Average weekly sales figure for restaurants revealed Food-led bar and restaurant businesses made an average total of £18,000 in weekly sales for the past year. That's according to research from Fourth Analytics, which studied benchmarking data from 3,000 outlets around the country. The weekly sales figure of £18,000 marked a 2.7% rise on the previous year when it stood at £17,600. Meanwhile, the average food mix was up to 77.2% (vs drinks sales), from 76.2% from the previous year. The figures were presented by Mike Shipley, analytics & insight solutions director at Fourth, during a bars and restaurants forum held last week by Fourth, BDO and Barclays bank. Other findings in the research included the fact that businesses generally achieved gross margins between 76% and 78%, while average labour costs across the industry are 28.8% (as a percentage of revenues), up 0.5% from a year ago. Pubs, because they achieve higher wet sales, produce lower labout costs, at 26.7% of revenues (also up 0.5% on 2014).

Drake & Morgan to open first non-London site, in Edinburgh Restaurant and bar group Drake & Morgan is to open a site in Edinburgh in autumn 2016, its first outside London. The new venue will be part of the new £75m office development in the city’s St Andrew Square, and will bring the group’s portfolio to 10 sites after its new opening in King’s Cross, London, in September this year. Dylan Murray, director of operations, says: “We are extremely excited to be opening our tenth site in Edinburgh. The new bar and restaurant will be an extension of that same brand but will have its own distinct personality and character befitting of its location.” He confirmed that the company had looked to the Scottish city, thanks to its “booming hospitality industry”, and said that the new site would aim to have strong design, creative menus, and pay close attention to service and detail. Drake & Morgan was founded in 2008 by managing director Jillian Maclean (pictured), who has lived and worked in Edinburgh. It currently operates eight open sites across London, including the Anthologist in Gresham Street, the Parlour in Canada Square, the Happenstance on Ludgate Hill, the Fable in Holborn, and two Refinery sites – one in Bankside and the original in Regent’s Place.

Average hourly pay in the industry (based on these 3,000 sites) was £6.75, up 2.2%, although this looks set to rise in light of chancellor George Osborne's announcement last week that he planned to introduce a National Living Wage set at £7.20 per hour for people working and aged 25 and over from April 2016. Average length of service in the establishments in the study was just 392 days - ie an employee turnover of 93%. This was a slight improvement on 2014 when average tenture was 385 days. The worst rate recorded was 210 days' average service (6.8 months). The best industry retention recorded by the Fourth Analytics system was 631 days, or 20.3 months. Shipley said: “When analysing these figures, we see a direct correlation between companies that proactively seek to engage and retain their teams, and those companies that perhaps do less work in this area.” When it came to staff absence, on average the sites studied lost 16.8 days per month through absence or illness, down from 18.2 days in 2014.

London music venue and restaurant the Troubadour on sale Well-known London music venue and restaurant the Troubadour is on sale after being marketed by specialist property adviser Christie + Co, off a guide price of £225,000. The vendors are Simon and Susie Thornhill, who have owned the site since 1998. The venue is made up of three leasehold properties including the 114-cover restaurant on the ground floor. In the basement is a 132-capacity club and 20-seat wine bar. There are also owners’ living quarters over three floors; a gallery with two self- contained letting flats for four; an office, garden, and extra storage. Established in 1954 by Michael and Sheila van Bloemen, the Troubadour bills itself as one of the last remaining ‘50s-era coffee houses in London. Across the last six decades it has hosted music artists such as Bob Dylan, Paul Simon, Ronnie Wood, Jimi Hendrix, Mick Taylor, Adele, Ed Sheeran, and Amos Lee. It also aims to support young, emerging musicians. Simon Chaplin, director, pubs and restaurants at Christie + Co, said: “This is a fantastic opportunity to acquire a slice of history and the Troubadour has a loyal clientele made up of both locals and those travelling from further afield to visit the venue. There is scope for the new purchasers to build on its strong following.”


Ministers have been urged to ban imports of powdered alcohol as part of a crackdown on legal highs. Leading powdered alcohol brand palcohol was approved for sale by US regulators earlier this year. It was recently banned in the Australian state of Victoria but the Australian government has rejected calls for federal wide ban. Labour peer Lord Brooke said its use was spreading on a “wide scale” in the US despite being banned by some states. Powdered alcohol, he argued, could be “snorted” or “baked into cakes” or added to confectionery, making it easier for minors to consume it.

