Gaucho Group confident of sale in next ‘two to three weeks’ The Gaucho Group has said it is confident its Argentinian steak restaurants will be sold “within the next two to three weeks”. CEO Oliver Meakin said the restaurants were “profitable and completely sustainable” adding that further expansion was likely following the sale. He explained: “We are talking to potential buyers about future UK expansion, as we believe there are a least a further six locations where Gaucho would trade successfully. “We also believe that Gaucho could trade successfully in Western Europe with openings under our management. In addition, prior to the sale process, we were discussing a number of franchise opportunities in the Middle East with a local business partner.”

UKHospitality supports calls to scrap immigration targets post-Brexit The CBI has called for a system that ensures those coming to the UK make a positive economic impact, but does not restrict immigration to high earners. It suggests EU citizens should be registered on arrival, with visits restricted to three months for those who cannot “prove they are working, studying or self sufficient”. The business group said applying the current non-EU immigration schemes to those from the EU post-Brexit would hit small businesses. UKHospitality chief executive Kate Nicholls said: “This report highlights the pressing need for a future immigration policy that exists to support the UK economy. The CBI’s report also underlines the need for a discussion about the realities and practicalities of migration to the UK and its effect on business.

BDO LLP have been appointed joint administrators to the company, which had sites in Great Portland Street and St James’. A statement posted to Villandry’s website reads: “Martha Thompson and Sarah Rayment of BDO LLP were appointed joint administrators of Villandry Restaurant Foodstore Limited (‘the Company’) on 9 August 2018. “The affairs, business and property of the Company are now being managed by the Joint Administrators.” Last week it was reported that the chain, run former Le Pain Quotidien director Philippe Le Roux, was searching for a buyer following the doubling of rent at its Great Portland Street site, a 16% increase at St James’ and the loss an outlet at Biscester Village, near Oxford, which had accounted for 47% of turnover. The company’s last filed accounts, for the year to 31 March 2017, outlined cost reduction measures as it reported a pre-tax loss of £1.5m.

As chef Adam Handling’s new bar Iron Stag readies for its official opening, Imbibe caught up with cocktail gurus Matt Whiley and Rich Woods to discuss Irn-Bru, prebatched cocktails and bringing whisky to the masses Being tasked with opening an ‘approachable’ whisky bar would seem like a daunting prospect to most people, but if there’s one category that needs more bar innovators, it’s whisky. After all, a recent survey from William Grant & Sons revealed that 75% of consumers claim to have little knowledge of the category.

When you consider that most whisky bars boast huge, often daunting, lists of whisky and can be more than liberal with the tartan than one would perhaps like, it’s always exciting to hear of a new venue aiming to move away from that image. Matt Whiley and Rich Woods are the latest to take up the challenge at Iron Stag, a venue set a 10-minute walk from Black Rock, another bar challenging the stuffy image of whisky bars. ‘If you’re [working]in a bar, you get to set the trend for young people, rather than you being dictated what it is,’ says Whiley. ‘We’re looking to break those preconceptions about whisky,’ adds Woods. Bold talk, but with CVs spanning Purl, Worship Street Whistling Shop, Peg + Patriot and Scout (Whiley), and Duck & Waffle and SushiSamba (Woods), it’s not so hard to concede the point. The venture in question is Iron Stag, which soft launched last month, a subterranean cocktail bar that resides beneath Adam Handling’s recently relocated restaurant The Frog Hoxton. The acclaimed Scottish chef came to the pair with the idea of an ‘approachable venue for whisky’ with a ‘gentlemen’s club vibe’.

