Fourpure bought by Lion – another craft bites the dust Fourpure has become the latest UK craft brewer to be bought up by a multinational. The London-based firm, famed for its Pils and Session IPA, confirmed that it had been acquired by Australian-based beer company Lion for an undisclosed sum. It follows hard on the heels of acquisitions of the likes of Beavertown (Heineken), Aspall Cyder (Molson Coors), Meantime (SAB Miller then Asahi) and Camden Brewery (Anheuser-Busch InBev). The Beavertown sale, in particular, angered many craft beer fans, who were not slow to let their feelings be known on social media. But Fourpure claims that its new owners are singing from the same hymn sheet. ‘Lion’s past investments in craft breweries in Australia and New Zealand, including Little Creatures, have always respected the beer and the

Two bedrooms and a living room overlook a private 67-sqm pool with a spacious sun deck, while a traditional Thai sala extends over the serene lagoon. Drawing inspiration from the natural surroundings of Mai Khao, the villa impeccably blends Jim Thompson fabrics into its designs. The living room is filled with fabrics shaded blue and white for a nautical feel, offset by woods

with sandy hues. Both bathrooms tempt with terrazzo bathtubs and open-air, but secluded, showers. The villa’s flooring is natural Thai Makha, a rare hardwood highly prized for its gorgeous patina and unique grains. Classic Thai Pikul flower designs adorn the internal doors and mini bar. Elegant Thai artwork and carvings leave no question of the Jim Thompson Villa’s Thai heritage.

“We have a passion for enhancing our pool villas so that guests can enjoy the full beauty of Anantara Mai Khao, inside and out,” explains Nikolaus Priesnitz General Manager of Anantara Mai Khao. “The Two-Bedroom Royal Villa by Jim Thompson offers a secluded retreat with luxury amenities and is ideal for families, while highlighting the gorgeous designs of a truly beloved Thai treasure.”

The master bedroom’s centrepiece is Jim Thompson’s Heliconia Dreamin’, inspired by the exotic Heliconia flower that still flourishes at Jim Thompson’s former home, creating a vibrant lightness that extends to the swimming pool and sala. The twin bedroom features Floriental, a whimsical print of birds and butterflies frolicking among peonies, for a playful atmosphere overlooking the pool and gardens.

The sumptuousness extends beyond the exquisite design. Welcomed with flowers and fresh fruit juices on arrival, guests can proceed directly to the Two Bedroom Royal Villa by Jim Thompson so that they can unpack and settle in while checking in. New Budget Boosting Bedding Scheme to communicate the discount to guests. As we have a consumer website it was a great opportunity for everyone to benefit. “The Fine Bedding Company brand is highly regarded by consumers and is associated with the ultimate luxurious night’s sleep. Like with many other branded products that now help to convey a luxury experience within a hotel or guesthouse featuring our bedding will complement these messages.”

After a successful trial, The Fine Bedding Company Hospitality Division is rolling out its Boost Your Budget Scheme to all new customers.

will receive around £4.33 in commission (commission is based on net amount with discount). Making it a win-win for all.

The initiative allows hoteliers to earn credit towards future bedding purchases when guests use the hotel’s unique code to buy duvets, pillows or toppers from The Fine Bedding Company’s consumer website www.finebedding.co.uk.

The scheme is extremely easy for hotels and guesthouses to implement. The Fine Bedding Company supplies promotional flyers that can be displayed in rooms or in social areas, plus business cards on which the hotel’s bedding and the unique purchase code is printed, for reception to hand to interested guests. The purchase is tracked via the online code and the hotel receives a percentage of the sale applied as credit to be used on future purchases by the hotel.

Boost Your Budget was conceived on the back of research by The Fine Bedding Company Hospitality Division that showed 74 per cent of hotel guests would consider buying the same bedding products used by a hotel or guesthouse if they really liked sleeping under them. 20 per cent of respondents said they would definitely buy a hotel’s bedding they liked and 54 per cent said they would definitely consider it. The decision to create the scheme was further bolstered with positive feedback from hoteliers who were all in favour of benefitting from earning money off their bedding procurement costs by incentivising guests. Through the scheme, consumers are encouraged to recreate their Fine Bedding Company bedding hotel experience with an exclusive 20 per cent online discount to use on finebedding. co.uk, courtesy of the hotel.

Jeanette Sadler, The Fine Bedding Company Hospitality Division’s business manager, explains: “We listened to our hospitality customers, many of who fed back to us just how popular our products were with customers who were repeatedly asking whether they could buy them. Frequent positive guest reviews commenting on how much they loved our bedding was further encouragement. “We also polled consumers about their hotel bedding experiences and how much of an influence the quality of their hotel bedding was on their purchasing decisions when they were looking to buy new duvets, pillows and toppers for their own homes. And it all showed that was huge demand for the Boost Your Budget scheme.”

10 per cent of the amount guests spend using the hotel’s unique code (less VAT) is then credited to the hotel against future sales – meaning that hotels can easily boost their housekeeping budgets.

Jeanette continues: “The idea is that as guests buy The Fine Bedding Company products online, the hotel’s duvet and pillow ongoing purchases become selffunding.