Lord Brooke was speaking as peers discussed the government’s psychoactive substances Bill, which will criminalise the production, supply and trade in psychoactive substances and carry a maximum prison of seven years. Legitimate substances, such as food, alcohol, tobacco, nicotine, caffeine and medical products, would be excluded from the legislation but Lord Brooke said powdered alcohol posed a particular risk and urged ministers to act now. Although not available in the UK, he warned that “as night follows day” powdered alcohol, which can be mixed with water to make a standard flavoured drink, will eventually come to the UK through the internet. Consumer affairs minister Jane Garrett says there should be a national ban on the “very stupid product”. She said the product could have a novelty appeal to young people who, for example, could smuggle it into concerts.

Doom Bar Not Brewed in Cornwall One of the UK’s best selling bottled ales, Doom Bar, is not brewed In Cornwall it has been revealed. Although it has Cornish branding, bottles of Sharp’s Doom Bar have been produced in Burton-UponTrent, Staffordshire, for the last two years. Only the cask is made at the main brewery site in Rock, Cornwall. Sharp’s is owned by US company Molson Coors and they said it did not have the room to bottle Doom Bar in Cornwall. The labels on the bottles of Doom Bar contain several references to Rock, Cornwall, but none to Burton-Upon-Trent; however the small print says “Brewed in the UK”. Burton-Upon-Trent is 267 miles away from Sharp Brewery’s home in Rock. Fans are dismayed as the labels on bottles make reference to Cornwall- and not to Burton-Upon-Trent with some calling the geographical fudge a “con”. Sharp’s spokesman James Nicholls said: “We have been established in Rock since 1994 and the majority of Doom Bar, more than 80% or about 1 million pints a week, is brewed at Rock. “But we do complement that with brewing operations further afield and that is the spirit of collaboration that we’ve seen in the brewing market places where beer is brewed under licence in other locations.

Snoop Dogg Sues American Beer Brand US rapper Snoop Dogg is suing a beer firm over the Sale of a brand. The rapper claims that he is entitled to 10% of the money made when Colt 45 was sold to a drink entrepreneur last year.

In a lawsuit filed in Los Angeles, the rapper is seeking 10% of the net sales paid to Pabst Brewing for its Colt 45malt beer line in the sale. Snoop Dogg has signed a three-year deal to endorse the beer line in 2011. Under his contract, he was to receive a portion of the sale of the brand if Pabst sold it before January 2016. The contract also called for the rapper to receive a royalty on each case of Blast that was sold. Nevertheless, Snoop Dogg claims, the company refuses to pay him anything in connection with sale. “Despite the sale, Pabst has taken the (very convenient) position that no transaction has occurred such that Subsection (a) of the Phantom Equity Clause would be triggered,” states the complaint, which Alex Weingarten of Venable filed.

Hotel News UK inflation rate falls back to 0% The UK inflation rate fell back to 0% in June after rising to 0.1% in May, according to official figures released today. A fall in clothing and food prices were the main contributors to the change in the rate along with smaller rises in air fares than a year ago, the Office for National Statistics (ONS) said. Rain Newton-Smith, director of economics at the Confederation of British Industry (CBI), said: “Price inflation remains elusive. While this is likely to persist in the coming quarter, inflation should rise relatively swiftly from the end of 2015, as the effect of past falls in oil prices fades. “Inflation of below 1% over the rest of this year should give the MPC enough breathing space to leave interest rates unchanged at least until early 2016.” Earlier this year, in April, inflation dipped below 0% for the first time since records began in 1960, down to 0.1%.

VisitBritain launches 360-degree tours of popular UK attractions

VisitBritain has launched a series of 360-degree interactive tours on its website which will allow overseas tourists to experience attractions before they arrive. Created by 3D specialist Rod Edwards, the ‘Try Before You Buy’ series will allow users to experience an interactive tour of popular attractions in the UK including Anne Hathaway’s cottage, Rosslyn Chapel, Durdle Door, Durham Cathedral and Chatsworth House. VisitBritain said the series, which is part of the government’s ‘GREAT’ tourism campaign, aims to drive more international visitors out across the nations and regions of Britain. Joss Croft, marketing director at VisitBritain said: “Not only will this immersive experience allow potential visitors to snoop around some of our greatest tourist attractions before they arrive, but it will inspire and motivate more travel across the country. “London is a huge global asset for Britain – a dynamic, cosmopolitan and well-connected city that visitors aspire to visit. Our challenge is to encourage visitors to add to their holiday experience by exploring even more during their short time here and making sure they know how easy it is to get around.” In 2014 the UK welcomed a record 34.8 million international visitors – up 6% on 2013 – who altogether spent a record £21.7bn. As a result, VisitBritain projects that the UK will welcome a record 42 million international visitors annually by 2020.