Brewhouse & Kitchen win The Tapsters 2018 at Imbibe Live Crafty Zealots beat off a strong challenge from the New World MoB to clinch The Tapsters 2018 title on the second day of Imbibe Live. With five close rounds, it was the food matching and beer and cider tips from Crafty Zealots allied with the quick wits of the team’s Jordan Childs during the final round quiz that clinched the prize – a trip to Cork with Franciscan Well Brewery – for the Brewhouse & Kitchen team. The competition Mary Topp, The Cider House at Borough Market, joined beer sommelier Ed Hughes, Sharps Brewery, and chair of judges, beer writer Pete Brown, to form this year’s expert panel, with mistress of ceremonies Annabel Smith and cider educator Gabe Smith in adjudication mode. New World MoB edged into a one-point lead at the end of Round 1 with their explanation for the causes of iso-valeric acid, that cheesy note produced by bacterial spoilage, following both teams’ correct identification of four beer and cider faults, kindly supplied by FlavorActiv. However Crafty Zealots turned the tables in Round 2 as the teams’ responses to real-life scenarios were judged by both audience and expert panel. Crafty Zealots won both audience and judges’ vote for the first two scenarios, suggesting Jaipur as the best match for chicken sag, and a perry for a mozzarella, tomato and basil salad. Next up, beer and cider suggestions for those who don’t normally drink them. Alternatives for a Margarita split the audience down the middle as to whether a New World MoB’s Siren Calypso or the host of choices proposed by Childs would win the drinker over. New World MoB valiantly pulled itself back into the running by winning the final scenario with the inspired suggestion of Wild Beer Co’s Dr Todd for a Whisky Sour lover. This is a strong citrus sour, brewed with ginger and aged in Islay whisky barrels with British Black Bee honey, finished with more ginger and lemon zest. At the end of Round 2, Crafty Zealots had taken a commanding 17-point lead, scoring 80 vs 62 for the round, taking the scores to 111 vs 94. Round 3, identifying beer and cider styles, was even stevens, with both teams correctly calling two out of the four styles judged blind. New World MoB’s Stella Royale Evans reduced the deficit by narrowly winning the judges’ vote for her Cider Throwing, taking the scores to 154 to 139 at the end of Round 4.

Bulmers’ apple farmers facing glut as consumers favour fruit ciders Its apples have been feeding the ravenous presses of cider-making giant Bulmers for almost 60 years. But this autumn, Herefordshire’s Grove Farm faces an unexpected quandary – unless it can find a buyer for its 50-tonne harvest, the apples will be scraped, rotting, from the ground to make way for grazing sheep. Soon after, bulldozers could flatten the farm’s 70-year-old orchard – where seven, traditional bittersweet apple varieties thrive – to firewood. ‘It’s a shame,’ says farmer Tim Bunting. ‘We had a stewardship with Natural England to keep it as a traditional orchard – no fertilizers or sprays – and I know we have woodpeckers in there. ‘I’m loth to get the bulldozers in, but that would be the easiest option. I have to be realistic.’ Among the 180 or so Herefordshire apple growers supplying Bulmers – owned since 2008 by global drinks giant Heineken – Mr Bunting is far from alone. A perfect storm of improved farm productivity, ambitious tree planting and a shift among British drinkers towards sweet fruit ciders has resulted in a glut of the bittersweet apple varieties that make up the backbone of traditional mass market fare like Heineken’s Strongbow. As a result, Heineken – the world’s biggest cider producer – is now negotiating compensation packages to buy some growers out of their long-term contracts, leaving a question mark hanging over the future of their trees. Silenced by non-disclosure agreements, many are reluctant talk. One long-established grower, who asked not to be named, explained: ‘Bulmers has been good to me so – pardon the pun – I don’t want to upset the apple cart. There’s an oversupply. I don’t have anyone else to sell my apples to. ‘But too many trees were planted ten years ago, and there’s an over-supply of fruit. We’re trying to resolve it with Heineken, but the reality is I don’t have anyone else to sell my apples to.’ Another, who has retained his contract while taking a number of acres out of production, said: ‘The powers that be didn’t do their sums – they didn’t bank on mature trees yielding so much fruit.

CLEAN extends its green credentials further with plastic reduction Leading hospitality laundry provider CLEAN is now saving the equivalent weight of two doubledecker buses of plastic per year, after reducing its use of shrink film across its seven laundries. The award-winning sustainable-focused company has reduced the thickness of the essential film from 13 microns to 12. LOFAssured initiative gains strength across the garden furniture industry with twenty-three members already certified LOFA’s (Leisure and Outdoor Furniture Association) “LOFAssured” initiative ensures that all cushions sold by members comply with current government fire safety regulations. LOFA is raising awareness of fire safety standards/ regulations for garden furniture cushions in this young campaign and, already, twenty-three members are certified with 15 in progress and soon to be completed. One of the conditions of LOFA membership is that members must adhere to a code of conduct, part of which is compliance with all current legislation; it is this culture of propriety that the retailer and customer buy into when they source product from LOFA members. LOFAssured is a distinguishing factor setting LOFA products apart from other non-compliant suppliers. LOFA appointed FIRA (Furniture Industry Research Association) and entered into a Primary Authority Partnership with HertfordshireTrading Standards to aid the members in their quest for full compliance.

