Gaucho Group confident of sale in next ‘two to three weeks’ The Gaucho Group has said it is confident its Argentinian steak restaurants will be sold “within the next two to three weeks”. CEO Oliver Meakin said the restaurants were “profitable and completely sustainable” adding that further expansion was likely following the sale. He explained: “We are talking to potential buyers about future UK expansion, as we believe there are a least a further six locations where Gaucho would trade successfully. “We also believe that Gaucho could trade successfully in Western Europe with openings under our management. In addition, prior to the sale process, we were discussing a number of franchise opportunities in the Middle East with a local business partner.”

UKHospitality supports calls to scrap immigration targets post-Brexit The CBI has called for a system that ensures those coming to the UK make a positive economic impact, but does not restrict immigration to high earners. It suggests EU citizens should be registered on arrival, with visits restricted to three months for those who cannot “prove they are working, studying or self sufficient”. The business group said applying the current non-EU immigration schemes to those from the EU post-Brexit would hit small businesses. UKHospitality chief executive Kate Nicholls said: “This report highlights the pressing need for a future immigration policy that exists to support the UK economy. The CBI’s report also underlines the need for a discussion about the realities and practicalities of migration to the UK and its effect on business.

The group’s management team has said it’s “business as “The hospitality sector is particularly in need of a future policy that usual” across the group’s 16 restaurants, which remain provides employers with access to talent to support continued investment open and serving customers. Meakin added: “There has been some confusion, even within the hospitality industry, of the exact status of the group, and we would like to set the record straight. All 16 of our UK Gaucho restaurants are open, each location is profitable and completely sustainable, and our wonderful staff are fully committed to providing our guests with a genuinely memorable experience through delivering a taste of Argentina’s best beef and wine.

and growth, alongside our work to develop domestic talent. This means acknowledging the need for a variety of workers across the sector at many levels, not just those who are deemed highly skilled. We particularly welcome the recommendation to secure the rights of current EU citizens in the UK, regardless of an exit deal.” However the Home Office has maintained its commitment to reducing immigration to the “tens of thousands”.

Josh Hardie, CBI deputy director-general, said: “Freedom of movement will be ending. The building blocks of a successful new migration system for the UK begin with an honest and open debate that has been absent “We are continuing to trade through the administration from politics. The stakes couldn’t be higher. Get it wrong, and the UK risks period, supporting our administrators Deloitte LLP, having too few people to run the NHS, pick fruit or deliver products to and are confident of an exciting sale of the Gaucho stores around the country. This would hurt us all – from the money in our restaurants within the next two to three weeks.” pockets to our access to public services.

Marketing director Matthew Ford added: “The Gaucho brand is 25 years old next year; this is a great business, making good money, with a very strong heritage, in highly distinctive locations – we have a lot to be proud of.”

“The needs are more complex than only ensuring that the UK can attract the ‘brightest and best’. Housebuilding needs architects for design, labourers to dig foundations and electricians to help finish the job. In the food and drink sector, the supply chain starts with agriculture, then logistics and ends with retail. “This is no longer a theoretical debate – it’s about the future of our nation. False choices and sloganeering must be avoided at all costs. Openness and control must not be presented as opposites. Public attitudes towards migration and the impacts it has on communities are far more nuanced. Scrapping blunt targets, ensuring all who come to the UK contribute and using the immigration dividend to support public services will add to public confidence. “For global Britain to succeed, the UK must send the right signals that show it remains open and welcoming to the world. That means putting migration on the table in trade talks to get us a better deal, first with the EU and then other countries where it is clear existing visa restrictions inhibit trade and foreign direct investment.”

BDO LLP have been appointed joint administrators to the company, which had sites in Great Portland Street and St James’. A statement posted to Villandry’s website reads: “Martha Thompson and Sarah Rayment of BDO LLP were appointed joint administrators of Villandry Restaurant Foodstore Limited (‘the Company’) on 9 August 2018. “The affairs, business and property of the Company are now being managed by the Joint Administrators.” Last week it was reported that the chain, run former Le Pain Quotidien director Philippe Le Roux, was searching for a buyer following the doubling of rent at its Great Portland Street site, a 16% increase at St James’ and the loss an outlet at Biscester Village, near Oxford, which had accounted for 47% of turnover. The company’s last filed accounts, for the year to 31 March 2017, outlined cost reduction measures as it reported a pre-tax loss of £1.5m.

Punk Scotch: Matt Whiley and Rich Woods reimagine the whisky bar in Iron Stag

As chef Adam Handling’s new bar Iron Stag readies for its official opening, Imbibe caught up with cocktail gurus Matt Whiley and Rich Woods to discuss Irn-Bru, prebatched cocktails and bringing whisky to the masses Being tasked with opening an ‘approachable’ whisky bar would seem like a daunting prospect to most people, but if there’s one category that needs more bar innovators, it’s whisky. After all, a recent survey from William Grant & Sons revealed that 75% of consumers claim to have little knowledge of the category.

games including up to 4 Old Firm clashes

When you consider that most whisky bars boast huge, often daunting, lists of whisky and can be more than liberal with the tartan than one would perhaps like, it’s always exciting to hear of a new venue aiming to move away from that image. Matt Whiley and Rich Woods are the latest to take up the challenge at Iron Stag, a venue set a 10-minute walk from Black Rock, another bar challenging the stuffy image of whisky bars. ‘If you’re [working]in a bar, you get to set the trend for young people, rather than you being dictated what it is,’ says Whiley. ‘We’re looking to break those preconceptions about whisky,’ adds Woods. Bold talk, but with CVs spanning Purl, Worship Street Whistling Shop, Peg + Patriot and Scout (Whiley), and Duck & Waffle and SushiSamba (Woods), it’s not so hard to concede the point. The venture in question is Iron Stag, which soft launched last month, a subterranean cocktail bar that resides beneath Adam Handling’s recently relocated restaurant The Frog Hoxton. The acclaimed Scottish chef came to the pair with the idea of an ‘approachable venue for whisky’ with a ‘gentlemen’s club vibe’.

