illusionist Keith Barry (page 12), local classical pianist Edward Holly (page 46) and La Spa Therapie manager Katie Everitt (page 38). For the lowdown on Essential’s 1st birthday bash turn to pages 24 & 25 where the glamorous photos from the party tell their own story! Finally, I would like to thank you all for your support and loyalty in 2010. The aim of Essential was to bring some colour and fun into people’s lives during these dark times – and I hope we’ve achieved that! Here’s wishing you a Merry Christmas & Prosperous New Year! Enjoy your read!

Interview

! c i g a m t s Ju Enter the Asylum with illusionist Keith Barry who returns to town with his hugely successful show

Keith, you’re back on the road with your show The Asylum – tell us about it? It’s based on research I did on Asylums in the 1800’s and what happened to people who were committed. I got a huge amount of inspiration from my research on lobotomies, savants, and electroshock therapy! The show is dark, twisted, but also designed to be hilariously funny.

When did your fascination with magic begin? Since I got a Paul Daniel’s magic set when I was about four or five for Christmas. I then bought a book called ‘The Klutz Book of Magic’ when I was 14 – that book changed my life. It’s by far the best beginners’ magic book with some great effects within its pages. How did you get your first big break? I guess my first big break would be my first TV series with RTE, Close Encounters with Keith Barry. I spent a lot of money making a promo video and then pitched the series to RTE… You have your own TV show in the States, you present Deal or No Deal for TV3, and now you’re touring with your live show. What’s next? I’m planning on going to Vegas again next year and performing a very long stint there! Do you prefer doing the live shows or the television work? I love the energy and excitement from the live shows – nothing beats the adrenaline rush from hearing 2,000 people laughing and going crazy.

books are probably my favourite two. I took a lot of inspiration from Inception, which was based in an asylum. Which is your favourite trick to perform? I don’t really perform tricks any more; more demonstrations based on observing human behaviour. I have an effect in the current show which is based on me attempting to figure out if audience members are lying or not. I love performing it as I’m really doing what I’m saying I’m doing! Have you ever been hypnotized? Yep! Paul Goldin hypnotised me when I was 15 in Waterford. I was running around after leprechauns and doing a striptease! Last year you won a Merlin Award for ‘Mentalist of the Year’ and you were voted ‘Best Magician in Las Vegas’ – what did that mean to you? It’s fantastic to be recognised by your peers, and to be considered in the same categories as Penn and Teller and David Copperfield is a huge honour.

Why do you think you’re such a hit in the States? I guess it’s a mixture of hard work, dedication and hopefully talent! Who’s your favourite magician of all time? You’ve performed a I’d have to say Doc Shiels – he’s an amazing lot of tricks on many performer and great friend who has written celebrities including around 30 books on magic and related Justin Timberlake subjects. and Beyonce, which is What do you do to relax? Fishing is my thing most memorable and why? Probably driving – I love to fly fish and also sea fish when the weather is good. Nothing beats catching your Nicole Scherzinger own dinner! at 100mph whilst blindfolded. That was great fun! Has a trick/illusion ever gone wrong? Always – I had to go to hospital a few years back to get a blackeyed bean removed from my ear canal. It’s a long story! Who or what inspires you? I get inspiration from many different places – movies and

It’s party time!

Make an impression over Christmas and New Year with Karl Smith’s pick of the hottest dresses this season

P

utting together a fabulous outfit for the Christmas party season can be just as enjoyable as wearing it to the party itself. All you need to do is decide what works best for you? There are so many options this season that you are spoiled for choice. What’s the word that comes to mind at Christmas party season? It’s glamour, of course. Nothing says glamour like sequins. Sequins are adorning

all sorts of items – dresses, tops, shoes and bags. Choose them in metallics or colours, short or long dresses, nothing will guarantee a hit this Christmas more than sequins. If sequins aren’t your thing, why not try print? Go for something elegant in chiffon with a delicate colourful print. For those who are feeling bold, leopard print is perfect. Team your party dress with a blazer or

faux fur to add glamour and sophistication. For a subtler approach, pair a glitzy top with your favourite smart trousers, be they wide-legged or skinny fit. When it comes to footwear, statement shoes are a must. As for jewellery, a good rule of thumb is, if wearing a bold dress; keep your jewellery on the simple side and vice-versa. Enjoy!