The whole experience of the Day out at Windsor racecourse was a brilliant one. The day started with our train journey, with easy changes that took us to Windsor train station. We then had a short walk to catch a boat along the Thames. What a lovely start this was as we travelled along the river, followed by so many swans and ducks until we arrived at the racecourse. The boats weren’t over crowded at all and you had the choice of sitting downstairs in the bar or up on the top deck, which although covered was more open for viewing. As we arrived at Windsor racecourse, it looked lovely as it is set in 165 acres of countryside and very well maintained. There wasn’t a queue for us to pick up our entrance tickets, which had been booked in advance. We had the 1866 Package, which gave us access to the 1866 panoramic restaurant, only a short walk through the gates. It also includes hospitality parking, should we have chosen to come by car. The restaurant was bright and airy and had a fantastic view of the racecourse and winning line. There were also many TVs in sight all around the restaurant should you wish to just sit and relax and watch the racing. We were welcomed by the staff who were very friendly and efficient, and immediately served us with welcome drinks on our arrival. We sat at our table and started with our three course meal whilst studying the race cards for the days meeting. The food was a la carte to cater for a wide range of tastes, but it was all delicious and cooked to perfection, and the waiting staff were excellent. Staff from the totes that were in the restaurant visited the table to explain the cards and how to place any bets and competitions available. I found this very useful and informative for anyone that wasn’t

a regular racecourse goer. It was also very convenient to be able to place the bets (and collect winnings!) only a few feet from the table. The staff continued to keep us in drinks for the rest of the afternoon so we could come and go as we pleased, because the table was reserved for us for the whole afternoon. We went out to watch the winning line close up on a few races, as our entry ticket permitted us to enter the enclosure by the winning post too. There was also so much going on with stalls, fairground rides and many attractions to keep the whole family amused. There are many events happening throughout the spring and summer months, on Mondays from April through to October, with music acts to suit all tastes. The 1866 package was very good value for money, but there are quite a few different packages available to cover all budgets and requirements. The best treat of the day was also still to come, as we were allowed to visit the parade ring as part of this package, to see the horses, jockeys and owners close up. This was a very memorable visit as we actually got to meet Matt Chapman who was filming live for at the races. We had photos with him and actually ended up on the TV in the background as we voted for the best turned out horse. This can also be purchased separately if you don’t have a package and I would say is well worth the bit extra. The whole day was fantastic, and everyone in our group said that they would love to do it all again as they had such a brilliant time. Well done Windsor racecourse.

They include flat-screen TVs .The room had everything covered for the ultimate stay to include bath robes, down to the added Nespresso machine which provided you with an array of hot drinks at your own disposal.

The food The hotel’s Petrichor restaurant has a fine reputation and from start to finish the attention to the service and presentation of the food was outstanding. The restaurant is everything you could want after a day in the city.

I opted for: salmon and goats cheese salad followed by rump of lamb, and desert was white chocolate cheesecake accompanied by strawberry Italian ice cream. All of which were really enjoyable and left you feeling satisfied. I finished my dining experience by going into the petrochemical bar and lounge whereby again the customer service was superb and you were made to feel very welcome which certainly topped off the whole experience of the Cavendish and its charm.

The Cavendish is a jewel in the crown of London tourism and the boutique hotel experience. This well situated hotel is a must stay in any ones hotel list.

Marston’s is well known as a brewer of premium ales, such as Pedigree and Hobgoblin, and for its Destination and Premium pubs, including brands like Pitcher & Piano. Marston’s PLC needed to cost effectively improve communications between its 2,000 pubs and its head office, to eradicate the poor service, traditionally received by more established service providers.

We started out with basic services, such as telephony and lines for card payment terminals, before adding data communications to our portfolio. Five years ago, we took this to the next level with the initiation of an extensive Ethernet roll-out.