For example, if a guest buys a £65 10.5 tog king size Spundown duvet, the hotel

“We’ve made the initiative as easy as possible for hotels to join, and we provide all of the promotional materials needed

6

The scheme is available across The Fine Bedding Company Hospitality Division’s full product range that includes its popular Spundown duvets and pillows, loved by housekeepers and consumers alike for their washability and quality credentials; its Boutique Silk range that features Smartfil blended with natural silk; Goose Down duvets and pillows and Goose Feather and Down duvets. It’s also available on The Fine Bedding Company’s innovative new Smartdown duvet and pillow, launched last year, that mimics a luxurious Hungarian Goose Down duvet but uses recycled plastic to create soft silky fibres. The Smartdown collection is made in The Fine Bedding Company’s ECO Factory and has strong environmental credentials. This provides a great ECO message for hoteliers to convey to guests and to offer greener alternatives during their stay. Toppers and protectors are also included in the scheme and these include Classic Cotton and Spundown Pillow Protectors, a quilted waterproof mattress protector, Spundown Mattress Enhancer and Dual Layer Topper – a product that has been created from the feedback received from hotels around the issues associated with Zip and Link beds. The solution provides the upmost comfort and a product that can convert in seconds from a super king topper to two twin toppers. No storage is required as it eliminates the need to have multiple toppers. It’s also fully washable. EAT. DRINK. SLEEP August 2018

The story began at the end of 2015 when three Yorkshire businessmen joined forces to launch an innovative, new soft drink to meet the growing needs of the non-drinker, by producing a natural and unique premium Low ABV drink, called Teetotal GnT with all the flavour of a classic Gin and tonic.

Today whilst bars sell a lot of soft drinks, many people are looking for a better choice and want more than the range of fizzy drinks or mixers. The desire for a premium natural drink with only 52%kcal in Teetotal GnT and 78 kcal in Teetotal Cuba Libre is very appealing. Both drinks are vegan friendly and gluten free. The attractive vintage style 200ml bottles are very appealing and mimic an alcoholic pre-mixed drink. This is an important aspect to customers who want to feel part of the party, when not drinking.

Helping retailers and the on-trade tap into the non-alcoholic drinks category, The Temperance Spirit company are pro-actively reaching out to wholesalers throughout the UK to build their distribution. However they will deliver directly to any outlet on mainland UK where traditional distribution is not in place. On average, 30% of people go to a pub and don’t drink alcohol so if you can offer something that your local competitors aren’t, you are sure to cash in on the high demand. If you are a destination venue, have a great lunchtime trade, serve afternoon tea, then Teetotal GnT and recently added Teetotal Cuba Libre, with all the flavour of Rum and Cola would be a perfect addition to your drinks list. Ask your wholesaler if they can supply you or feel free to contact us on orders@ttscompany.co.uk

and refreshments are served there throughout the day. The main infinity swimming pool is the centrepiece of the public areas offering a wonderfully relaxed setting for a day of sunbathing and swimming. The pool has plenty of sunbeds and throughout our stay we never had an issue finding a space and beach towels are changed on a regular basis and the staff surrounding the pool are more than happy to assist. Within the infinity pool is a fantastic pool bar which runs until 6pm, offering a selection of mocktails and cocktails, as well as beer which is served in iced glasses adding to the refreshment and

plenty of water is available to keep you cool as the sun browns your skin. Right next to the infinity pool is the main bar which is an open-planned setting allowing a comfortable break from the heat which provides not only the all-inclusive drink options but also snacks throughout the day ranging from hotdogs, samosas, cakes and muffins.

there is a hot counter where the chefs prepare a fresh dish which ranged from pork chops to chicken wraps etc. The main restaurant has a capacity of 340 but there is an additional restaurant on the side Sufura Restaurant which provides a smaller and quieter atmosphere for any special occasions or for anyone looking to have a quieter dining experience and will provide a similar selection of fantastic foods which have been beautifully cooked and with the dishes changed daily there is no boredom which you may find at other buffet style restaurants and which all falls into the allinclusive package. If an extra special occasion is looming, Meedhupparu offers private dinners on the beach giving a couple a wonderful location and experience for a proposal or to celebrate an anniversary with the staff more than willing to help with any arrangements and help creating a charming and loving atmosphere for your meal.

Hudhuranfushi Adaaran Select Hudhuranfushi, yet another resort under the ‘Adaaran brand’ in the Maldives is conveniently located, near Kani Beach on Lhohifushi Island. A speedboat will cover the 19km distance from the airport in roughly 30 minutes so it is a great location for a day visit in to Male to see the National Museum, Grand Friday Mosque and the Presidential Palace. Hudhuranfushi translates locally to ‘Island of White Gold’ and even on your way to the island and the arrival jetty you can see that this personifies the island perfectly. It is a large, beautiful island that wonderfully houses 127 beach villas and 38 garden villas which are all secluded, bringing a private, peaceful haven for your stay. All villas are fully air-conditioned with a ceiling fan and provide an array of modern amenities with a satellite TV, tea and coffee making facilities and a mini bar. The beach villa we stayed in was incredibly spacious and the white, neutral colours was relaxing and felt very cool and airy after a day in the Maldivian sun. The contemporary white colour scheme is complemented tastefully with the tropical interior design consisting of turquoises colours, to match the surrounding the ocean and intricate patterns and details. The beach villa provided a large contemporary bathroom with a large overhead shower and also had a private outdoor shower with outdoor lighting. The beach villa provides stunning views of the white sandy beaches on the outskirts of the island and the calm, blue sea through the French doors at the front of the villa. Hudhuranfushi offers one of the best surfing resorts in the Maldives and by having the only left break wave points it has been the venue for surfing competitions in the past as a result of the conditions it provides and is widely considered as a surfer’s paradise with the Lohis Villas providing accommodation for the surfers and the Lohis Bar providing a place for the surfers on the island to gather and discuss the day’s waves. It is not only surfing that is offered at the resort with other water sports available with the Diving Centre giving lessons in scuba diving and the water sports centre allowing a vast range of water sport activities such as Wind Surfing, Water Skiing, Wakeboarding, Flyboarding and Parasailing to keep you physically entertained throughout your stay and allow you to try activities that are unlikely to be available at other resorts. The Hiyala Bar is the main bar at Hudhuranfushi and is the hub of the resort where most visitors go to enjoy the entertainment and the ambience that is created from the bubbling atmosphere. The bar doubles up as the pool bar allowing swimmers in the large pool to get a range of all-inclusive drinks and there are steps just off the bar allowing you to sit in with your back to the bar whilst the sun beams down on you. For travellers with children there is a kiddies pool adjacent to the main pool so parents can relax on the sunbeds knowing they can let their children splash around without any possible issues. The other side of the bar is the epicentre of the entertainment with a large number of tables and chairs allowing a number of the guests to enjoy entertainment including live bands, karaoke, DJ’s and also “Bodu Beru” who are local Maldivian Drummers – each night has a different theme catering for different interests.