Katie Everitt of La Spa Therapie answers your questions I am 45 and have developed hormonal acne. How can I improve this condition? Angela, Drogheda Adult acne is quite common due to the change of hormones in the body. There are many treatments and products designed to help this condition, such as acne peels, glycolic treatments or specially designed facials to treat acne. Why not pop into your local spa to have a consultation with a therapist on the best treatment to have and what homecare will suit you best.

on sparkle and one of the most enviable creations this festive season is a great new product called Intense Lip Colour. Similar in packaging to Light ’n’ Shine lip-gloss, it’s halfway between a lipstick and a lip-gloss – fab! Also, new to the skincare range is Natural Touch Foundation, which is so flawless you would never even think you had foundation on. For all GOSH products and promotions for the festive season call into Cunningham Pharmacy, formerly McMahon’s, at 28 Shop St. I called into Health Express Pharmacy in Scotch Hall and I really feel they needed a mention for their fantastic choice of gift sets for both sexes. They offer collections from Garnier, Lancome, Smashbox and Clarins, and I have been told that although you can choose from one of their pre-made gift sets (which retail from €25 and go right up to €189) you can customise your set to suit your requirements. You can even include a snugly teddy bear, however this is while stocks last. Remember, you can’t put a price on love! I have discovered the most remarkable, wonderful gift for a friend who really cares about the environment. Green Angel is handmade in Ireland and is a fusion of natural essential oils and Irish seaweed. This skincare and haircare product can be found in Tullyallen Pharmacy and prices range from €15 to €25.

I am finding my skin quite rough and dehydrated, I have tried many body lotions to improve the skin and nothing has worked. What would you suggest? Susan, Termonfeckin I would highly recommend a full body exfoliation. This will remove the build up of dead skin cells on the surface of the skin, making it easier for the creams to penetrate the layers of the skin and hydrate new skin cells. Exfoliation is always the first step to hydration.

Sleep is one of the three most important keys to a healthy lifestyle but unlike diet and exercise, we often overlook our poor sleeping habits not realising its impact on our overall health. Here, A.Vogel herbal advisor Nicola Murphy gives her top tips to help get a great night’s sleep as soon afternoon can help you sleep as your head hits the pillow… sounder and longer, Caffeine stimulates the nervous system so if you are having trouble dropping off at night, you should stay clear of caffeine throughout the day. People who are under stress or generally nervy should avoid coffee, tea and fizzy drinks. Avoid eating heavy, rich foods within two hours of going to bed. Eating late at night forces your body to digest when it should be sleeping. If you do crave supper, try a small bowl of oatmeal porridge with a little bit of honey. Make sure to get some physical exercise every day, even just 10 minutes of brisk walking will do the trick! Exercising in the morning or

making you feel more awake during the day. Getting into a relaxing bedtime routine will help you wind down and fall asleep easier. Don’t watch a nerve-wrecking movie or try to finish an essay just before bed! Winding down with a good book or a relaxing bath will make it easier to doze off. Also, try to go get into a routine of going to bed at the same time every night. This will help train your body to sleep better throughout the night. If you are having trouble getting a good night’s sleep, why not try herbal sleeping remedy A.Vogel Dormeasan (€10.50, available from Only Natural, Stockwell St, Drogheda).

MOVE OF THE MONTH

with Laura Armada of Labfitness www.labfitness.com

Donkey Kicks Everyone wants to have a perfect perky bum that

fits perfectly into those designer jeans. If you want to tone up your rear, you’ll need a combination of strength training, cardio and a healthy diet, but there are some great exercises that will help along the way. This month’s move is called ‘Donkey Kicks’ and uses mainly the gluteal muscles. • Get on all fours. Breath in and engage your core muscles. • As you breathe out and keeping your knee at a 90 degree angle, raise your right leg, keeping your weight on your left knee. • Keep your back straight and do not lean backward or forward. • Your heel is pointing towards the ceiling. • As you breathe in, lower your right leg back to the starting position. • Repeat this exercise with your left leg. • Do three sets of eight reps on each side. • For more resistance, strap ankle weights.