Brewhouse & Kitchen win The Tapsters 2018 at Imbibe Live Crafty Zealots beat off a strong challenge from the New World MoB to clinch The Tapsters 2018 title on the second day of Imbibe Live. With five close rounds, it was the food matching and beer and cider tips from Crafty Zealots allied with the quick wits of the team’s Jordan Childs during the final round quiz that clinched the prize – a trip to Cork with Franciscan Well Brewery – for the Brewhouse & Kitchen team. The competition Mary Topp, The Cider House at Borough Market, joined beer sommelier Ed Hughes, Sharps Brewery, and chair of judges, beer writer Pete Brown, to form this year’s expert panel, with mistress of ceremonies Annabel Smith and cider educator Gabe Smith in adjudication mode. New World MoB edged into a one-point lead at the end of Round 1 with their explanation for the causes of iso-valeric acid, that cheesy note produced by bacterial spoilage, following both teams’ correct identification of four beer and cider faults, kindly supplied by FlavorActiv. However Crafty Zealots turned the tables in Round 2 as the teams’ responses to real-life scenarios were judged by both audience and expert panel. Crafty Zealots won both audience and judges’ vote for the first two scenarios, suggesting Jaipur as the best match for chicken sag, and a perry for a mozzarella, tomato and basil salad. Next up, beer and cider suggestions for those who don’t normally drink them. Alternatives for a Margarita split the audience down the middle as to whether a New World MoB’s Siren Calypso or the host of choices proposed by Childs would win the drinker over. New World MoB valiantly pulled itself back into the running by winning the final scenario with the inspired suggestion of Wild Beer Co’s Dr Todd for a Whisky Sour lover. This is a strong citrus sour, brewed with ginger and aged in Islay whisky barrels with British Black Bee honey, finished with more ginger and lemon zest. At the end of Round 2, Crafty Zealots had taken a commanding 17-point lead, scoring 80 vs 62 for the round, taking the scores to 111 vs 94. Round 3, identifying beer and cider styles, was even stevens, with both teams correctly calling two out of the four styles judged blind. New World MoB’s Stella Royale Evans reduced the deficit by narrowly winning the judges’ vote for her Cider Throwing, taking the scores to 154 to 139 at the end of Round 4.

Bulmers’ apple farmers facing glut as consumers favour fruit ciders Its apples have been feeding the ravenous presses of cider-making giant Bulmers for almost 60 years. But this autumn, Herefordshire’s Grove Farm faces an unexpected quandary – unless it can find a buyer for its 50-tonne harvest, the apples will be scraped, rotting, from the ground to make way for grazing sheep. Soon after, bulldozers could flatten the farm’s 70-year-old orchard – where seven, traditional bittersweet apple varieties thrive – to firewood. ‘It’s a shame,’ says farmer Tim Bunting. ‘We had a stewardship with Natural England to keep it as a traditional orchard – no fertilizers or sprays – and I know we have woodpeckers in there. ‘I’m loth to get the bulldozers in, but that would be the easiest option. I have to be realistic.’ Among the 180 or so Herefordshire apple growers supplying Bulmers – owned since 2008 by global drinks giant Heineken – Mr Bunting is far from alone. A perfect storm of improved farm productivity, ambitious tree planting and a shift among British drinkers towards sweet fruit ciders has resulted in a glut of the bittersweet apple varieties that make up the backbone of traditional mass market fare like Heineken’s Strongbow. As a result, Heineken – the world’s biggest cider producer – is now negotiating compensation packages to buy some growers out of their long-term contracts, leaving a question mark hanging over the future of their trees. Silenced by non-disclosure agreements, many are reluctant talk. One long-established grower, who asked not to be named, explained: ‘Bulmers has been good to me so – pardon the pun – I don’t want to upset the apple cart. There’s an oversupply. I don’t have anyone else to sell my apples to. ‘But too many trees were planted ten years ago, and there’s an over-supply of fruit. We’re trying to resolve it with Heineken, but the reality is I don’t have anyone else to sell my apples to.’ Another, who has retained his contract while taking a number of acres out of production, said: ‘The powers that be didn’t do their sums – they didn’t bank on mature trees yielding so much fruit.

London’s iconic Royal Garden Hotel achieves 40% repeat booking rate with Revinate Mark Anderson, Royal Garden’s Deputy General Manager, fell in love with hospitality at an early age and through experience, knows a hotel can’t be reliant on just one particular segment to fill rooms. Instead, you have to nurture multiple guest segments with personalized experiences and communications, turning them into repeat guests. That’s why the property put its trust in Revinate’s award-winning Marketing and Guest Feedback solutions back in 2015, a decision that has had a positive impact on many of Royal Garden’s key performance metrics over the last three years. Anderson says, “Revinate has allowed us to much more easily target and nurture repeat guests with special messaging. Powered by the platform’s innovative segmentation capabilities, we now enjoy a repeat booking rate of 40%.” “By building segments in their database based on booking channel, rate code, and stay patterns, Mark and his team can be confident they are sending the right message to the right audience in a way that feels relevant and meaningful,” says Kelly Robb, Senior Director of Marketing and Growth at Revinate. Originally built in the 1800s, the Royal Garden Hotel was demolished and completely rebuilt as part of a Labour Government grant in the 1960s. Re-opened in 1965 under its current brand, the hotel is a benchmark of both resilience and constant reinvention. It is only fitting that the management team cares just as deeply about the property’s design, amenities, and staggering views of London’s skyline as it does about how to best deliver the brand promise of making each stay unforgettable.

BARRY CALLEBAUT’S ‘KREEMY’ COCOA OFFERING TOPS BRODERICK’S STUDENT SURVEY A recent survey carried out by national vending supplier and operator, Broderick’s at Manchester Metropolitan University has revealed that Le Royal Choco Green (also known as ‘Kreemy Choc’), a creamy cocoa drink supplied by Barry Callebaut Beverages UK, is the students’ unanimous, number one choice. All 400 students, surveyed as part of the Broderick Project launch* (an app designed for the purchase of Broderick’s vending products), who tasted the premium quality chocolate drink, agreed that they would make repeat purchases of this specific beverage based on its mild but tasty flavour and the perfect froth, achieved by Broderick’s state-of-the-art machines.

Le Royal Choco Green is the preferred hot chocolate across all of Broderick’s sites, from factories and offices to higher education facilities and leisure clubs and centres. Director of Broderick’s, John Broderick explains why the leading operator would not consider any other brand: “It comes down to quality. Le Royal Choco Green is the best quality chocolate drink available for vending on the market. With a 9.5 % cocoa content, it beats all of its competitors’ products hands down. Although it’s a high end product, and therefore more costly, the healthy ratio of sales makes it the best choice all round.

of the sustainable hot beverages manufacturer’s most popular brands: “Le Royal Choco Green provides a reliable, milder alternative to the provenance chocolates that currently grace the market and, because of this, it is more likely to generate an immediate second purchase. “It’s not an over-rich drink and so the consumer is far more likely to drink more of it and buy another cup. CLEAN extends its green credentials further with plastic reduction Leading hospitality laundry provider CLEAN is now saving the equivalent weight of two doubledecker buses of plastic per year, after reducing its use of shrink film across its seven laundries. The award-winning sustainable-focused company has reduced the thickness of the essential film from 13 microns to 12. CLEAN uses the shrink film to protect the integrity of its high-quality linen products and save them from dust, moisture, and other external elements during delivery and onsite storage. This process guarantees the linen arrives to its customers in its intended high quality and is kept in that condition. Initially trialed at its Banbury laundry earlier this year, the shift to using a lower weight plastic film has now been rolled out across all of CLEAN’s sites, which deliver five million linen items to its customers each week. Already acclaimed for it sustainable ethos and initiatives, this isn’t the first move the company has made in cutting back its use of plastic. CLEAN has already reduced the weight of film used on its products by 40% since 2000.

