Editorial “Better to light a candle than to curse the darkness” Chinese Words of Wisdom» Dear Friends, Let me open this edition of Enjoy magazine with our heartfelt disasters which hit Accra on 3rd June 2015. We share in their pain, we share in their grief, and this is a time of deep sorrow for all of us! This month we were privileged to be invited to attend a huge array of parties and events that were happening around Accra including the celebration of National Day at the Ethiopian Embassy, the 239th Independence Day County fair and farewell function hosted by the US Embassy, and the Canada Day reception. Our who’s who this month features the inspirational, Ms Lady Queene Asiedu-Akrofi, headmistress at the Presbyterian Boys Secondary School, Legon, Accra, speaking about the holiday period and how to make the best of it. Talking of holidays, the season is here with us again. We wish all holidaymakers in Ghana and those who intend to travel abroad all the best. May all of us be mindful of the need to always tread cautiously in all circumstances! Our families need us alive and strong. Our dear Ghana does too. By the way, ENJOY is closing its offices for one month for our annual break, starting from 15th July. We are looking forward to seeing you again when we resume, lively, strong, full of bright ideas to push our country forward and energized enough for brisk business... with ENJOY!

L

Lady Queene Asiedu-Akrofi (Ms) is the Headmistress of the prestigious Presbyterian Boys’ Senior High School (PRESEC), Legon. In fact, she is the first female Head of PRESEC, just like she was the first female Headmistress of West Africa Senior High School, a position she occupied for seven and a half years starting from 2006. She holds a Postgraduate Diploma in Teaching French as a Foreign Language from the Université Jean Monet, Saint-Étienne, France, and a Master’s degree from the same university. An avowed disciplinarian, she is also a past Chief Examiner in French for the West African Examinations Council, a member of the Chartered Institute of Administration and Management Consultants (CIAMC), and a member of the International Air Cadets Exchange (IACE). On the eve of the long vacation Ghana’s students are about to enjoy, Lady Queene granted ENJOY’s Juanito Mario de Medeiros an interview on the theme ‘Productive Holidays for Personal Uplift’. Enjoy now!

ENJOY: We are very grateful for your time. The year is nearing its end and soon, the holidays will take over. How would you describe the academic year 2014-2015 at PRESEC? Lady Queene Asiedu-Akrofi (Ms): It is normal for both students and tutors to look forward to the end of the academic year. Academic work is very challenging to both students and tutors. Examinations enable both parties to evaluate their respective performances. For tutors, they are evaluated by the school authorities based on the performances of their students; just as the students are evaluated by their examinations results. 6 | July-Aug 2015 ENJOY No 101

This year, cooperation, cohesion, understanding and mutual respect have blossomed between my administration and my team including academic staff and nonacademic staff. There has been relative calm and a congenial atmosphere; you may agree that this a recipe for academic success. ENJOY: That is good. So, on a scale of 1 to 10, where would you hang the school? Lady Queene: In view of what I just explained, I can comfortably say that on a scale of 10 maximum, together we have achieved 9 over 10. And I wish to thank all my staff and congratulate them on their performance.

ENJOY: Now the holidays are around the corner. First, what, in your opinion, are holidays instituted for? Lady Queene: Holidays are meant as periods for stocktaking, resting and re-energizing for tasks ahead. Students and parents get the opportunity to have encounters through analysis of the formers’ academic reports as well as character reports from their tutors. The period also gives students opportunities to engage in vacation jobs, help parents in their work, including family businesses and household chores. ENJOY: We agree then that nobody expects the students to spend all the time sleeping and chatting on


interview social media. What should students do to make the best out of their holiday period? How can they have productive or useful holidays? Lady Queene: No good student spends their holiday sleeping. Holidays should be a time to read novels, socialize with peers, watch movies and visit theatres. Students ought to try as well to catch up with areas of their academic work where their performances have fallen short of expectations. Moreover, students are expected to make good use of their holidays by engaging in productive work as well as engaging in Internships for their own self-actualization. Also, students should bear in mind that their first responsibility is to their books. Studying must be considered as students’ full time job. Therefore they shouldn't forget that even during holidays: they must read their books regularly. ENJOY: How important or relevant should the television, the mobile phone and the social media in general be during the holiday period as far as students are concerned? Lady Queene: Those various entertainment and social media tools have their roles in everyday life of students on vacation. But these things in my opinion should never be students’ preoccupation either during their holidays or at any time of their lives. They should be used sparingly and profitably to enhance their education. In that regard, I must emphasize that parents and guardians have a responsibility to check excessive engagement of their wards on social media. Holidays are never meant for students to spend quality time on social media activities.