A

: Acne is a highly complex skin disease that may be virtually invisible in some people and cause extreme disfigurement in others. It flourishes particularly in adolescence and few teenagers escape it. In females, especially, acne often persists well beyond teenage years. However, many women who were almost acne-free as teenagers are plagued by this disorder in their 20s, 30s and beyond. Acne begins when a change occurs in the dead cells that line the sebaceous hair follicles. These cells become thicker and sturdier and more resistant to the process by which follicles normally flush them to the surface. Plus, they begin to stick together, forming a ‘kernel’ of dead cells. This blockage traps oil in the follicle. The bacteria involved thrives in conditions where oxygen is not present. It feeds on the trapped oil and excretes various by-products – in particular, certain highly inflammatory, toxic and corrosive fatty acids. As the acne process develops, so too do lesions that are either no-inflammatory or inflammatory. To control your breakouts and improve the condition of acne scarred skin, a home care programme is usually recommended to begin treatment. Derma Laser Clinics use the Jan Marini skincare range of cosmeceuticals, skincare products with active ingredients that make them highly effective but which also must be used under supervision of a skincare professional. There are over 70 products in the Jan Marini range, so a programme will be advised by a nurse at our clinic specific to your needs. Derma Laser also provide a therapeutic light treatment called ClearLight which effectively clears over 60% of acne lesions in just one month with no side effects. ClearLight uses Acne PhotoClearing technology, an intense wavelength light, penetrating just deeply enough into the tissue and destroy acne causing bacteria safely and effectively. There are no side effects, no down time and treatment is pain free. ClearLight treatment is suitable for active acne treatment on all body areas, including large areas like backs and also sensitive beard areas, with not irritation or photosensitivity. A skin consultation at Derma Laser Clinic Drogheda to discuss the options which suit your individual skin needs is the best course of action. We can recommend a home skincare programme and treatment at the clinic to suit you. Derma Clinic is located at Bryanstown Medical Centre, Dublin Rd, Drogheda; tel 041-9803357. Free consultations are by appointment only. www.dermaclinic.ie

Lavish your home with stylish decorations for a magical interior this Christmas, says interior designer Niamh Carter

C

hristmas interior decorating comes only once a year so go ahead and decorate every room with style! And remember in most situations, less is more. Opt for elegance, rather than overkill and rethink the way you display classic Christmas tree decorations. If your home has warm colours, it would be best to choose golds and reds for decorations rather than icy white and silver. Keep with the feeling of your home for a harmonious interior.

Vintage & traditional decorations available from Dunnes Stores, Scotch Hall

Twinkle, Twinkle

To create a magical white scheme with a fairytale feel, use silver candlesticks, cutglass goblets and crystal animals. Make sure the table sparkles as much as the conversation by dotting it with twinkling silver confetti, or crystals. Go to crystal

heaven with pretty hanging decorations in all shapes and sizes. Stick to silver and glass for a sophisticated look.

Make a wave of candlelight along the full length of your dining table using pillar candles in increasing sizes to form a crescendo of light. Pamper your scenes and get cosy with sweet smelling tea lights scattered around a seasonal room. Go all fruity and lavish your home with seasonal plants, red and Sophisticated Look from Dunnes Stores (above); orange berries, lime green and blue decor green foliage available in Next (top) and golden yellow petals. Carry on the same theme and buy fake fruit like red grapes, apples, fir cones, twigs of berries and red baubles. For a more modern look this Christmas theme your decorations with some key trends. Lime greens and deep blues create a cool but funky feel while opulent purples

and silver create a relaxed feel. Choose decorations that will enhance your colour scheme and room setting. Set the festive scene with magical Christmas lights that’ll add a touch of sparkle to any room. Drape lights over your banister (pictured) to light up the stairway, or adorn the full set inside a large glass bowl for a spot of creativeness.

Hang In There!