Staff at Hudhuranfushi play football at 5pm on the large football ground which is close to reception, and has a full size 11-a-side pitch and they welcome guests to join in. The other sports available on the resort include a large tennis court which is alongside a badminton and beach volleyball court and also an indoor squash court which is just on the back of these. For the sporty guests who will enjoy these activities, there is a pool table in the Hiyala Bar which also has screens which show the sports throughout the day and there is a large gymnasium as well. There are 2 restaurants at Hudhuranfushi, the Banyan Restaurant which is the larger restaurant with a capacity of 350 guests and provides and wide range of foods from its international buffet. We dined in the Sunset Restaurant which is smaller and can accommodate up to 80 guests on a selection of indoor and outdoor tables on decking for alfresco dining by the scenic harbour. The Sunset Restaurant offers a buffet option for diners similar to the Banyan Restaurant but also offers an a la carte’ menu with steak options and seafood options available and ultimately offers a very impressive fine dining experience. I was lucky enough to try the seafood main course which was beautifully and freshly cooked lobster, king prawns, scallops and squid complimented with a garlic butter to add to the flavour. The 2 most unique parts of Hudhuranfushi fall on 2 small islands with are just off the arrival jetty and can be easily viewed from the main resort. Barefoot Island is the slightly larger of the 2 and can offer a dining experience and a party experience for a group of friends, family or for entertaining any business clients with the privacy of having your own island. The other island is Bird’s Island Honeymoon Suite which, as the name suggests, is a wonderfully romantic setting for honeymooners who want to spend a night in absolutely privacy and in each other’s company as newlyweds. Bird’s Island has an on call butler who will be at your service and tends to the Island via a small speedboat. Throughout the stay with Adaaran at both resorts Meedhupparu and Hudhuranfushi the staff were absolutely faultless. We were instantly greeted with a welcome drink and a brief introduction to the island by the managers and they were more than happy to answer any initial questions and queries we had regarding the resort. All the staff in the restaurants were polite and punctual and the staff in surrounding the pool and bar areas were always every welcoming, always checking in to see if we required anything and the same can be said for the 24hr reception. With both Meedhupparu and Hudhuranfushi, the islands and the resorts provide the most incredible tropical setting for your stay in paradise whilst the staff provide the character and charm. For those looking for an added ounce of luxury Meedhupparu and Hudhuranfushi both have water villas, Meedhupparu has 20 and Hudhuranfushi has 37 of which some are sunset villas . The water villas come with the added benefits of their own butlers and buggy service from the staff to get in to the heart of the resorts and they are wonderfully spacious with additional extras included such as Jacuzzis as well as their own A la carte restaurant and bar for a more refined fine dining experience. More information about the water villas can be found on the Adaaran website, www.adaaran.com. For more information on the Maldives, visit www.visitmaldives.com

Happiness: It’s what drives brand loyalty and guest retention Every restaurant brand is different and has a different guest profile, so CRM solutions vary. However, one thing we’ve consistently found is that typically 8% of guests account for one third of a brand’s revenue. Knowing who these ‘super-fans’ are, and why they’re happy, is vital for costeffective marketing. Imagine if you could increase that 8% and find more happy devotees, or, less optimistically, imagine if they left you – what then? You know your business, you meet your guests every day, so it’s tempting to rely on gut feelings - what you see and hear. But what about all those things that influence customer behaviour that you can’t easily see, such as channel preferences, regional variance and the allure of your competitors?

Data analysis is fundamental in supporting your natural instincts, giving you a solid basis on which to build and measure results. The right technology and expertise can help you understand: • Customer attitudes; who they are and why they visit your restaurant

24

• What discrete segments exist; frequency of visit, spend, attitude, geography, life-stage, affluence, etc. • Which customer segments deliver what % of revenue; all customers are important, but some are more important than others • Size, status and penetration of customer segments in your catchment area that do (and don’t) visit, and why • Where the opportunities and risks are; which customer types you should be actively pursuing, which existing guests can be influenced to visit more or spend more, who’s at risk of leaving you Restaurants guests don’t have to provide any information to enjoy your services but this doesn’t mean you can’t gather data. Bookings, wi-fi connections, use of vouchers, newsletter sign-ups, loyalty schemes, surveys, competitions and feedback platforms, all add up to a rich source of data that, when properly organised and understood, can provide great insight and make a huge difference.

So, stop worrying about the customer data you don’t have and start using data you do. Protect and grow your happy fanbase. P.S. Adactus – and our loyalty partners Punchh – can help!

The UK’s only multi award for both software and Starting as a small family run company in Bournemouth over 40 years ago, County EPOS have become one of the market leading EPOS providers across the UK, with clients from Devon to Newcastle, due in large part to a growing reputation for honesty and reliability. Offering a variety of products, to meet the specific requirements of a wide range of businesses, County EPOS can supply and maintain point of sale systems whether for a small independent retailer or a multi-site head office enterprise. In this modern age, the apparent convenience and low prices of internet EPOS retailers can make it tempting to order or download an EPOS system online, however it is all too often the case that these systems do not offer the features that your business require, or that they are available as expensive add-ons, support is inadequate and /or costly, and that initially ‘’good deal’’ starts to look not so hot. County EPOS offer a more traditional approach; An EPOS consultant to visit your site to discuss your requirements face to face, tailoring a bespoke solution to meet your specific needs, a highly trained service team that installs and services your equipment, and 24/7 support to ensure the smooth running of your point of sale system. Whether you’re looking for a small tablet system or high performance, durable hospitality terminals, County EPOS provide only the best in quality and reliability. Our new tablet EPOS was originally tested in small lower volume environments like cafes and juice bars, and has since been