OTAs are a heavy burden on hotel profits, says HVS Hotels have become increasingly reliant on bookings from online travel agents (OTAs) and might soon be forced to work with just two main companies. This is according to a new report from hotel consultancy firm HVS which said despite OTAs offering a number of advantages to hoteliers including a wide, multi-national reach and big marketing budgets, the commission rates of anything from 15% up to 30% are a heavy burden on hotel profit margins. The report cited Priceline and Expedia as “ever-more powerful” companies due to strategic acquisitions of smaller, regional players, leaving hoteliers limited options for negotiating on commissions. Priceline, which owns Booking.com, OpenTable, Agoda.com, Kayak, Ctrip and Rentalcars.com, controls 62% of the European market, while Expedia holds around 70% of the US market.

The report warned that there is a growing trend for OTAs to launch their own loyalty programmes, which takes them into a headto-head battle with hotel group loyalty schemes and threatens a unique selling point for the hotel owner. HVS also said that rate parity agreements – which have recently come under scrutiny – are holding hoteliers back. Jill Barthel, report author and analyst at HVS, said: “Another limitation imposed by OTAs is their insistence on best price guarantee and rate parity amongst all channels, leaving limited manoeuvrability for hotels to make their offer more attractive. “However, over the past few weeks there has been some movement towards more lenient regulations as imposed by anticartel authorities, mainly in Europe.”

The report concluded that hotels should aim for a healthy balance between OTA bookings and bookings from their own website, making sure they maximise their website bookings by making their site as up-to-date, attractive and easy-to-use as possible. Sophie Perret, report co-author and HVS director, said: “It might come down to the small details that make guests decide which channel to book through. Search engine optimisation is worth exploring and while not cost-free, is comparatively cheaper than the cost of rooms sold via OTA

4. Will it attract customers to my bar or restaurant? When people peek into your bar or restaurant they will not yet get to taste your exquisite food or see that the service is efficient, the first thing they will see is the physical interior including the furniture. Decoflex-3D are available in multiple sizes and are suitable for walls, wainscoting, ceilings, backsplashes, furniture, display fixtures and many other interior design applications. Hundreds of designs and color combinations are possible and many are in stock for immediate delivery. Decoflex-3D is compatible with many different adhesives and installation methods. Fabrication and installation are both very easy with these products. Decoflex-3D is a very light laminate (376g/sqm) and flexible enough to be rolled for courier shipping, yet is completely rigid when laminated. Decoflex-3D meets ASTME 84 Class 1. Even though it is fire retardant, panels can be deformed with excessive heat. Paintable Decoflex-3D can be painted with a variety of paint types to match your colors. The luxurious treatment beds from Ellisons are finished with pebble coloured luxury towels and matching pebble coloured fleecy blankets embroidered with the Lime Tree Spa logo. The white waffle ‘Healthy’ bathrobes are also embroidered with the Lime Tree Spa logo (all supplied by BC Softwear). Spa Creators and the team at The Lime Tree Spa created the menu of treatments using brand Caudalie, with a wide range of luxurious vineyard themed treatments that fit well with the Euro Asian theme. Spa Manager Sarah Moore says ‘The Lime Tree Spa has a great feel about it. It is not often that you walk into a brand new building and you already feel at home. It is also a brand new team at the Lime Tree but we have already gelled - Spa Creators have achieved this and we are delighted with the results.’ The Lime Tree Spa at Milford Hall Hotel is already operating and it opens officially in May 2015

