The health-and-wellness trend in bakery and baking also encompasses shopper interest in minimal, wholesome ingredients. “Transparency and sustainability are still important, and clean labeling plays an important role,” asserts Richard. “I think consumers will continue to seek out those kinds of products.” Several brands are moving in this direction.