26

rolled out into the festival scene and bars. Traditional systems are still the core business, and County EPOS specialise in the pub industry. From single site country inns to city centre pubs they will have the product to meet both your requirements and budget. They have recently rolled out over 20 sites for Hall & Woodhouse brewery as well as supplying publicans for Marston’s and Greene King as a preferred supplier, this is clearly a market that County EPOS have excelled in. Supplying EPOS for the hospitality sector has opened doors for County EPOS into exciting new opportunities, none more so than the installation of 60 + systems into AFC Bournemouth Vitality Stadium, covering all of the suites and bars, as well as the concourse. However, it’s the Top Floor restaurant where the system shows its full capabilities. With 30 handheld ordering terminals for the waiting staff, sending bar orders directly to the dispense printer and food to the kitchen, it really does create a seamless operation. Paul Fudge head of operations for Hospitality at AFC Bournemouth could not of been more complimentary of County EPOS. “I have dealt with County EPOS on a number of restaurant openings, and most recently the installation of EPOS throughout the Vitality Stadium. Their professionalism and attention to our requirements were superb. Choosing an EPOS supplier can be a serious investment and with so much choice available, make sure you decide wisely. I would recommend County EPOS highly, for product, and services but most importantly the ongoing support”

Focusing on customer support, Managing Director Ollie Hammond believes this is the basis of growth and sustainability in a flooded industry. “Starting at County EPOS as support engineer myself, I understand the importance of ensuring our customers are happy with their purchase and confident they are in good hands, and this has become the foundation of our company. With 90% of our clients being in the hospitality sector, we understand the critical need for the availability of support should a problem arise at any hour, day or night” This support strategy appears to be serving County EPOS well, as they have just acquired Southampton based EPOS supplier Tills 4 Change, as well as winning multiple awards nationwide for software achievements, they have also scooped the dealer of the year award for supplying PDQ card terminals. One of the most important parts of their recruitment process is to employ from within the hospitality sector. Their engineers have been brought on board primarily for their knowledge and understanding of your business, having run bars, pubs, clubs and restaurants with experience of all aspects of this industry, from stock control to labour management, loyalty and marketing. County EPOS work with some of the market leaders and pioneers in solutions for the Hospitality trade. They have been working with ICR Touch, the largest point of sale software developers in the UK for 17 years and are considered one of the top partners, having recently been

awarded Gold Partnership status. Also partnered with Payment Sense for PDQ and merchant services, County EPOS are the only company to be awarded their dealer of the year award. County EPOS have now introduced COMOSense as their recommended Application for loyalty systems. Integrating directly with the EPOS, this revolutionary system enables an extensive loyalty system on your mobile phone, allowing customers to leave their cards and cash at home. County EPOS’s most recent 3rd party integration is with S4Labour. S4Labour is an innovative online labour management system which helps the hospitality industry get the right people, in the right place, at the right time, and has now been successfully installed throughout the Dancing Moose enterprise in Dorset. County EPOS have been privileged to have grown through word of mouth and a good reputation alone. Not a penny is spent on SEO or PPC campaigns, instead the focus is on customer retention, testimonials and a strong social media presence. County EPOS hope to continue their remarkable growth, by following their fundamental principles, and by working honestly with people to ensure the best possible EPOS solution for their business. 01202 331510 www.countyepossystems.co.uk info@countyepossystems.co.uk

Can you really boost your growth while scaling This is probably one of the questions I get asked the most considering a new restaurant system – and the answer is Yes – you can. Restaurants are notoriously hard businesses to control, particularly those on multilocations, because of their complexity and the fluctuating nature of their business.

By Luis De Souza, CEO of NFS Technology Group

We’ve seen some high-profile struggles recently including Jamie Oliver, Prezzo and Byron, and it’s no surprise when costs are escalating, labour is getting hard to come by and the customer pound is being squeezed.

So how does a restaurant system help you boost your restaurant growth while scaling back costs at the same time? The answer is two-fold – the system provides you with a perfect end-to-end view of your business through comprehensive reporting – and gives your staff the technology they require to create an excellent guest experience.

restaurant back costs? by businesses always simple. With real-time data at your fingertips any time, thanks to online access, you can keep track of what’s selling and what’s not – and even see forecasts. This helps you improve stock control immensely, reducing food waste and enabling your kitchen to provide menus that will hit the mark. Reporting also helps with labour control by giving you a deep knowledge of your busiest and quietest times, so you always have the right number of staff on at the right time. This is particularly helpful in the current climate, where Brexit is making filling staff roles a real issue. With the right restaurant system in place, the staff you do have are happier because their job is easier thanks to tableside ordering and payments via hand-held devices ranging from tablets to smartphones – less running back and forth to the kitchen. Their device will also give them upselling prompts as the order is placed, providing opportunities to boost revenue at every table.

Diners are happier too, because their food is delivered quickly and accurately, and there’s no hanging about waiting for the bill (good restaurant systems can even split complicated bills with ease). And afterwards, the information your system has captured means you can bring those happy guests back again with offers you know will appeal to them. You can use their feedback to improve your website, and if anyone posts an adverse review online while dining, your managers are alerted so they can put the problem right straight away. One of the best aspects of restaurant management systems is that they are now available as a rental option, which means restaurants do not have to make a major capital investment and can gain almost instant ROI. The growing brand CAU has been explaining how restaurant management software works for them. Estates and Property manager Colin Williams says: “We like the efficiency of it in streamlining our business – it’s definitely saving us money in terms of time, efficiency and capturing data so we can identify trends. “We also appreciate the way it helps you cut down on fraud – staff who might be tempted know they can’t get away with anything. “It’s amazing for stock control – one of our biggest challenges – and it integrates well with our other platforms.” We’re glad to hear it. So if you don’t already have this kind of technology, now’s the time to give your business the restaurant system it needs to stay ahead.