Little Plates need Great Induction at Polpo Chelsea With a high profile opening in Chelsea, that operates 24 hours a day, typically serving 500 covers each eating three small plate dishes from the Venetian inspired menu Polpo needed highly reliable preparation, cooking and holding equipment. The bespoke solution came from the Polpo Group’s experience, the vision of Executive Chef Jason Wass and CCE group choosing equipment from Valentine and sister company Cuisinequip. “We needed a cooking range that took the best points from existing Polpo restaurants, that could fit into the limited space of our new Chelsea site and of course to cope with a diverse menu, 24 hour operation and still produce the high quality dishes we are known for,” says Jason Wass. The range at Polpo Chelsea has a built-in twin-pan Valentine Evo 2200 fryer, two twin induction hobs with four x 8kw multifunction coils to allow for cooking with smaller pans at service time, or larger pans for mise en place. Hold function is standard on this type of induction from HWM keeping the base of the pan at the set temperatures of 70, 95 or 110°C; thereafter the control becomes a graduated power until full power is delivered at position 9. There is also a small deep-pan griddle which can be used for grilling food, or as a bratt pan for making sauces, soups etc. Lastly a 4 x 1/3 G/N wet well bain-marie was fitted into the range for use during service times. The space under the hob was utilised by fitting a single drawer Adande unit to offer chilled storage at the point of cooking for the chefs. All HWM built cooking ranges have a strong 4.5mm stainless steel top and are fully welded for longevity, backed up by a five year warranty on the induction system from Cuisinequip.

Talking about the performance of the range, plus the menu and service it handles Jason adds, “The menu is broken down into different stations and the equipment has been specified to turn it out quickly without any compromise on quality. For example the meat balls are held in the ban-marie, the Valentine fryer handles dishes like the Arancini and Salt Cod Crocchette and the induction suite gives controllability for vigorous and gentle cooking that many of the other dishes require. “We have taken our time to learn what works and what does not at our other London sites and to invest in high quality equipment that we know will not let us down in the very demanding service environment at Chelsea. In fact it’s performing so well that we plan to roll out this bespoke range to the other Polpo restaurants where we know it will deliver the best for our menus.” Jason and his team worked with Steve Elliott from Valentine/Cuisinequip and David Bentley, design director at CCE Group for the design aspects of this project. Valentine & Cuisinequip’s Charlie Hale and David Judge from CCE Group facilitated the installation so that the kitchen could hit the ground running just in time for the start of the Chelsea Flower Show. EAT. DRINK. SLEEP August 2015 Venturi’s Table Corporate Cookery School, in Wandsworth Town is one of London’s most famous cookery schools and has been going for more than 10 years. It offers a unique form of ‘culinary therapy’ for business professionals and private groups. Sessions are less about cookery instruction and more about how the atmosphere of a homely kitchen, the process of cooking and the practice of eating around a table, can have a transforming effect on us as people. Food brings people together. We forget our worries and relationships are nourished around the table. The school is perfect for team bonding or as a refreshing way to entertain clients. Famous faces that have used the school include Michel Roux, Paul Hollywood & Marco Pierre White. In fact, it was first cookery school of its kind to tailor specifically for group cooking, part of the reason why the likes of BP, Shell, Yahoo, Google, Lloyds, HSBC, Barclays, Sainsbury’s, The Guardian, The Financial Times, & BBC have all used it. Venturi’s has recently been taken over by Laura Beaumont and Bella Blackett who both have huge experience in the cookery and events field. It was originally the brainchild of Italian Grandmother Anna Venturi. Laura brings a great understanding of food while Bella has studied and worked in events for the past ten years.

There are two custom-built kitchens with a maximum capacity of 60 people. There’s the Sicilian kitchen or the trendy Milan kitchen. Both are equipped with cutting edge culinary technology and Northern Italian style. Typically, guests prepare a three course, gourmet meal from scratch which they then enjoy around the table together. They cook with seasonal produce and work with chefs who specialise in a range of cuisine types. The classic and most popular menu is Italian, but they also offer an array of different cuisines. “We’re very flexible when it comes to menus and recipes” says Bella. After their cookery event, guests can take a tour of Italy’s major wine regions with an optional, hour-long wine tasting. When it comes to chefs, Laura explains: “All of our staff are ‘people’s people’. While they will happily share their deep knowledge and passion with our guests, they also understand that not everyone is necessarily interested in the technical details of why a recipe does or doesn’t work. It’s about having a great time, getting to know people and having fun”. Bella continues: “The experience of cooking and sharing delicious food together enhances relationships. Whether cooking is your thing or not, creating food with others and learning some tips breaks down barriers and is really fun.”