For an alternative window decoration, hang a crystal drop curtain at the window or over the mantelpiece to bounce glittering light around the room. Turn Christmas cards into a stylish feature by suspending them on different lengths of silver twine, and weighing down each string with a sparkling decoration to reflect sunlight or candlelight. Buy large, oversized baubles and hang them outside for a bright welcoming touch. Hang smaller baubles around ceiling lights or display a selection in an interesting corner. Large amounts of baubles also look good in a reflective tray or glass bowls.

Let’s Wrap Up

Why not give your presents a unique touch this year? Wrap them in white doily paper laid over coloured paper, topped off with silver twine and a small Christmas decoration. Alternatively, wrap gifts in plain material and brown paper adorned with fabric flowers and pretty crystals beads. Call Niamh for a consultation on 087-6445050 or to find out what interior package special offers are available for 2011. Visit www.niamhcarterdesigns.ie or check out Niamh Carter Designs on

Cheryl McMahon weds Patrick Dickson Cheryl McMahon and Patrick Dickson had been going out for six years when they said ‘I do’ on September 4th last in Laytown Church. There were five bridesmaids on the day, Mary McMahon, Catherine Carolan, Louise Dickson, Laura Wade and Jessica Browne who was a junior bridesmaid. Bestman was Damien Pollard and the groomsmen were Kenneth McMahon, Paul Reilly and Keith Allen. Jessica Dickson played a blinder as their pretty flowergirl. After the wedding ceremony they headed off to their reception in the Bettystown Court Hotel. Oldtown Country were the band of choice to entertain everyone for the night. The happy couple jetted off to Bulgaria on their much-anticipated honeymoon. Photos by Jimmy Weldon

They said their wedding vows in the Church of Mary Immaculate, Collon followed by a reception in the Nuremore Hotel, Carrickmacross. Lisa’s two sisters Lorraine and Suzanne Finnegan were bridesmaids with Lorraine flying in from San Francisco for the special day. Rachel Grant weds David Fennell When Rachel Grant from Scarlett Crescent and David Fennell from Moneymore went on a blind date eight years ago little did they know they were about to meet their soulmate. They met outside Mother Hughes Pub in February 2003 – and as they say the rest is history! They said their wedding vows in front of many family and friends in Our Lady of Lourdes Church on August 21st. Rachel had no less than five bridesmaids who were Marianne Fay, Claire Grant, Angie Everitt, Donna Branigan and Mary McGuirk. Bestman for David was his brother James Fennell and the groomsmen were John Paul Grant, Wayne Kelly, Peter Branigan and Keith Smith. The happy couple celebrated their nuptials with a reception in the Boyne Valley Hotel and local band Clockwise ensured the dancefloor was never empty! A great day and night was had by all. Fiona Gilchrist weds Brian Halligan Fiona Gilchrist and Brian Halligan had been together six years to the day before tying the knot on July 31st last. The ceremony took place in Laytown Church. Her maid of honour on the day was her sister Laura Wilson and her bridesmaids were her three friends, Grace Garvey, Keava Tougher and Mairead Brogan. Brian’s bestman was his good friend JP Rooney and the groomsmen were Paddy Halligan, James Kennedy and Nicky McDonnell. Fiona’s niece and nephew Lauren and Calum Gilchrist did fantastic jobs as flowergirl and pageboy. Everyone headed off to Carton House, Maynooth for the reception where Irish trad band Celtic Music Agency entertained into the small hours. All of the guests had a very enjoyable day including Fiona’s grandmother who celebrated her 97th birthday in October. The newlyweds enjoyed a three-week honeymoon which included two weeks in Thailand and a week in the Maldives. Photos by Barry Regan – Icon Photography

News Bite If you work at Google then you’re my new best friend! It was announced recently that every Google employee is to receive a salary increase of 10 per cent plus a cash bonus. The total cost to Google is estimated at $1 billion (plus taxes) per year. So why do it at all? The general belief is that they want to retain top employees who might otherwise be tempted to launch something of their own. But the guy who leaked the memo, before CEO Eric Schmidt publicly announced it, will not be getting anything because he was fired a few days later.