Technology: changing the hospitality industry By Gareth Ogden, Partner at haysmacintyre As with any industry, keeping pace in the modern world means the hospitality sector must be prepared to embrace technology. Innovations such as mobile ordering in restaurants and hotels, or payment technology systems that make waiting for the bill a thing of the past, are constantly improving the efficiency of service in the sector. Mobile ordering technology has already been adopted by a number of restaurant chains, with Wetherspoons’ mobile app allowing customers to order directly from their table and McDonald’s introduction of self-service kiosks in some of their restaurants. These systems enable customers to cut down on service waiting times and avoid queuing at the counter. This in turn improves the speed and efficiency of the restaurant’s service, enabling them to turn tables more quickly, thus increasing the number of covers. In addition, the technology can provide an opportunity for restaurant owners to upsell through interactive menus and make pre-programmed suggestions for side orders or drinks, based on the customer’s initial choices. Whilst a good waiter will be effective at this, there will be inconsistencies and missed opportunities. There is also opportunity in the hotel sector, with Form Hotels, a Dubai-based chain of smart hotels having introduced a webbased mobile ordering and payment solution earlier this year, allowing guests to order and pay for room service and other amenities via their own personal devices.

32

Payment technology systems are also proving popular, with a number of top chain restaurants championing their time saving credentials. Notably, Barclaycard’s ‘Dine and Dash’ technology has been trialled in Prezzo: an app that allows customers to skip the arduous bill paying process, checking in and out of restaurants by tapping their phones on an electronic totem at their table. Payment technologies such as these enable businesses to reduce customer waiting time, and thus increase their turnover and potential for profit. Naturally, such systems can impact upon the personal engagement and interaction with waiting staff that many enjoy. It is therefore important for business owners to carefully consider whether the use of mobile ordering or payment technology would fit within their existing business and enhance service offerings rather than change them. Technology won’t always be the answer – clearly self-service kiosks won’t fit in a fine dining restaurant. The success of a hospitality business will ultimately depend on the quality of the product and service provided. Whilst keeping up with innovations may be of benefit, if customer experience falls then reputations may suffer. www.haysmacintyre.com

Panasonic Combines Gas and Electric Technologies for High Efficiency Hybrid VRF Panasonic has introduced an intelligent new Hybrid VRF to the European market, combining electric (EHP) and gas-driven heat pump (GHP) technology for optimal efficiency. The new Hybrid VRF reduces energy costs by automatically switching between its GHP and EHP; it also provides a free supply of domestic hot water (DHW) - ideal for high demand applications, such as hotels and apartment blocks.

August 2018

• Significantly reduces peak demand for electricity • Intelligent controller to maximise energy savings • Free hot water production from GHP engine waste heat switching to GHP during peak times, energy savings are maximised. This enables the building’s electrical supply to be used much more efficiently to power critical infrastructure, such as the lighting or elevator operation.

The Hybrid VRF comprises of a master GHP unit, an EHP unit and a specialised intelligent controller. This controller monitors usage, energy demand and air conditioning load to calculate if GHP, EHP or a combination of both working simultaneously, will deliver the best savings. The intelligent controller will then intuitively switch the Hybrid VRF system between GHP and EHP to optimise efficiency.

For times when the load ratio is low - for example when hotels are at low occupancy during the daytime – Panasonic’s Hybrid VRF can switch to EHP to save energy. As the EHP can operate at a much lower capacity than GHP during off-peak periods, heating or cooling can be directed to the precise areas it is required with minimal energy wastage. In addition, the ability to switch to EHP when demand is low, helps to extend the life of the GHP engine, so it’s not in constant operation, delivering savings on maintenance costs too. Installation and maintenance requirements are further reduced due to the unit’s unified refrigerant cycle.

The result is a significant reduction in electrical demand during peak times when the air conditioning load ratio is high, for example when a hotel is at high occupancy. The GHP system consumes less than 10% of the electricity that the EHP system does at full capacity. By

Another significant benefit of Panasonic’s Hybrid VRF is that it can provide a free supply of DHW. This is achieved by capturing the waste heat generated by the GHP engine during operation and using it to heat water. This feature contributes to huge savings

for large-scale commercial applications with a high demand of DHW, such as hotels. The Hybrid VRF is managed by a centralised intelligent controller (CZ256ESMC3), which monitors energy consumption and calculates load demand, intuitively switching between GHP and EHP for the most efficient operation. Its user-friendly interface also features multiple energy saving modes, including ‘Smart Multi’, which can be easily customised to increase efficiency. In keeping with its culture of continuous innovation, Panasonic has developed its most innovative VRF solution to date. The Hybrid VRF steers heating and cooling technology in a new direction, partnering two solutions to create a fusion for the future – Panasonic’s most efficient VRF yet. CK Direct are confident that they now have the most powerful Odour Control Unit available to the UK market

It is in essence a regulator, a silent overseer of your other ventilation that allows it all to live in greater harmony. The result is a nicer environment for your staff to work in, your customers to enjoy and your neighbours to appreciate - Free of overpowering smells and cacophonous noise.

From the humble chip shop to the local takeaway; the roadside pub to the gourmet restaurant. Commercial kitchens, in their myriad shapes and sizes, have since the dawn of time relieved an unrelenting hunger across the nation. But their beauty, with sizzling onions, the incessant rush of chefs, the condensation on cold windows, is only half of the story. Alongside a blend of fine tastes and scents is a dirtier world, one of grease and fumes; the by-product of vigorous cooking. This grisly world is kept in check by mechanical vents and steel extract hoods, each with its own role in keeping kitchen occupants safe. If the balance between the two worlds is not carefully managed, the commercial kitchen could be brought to its knees. If you manage or work in a commercial kitchen, you may have encountered one of its more unfortunate sides. Bad odours, produced by grease, carbon and steam deposits can spring up at any time in all their grimness. Sometimes they don’t go away. This isn’t just a problem for people inside, but for those in the surrounding environment. To regulate this, going above and beyond the typical tasks of extract hoods and vent maintenance, CK Direct are offering their very own product that’s already become the much sought-after answer. The Ozocube™ is a cost-effective addition to the kitchen ventilation setup that eradicates smells, saves money and keeps you on top of safety standards. The CK Direct Ozocube™ is a high efficiency ozone generator unit, ideal for use in commercial kitchens, food processing plants and factories.