ENJOY: All over the place, vacation classes are organized and conducted. Do students really need vacation classes? Is it not too much pressure on their young brains? Lady Queene: Personally I am not against vacation classes. They have existed in this country since the '70s. In America and Europe, they are called summer schools. However they must not be organized all vacation period long, but as a part of the vacation. Students must have time to rest before vacation classes, i.e. after close of the academic year, and after those vacation classes i.e. before schools resume. ENJOY: In general, what would you say are the Do's and Don'ts for students to observe if they want to resume school with fresh minds? Lady Queene: While on holidays home or abroad, students should read novels, catch up on weaker subjects, socialize positively by visiting friends, going to movies, learning to play musical instruments and learning new IT skills which have become the most efficient and necessary condition for knowledge acquisition. By all means, do some sports too because it is always true that “a sound mind resides in a sound body”. The fear of the Lord, the good book says, is the beginning of wisdom. Students should not forget to go to church and should learn to constantly pray about their future.

On the other hand, students should not engage in social evils such as smoking, alcohol consumption, sex, violent behaviour or relent on striving to make profitable use of the holidays and refrain completely from their books under the pretext of being on vacation. ENJOY: Your pieces of advice to parents and guardians for their wards' holiday period? Lady Queene: Parents and school authorities have a shared responsibility towards students. We as tutors do our bit when they are under our care with a set of strict rules. It is equally incumbent on parents to do their bit during the holidays, when they come back home under their care. Please, my dear parents and guardians, keep your eyes open, get to know not only your children's friends but those friends’ homes too. Show them love by all means but have a set of rules similar to those I articulated above to guide your wards during holidays. ENJOY: Those are interesting considerations. I am sure our reader friends will grab useful tips here. Let me wish you fulfilling holidays. By the way, aside your hobbies such as cooking, photography, gardening, etc. you can fly an aircraft. Will you be flying one during the holidays? Lady Queene: Thank you, Juanito, for this unique opportunity to share my humble ideas and personal thoughts with you. I don't presume to know it all. These are only my humble opinions which I don't in any way consider sacrosanct. And yes, I can fly an aircraft, but I do so only in IACE member countries. But not during these holidays, because I have very important engagements to carry out. e

TV SHOW Season 1

T

The sixth episode of ENJOY TV SHOW Season One was aired on Viasat 1 on Sunday, 21st June 2015 and it featured the making and printing of the 100th edition of ENJOY magazine. A great deal has happened since the programme premiered on 17th May. It has featured talented Ghanaian artists such as Kwame Osa, the impressionist, and Enam Bosokah, the Bic ball pen artist. Viewers also had the opportunity to admire up-coming songbird Adomah, Becca, the Ashanti nightingale, and veteran entertainer Gyedu Blay Ambolley. Sweetly presented by Kokui Selormey with her lively fellow presenter, Bobby Osei, ENJOY TV SHOW took viewers to exclusive retreats located around Ghana, namely Loo Moon in Axim, Western Region, Labadi Beach Hotel, Accra East, and La Villa Boutique, Osu. On the show, Kokui and Bobby reported on social events, including Vlisco's womens award night, Mac’s art of the lip event, the Maybelline make-up launch by L’Oréal, and a food tasting.

• Full name: Professor Nii Narku Quaynor. • Country: Ghana. • Occupation: Computer Scientist and Engineer. • Academic background: In 1977, a PhD in Computer Science, from the State University of New York at Stony Brook. Earlier in 1973, a Bachelor of Engineering degree from the Thayer School of Engineering in Dortmund College, Hanover, New Hampshire, United States. • Distinguishing feature: He has been presented with an Award of Recognition for his pioneering role in the development of Internet in Africa. The event took place at the Kofi Annan International Peacekeeping Training Centre (KAIPTC) in Accra on 12th June 2015.

• Other distinctions: He was presented, in 2007, with the Internet Society's Jonathan B. Postel Service Award, better known simply as the Postel Award, for his pioneering work in Africa. Also, he was inducted into the Internet Hall of Fame on 3rd August 2013 in Berlin, Germany, alongside 31 other individuals from various countries over the world, all of them “honoured for their ground-breaking contributions to the global Internet”. “The Internet Hall of Fame celebrates Internet visionaries, innovators, and leaders from around the world who believed in the design and potential of an open Internet and, through their work, helped change the way we live and work today” (http://internethalloffame.org/) An alumnus of Adisadel College and then Achimota School, Professor Quaynor is one of the most prominent and distinguished Ghanaian icons and achievers. He has dedicated himself most

Crocodiles often ingest stones. The reason? So that their weight may increase, allowing them to dive deeper and stay under water for more than an hour. Here is another reason: the stones help these carnivorous reptiles to digest the prey they swallow without chewing.

