The Australian-born culinary maestro brings to The Truscott Arms a reputation for creating deceptively simple dishes that let the natural flavours of great quality ingredients shine. Having honed his craft at Queensland’s acclaimed Liquorish Bistro & Bar under head chef Peter Christensen, Barry spent three years working for award-winning catering company, Sustainable Catering Services. Arriving in the UK in 2012 he immediately secured a position at the Michelin star Chez Bruce.

Since his arrival in W9, Barry has been hard at work creating new dishes for both the fine dining restaurant and the downstairs pub. The newly introduced dinner menu is brimming with the local, seasonal and sustainable ingredients that have become the hallmark of the Truscott Arms’ offering. Many of dishes on the menu change regularly, dependent on what is in season, but sample starters include such standouts as Roast quail with confit leg, Jerusalem artichoke purée, pickled shallot & meat juice vinaigrette and Cornish mussels with razor clams, brown shrimps, cod brandade, bisque & samphire. Mains meanwhile are a continuation of the theme, spearheaded by exceptional creations like Wild sea bass with prawns, Lyonnaise potatoes, watercress purée, Brittany purple cauliflower & braised fennel; Roast Yorkshire grouse with creamed savoy cabbage, braised shallot, damsons, roasted Jerusalem artichoke & sauce grand-veneur and Smoked loin of fallow deer, confit & pickled beetroots, fennel & Cumberland sauce. To finish are a range of delectable desserts, among them Fig semi-freddo, lemon curd & pistachio cream and Sailor Jerry rum, orange & Valhrona chocolate tart with lovage ice cream. Barry arrives at The Truscott Arms at an exciting time for the restaurant. Although only opened in the spring, it has already received a Three Star Rating from the Sustainable Restaurant Association, the organisation’s highest mark for global sustainability as well as being named by the Evening Standard as among the Top 10 places to eat in the capital alongside Claridge’s and Dinner by Heston Blumenthal.