36

A case of bad odour may not seem like a problem worth spending your money on but consider that regular foul smells can justifiably incur complaints from residents under the Environmental Protection Act (1990). A very high-profile restaurant in London had this exact problem as bad smells from the kitchen led to a complaint from a nearby bank. After installing Ozocube™, an official report confirmed that there was subsequently ‘no odour apparent’. Ozocube™ kept chefs, customers and a nearby business very happy. On top of its noise and smell reduction duties, Ozocube could put some money back in your pocket. By allowing your ventilation to run more efficiently it can reduce running costs by 50% and increases the lifespan of the rest of your equipment. Mexican Beer Mash Up: The Clamato Michelada This summer Clamato is unveiling its new cocktail recipe; The Authentic Michelada! The Michelada was born in Mexico and people would spar over how it got its name. The most bandied about explanation is that it’s a shortening of mi chela helada or “my cold beer.” When it’s blisteringly hot — and Micheladas are typically thought of as an everyday drink or a morning-after hangover cure — is there anything more refreshing for your customers than a beer cocktail with lots of ice cubes in a tall glass? The Michelada is one of the most popular drinks in Mexico. It is a beer-based cocktail made with lime, hot sauce (to taste), Worcestershire, and Clamato tomato cocktail, all served over ice in a tall glass with a salted rim. People are craving for something refreshing, savoury to try something new. Stock up to impress your consumers with Clamato.

40

The Authentic Clamato Michelada INGREDIENTS (for one serving, to taste) • 1 Key lime • 115ml of Clamato® Original • 1 dash Worcestershire sauce • 2 dashes habanero pepper sauce • 312ml of a Mexican beer (ex. Modelo, Corona, etc.) • Ice • 1 lime wheel • Tajín seasoning

INSTRUCTIONS 1. Run lime across rim of mug. 2. Dip mug in Tajín to coat evenly. 3. Add ice. 4. Add lime juice, Worcestershire sauce, and habanero pepper sauce. 5. Fill with Clamato and beer. 6. Garnish with a lime wheel

We provide reactive repair, maintenance and installations to leisure, hospitality, retail, public and commercial business sectors.

The hospitality and catering industries are well developed in the management of performance KPIs, as such our customers are now demanding higher standards than ever before. At Flowrite we believe the only clear way for our industry to improve is to adopt new technologies to deliver core services in a more effective way. We can then use them to give our customers a complete visibility of services we offer in real-time. In addition, we can deliver cost savings if these technologies are utilised correctly to service delivery hand in hand with energy usage. In response to these demands, Flowrite has developed the CoolerRESPONSETM technology. This was originally envisioned for use on cellar cooling, walk-in fridges and freezers however, it also has the ability to monitor other areas such as: • statutory food checks to HCCAP standards, • dishwasher cycles, • water inlet temperatures, • and energy consumption of equipment or even a whole premise. The smart hubs communicate with each other to help gain valuable insight into customer’ behaviour patterns. They also allow Flowrite to develop what is a traditionally reactive approach to our service provision into a proactive one by addressing common ‘problem’ habits early on, such as equipment doors being left open, and the ongoing issues these create. Realtime performance monitoring enables us to make informed improvements to our

Due to the increased levels of connectivity CoolerRESPONSETM offers, the proactive services we are able to offer our customers include: • remote diagnostics and equipment repairs, • addressing of maintenance and behavioural issues before they lead to downtime, • improved first-time fix rates, by ensuring engineers arrive with the right diagnostic information, tools and replacement parts. ceda and FIA launch ‘Interface between fire-fighting systems and other systems in commercial kitchens’ Guidelines ceda are proud to announce the launch of their latest catering equipment industry technical document, ‘Interface between fire-fighting systems and other systems in commercial kitchens’, jointly published by the Fire Industry Association (FIA). The document is intended to offer guidance to suppliers of catering equipment who are often required to provide fire protection systems and regularly have problems in ensuring that connections are made between the controls of the fire protection system and other systems, such as building management systems, kitchen extract fans and fuel supplies. There is a concern that the suppliers of other systems are reluctant to make the connections for several reasons including, fear of setting off the fire protection system, fear or reluctance to work in another contractor’s control box and communication, resulting in a lack of understanding of the relevance and importance of inter-connections between systems. ceda’s technical support advisor, Peter Kay wanted to provide ceda members with a guidance document that they can incorporate as part of their contracts not only with fire suppression system subcontractors but also their contracts with their clients. He explains, “Fire Suppression Systems are normally supplied with volt free contacts to trigger other systems such as fire alarms, gas interlocks, etc., however, it is not uncommon to find that these are never used simply because it was unclear as to who was responsible for making the connections.” “After some investigation it was felt that we should involve the Fire Industry Association with a view to publishing a jointly branded document. “This is the first time that ceda has worked in partnership with the Fire Industry Association and I find it encouraging that they welcomed our suggestion of a joint document”. Most suppliers of Fire Suppression Systems as well as Fire Alarm Systems and Building Management Systems are members of FIA and therefore will be advised to operate in accordance with the guidelines. The document is available as a download from the “Standard Documents” page on the members’ section of the ceda website, along with a guidance document that has been issued to ceda members which gives guidance on good practice relating to the provision of Fire Suppression Systems and also on the use of the ceda/FIA document. Non-ceda members who wish to view the document can request a copy from the ceda office by emailing fiona@ceda.co.uk.

Nuts about KPs? Over £10k-worth of prizes in KP of the Year 2018 awards!