A nap, as it has been demonstrated in several studies, helps address the lack of sleep which affects memory and alertness. However, napping at work is unacceptable in several countries, including, perhaps, Ghana, but not in Japan. In fact, the term the Japanese use for ‘nap’ is ‘inemuri’ which means 'be asleep during one’s presence’. Inemuri is viewed as a reward for one’s dedication to work.

At the age of 23, most women are not even ready to think about having children, let alone grandchildren. But that was not the case for Romanian girl Rifca Stanescu. At 12, Rifca gave birth to her daughter Maria. When Maria was 11 years old, she had her first child, making her mother a grandmother at only 23 years old, and Rifca’s mother a grandmother at 40!

In 1954, a 12-year old boy had his bicycle stolen while he was in an auditorium for free food during a festival. Frustrated, the adolescent reported the theft to a police officer, Joe Martin, and warned he was going to beat those who had committed it. The policeman, who was a boxing coach, advised him to first learn to fight and offered to be his trainer. The legend of Muhammad Ali, who would later rock the world of boxing, had begun. e

Because I Love You: True love story

One day, a young guy and a young girl fell in love. But the guy came from a poor family. The girl’s parents weren’t too happy. So the young man decided not only to court the girl but to court her parents as well. In time, the parents saw that he was a good man and was worthy of their daughter’s hand. But there was another problem: The man was a soldier. Soon, war broke out and he was being sent overseas for a year. The week before he left, the man knelt on his knee and asked his lady love, “Will you marry me?” She wiped a tear, said yes, and they were engaged. A few days after he left, the girl had a major vehicular accident. It was a head-on collision. When she woke up in the hospital, she saw her father and mother crying. Immediately, she knew there was something wrong. She later found out that she suffered brain injury. The part of her brain that controlled her face muscles was damaged. Her once lovely face was now disfigured. She cried as she saw herself in the mirror. “Yesterday, I was beautiful. Today, I’m a monster.” Right there and then, she decided to release her fiancé from their

promise. She knew he wouldn’t want her anymore. She would forget about him and never see him again. For one year, the soldier wrote many letters—but she wouldn’t answer. He phoned her many times but she wouldn’t return her calls. But after one year, the mother walked into her room and announced, “He’s back from the war.” The girl shouted, “No! Please don’t tell him about me. Don’t tell him I’m here!” The mother said, “He’s getting married,” and handed her a wedding invitation. The girl’s heart sank. She knew she still loved him— but she had to forget him now. With great sadness, she opened the wedding invitation. And then she saw her name on it! Confused, she asked, “What is this?” That was when the young man entered her room with a bouquet of flowers. He knelt beside her and asked, “Will you marry me?” The girl covered her face with her hands and said, “I’m ugly!” The man said, “Without your permission, your mother sent me your photos. On 23 June 2015, the High Commissioner of Canada to Ghana, His Excellency Christopher Thornley, hosted an event to celebrate Canada Day and highlight the strong friendship and shared values that unite Canada and Ghana. Canada’s national holiday is traditionally celebrated on 1 July.

Canada’s foreign policy aims to build partnerships that ensure the well-being, prosperity and security of all our countries’ citizens. It rests on the same values that underpins our society, freedom, democracy, human rights and the rule of law. Ghana is a friend that shares these values.” HE High Commissioner Thornley spoke of the strong relations between both countries, which date back to Ghana’s independence in 1957 and which have evolved into a multisectorial and mutually beneficial partnership, resting on deep personal ties. The Honourable Minister of Employment and Labour Relations reiterated the values that unite the people of Canada and Ghana, and highlighted their governments’ shared commitment to improving maternal, newborn and child health. During the event, HE High Commissioner Thornley launched the Canadian High Commission’s Facebook page and encouraged Ghanaians to engage with the High Commission through social media. e