It is now set to continue improving its service to be even more eco-friendly by putting new technology in place to cut electricity, gas and water consumption at each site. It is also committed to further reducing its plastic use to 8 microns, as soon as the technology becomes available. Glenn Willis, Head of Procurement at CLEAN, said: “CLEAN is the first laundry company in the UK to standardize to a 12 micron shrink film for all customers, but we will continue to push the boundaries and make further reductions as soon as it is available. As we continue to proactively minimize the volume of our waste that is sent to landfill, we are proud to be shipping 25-tonnes less plastic per year and hope to reduce this further in the future. It’s vital that we continue to improve our sustainable efforts and make positive changes where we can, as well as save CLEAN and our customers money.” To find out more about CLEAN, please visit www.cleanservices.co.uk or follow their updates on Twitter @cleanlinenltd.

8 great reasons your restaurant should be using software By Luis De Souza, Chief Executive of NFS Technology Group How hard do people have to work to visit your restaurant? To eat at Tiyagyoni – a popup restaurant on Mount Everest – people will have to trek for eight days to 17,500 feet. Now, that’s a challenge you might be glad your diners don’t have to tackle! The truth is, though, getting diners to choose your restaurant is a major challenge you do have overcome on a daily basis – and in some ways, it can be just as uphill a struggle as dinner at Tiyagyoni. The good news is that modern software for restaurants is giving many dining establishments a real advantage, even in today’s highly competitive trading environment. Providing restaurateurs with an unprecedented end-to-end view of their business and numerous ways to control costs and eliminate waste, they are giving digital-savvy restaurants the ability to delight their guests and bring them back again and again. These systems can even help encourage positive online reviews… In fact, there are no fewer than 8 great reasons to choose software for restaurants when seeking to make operations more efficient and increase both revenue and profit. They are: 1. Streamlined operations 2. Online booking 3. Better control of costs and waste 4. Best use of labour

5. Quicker table turn 6. Seamless customer service 7. Diner loyalty 8. Online reviews. Streamlined operations With costs rising constantly, labour hard to come by and trading conditions tough, anything that helps streamline operations has to be worth pursuing. Today’s leading software for restaurants comes complete with a reporting suite that gives managers access to real-time data anywhere they have an online connection, via mobile devices. Reports can include sales, stock levels, labour - and even let you know whether staff are dealing with potential social media criticism efficiently. This business intelligence provides restaurants – even multi-location groups – with important information for making good business decisions. For example, when the prestigious Temple Gate Townhouse hotel in Ireland installed an Epos system, reporting was a huge benefit. “We’ve now got the data we need to better manage our operation,” Managing Director Paul Madden said. “Our key reports, such as product line mix and server performance reports, can be run instantly. This lets us focus on really important business management issues.”

Online booking Customers today demand easy access in all areas of their lives – and eating out is no exception. They’re used to accessing services via their smartphone or laptop, and hospitality is following the lead already set by the retail, financial services and insurance industries. With the rising popularity of apps such as OpenTable this is particularly true of restaurant reservations. Modern software for restaurants now offers guests the opportunity to book a table 24/7 without making a single phone call – and it can be integrated with OpenTable if required. It’s convenient for diners and gives the restaurateur extra revenue for you because reservations can be taken 24/7. Better control of costs and waste Did you know: UK pubs, restaurants, hotels and quick service outlets throw away 600,000 tonnes of food every year, according to pressure group Wrap. Who can afford to be that wasteful in 2018?

Personalised service is highly valued by guests, but to get it right requires a lot of knowledge about your customer. Fortunately, leading software for restaurants including EPOS capture important information about each guest, building up a good picture of their preferences that enables restaurant owners to email them offers and rewards that stand a good chance of hitting the mark. Hello, loyalty! Online reviews Alongside online reservations, consumers worldwide have come to rely heavily on reading online reviews before they make their selection.

Not only does it mean your business racks up costs, it’s also considered highly unethical. Food waste is a key hate for the frugal millennial generation in particular, and could even become a reputational issue for your business. This is another area where restaurant technology can help. With comprehensive up-to-date reports available at all hours of the day or night, a business owner can make good procurement decisions based on real information. Stock control, for instance, can be finely balanced thanks to accurate forecasting based on genuine sales figures and identified trends. It’s helpful that this useful software for restaurants is now available as a rental option, which keeps costs down and provides an immediate ROI. Best use of labour We’ve been seeing the Brexit effect in hospitality staffing for some time, as labour shortages cause wages to rise. Matching staffing closely to requirements is another useful feature of restaurant technology – by identifying the busy and slow periods, restaurateurs can make sure they have sufficient people on at any time to keep diners happy while minimising costs. Giving those staff technology that is intuitive to use keeps training to a couple of hours and gives them the tools to make their jobs easy – which is good news in a time when staff retention is a real issue. Seamless guest service According to a new study, the biggest brand differentiator for any business going forward from now will be the quality of the customer experience they provide. Today’s digital-savvy and time-poor

customers require seamless service, particularly from restaurants where dining times are getting shorter and shorter. Serving staff can take orders on hand-held devices or tablets at tableside. Accurate orders are sent directly to the kitchen where preparation can begin immediately and quick service is assured. Staff can then follow up by taking payment at tableside too – today’s software makes splitting the bill even for large groups who have made additional orders during the meal. Quicker table turn When staff with restaurant management software at their fingertips welcome guests, they can seat them quicker thanks to realtime seating plans displayed graphically on their mobile devices. Together with the advantages of handheld ordering and payment, it adds up to quicker table turn, a lucrative result. It also sends diners away satisfied that their valuable time has not been wasted and their dining requirements have been met perfectly. Diner loyalty Which leads us neatly onto diner loyalty, a hugely important factor in bringing guests back again and again to your establishment.