August 2018

Celebration of kitchen porters’ ‘massive’ contribution now in 5th year

The search is on for the KP of the Year 2018. The competition, which is the brainchild of warewashing specialist Winterhalter, is now in its fifth year and looking to build on its increasing popularity. With that in mind, the prize fund now tops £10,000 – and every single KP who is nominated gets a special gift. “Every year the standard of entry goes up and the pressure intensifies,” says Winterhalter managing director Stephen Kinkead. “And every year we hear stories of KPs doing extraordinary work that goes way beyond the call of duty. “What’s great about this competition is that so many people in the industry support it. That’s partly because so many of us started out as KPs – including me!” Amongst the high profile chefs who have voiced their support for the KP of the Year competition is Paul Ainsworth. “I started out as a KP,” he says. “It’s such a hard job! We can’t function without them. To be able to celebrate kitchen porters is great – the KP of the Year is a brilliant idea.” The winner receives a trophy, £1,000 cash, and a celebratory dinner for family and friends. They also win a brand new Winterhalter for their work place, worth up to £8,000. Two runners up receive cash prizes and every entrant gets a

special KP of the Year apron, in a presentation tin, created by Oliver Hardy. Last year’s winner was José Núnez, of The Stafford hotel, St James, London. He was nominated by Mark Surguy, The Stafford’s hotel manager, who said, “José has a work ethic that cannot be compared. He’s always smiling, he holds himself and every member of his team to the highest standards. Nothing is ever too much for him.” Stephen Kinkead added, “José was a truly worthy winner and he was the unanimous choice of the judges. Now it’s time to find his successor!” For information and to enter a KP for KP of the Year 2018 visit www.kpoftheyear.com Winterhalter provides a total solution for warewashing, from pre-sales advice to after-sales service, training and maintenance. The Proof is still in the Pub! GreasePak continues to successfully tackle FOG problem site, one year on from historic year-long trial with Southern Water Fats, oils and grease (FOG) blockages increasingly plague pubs and restaurants, either as a result of no grease management in place, or where efforts have been made but FOG management systems installed are inappropriate. The Pelham Arms pub in Lewes is an example of the latter and one that Mechline assisted back in 2016. The pub’s FOG had caused several sewer blockages and flooding to the surrounding area, which had resulted in the pub facing a substantial water company fine. Despite having fit a grease trap on the request of Southern Water, blockages continued and foul sewage spills arose. Having heard about the merits of GreasePak – Mechline’s bioremediation dosing system – Southern Water contacted Mechline with regards to conducting a year-long trial at the problematic site. Mechline’s GreasePak is the most powerful and only BBA (British Board of Agrément) approved bioremediation dosing system on the market. It works by employing a powerful bio-enzymatic

48

fluid that breaks down FOG into irreversible simpler compounds, and is discreet, easy to clean and requires very little maintenance. In May 2016 two GreasePaks were installed for each outlet from the kitchen and staff were trained on how to use and maintain the GreasePaks and guided on kitchen best practise – ‘Stop and think, not down the sink!’ For the duration of the trial Southern Water monitored the sewers via CCTV and on its completion in April 2017 reported that the trial of GreasePak had proven successful. One year on, they revisited the site, where GreasePak remained to keep the sewer free from FOG build-up – two years after installation! Not only did the GreasePaks prevent FOG blockages, but also resulted in the ‘amnesty’ placed on the pub by Southern Water being lifted. Landlord Andrew Mellor commented, “The cost of running a GreasePak system is very minimal when considering the time saved in maintenance of a traditional system or jetting drains and sewers. (…) The water company are happy with the results, the

kitchen team are happy too, which means as a business owner… I am very happy.” This trial has not only proved GreasePak’s effectiveness in controlling FOG build-up, but highlights the need for operators to select the most appropriate solution for their site, instead of applying an unsuitable option.

Hijack Systems specialise in the manufacture of cellar storage equipment.

Our expertise in this field is renown throughout the industry. Unlike many companies, we design and develop all our own equipment here in North Yorkshire, and have earned an enviable reputation for Quality, Reliability and Value for Money.

Auto-Tilt Pub Cellar Systems Hijack auto-tilts are designed for all real & cask ales. An average of less than one pint per cask of ale is wasted using our system. We have specifically designed our auto-tilt system for use in Pubs, Bars and Club cellars. Our unique system can be used on floor standing casks or in racking systems. Our controlled rate of tilt is so smooth that the ale in your casks is undisturbed, this helps maintain high presentation standards when poured into a glass. All prices are subject to vat at standard rate.

Compact Cask Racking System The Compact racking system caters for 9 - 11 Gallon Casks (Firkins). This small but sturdy free standing racking has Built-in self-tilting springs, which because of their sturdy build, do not need to be bolted to the floor. The Compact range is perfect in all cellars (subject to minimum height) and optimises cellar floor space to its maximum storage capacity.

Quality - we use top quality box steel for our builds, ensuring strength and longevity of our storage racking systems. Reliability - being a family run business, we are proud that the promises we make, we keep. This is reflected in the large proportion of our customers who come back to us with repeat business, as well as recommending us to their colleagues in the industry. We are frequently contacted to solve difficult cellar storage problems, such as low ceiling height or lack of floor space. Being a manufacturer we can modify our designs to meet your specific needs because we believe that YOU our customer comes first.

Hijack Cellar Systems

The Compact system is supplied in one, two or three tier heights, with the only width restrictions being cellar floor space and height. It is supplied with self-tilting springs and adjustable feet as standard making it literally £££’s less to buy than conventional racking systems with separate auto-tilt mechanisms.

Hoists (Compact and Universal) Hijacks Hoists are very user friendly. They all feature an automatic brake in the winch mechanism (going up or down). When you stop winding, a disc brake takes over and releases when you resume lifting or lowering. We supply one 2 Tier Hoist and two 3 Tier Hoists, the only difference being the lifting heights of the forks. All models are based on the single mast principle, designed to give the best visibility when loading / unloading a rack.