Depositing your pay cheque into your current account and buying everything with an ATM card is a good way of managing your income until the money's gone! However, while there are certain advantages to this method, such as not incurring credit card debt, there are also major disadvantages, such as not quite knowing where all that money is going and not contributing enough to your savings because there's never anything left over. So, how about budgeting? Lots of people think that is not for them. But it is! And if you don’t save as much as you could/should, read this and make up your mind. • You Think You Don't Need To Budget? The truth is, everyone, including those with large pay-cheques and plenty of money in the bank, can benefit from budgeting. Keeping track of your monthly income and expenses allows you to make sure your hard-earned money is being put to best use. For instance, knowing how much money one spends on kebabs every month can help one to decide to channel that money toward a family computer or hepatitis vaccines for all the household. • You think Your Job is Secure? No one's job is truly secure. If you work for a corporation, downsizing or losing your job is always a looming possibility. If you work for a small company, these concerns may not apply, but if the owner ran into inextricable trouble suddenly, the company might sink with the owner. One should always be prepared for a job loss by having at

However, you might lose your job, be in a car accident, get cancer or need to help a friend or family member who falls on hard times. It's best to be prepared and hope that you'll get to use the money for something fun one day instead. e

Exhibition Showcase At Kaya Design

A painting exhibition was hosted at the plush Kaya Design Bar & Boutique at Cantonments, Accra on 19th June 2015. This exclusive event was attended by lovers of art from all walks of life. A unique venue for a unique artist. Kaya Design Bar & Boutique is a smart cosy mix of antique and modern, nestled in a comfortably large compound of lush green vegetation including vintage trees and stunning flowers! Departing from the classical row-like arrangement of paintings found at most exhibitions, the BIC Painting Exhibition showcased talented artist Enam Bosokah’s works in a most original manner. Canvases were arranged on both levels of the storey building. They could be found hanging on walls, flat on fashionable tables, resting on cushions in a lobby and on pillows in bedrooms, on comfortable armchairs and placed on carved stools. Enam Bosokah medium is the blue BIC ballpoint pen (see ENJOY no. 100). His works exhibited at KAYA Design Bar & Boutique were

A 2-kg Mummified Foetus in the Stomach for 60 Years

W

hile consulting a doctor for a hip fracture, a Chilean grandmother has made a frightening discovery: a mummified foetus weighing nearly two kilos has been present in her womb for more than 60 years, Chilean radio Radio Bio Bio reported. According to doctors, who evoke "a rare case", the foetus might have migrated into the abdomen. That phenomenon, called lithopædion, is a form of ectopic pregnancy. In some cases, like this, the woman's body is unable to assimilate it: the foetus is then mummified. Little by little, calcium forms around the body, the placenta, the amniotic sac and the umbilical cord, like a kind of membrane, which explains the fact that the mother does not realize anything. About 300 lithopædion case have been reported in approximately 500 years. e

Suspended for Teaching her Students to Taste the Tequila

eresa Hernandez, a Mexican chemistry teacher in a public institution, has been suspended after the broadcast of a video in which she appears teaching her students how to enjoy "an excellent tequila". In the video, the teacher explains to her adolescent pupils a tequila "is swallowed after it is oxygenated in the mouth" and should "leave a flavour" after swallowing. She is also seen approaching the students with a drink in her hand, to make them smell the contents, while she details how to place an order with a waiter for this drink and check its quality before dipping one’s lips in the glass. Saucy Conversation in a Police Chopper

hile three officers of the Winnipeg Police Service on a police helicopter were conducting a routine patrol on 19th June, they did not realize at first their public sound system was opened. Unaware many people in the city could hear their conversation, they literally broadcast it all in downtown Winnipeg. According to witnesses, the exchange focused on money and sex, and included raunchy expletives. Snippets of the conversation, which was referring mostly to oral sex, suggested at times "too much hair", “too little benefit”, and other liberalities. The members involved in the incident couldn't hear the sound from the inside of their helicopter. The Winnipeg police Service have apologized and opened an investigation into the incident. e

Marathon Runner at Age 92

n 31st May 2015, Harriette Thompson become, at 92 years and 65 days of age, the oldest woman in the world to compete in a marathon, according to the San Diego marathon organizers. It took the nonagenarian 7 hours 24 minutes and 36 seconds to complete the 42.195 km of the race. That was her sixteenth participation in the California test. This grandmother of ten went in for the marathon to be part of a fundraiser for the fight against cancer, a disease she has survived twice already, but which has taken away her husband, her two parents and three of her brothers. At one point during the marathon, “there was a hill in front of me and I felt like I had to climb a mountain, and I told myself: ’At your age, isn’t this crazy1’", she said. e

Try Urban Decay Eye Shadow in Secret Service to create a soft, believable look. Finish by smudging some of the same shadow along the lower lash line and topping it all off with mascara to open up the eye and make it look larger.