Your restaurant management system should have social media tools to help you monitor any online reviews of your restaurant – and they should be able to give your management team a heads-up whenever if a diner is posting a poor review. It gives your team a chance to make amends before the customer even leaves his or her table – and that’s a huge positive for your reputation. Sanj Naha is Head of Sales Support and Enablement, B2B Marketing and International Groups, at The Fork, a TripAdvisor company, and he says all feedback can help you to improve your business. “You can use review feedback to enhance your value proposition,” he says. “Track which review sites your online traffic is coming from, and learn exactly how people are navigating your website. Following that, you can use the information to optimise their user journey. “In addition, you can use the review information to target messaging that will convert your online traffic into leads, bookings or calls to action.” * Want to find out more about software for restaurants? September 2018

The whole experience of the Day out at Windsor racecourse was a brilliant one. The day started with our train journey, with easy changes that took us to Windsor train station. We then had a short walk to catch a boat along the Thames. What a lovely start this was as we travelled along the river, followed by so many swans and ducks until we arrived at the racecourse. The boats weren’t over crowded at all and you had the choice of sitting downstairs in the bar or up on the top deck, which although covered was more open for viewing. As we arrived at Windsor racecourse, it looked lovely as it is set in 165 acres of countryside and very well maintained. There wasn’t a queue for us to pick up our entrance tickets, which had been booked in advance. We had the 1866 Package, which gave us access to the 1866 panoramic restaurant, only a short walk through the gates. It also includes hospitality parking, should we have chosen to come by car. The restaurant was bright and airy and had a fantastic view of the racecourse and winning line. There were also many TVs in sight all around the restaurant should you wish to just sit and relax and watch the racing. We were welcomed by the staff who were very friendly and efficient, and immediately served us with welcome drinks on our arrival. We sat at our table and started with our three course meal whilst studying the race cards for the days meeting. The food was a la carte to cater for a wide range of tastes, but it was all delicious and cooked to perfection, and the waiting staff were excellent. Staff from the totes that were in the restaurant visited the table to explain the cards and how to place any bets and competitions available. I found this very useful and informative for anyone that wasn’t

a regular racecourse goer. It was also very convenient to be able to place the bets (and collect winnings!) only a few feet from the table. The staff continued to keep us in drinks for the rest of the afternoon so we could come and go as we pleased, because the table was reserved for us for the whole afternoon. We went out to watch the winning line close up on a few races, as our entry ticket permitted us to enter the enclosure by the winning post too. There was also so much going on with stalls, fairground rides and many attractions to keep the whole family amused. There are many events happening throughout the spring and summer months, on Mondays from April through to October, with music acts to suit all tastes. The 1866 package was very good value for money, but there are quite a few different packages available to cover all budgets and requirements. The best treat of the day was also still to come, as we were allowed to visit the parade ring as part of this package, to see the horses, jockeys and owners close up. This was a very memorable visit as we actually got to meet Matt Chapman who was filming live for at the races. We had photos with him and actually ended up on the TV in the background as we voted for the best turned out horse. This can also be purchased separately if you don’t have a package and I would say is well worth the bit extra. The whole day was fantastic, and everyone in our group said that they would love to do it all again as they had such a brilliant time. Well done Windsor racecourse.

The room The building is substantially higher than most buildings in the area, therefore being given a room on the 14th floor you could experience the most fantastic views of the London skyline to include the London eye and the shard. The air-conditioned room was spotless and had elegant modern furnishings, subtle lighting and designer bathrooms with walk-in power showers and luxury toiletries. They include flat-screen TVs .The room had everything covered for the ultimate stay to include bath robes, down to the added Nespresso machine which provided you with an array of hot drinks at your own disposal.

The food The hotel’s Petrichor restaurant has a fine reputation and from start to finish the attention to the service and presentation of the food was outstanding. The restaurant is everything you could want after a day in the city.

, London The maître d’hôtel most definitely made the overall dining experience personable and really enjoyable. I opted for: salmon and goats cheese salad followed by rump of lamb, and desert was white chocolate cheesecake accompanied by strawberry Italian ice cream. All of which were really enjoyable and left you feeling satisfied. I finished my dining experience by going into the petrochemical bar and lounge whereby again the customer service was superb and you were made to feel very welcome which certainly topped off the whole experience of the Cavendish and its charm.

The Cavendish is a jewel in the crown of London tourism and the boutique hotel experience. This well situated hotel is a must stay in any ones hotel list.

Like all good stories, it started in a pub! Specialists in Market We have evolved beyond our proud heritage but the solidarity that comes from this ongoing relationship gives us the tenacity to always surpass expectations. It allows us to take risks and seamlessly overcome obstacles that other service providers face.

arston’s Telecoms was formed in 2008, originally providing services to our parent company, Marston’s PLC. Marston’s is well known as a brewer of premium ales, such as Pedigree and Hobgoblin, and for its Destination and Premium pubs, including brands like Pitcher & Piano. Marston’s PLC needed to cost effectively improve communications between its 2,000 pubs and its head office, to eradicate the poor service, traditionally received by more established service providers.

We started out with basic services, such as telephony and lines for card payment terminals, before adding data communications to our portfolio. Five years ago, we took this to the next level with the initiation of an extensive Ethernet roll-out.

Today, Marston’s Telecoms has four UK datacentres and a turnover of almost £8 million, up from £500,000 in 2008. We own and manages our own dark fibre throughout London, interconnecting directly in to the UK internet infrastructure, ensuring transit and connectivity, which provides our customers with broadband/Ethernet, managed WANs, carrier services, hosted voice and managed Wi-Fi. We don’t just serve Marston’s PLC, but also other communities through resellers and brewing and hospitality businesses, such as Heineken and Punch Taverns.

A demanding customer Tony Ford, Operations Director at Marston’s Telecoms, said; ‘’Marston’s originally established its comms business for its own purposes but it quickly became apparent that in building an infrastructure capable of meeting the SLAs demanded by the Marston’s Group, it had created

something highly marketable. Marston’s PLC is such a demanding customer, and rightly so, because when you are doing turnover of £1 billion, EPOS is critical, comms are critical.” Ford adds that “In hospitality today, digital transformation really exists. The high demand for Wi-Fi in pubs, for electronics behind customer engagement, the app, the tills, and the other types of digital signage – the whole thing is very techdriven. Our whole business, from the very top to the very bottom, is driven by technology,” he said. Marston’s experience of digital transformation and artificial intelligence means that we are well placed to help companies with high bandwidth, smarter comms and new technology and transform their operations, processes and customer experience. Each member of the Marston’s Telecoms team has developed unique, specialised skills and a passion for our industry that increases our service inventory of competitive advantages that go beyond connectivity. Firing Up the Hospitality Sector for Growth

and hotel sectors saw card spend of £134bn in 2016, over a fifth of the UK total.