Today, Marston’s Telecoms has four UK datacentres and a turnover of almost £8 million, up from £500,000 in 2008. We own and manages our own dark fibre throughout London, interconnecting directly in to the UK internet infrastructure, ensuring transit and connectivity, which provides our customers with broadband/Ethernet, managed WANs, carrier services, hosted voice and managed Wi-Fi. It’s a tough time to be in the hospitality and food service sectors. We get it, there’s plenty of doom and gloom out there, but hard times also give everyone a chance to reflect on what’s working and what’s not. Despite the mainstream press, we’re seeing plenty of success stories, with firms using this time to get lean, focus, and beat the competition. Recent years have seen the hospitality sector take leaps and bounds in regards to technology and innovation. From review sites, to reservation systems, to social channels and customer behaviour analytics, there is a wealth of technology available to hospitality businesses to engage with their customers. The sector is getting good at understanding what their target clientele is after, and how to target them using technology. But success is not all about footfall. Beating the market trend goes much deeper than that. Over the 15 years I’ve spent working in hospitality, it’s been fascinating to see the froth around customer-facing technologies. Many an ordering app has come and gone, whilst “back office” technologies and systems remained relatively static. The emphasis has too often been on technology that

just might drive sales, but as time has proved, a lot of hospitality tech has been a solution looking for a problem. There is a huge operational challenge to solve and solving it it will transform your operation.

Paper, paper, paper I’ve seen a few back offices in my days and most look very similar. They revolve around a lot of paper, folders and postits. I get it; paper as a communication method is ingrained in our psyche at this point. We’re accustomed to using paper-based systems to manage our businesses from log books to cash up sheets and training manuals. Hospitality has been running on paper for 2000 years so why change? More and more systems are going digital these days, and for good reason. It’s not just that the technology is available and appealing to the “youth” that patronise our establishments and fill out our rota, it’s also because digital systems are more efficient and effective. They bring new ways of working and a fresh approach to management. Paper is difficult to track, update and analyse. It’s a static communication method, and the hospitality sector can do much better.

Consistency & Quality Anyone running a multi-site hospitality business knows that there are mountains to climb when it comes to unifying site performance and

providing a consistent experience across the brand. It’s a mountain you don’t want to be sitting at the bottom of though, because often your brand is no better than your worst site, and that’s very costly. Think of it this way. Your brand is working hard to drive business through the doors and a certain percentage of that business ends up at a site that’s falling behind. If that site doesn’t provide a good customer experience you’ve essentially wasted the money you spent on driving that business. There are just too many options out there for customers to return to a brand where they had a bad or lackluster experience. The money you’ve been putting into customer facing technology has very little to do with the experience they will have in each of your sites. And that experience matters.

Banishing the back office If the success of your business relies heavily on customers having a good experience once they’ve come through

the door, then doesn’t it make sense that you get your back office systems and technologies up to the same level as your customer facing ones? I believe that the hospitality sector is moving towards the digitisation of the whole operation. Front of House and Back of House. Operational technology will come into line with the advances on the customer facing side. We can track customer behaviour with a fair amount of accuracy, so why wouldn’t we do the same with operations, when we know we can save time and money, and drive sales. This digitision of the “back office” allows operations managers to better manage multiple sites from a single location. It helps Head Office understand high and low performing locations with a snapshot of each one whenever they like. It also allows them to unlock teams’ time to get back in front of the customer. We all know the difficulties the hospitality sector is facing right now. Maybe the solution is to put just as much thought into the technology and systems we use for operations as we do with customer facing elements. If we’re not building efficient, cost-effective operational practices that feed better, more consistent customer experiences, the effort we put into attracting customers is wasted. THE CURSE OF SPLASH-BACK! If you’ve ever used a urinal, you’ll know exactly where we’re coming from!

Over time these areas can start to smell worse than a shoal of dead fish in a dirty aquarium and suddenly the prospect of devouring the beer battered cod and chips on the pub or restaurant menu isn’t quite so appealing! On 1st August this year (Yorkshire Day no less!) Servaclean will celebrate its 30th Anniversary. It was in 1988 when Servaclean was launched by co-founders Cliff Livsey (a publican) and Chris Royston (a modular shelving salesman). Those were the days of Blackadder, Michael Jackson & Crocodile Dundee. The British pound note ceased to be legal tender and laws restricting opening times for UK Pubs were changed allowing Pubs to stay open all day! At that time the major brewers, who owned and operated most of the pubs in the UK, were striving to achieve a completely clean glass in

which to serve “the perfect pint” and Servaclean’s ‘GLASShelf’ - hygienic glass storage shelving was developed with this specific purpose in mind. ‘GLASShelf’ was a big success and led to an increased demand for better planning and organisation of bar operations across the whole hospitality industry and in turn the Servaclean FREE Bar Planning Service was born. It is said that “necessity is the mother of invention” and, just a few years later, Servaclean’s stainless steel Bar Counter Building System had been developed and was being installed in many venues for the major hospitality operators in the UK. Continued growth and success followed and in 1995 Servaclean moved into a new purpose-built office,