Round Eyes: – The round eye has a circular shape and is typically large in size. To soften it and create a more exotic appearance, Barose recommends using a liner. Then apply a sweep of black liquid liner on the upper lids while "slightly lifting the line at the tails," Barose says. It will not be said that Rebecca Akosua Acheampongma Acheampong, ENJOY’s Star of the Month for July 2015, barged into the entertainment industry by chance. Sultry songstress Becca, as she is fondly known on stage, is a music artist because she wanted to be. Growing up, she said, she always wanted to do music, much to the chagrin, at least in the beginning, of her parents who would have relished her becoming a lawyer. In actual fact, Becca’s parents simply wanted to shield their daughter, given that the perception within the collective unconscious at the time was that career singers were into drugs and many other social evils.

“Becca, that she stands for women, as “women are extraordinary and quite unique”

But as faith would have it, she was born into a family in which almost everybody was a musician in one way or the other, including mum and dad who were both in the church choir and her siblings who used to sing in church or in school. So Becca grew up following in their footsteps, from singing in the shower to singing in school and in church every now and then. A professional Project Manager, Becca eventually ‘managed’ to get introduced to Kiki Banson, her manager then, leading to her entering the studio to register her first album, ‘You Lied To Me’, which became an instant hit. Looking back at the evolvement of things, she has concluded: “It was all ordained from God”.

The proudly-Ashanti songstress feels elated being part of the music industry. She takes her status as a role model seriously, pursuing her career as far as possible without messing around. She wants all and sundry to realize, looking at Becca, that she stands for women, for “women are extraordinary and quite unique”. An avowed feminist, she believes that women are “able to do everything”, that they “just have to believe in themselves”. Though once in a blue moon Becca might feel stressed about the “whole thing” due to all sorts of pressure, she quickly gets back on her feet and repeats to herself: “This is what you set yourself to do, so you must do it and do it well”. . Becca has strong opinions about the rumours and gossip that tend to fly around public figures: “Public is the word, and people just grab the opportunity to say a whole lot of things about you, just whatever they want to say”, she deplores this state of affairs, adding that she “can’t push someone down and say ‘Don’t say this about me’”. She would just let it go and not allow herself to be deterred and diverted from her goals. A very down-to-earth Becca however acknowledges that as a human being, she can’t be perfect, but just strive to do the best she can.

By the way, if she were not a music artist, Becca would probably be a lawyer, or a child care education worker, which she is qualified for, or a project manager, which in fact she is already. One of her immediate projects, in partnership with her peers, is to assemble a group of Ghanaian artists to stage a giant concert to raise fund in support of victims of the June 3 twin flood-and-fire disaster in Accra. Orange Pound Cake

Ingredients 500gram butter 300gram sugar 6 eggs 500gram flour 3 teaspoon baking powder 1 teaspoon orange zest 1 tablespoon lemon juice 1 cup orange juice

Directions 1. Heat oven to 350 F. Grease loaf pan or any cake pan of your choice. 2. Beat butter and half of sugar in bowl until creamy. 3 . Separate eggs. Add yolk one at a time to butter and sugar. 4. Combine flour and baking powder a in bowl. Combine orange zest, orange juice and lemon juice in another bowl. Gradually fold flour mixture into butter mixture, alternating with orange juice with a wooden spoon. 5. Whisk egg white with remaining sugar. 6. Gradually fold into mixture. 7. Pour into prepared pan.. 8. Bake at 350 F for 35 minutes or until toothpick comes out clean. Cool in pan on rack 15 minutes; turn cake out on rack, cool completely. Decoration 1. Drizzle more orange juice on cake or sprinkle icing sugar on it.

1 1/2 pounds mahi-mahi fillets 1/4 cup dry white wine 2 tablespoons lime juice 1 teaspoon minced garlic 1 tablespoon vegetable oil 1 lime, quartered 12 small corn tortillas, warmed Romaine or Iceberg lettuce, shredded, for garnish Pico de Gallo salsa, for garnish 1 avocado, pitted and cut into thin slices, for garnish Sour cream or crema, for garnish

Directions

Pat fish dry and combine in a nonreactive bowl with the white wine, lime juice and garlic. Set aside to marinate about 10 to 15 minutes. When fish is ready, remove it from the marinade, pat dry, and season with salt and freshly ground black pepper. Heat oil in a large nonstick frying pan over medium-high heat. When oil shimmers, place fish skin-side down in skillet. Cook until opaque and firm to touch, about 3 minutes per side. Flake the fish, squeeze one of the lime wedges over the top, and toss to coat. To make a taco, stack 2 tortillas on top of each other and fill with fish, lettuce, salsa, a few avocado slices, and a dollop of sour cream. Repeat to make 6 tacos total.