Don’t pole dance in a tent… at a wedding! At the start this video looks like a straight forward case of someone’s aunt being a little drunk at a wedding. She does the standard stuff like dance badly and annoys the bride, but then she decides to do a spot of pole dancing. For all I know she could be a great pole dancer but she failed to carry out some basic safety checks. See what happens at http://bit.ly/wedding-pole-dance.

Forward Regardless of your photography skills here’s how to get professional results

By local photographer & lecturer Terry Collins

A

lmost every family has a designated photographer that is on hand to record the important occasions in our lives. The skills required to capture these moments are easily learned providing that people take the time to understand the basics of photography. A good starting point is your camera instruction book that will guide you through your camera features with examples and definitions designed for easy learning. Most camera manufacturers also give tips and instructions on their websites to help improve your photography techniques. The good news for those hoping to join the Digital Photography revolution is that Drogheda offers great choice for beginners through to budding enthusiasts. The Panasonic Lumix range is getting rave international reviews for quality images as well as its point and shoot technology, and if that’s what you’re after then the place to go is Briscoe’s Electrix at Newgrange Business Park, Drogheda who carry a good range. At entry level (point and shoot) I’m very impressed with both the Canon IXUX 105 and the Nikon Coolpix s300. The good news is that both are available locally at Maher’s Chemist on West Street and Harvey Norman’s, Drogheda Retail Park. Expect to pay between €130 and €160 and make sure you ask for a free case and memory card too! Tell them Essential Drogheda sent you! One of the more difficult skills to master at DSLR level is flash photography, and for those who hope to achieve professional results in this area you will have to add a Shoe Mount Flash like the Canon 430EX or the Nikon SB700. Both of these flash units marry perfectly to their respective camera bodies and will give you excellent results. The 430EX (€299) and the SB700 (€329) are both available from Maher’s Chemist. While in Maher’s photographic department recently I spotted a neat accessory for those of you that already own a flash gun. The Ezybox Hotshoe Kit by Lastolite is an amazing piece of kit that will allow you convert your battery operated flash gun from a harsh directional light to a softer diffused light. The Ezybox which costs €179 will help you produce professional studio-like results in your home. In fact, some professional photographers use this kit outside (See right) where they would backlight the subject and get a soft fill in light from the Ezybox. In addition to the Ezybox, I also tested the Hähnel Combi TF, €59.99, Maher’s Chemist. This excellent and innovative offering is aimed at all levels of DSLR enthusiasts and is ideal for those interested in wildlife photography.

r e t n i Safe w g n i v i r d by During Winter Weather:

As we’re only too well aware Irish winter is unpredictable. Bad weather can strike suddenly so the best advice when severe weather hits is to stay off the road. However if you must drive, make sure you are prepared for the conditions. Paddy Comyn of CompleteCar.ie shares his top tips to help keep you safe on the road this winter. And with the bad weather we experienced last year catching everyone off guard, it pays to be prepared in case the worst happens again…

New Christmas Stock now available in store.

Christmas wishes to all our customers and thanks for your support over the years

· Ask yourself – is your journey absolutely essential? · Check the local and national weather forecasts. · Listen to local and national radio for travel information. · Tell someone at your destination what time you expect to arrive. · Make sure you are equipped with warm clothes, food, boots and a torch. In snowy conditions, take a spade. · Clear your windows and mirrors before you set out and carry a screen scraper and de-icer.

The condition of your vehicle: · In winter it is even more important to check your vehicle is well maintained and serviced. · Keep the lights, windows and mirrors free from ice and snow. · Keep your battery fully charged. · Add anti-freeze to the radiator and winter additive to the windscreen washer bottles. · Make sure wipers and lights are in good working order. · Check that tyres have plenty of thread depth and are maintained at the correct pressure.

If you get into trouble while driving: · Do not use a mobile phone while driving. Stop somewhere safe or ask a passenger to make the call. · On a motorway, it is best to use a roadside emergency telephone, because the breakdown/ emergency services will be able to locate you easily. · If you have to use a mobile phone, make sure you know your location from the numbers on the marker posts on the side of the hard shoulder. · Abandoned vehicles can hold up rescue vehicles and snowploughs. To ensure that the road is cleared as quickly as possible, stay with your vehicle until help arrives. · If you have to leave your vehicle to get help, make sure other drivers can see you.