September 2018

Restaurant & Bar Tech Live Show Preview

Empowering technology Once you’ve made the decision to accept cards, even more opportunities open up to improve the customer experience and drive loyalty. These include:

The UK’s hospitality sector is expected to turn over £100bn this year. But despite the impressive-sounding figures, it’s an industry facing some serious challenges as Brexit uncertainty looms and consumer spending slows. It doesn’t matter if you own a single restaurant or a national pub chain, the pressures are the same — fighting off the competition to attract and retain increasingly demanding customers. In an industry where the customer experience is so important, it therefore makes sense to invest in card payment technologies. You’ve spent money on your kitchen, your staff, and interior design so that everything’s perfect. But fail to get payments right and your customers could end up leaving with a bad taste in their mouth.

Turning to cards While the headline industry figures look good, there’s plenty to keep hospitality business owners awake at night. The UK’s top 100 restaurant groups saw profits dive by 64% in 2017, with 35 of them now loss making. Over 300,000 employees in the sector are considering leaving the UK because of Brexit and there are fears that new

immigration policy will restrict the talent pool further. According to PwC there are also signs that the boost to inbound holiday bookings from the weak pound last year “may have started to ‘fizzle out’ towards the end of last year”. Against this backdrop it makes sense to do as much as you can to increase takings. Providing greater choice to customers to pay via their preferred method is a clear winner for hospitality businesses. Not only will it improve the customer experience — making them more likely to return — but it can improve operational efficiency, make it easier to analyse business performance, improve cashflow and reduce the risk of theft. It’s no surprise that the food and drink

Accepting payments at table via mobile card machines. Look for payment providers that can offer even more capabilities at table such as splitting the bill, adding service and recording cash payments. It won’t just improve the dining experience but, for fast casual restaurants, it will help you turn tables quicker to drive more sales. Smartphone payments are gaining in popularity thanks to the three major ecosystem providers, Apple Pay, Google Pay and Samsung Pay. UK consumers are already familiar with contactless payments, and are increasingly comfortable with the similar “tap-andgo” of using their smartphone. Self-service orders via touchscreen kiosks and tablets could help to reduce staff costs and queues at the till and improve customer satisfaction. App-based wallets are an increasingly popular choice for customers of casual dining restaurants. Providers like Barclaycard (Dine & Dash) and Mastercard (QKR) allow customers to pay without even needing to wait for the bill. It’s all about speed and convenience. This is just the start of an exciting journey for the hospitality industry. Smart Restaurant Analytics for Your Kitchen When discussing kitchen technology, we often describe the need for “smart solutions.” In other words, automated solutions that are easy to use, that integrate with your existing EPOS system and that streamline your kitchen processes. What makes these solutions “smart?” Three words: tre-

3. Real-Time Order Status By segmenting an order’s process, station by station, you can diagnose specific pain points

2. Resource Management and Allocation

A KDS needs to be able to handle on and off-premise for

restaurant operations to thrive. It should be able to execute what’s known as “order throttling” to give off-premise diners the most accurate quote time, one that accounts for the current speed of service in, and real-time order status.

Your KDS should allow you to manage entrée counts, historical averages, and set target times and percentage thresholds

By maintaining a detailed account of every process that goes on in your restaurant, managing on and off-premise orders, and making those records accessible, a best-in-class kitchen display system can help you make crucial restaurant management decisions. That’s a smart solution.

Your kitchen display system (KDS) should be a powerful data collection machine, recording every kitchen process and storing it.

The best-kept secret in hospitality is out…... Over 1,300 operators have been reaping the benefits of Access Hospitality’s different solutions for some time now. When you bring together 5 best of breed hospitality brands, add a dash of data analytics and a big helping of powerful financial technology – you create a recipe for success. An end-to-end hospitality management suite that covers everything from reservations, ticketing, EPoS, HR and rota management, recruitment, financials, purchase to pay, property maintenance and analytics. Access Hospitality itself may be a new name within the hospitality sector, but that is certainly not the case for the leading edge technology being used by our customers today. In fact, being fresh faced is no bad thing, as we look at things from a different perspective. We pride ourselves on our open integration with partners and our “start anyway, go anyway” ethos gives our customers the flexibility they need as they look to grow and expand their business operations, but still drive efficiencies.

How are other operators using technology to drive efficiencies and increase footfall? Bookings are on the up - Fullers recently highlighted in their annual report that “the rollout of Access Collins booking system resulted in online bookings rising by 42%.” Other operators quote similarly impressive figures as the 5.5m per month website visitors help drive bookings, and the advanced technology helps improve conversion rates.

Frees up time to focus on customers – At the Bel & The Dragon our Procure Wizard purchase to pay technology “enables us to spend less time on the telephone ordering processing invoices, and more time looking after our customers”.

Speeding up transaction times – Which improves customer experience and helps with the bottom line as GBK found using our EPoS technology. “With counter service at GBK, the facility for customers to check in and pay with their PayPal profile picture has made the transaction faster and easier and we’ve got to know more of our customers by name”. Giving control back to GMs –Brakspear have been using Access People HR technology to “empower Managers to take complete ownership and control of their site’s labour costs for the first time. They were given real time analysis of forecast wage cost and budgets, all vital aspects of workforce management.”

Driving efficiencies from contractors –Sadly we can’t help with rent and rate rises, however we can help deliver efficiencies on your multi-site property portfolio with our property maintenance solution. Stonegate realised clear benefits with “easy-to-use technology for all, that improves value and service from our contractors”.

So now the secret is out, why not speak to us to find out how you can achieve some real ROI within your own operation. EPOS Technology Helping Hotels Run Better Hospitality EPOS technology not only improves the guest’s experience, but the way your business is run. Streamlining operations from the front desk to the restaurants, bars and even a business’ inventory, allowing hoteliers to simplify and personalise the customer’s experience. However navigating the minefield of EPOS systems can be challenging especially if you are looking to move towards Mobile, Tablet or Smart Device based platforms for added flexibility. To help on this journey BIXOLON have put together five pointers to take into consideration when purchasing a new Mobile EPOS (mPOS) System for your Hospitality business: 1.