GREAT OUTDOOR PROFITS Almost any outdoor space can be used to promote your business, or to increase net profit directly. Our GOP (Great Outdoor Profits) page aims to be a resource of ideas and experiences, and covers wider topics than barbecue. We need your experience of types of furniture, heating, lighting, logistics, menu ideas, pitfalls, event opportunities, amusing downfalls you turned into benefits, in fact anything which could be useful to others in the industry.

52

All CINDERS barbecues are manufactured in our modern 15,000 sq ft factory near a small village in North Yorkshire. The controls are from a respected German company, and never fail. The 304 and 316 grade stainless steel is typically Swedish and modern laser cutting technology sits comfortably alongside specialist machinery we developed ourselves. Local staff work throughout the year to hand craft your product, whose successful 1984 design is clearly recognisable through many years of upgrades and thoughtful refinement. “We don’t make them to look pretty’’, says Simon Fort, Works Manager, “we just pile in the quality and they turn out like that’’. Simon, and Quality Co-ordinator Denise Hodgkinson have been with us for over twenty years, and both hold firmly to production standards that are sometimes thought oldfashioned. When BS 5750 Quality Registration wasn’t a requirement, we registered and used it as a benchmark. When ISO 9001:2008 replaced it, we went straight for the most stringent level and brought in the British Standards Institute for CE Approvals and EC Registration. We supplied the Technical Officer to the Gas Barbecue Association during the development of European Standard EN 498:1997 (now 2012) and consulted over critical issues with BSI, which did most of the work. We were the only manufacturer on the European Rental Association panel which revised their LP gas safe Code of Practice. This is why CINDERS products are renowned for RELIABILITY, DURABILITY and LOW MAINTENANCE. www.cindersbarbecues.co.uk 01524 262 900 info@cindersbarbecues.co.uk

LED Lights & Signs

August 2018

Switching on to the possibilities of OLED The versatility of the latest OLED lighting is opening up exciting possibilities for interior designers working in the hospitality sector.

Flexible and versatile, OLED modules emit a soft, natural light that is perfect for a wide range of uses, from creating atmosphere and cosy areas to formulating stunning architectural centrepieces – all while consuming less power than regular LEDs. To highlight its capabilities, trade lighting supplier Applelec has created a spectacular display at its London showroom, incorporating almost 100 OLED – or Organic Light Emitting Diode – modules in both a track-mounted and pendant form. Unlike traditional LEDs, OLED uses a series of thin, light-emitting films made from hydrocarbon chains rather than semi-conductors laden with metals – the ‘O’ in the name stands for ‘organic’. One key feature is that the light produced by an OLED module is

softer and more like natural daylight, which makes it ideal for use where the benefits of natural light – or something as close as possible to it – have been identified. Of course, architects and designers will try to use natural lighting wherever possible, not least to reduce energy consumption and potentially increased revenue in retail uses. Despite being variable and reliant on weather conditions and solar positions, it stimulates alertness and is thought to support human health and well-being. However, the constraints of the area to be lit mean this is sometimes simply not achievable. This is where OLED comes into its own – it can replicate natural light without glare or, crucially, excessive energy consumption. The power of LEDs to reduce energy usage and the associated bills is well established. It is not unusual for building managers to report savings of up to 75% on energy costs; meanwhile, OLED has the potential to achieve even greater reductions. Unlike regular LEDs, the modules have no backlight, so the pixel is turned off entirely to produce black, consuming no power whatsoever. OLEDs are lighter and up to 10 times slimmer than their traditional counterparts – again as a result of having no backlight. This opens up a whole new realm

54

of possibilities and uses, not least from an artistic point of view, as their slender and flexible nature makes it possible to create stunning sculptural light installations. Applelec supplied the modules for one such installation which combined OLED technology with 3D printing for the London Design Festival. The Ribbon, created by lighting artist Min Sang Cho, was showcased at the festival before being installed at its permanent home at the VIP reception area of the Genting Highland Casino in Malaysia. The Ribbon was 3D printed in its basic form then was manipulated and finished by hand, with 24-carat gold leaf delicately applied to each piece. One segment features three flexible 400mm x 50mm OLED panels on one side while the other side is handpainted with the gold leaf. Power consumption is impressively low, with the installation drawing just 9W per unit.

Fastsigns Islington Completes Ambitious Hotel Project The Islington centre of sign and graphics and visual communication specialist, FASTSIGNS, is celebrating after the completion of an ambitious project for the launch of the New Road Hotel in Whitechapel. The Islington team of graphics experts were tasked with revamping the iconic former textile factory which houses 80 bedrooms, hot tubs, a penthouse and new Marco Pierre White restaurant, Mr. White’s English Chophouse. The project involved designing and fitting fascia lettering across the front of the building using a 15m cherry picker, three projection signs, window graphics and stitching, internal vinyls, illuminated window menus, a banner, directional signage and frosting and acrylic wall graphics. Commenting on the project’s success, FASTSIGNS Islington owner, Shahzad Ahmad, said: “This has been a really fantastic project to work on. New Road Hotel is a really unique space steeped in history so it’s great to have played a part in breathing new life into the venue.

56

“Projects of this scale often pose many difficulties, not least when you take into the account the challenges involved with using cherry pickers at such a height. However, we’re pleased to be able to have completed the project in such a short space of time, from first contact to installation took just just two weeks and we are thrilled to have helped transform the space into a truly fantastic, individual hotel.” Further successes for the signage company this year also included the recent recruitment of new sales representative, Mark Newbery, who joins Lance Armstrong forming a strong sales team to facilitate plans for further team and business expansions scheduled for later in the year. John Davies, managing director of FASTSIGNS UK, said: “A massive well done to Shahzad and the team at FASTSIGNS Islington for what has proven to be a very strong first six months trading. The fact that they were able to complete a project of that scale in such a tight timeframe is a testament to their hard work and expertise, and I look forward to seeing what success the next six months will bring for them.” FASTSIGNS Islington forms an integral part of a network of 20 UK FASTSIGNS franchises.