Adjust your driving to the conditions: · Stopping distances are 10 times longer in ice and snow. · Select second gear when pulling away, easing your foot off the clutch gently to avoid wheel-spin. · When climbing a hill avoid having to stop by waiting until it is clear or by leaving plenty of room between you and the car in front. Try to maintain a constant speed, choosing the most suitable gear well in advance. · When driving downhill, reduce your speed before the hill, use a low gear and try to avoid using the brakes.

Tune-In Radio

Listening to worldwide radio isn’t anything new, we’ve been able to do it on the PC for years! But this little app puts the world’s radio in your pocket, allowing you to listen to and record over 40,000 radio stations. As long as you have an internet connection you have access to radio from just about every country imaginable. The app allows you to bookmark your favourite stations with ease, record a show to play back later, pause a live stream for up to 30 minutes and there’s even a facility to buy the playing song on iTunes should you wish. AmpKit & AmpKit+

AmpKit is the ultimate iPhone Guitar amp and pedal studio for all electric guitar players. The app comes in two versions, the free AmpKit app starts, of course, with ametronome and tuner, which are both well done, and it includes a dual-channel amp, two mics, and two pedals. Alternatively, you can get AmpKit+ which is priced e15.99 but includes four amps, two mics and eight pedals. It looks like buying the AmpKit+ bundle saves you 50 per cent off of buying the gear individually. Compared to buying the actual hardware to achieve these sounds, of course, it’s a tidy saving. All of the additional gear can be purchased from within the app. Most pedals are around e2.39 and range up to e4.99. Depending on the pedals you have purchased, AmpKit will offer you preset combinations of amps and effects. They make a great starting point for finding a sound, and the effects are easy to tweak individually. Please note that this app requires an extra hardware interface. Search Google for IRig, Griffin Guitar Connect Cable or AmpKit Link. Cost: Free for AmpKit,e15.99 for AmpKit+, compatible with iPod Touch, iPhone & iPad

Local bakeries provide a taste of Christmas with these yummy yuletide recipes

A

s the countdown to Christmas officially begins and the cash registers in the shops go into overdrive, now is the time to think about baking your own Christmas Cake. With a little care and attention you can create wonderful yuletide treats that will taste all the better knowing that you made them yourself! To enhance your baking experience Aoife Collins from Cake Couture, West St and Bernadette Black from Coulter & Black, Tullyallen, delve into their cookery books and share their favourite Christmas recipes...

Orange Spiced Cake Christmas Baubles (Makes 5)

Add all soaked fruit. Place mixture in prepared tin and smooth over top. Bake in the centre of a preheated oven for 2.5-3hrs. 9 To check if baked thrust a skewer into cake. If it comes out clean the cake is done. 10 Leave cake to cool in the tin, when cold take out of tin and wrap in greaseproof paper until ready to ice.

175g butter 175g rich dark brown sugar 200g plain flour 1 teaspoon mixed spice

½ teaspoon nutmeg 50g ground almonds 4 eggs 2 tablespoons brandy

1 Set your oven to 160°C (320°F, gas mark 3). 2 Cream the butter and sugar until light and fluffy. Gradually add the eggs (use a slow speed if you are using a mixer). Stir in the orange zest and juice. Sift together the flour and spices and fold into the wet mix, half at a time. 3 Grease small bowls (we love using the little metal bowls from IKEA for these cakes!) with Wilton Cake Release* and place them on a baking tray. 4 Put a teaspoonful of mix into each bowl and place the tray in the centre of the oven. TIP: Put a bowl of water on the floor of the oven for lovely moist cakes! 5 Bake for 15 minutes until golden and springy to the touch. 6 Cool in the tins for a few minutes before tipping the little cakes out onto a rack to cool completely. 7 To make the buttercream, beat the butter until smooth. Add ½ the sugar and beat. Add the remaining sugar and beat until light. Stir in