Device Connection – When selecting a mobile device the Hospitaliers need to decide how it is going to be connected to the host. Cabled LAN connectivity was always the norm with Wi-Fi being a trusted if not a more expensive means of achieving the same result. But recent advances in Bluetooth technologies have not only improved reliability and usage. Secure Login – a secure means of logging in to the system is essential to both employer and employee alike and is integral to the success of the mPOS solution as it provides the accountability. Simplicity and cost have led users to rugged and durable devices such as the waterproof Dallas Reader which provides system security as each member of staff will have their own unique numerical login

which can easily be replaced if lost. Delivery Speed – technology can speed up the order delivery process – selecting the right connectivity can aid restaurant ordering from front of house to the dot-matrix printers in the kitchen or to an IP rated thermal printer in the wet bar ensuring speedy customer service. Smart device connectivity also allows to speed up the process even further. Greater Reach – the ability take orders at the table in breakout dining areas can save the members of staff time by not having to return to a central point each time. Break out downing dining experiences can be further be improved by printing receipts at the table when asked – this can be achieved very simply through the use of a belt mounted printer. The latest 80mm mobile printers are small, light and rugged and print the same receipt as conventional desktop printers. Multiple device hosting – multiple device hosting full hospitality process achieved by lay away split till / multiple activity requirements.

BIXOLON offers a range of POS, Mobile and Label printing solutions which fit any size hospitality application. Including the new SRP-Q300H mPOS printing hub solution providing easy of connectivity and flexibility to create the ultimate hospitality mPOS solution. Featuring an intelligent hub (B-gate), connecting the Tablet to a host of USB peripheral devices (Dallas reader, Bar and Kitchen Printers, Customer Display, etc.) via Bluetooth whilst also providing a single charging port. Printing receipts or online orders through a native, web and cloud-based mPOS application with B-gate SDK’s (Software Development Kits). Pairing the printer with its new LCD customer Display (BCD3000) and a robust steel tablet stand which safely secures up to a 10-inch tablet using a locking mechanism to provide a complete the solution.

Are you managing your guest experience effectively? Competitive, crowded and fickle – the hospitality industry has certainly faced its fair share of criticism from those who have tried and failed to succeed. But there’s no need to lock up the bar or hang up your apron - there are plenty of opportunities for creative and forward-thinking operators who understand that continuous improvement of their guest experience is vital to stay ahead of the game. Consistency is key Staying ahead of the game however, is generally easier said than done. One of the biggest challenges in the hospitality world is working out how to manage this continuous improvement, making the right changes to attract new guests, while keeping existing customers happy. From our extensive sector experience and work with high profile clients such as wagamama and Pret A Manger, we’ve found that a robust guest experience management system is the most effective way to do this. Introducing ‘The Hub’ That’s why we developed The Hub, a powerful and pioneering guest experience management platform that utilises the latest in business intelligence technology. Complete with configurable dashboards, interactive reports and the ability to stream and analyse data from different sources, the system enables operators to pinpoint exactly which part of the guest journey needs improvement and offers actionable reports that can help make a real difference. The Hub draws together data from client feedback surveys, social media reviews and detailed mystery guest assessments that we conduct. The information is then blended with internet audits, menu analysis and employee surveys to enable hospitality operators to see the big picture and make changes that count.

Makes your life easier Without a guest experience management system, client feedback forms and general surveys tend to be the go-to methods of gathering data from guests. While they can certainly play a valuable part, it takes time to collect, collate and analyse, and this kind of standalone data cannot offer the depth of information necessary to make real and impactful changes. If guests aren’t happy, then your bottom line will soon know about it. Pinpointing change If you think of the guest journey as a timeline, The Hub helps pinpoint and analyse gaps along the way. When the data suggests that key areas of the timeline dip in the eyes of guests on a regular basis, it becomes clear that this is where operators need to up their game. Take the power back The Hub isn’t just another version of a CRM system that you’re left to work out on your own; the expertise of the HGEM team means actionable plans come along for the ride. In this way, we help empower businesses to take control of their guest experience, easily access the information they need and translate this information into tangible results and action plans that will positively impact on their business. Today, HGEM works with over 5,000 restaurants, pubs, hotels and caterers internationally – to join those at the forefront of the sector and find out more about our guest experience management platform, get in touch today on 01225 470999 or email enquiries@hgem.com

Acid tongue?

You’re only as good as your last social review When customers have a bad experience, they don’t just get mad, they take to review sites and social media. For the first time, The Hub by HGEM combines detailed operational assessments with modern guest surveys and online reviews from Google, TripAdvisor and Facebook. Use our actionable insights to monitor and influence what gets posted about you.

It’s a tough time to be in the hospitality and food service sectors. We get it, there’s plenty of doom and gloom out there, but hard times also give everyone a chance to reflect on what’s working and what’s not. Despite the mainstream press, we’re seeing plenty of success stories, with firms using this time to get lean, focus, and beat the competition. Recent years have seen the hospitality sector take leaps and bounds in regards to technology and innovation. From review sites, to reservation systems, to social channels and customer behaviour analytics, there is a wealth of technology available to hospitality businesses to engage with their customers. The sector is getting good at understanding what their target clientele is after, and how to target them using technology. But success is not all about footfall. Beating the market trend goes much deeper than that. Over the 15 years I’ve spent working in hospitality, it’s been fascinating to see the froth around customer-facing technologies. Many an ordering app has come and gone, whilst “back office” technologies and systems remained relatively static. The emphasis has too often been on technology that

just might drive sales, but as time has proved, a lot of hospitality tech has been a solution looking for a problem. There is a huge operational challenge to solve and solving it it will transform your operation.

September 2018

Paper, paper, paper I’ve seen a few back offices in my days and most look very similar. They revolve around a lot of paper, folders and postits. I get it; paper as a communication method is ingrained in our psyche at this point. We’re accustomed to using paper-based systems to manage our businesses from log books to cash up sheets and training manuals. Hospitality has been running on paper for 2000 years so why change? More and more systems are going digital these days, and for good reason. It’s not just that the technology is available and appealing to the “youth” that patronise our establishments and fill out our rota, it’s also because digital systems are more efficient and effective. They bring new ways of working and a fresh approach to management. Paper is difficult to track, update and analyse. It’s a static communication method, and the hospitality sector can do much better.

Consistency & Quality Anyone running a multi-site hospitality business knows that there are mountains to climb when it comes to unifying site performance and

Restaurant & Takeaway Innovation Expo Preview

providing a consistent experience across the brand. It’s a mountain you don’t want to be sitting at the bottom of though, because often your brand is no better than your worst site, and that’s very costly. Think of it this way. Your brand is working hard to drive business through the doors and a certain percentage of that business ends up at a site that’s falling behind. If that site doesn’t provide a good customer experience you’ve essentially wasted the money you spent on driving that business. There are just too many options out there for customers to return to a brand where they had a bad or lackluster experience. The money you’ve been putting into customer facing technology has very little to do with the experience they will have in each of your sites. And that experience matters.