the juice until you have a spreadable soft consistency. To Decorate: 1 Spread a thin coating of buttercream onto the round side of each little cake. 2 Roll out sugarpaste* in your chosen colour to about 4mm thick and lay over a cake. 3 Use a round cookie cutter* (just a few millimeters bigger than the cakes) to trim excess paste from around the cake. Repeat for all of the cakes. 4 Cut strips of sugarpaste in a different colour. Paint on a thin coating of edible glue* and dip into food safe glitter*. 5 Sandwich two cakes together with buttercream and stick a glittered strip around the join. 6 Finish off by modelling a small hook for the top of your bauble from leftover paste. *Available from Cake Couture, West Street

For the Almond Paste: Ingredients: 500g ground almonds 500g caster sugar 4 egg yolks ½ teaspoon lemon juice Method: 1 Mix the ground almonds and caster sugar together. 2 Beat the egg yolks with the almond essence and lemon juice. 3 Stir in the almond mixture and mix to a form paste. 4 Dust the table with icing sugar and roll out almond paste and brush cake with boiled apricot jam. 5 Ice cake with almond paste and leave to dry for 2 days to prevent oils staining the royal icing.

For the Royal Icing: Ingredients: 500g icing sugar 2-3 egg whites 1 teaspoon glycerine

Method: 1 Whisk egg whites and glycerine lightly with a fork and add icing sugar gradually, then beat with a wooden spoon until the mixture forms a firm peak on the spoon. 2 If using an electric mixer keep machine at a low speed. Cover bowl with a damp cloth and leave overnight before using. 3 Ice top and sides and decorate as you wish. To Decorate: 1 Snowman – Mould the head and body from white sugar paste. 2 Make the hat, eyes, mouth and buttons from black sugar paste. 3 Make the scarf from red sugar paste. 4 Mould the green sugar paste into a cone shape, snip with a scissors to make a Christmas tree.

THE WORLD WINE TOUR Christmas is a time for giving, for parties and celebrations as well as some serious eating! This month Seamus Daly from Quintessential Wines provides a few ideas for you to consider for various occasions. PARTY WINES Whether it’s for a drinks reception or house party, dinner party or an evening with finger food the choice of wine is important. For larger gatherings I favour wines that are unoaked, not too high in alcohol and most importantly are affordable. Australia and Chile both produce wines which tick all the boxes in this regard. We stock a Lantana Semillon / Chardonnay and Shiraz/ Cabernet blend from Anthony Murphy in Australia (yes he is Irish!), as well as the Montevista Sauvignon Blanc and Carmenere from the leading organic producer in Chile. If you want wallet friendly bubbles to get your party started then ask about our range of Prosecco which is a super sparkler from Italy at a fraction of the price of Champagne or Cava. WINE GIFTS Wine gifts make a great present as they have a wider appeal than other drinks such as spirits. Choose carefully though as most unsold big brand Gift Boxes will be on Special Offer, or ½ price after Christmas which can lessen the perceived value of your present. We have a range of exclusive, made to order gift pack/ box options instore from €6.95. Inside your client, friend or loved one will find some cracking wines which are sure to impress. CHRISTMAS DAY A glass of Champagne or quality sparkling wine is a great way to kick off the day as you prepare the dinner. Try our fantastic organic Champagne from the small, award-winning house of Vilmart. Dry, crisp, intense, unoaked whites work well with starters such as smoked salmon where the zingy acidity cuts through the oily fish. We have an award-winning Sancerre Matthias Roblin or the organically produced Mahi Sauvignon Blanc from New Zealand. Turkey and Ham works well with really good Pinot Noir or Syrah (Shiraz). For those who prefer white wine I advise a lightly oaked dry white wine such as Chablis 1er Cru Domaine Fevre. A robust Spanish Tempranillo will work well with Goose while other wines to consider included Chateauneuf du Pape or an elegant Aussie Shiraz or Pinot. Call in and see us at 9 Dublin Road and let us help you sort out your wine this Christmas, call 041 – 9830960 or email sales@quintessentialwines.ie