Banishing the back office If the success of your business relies heavily on customers having a good experience once they’ve come through

the door, then doesn’t it make sense that you get your back office systems and technologies up to the same level as your customer facing ones? I believe that the hospitality sector is moving towards the digitisation of the whole operation. Front of House and Back of House. Operational technology will come into line with the advances on the customer facing side. We can track customer behaviour with a fair amount of accuracy, so why wouldn’t we do the same with operations, when we know we can save time and money, and drive sales. This digitision of the “back office” allows operations managers to better manage multiple sites from a single location. It helps Head Office understand high and low performing locations with a snapshot of each one whenever they like. It also allows them to unlock teams’ time to get back in front of the customer. We all know the difficulties the hospitality sector is facing right now. Maybe the solution is to put just as much thought into the technology and systems we use for operations as we do with customer facing elements. If we’re not building efficient, cost-effective operational practices that feed better, more consistent customer experiences, the effort we put into attracting customers is wasted. Is it time to bring your “back office” technologies in line with front of house? Visit the Trail team at booth #2280 at the Restaurant & Takeaway Innovation Expo. See you soon! Glory will be speaking at this year’s Hotel & Spa Tech Live Show – Chris Webb will be presenting on “The Importance of Cash in Today’s Society”

What does this mean for businesses today? Whether we consider the retail, banking or service sectors, there is a continuing need to process cash efficiently. In highly competitive markets the key to improved margins is reduced costs and effective use of resources, while at the same time delivering best in class customer service.

“We would debate that limiting consumers to one choice of payment doesn’t work from a personal choice, but also from a technology perspective. 9 out of 10 global consumers use cash on a daily, weekly and monthly basis. Hear about how cash has evolved over the years and how it has featured throughout the payments evolution. After all, cash still makes the world ‘go round’.

As well as reducing losses due to error and shrinkage, the effective deployment of cash handling solutions allows you to free up staff from labour intensive costly processing tasks, enabling them to refocus on higher value customer facing activities. It’s about keeping cash in motion, both in the front and back office. When it comes to efficient operation, as well as focusing on the supply chain, progressive companies recognise the importance of cash chain management in delivering competitive advantage.

Glory is the world’s leading cash technology solutions company. Operating across the financial, retail, cash centre and gaming industries, businesses in more than 100 countries rely on our solutions to enhance staff efficiency, reduce operating costs and enable a better customer experience. With more live cash solutions around the world than anyone else, we work in partnership with our customers to understand their challenges and what’s required at the point of cash interaction. Our experts identify exact needs, establishing a framework of technology and process change that has a tangible effect on business results. This framework delivers a proven return on investment and sees new levels of customer engagement. We help optimise the Retail Cash Chain to secure, automate and accelerate the flow of cash from the point of sale to the retailer’s bank account. As the

leading supplier of cash processing systems, including vault software, our coin and note processing solutions deliver the lowest cost per note metrics for our customers around the world. RoomNetTV to showcase definitive Apple IPTV solution for hotels at Hotel & Spa Tech Live – Stand 4614 RoomNetTV is set to showcase its definitive Apple IPTV solution to attendees of Hotel & Spa Tech Live, as it demonstrates the latest development of its Apple TV platform to the hospitality industry.

RoomNetTV, the Apple experts in hospitality, will be exhibiting on stand 4614 at Hotel & Spa Tech Live, where its team will be on hand to talk through the benefits of their innovative new offering.

Through RoomNetTV’s pioneering new offering, hotel guests can now watch live IPTV services using a hotel’s existing infrastructure directly on the Apple TV in glorious 4k HDR.

In addition, RoomNetTV’s CEO, Darren King, will be part of a panel session at the show, where he’ll be discussing how hoteliers can go about leveraging Guestroom Technology to enhance the Customer Experience.

Hotel guests can login to the Apple TV with their own accounts for iTunes, Netflix, Amazon, YouTube, Hulu and much more to watch their favourite TV shows or movies, safe in the knowledge that when they check-out all their login credentials are removed from the Apple TV. This has been made possible by the introduction of Mobile Device Management (MDM) for Apple TV, which RoomNetTV has successfully integrated with the hotels PMS system. On top of this, hoteliers can also utilise the Guest Services application via Apple TV to facilitate guest access to in-room dining, hotel information, lighting controls and more, all of which can be tailored to individual hotels.

Darren said of the firm’s pioneering IPTV solution: “In 2012 we introduced hotels to guest room streaming using Apple TV, enabling guests to watch their content wirelessly on the hotel TV via Airplay. Our latest ‘industry first’ offers AppleTV4 in its native form, allowing guests to use it as they do at home. Couple the huge Apple App/ Content ecosystem with our ‘Live TV’ App for watching the hotels IPTV channels, and we believe we provide the most comprehensive guest room entertainment solution available anywhere in the world.” Through RoomNetTV, guests can also access their Apple DRM protected

content, play their gaming apps, surf the internet, and more, directly via their guestroom TV without risk of their personal content being available to other hotel guests. Darren King added: “Our philosophy is centred on offering a truly unique home-away-from-home hotel experience that enables guests to watch what they want, when they want. Access to personalised content enhances a guest’s stay, providing a more enjoyable experience.” He concluded: “In room entertainment services play a huge part in guests’ perception of a hotel – by providing such a diversity of choice, hotels will only serve to enhance their image in the eyes of their guests.” For more information about RoomNetTV please visit www.roomnettv.com or email sales@roomnettv.com.

THE CURSE OF SPLASH-BACK! If you’ve ever used a urinal, you’ll know exactly where we’re coming from!

For any ladies’ reading this, we apologise in advance for the content below but it’s an important plight. This is right up there with other unexplained male phenomena such as Man Flu and the inability to multi-task. Whether you’re a guy who likes to rock a banging pair of pastel coloured chino’s or has spent the entire Summer in nothing but flip-flops, we’re certain you will at some stage have encountered the dreaded urinal splash-back! The thing is, aside from the embarrassment of pee stained clothing and wet feet, there are actually bigger issues to worry about, particularly for washroom owners! The reality is that even with the best will and aim in the world, when a chap uses a urinal it is entirely possible for little droplets of pee to travel up to 5 feet! That means that without question, pee droplets are landing on the walls and floors and probably on the person standing next to them at the urinal! Time to bore you with some science Uric Acid is the chemical in urine that is made from a natural breakdown of the body’s cells. Too much of it in our systems can crystalise around the joints and give us gout. The same principle rings true in urinals with uric acid gradually forming crystals in the waste pipes over time.

Once it reaches this stage, it’s really horrible and smelly stuff - ask anyone who has had to unblock a clogged urinal before! The problem is that this pungent biproduct can be left behind in porous surfaces or grout when urine splashes out of the urinal. Over time these areas can start to smell worse than a shoal of dead fish in a dirty aquarium and suddenly the prospect of devouring the beer battered cod and chips on the pub or restaurant menu isn’t quite so appealing! Fortunately - you can thank us later, innovative solutions are coming to market to help reduce urinal splash-back, keeping trousers and feet dry, and helping to reduce urine stench in washrooms. Take our all new Hex & Trough urinal screens for example. Not only are they the most fragrant on the market, they will also reduce urinal splash by up to 95% Peeing really is believing! Look out for us on your quest for a splash-free experience, and if in the meantime you happen to frequent a bathroom that doesn’t have P-Wave Hex screens, make sure you observe the bro-code and leave at least one space between you and your fellow urinal users, splash-back really is a curse and even more so when it’s someone else’s!

P-Wave are market leaders in air freshening products in the UK, for more information on their 30 day, 100% recyclable air care range, visit www.p-wave.co.uk

Servaclean Bar Systems - 30 years in the making- the story of one of Britain’s best known bar fitments manufacturers

New ‘FOLDABar’ folding units are currently being developed for launch this summer and will provide a quick assembly bar solution to enable portable bar operators to offer a professional, transportable service or venues with a pop-up bar counter where storage space is limited.

September 2018

“I was delighted to choose Servaclean to plan and supply my new stainless steel underbar. A “Premium” product with service to match.” Mr Allesandro Bevilacqua, Proprietor – Da Sandro Italian Restaurant & Bar, Huddersfield

showroom and warehouse just a few miles from its original home. Product Innovation has always been a big part of Servaclean’s success and as well as their comprehensive range of fixed bar products, they have ‘MOVERBar’ mobile bar units with fitment configurations to serve draught beers, cocktails and coffee service.

Servaclean is now run by directors Deana Roberts and Andy Royston – the next family generation of the respective co-founders. Andy Royston, Managing Director, says ‘Our dedicated and experienced employees understand that listening to customers’ needs is the basis for planning an efficient and ultimately profitable bar service. Successful bar operators are always looking for the next unique and interesting bar trend to generate business growth and, using the same philosophy, Servaclean are committed to the continued development of our modular stainless steel product range and planning services to help them achieve the best possible bar operation for their business model’.

All staff outside Blacksheep Brewery

On 1st August this year (Yorkshire Day no less!) Servaclean will celebrate its 30th Anniversary. It was in 1988 when Servaclean was launched by co-founders Cliff Livsey (a publican) and Chris Royston (a modular shelving salesman). Those were the days of Blackadder, Michael Jackson & Crocodile Dundee. The British pound note ceased to be legal tender and laws restricting opening times for UK Pubs were changed allowing Pubs to stay open all day! At that time the major brewers, who owned and operated most of the pubs in the UK, were striving to achieve a completely clean glass in

which to serve “the perfect pint” and Servaclean’s ‘GLASShelf’ - hygienic glass storage shelving was developed with this specific purpose in mind. ‘GLASShelf’ was a big success and led to an increased demand for better planning and organisation of bar operations across the whole hospitality industry and in turn the Servaclean FREE Bar Planning Service was born. It is said that “necessity is the mother of invention” and, just a few years later, Servaclean’s stainless steel Bar Counter Building System had been developed and was being installed in many venues for the major hospitality operators in the UK. Continued growth and success followed and in 1995 Servaclean moved into a new purpose-built office,

On 27th July 2018, to celebrate Servaclean’s 30th anniversary, the Servaclean team enjoyed a visit to the Blacksheep Brewery in Masham for a brewery tour, a spot of lunch and a few beers from the bar which Servaclean installed earlier this year. Andy continues ‘We raised more than a few spotless, hygienically clean glasses to all our customers and product specifiers and would like to take this opportunity to thank them all for their valued support over the last 30 years. Together, we look forward to achieving even greater success over the next 30+ years….’ If you would like Servaclean to help you with your next bar project please get in touch; they’d love to hear from you. Kolibri Drinks, the future of soft drinks is bespoke! UK soft drinks manufacturer Kolibri believes that bespoke is the future and launched the world’s first bottled drinks which allow consumers to control the amount of sugar in their drink. The category of customisable drinks could be a game-changer for consumers who want healthy, great tasting and indulgent options but also new experiences, engaging ritual and theatre. The adventurous, alcohol-free range was designed exclusively for prestige hospitality where guests want it all. Abstain and indulge in equal measures. Thoughtful yet flexible menus they can further adjust to preference. Multisensory food and drinks experiences but with the ability to control ingredients to match their individual needs. Yes, guests want to have their cake and eat it too. Kolibri Drinks come in three different flavours: Elderflower & Lime, Cardamom & Chilli and Strawberry & Basil. These botanical drinks don’t contain sugar, but the cap on top is

filled with an amber Agave blend which is naturally sweet. The nectar can be released into the drink to create a dash of sweetness with a hint of caramel and zesty tang of lemons. Co-founder and creator Kamila Sitwell believes that major suppliers have become complacent offering shortsighted and inadequate solutions to the sugar challenge such as artificial sweeteners, diluted recipes and smaller packaging. “Sea of sameness out there with different flavours at best! Sugar, like any natural ingredient, is only a problem when it’s over-engineered in recipes. Kolibri are designed to give discerning guests complete control over their drinks’ taste and the sugar content. And the best part, the ‘twist in the cap’, is that Kolibri has no more than 40 Kcal per bottle even when all the Kolibri Drops are used. Indulgence with a clear conscience, don’t you agree?!” The taste of these drinks has been praised by Douglas Blyde, the renowned gastronomy advisor and drinks critic. ‘I like the liberation of

being able to accurately adjust the level of sweetness in my Kolibri according to mood or even the richness of an accompanying dish. This ‘dosage’ is comparable, believe it or not, to Champagne, where a base wine is finished with a ‘liqueur d’expédition’ which determines whether the formerly bone dry sparkling wine becomes Brut, Extra Sec, Extra Dry, Demi-Sec or Doux...’ If you would like your guests to experience Kolibri drinks, please explore our website www.kolibridrinks.co.uk and contact us for more information.
