OF After a whirlwind summer of travelling, it’s a welcome relief to revel in the cozy comforts of my home. With the onset of fall, I’m looking forward to cooking in my own kitchen, sleeping in my own bed and even hosting a few get-togethers. This issue celebrates the joys of hibernating, starting with our Style News column (page 17) and its selection of products highlighting the beauty and warmth of fall decorating, and wrapping up with the recipes and wine pairings showcased in “Vino Vinho Vin” (page 92) – perfect for a date night chez vous. The interiors featured throughout these pages also boast the wonders of staying in. Check out “Trend Forecasting” (page 34), in which interior designer Cynthia Soda demonstrates how she cooked up a trendy kitchen with staying power for her parents, who love to entertain. And in “Finely Tuned” (page 42), homeowner Megan Bonnell and her husband, Evan, live for the laid-back vibe of their Toronto home: “Whether we’re entertaining or it’s just the two of us...it’s such a cozy place to hang out.” In our feature homes section, we tour four dreamy familyfriendly abodes in which we’d like to spend all of our time: designer and TV personality Jillian Harris’s beyond-stunning French Country-style house in Kelowna, B.C. SMALL AND STYLISH

I enjoyed “Welcome to the Weekend” (July 2018, page 82) that featured Jennifer Garnett’s charming Prince Edward County, Ont., cottage. Her eclectic design aesthetic is a breath of fresh air in the current interior world dominated by whites and muted greys. I liked her choice of blending antiques with mid-century pieces, and how the butterscotch leather sofa set the tone in her living room. I loved it all: furniture, artwork, accessories; and the use of simple lines, wood and soft textures – the cottage embodies the county’s style to a T!

It was a pleasure to read the Private Sanctuaries Bed & Bath Special in the September 2018 issue (page 33). Every month I look forward to the magazine’s arrival. Your articles are always inspiring, but this month was the best! It was wonderful to see some small spaces being featured. I have a compact yet functional master ensuite that I’m planning to remodel. The two bathrooms in the section really showed me that my own small space can be practical and stylish, too. Excellent work!

INGREDIENTS SERVES 12

3 small firm sugar pears ½ cup honey 2 tbsp freshly squeezed orange juice or water 1 vanilla bean, split, seeds scraped ¾ cup unsalted butter, softened ½ cup brown sugar 3 large eggs 1½ cups all-purpose flour 1½ tsp ground ginger 1 tsp baking powder 1 tsp cinnamon ½ tsp ground cardamom (optional) ⅓ cup plain 2% Greek yogurt Greek yogurt or crème fraîche, for serving

DIRECTIONS Preheat the oven to 350°F. Butter and flour a 9-inch cake pan. Line the bottom with parchment paper; set aside. Halve, core and stem the pears, leaving the skin on. Quarter the halved pears lengthwise, then, leaving the slices attached at the top, slice each quarter into 1/8-inch-thick wedges. Add the honey, orange juice and vanilla bean (pod and seeds) to a large skillet set over low heat. Fan out the pears and place in the skillet. Cook gently, occasionally spooning the honey mixture overtop, until the pears are just soft, 8 to 10 minutes. Carefully transfer the pears to a plate

to cool slightly. Discard the vanilla pod. Increase the heat to medium-high. Boil the honey mixture until reduced to a syrup, about 1 minute; set aside. In the bowl of a stand mixer, beat the butter and sugar until light and fluffy. Scrape down the sides of the bowl and add the eggs, 1 at a time, beating well after each addition. In a separate bowl, stir together the flour, ginger, baking powder, cinnamon and cardamom. Add the flour mixture to the butter mixture in 2 additions, alternating with 2 additions of the yogurt (the batter will be quite thick). Scrape the mixture into the prepared pan, smoothing the top. Press the pears gently into the batter, fanning out the slices in a decorative pattern. Bake until golden and a cake tester inserted in the centre of the cake comes out clean, 45 to 50 minutes. Let cool for 15 minutes, then carefully remove the cake from the pan and place on a plate. Brush the top with the reserved syrup and serve with a generous dollop of yogurt or crème fraîche, if desired.

tip Check that your sugar pears are ripe by gently pressing the neck of each fruit. Firmer is better for these sweet delights.

In most cases, a designer brings a trendy element into a space because of its popularity. But sometimes, in a stroke of luck, she chooses something because she loves it only to have it become the thing du jour moments later. That kind of happy fortuity is exactly what happened when Cynthia Soda, interior designer and owner of Soda Pop Design, redid the Stouffville, Ont., kitchen of her parents, construction managers Ida and Tony. The dated cooking zone desperately needed a layout that would flow better with the adjoining rooms, and more storage and counter space to suit the pair’s love of entertaining. Cynthia dreamt up a bold scheme that speaks to Ida’s

While the marble look of the countertop is striking in its modern form, its quartz construction is practical, since homeowner Ida Soda wanted something that would be easy to clean after dinner parties. The rich purple cabinetry is in distinct contrast. “I love how the waterfall overhang partially hides the bold colour of the island,” says Cynthia. “It’s such a nice surprise when you come around the corner and see it all.”

eclectic-meets-modern style through mixed metals, marble-look quartz and cool tones. When it came time to choose colours for the cabinetry, Mom and Dad proved the perfect clients, letting Cynthia go for something a bit daring. “I chose Benjamin Moore’s aubergine-toned Shadow for the island cabinets and pale blue Iceberg for the rest – I loved them both and thought they would look striking together,” says the interior designer. “Shortly after, the company named Shadow its colour of the year. And Iceberg was on the trend list, too!” While that was purely coincidental, the overall design of the kitchen most certainly was not. Cynthia’s thoughtful planning and stellar taste resulted in a space that feels cool, contemporary and curated.

ABOVE Nothing in the kitchen feels busy thanks to clean-lined cabinetry in an unexpected icy blue tone. The flat-panelled doors won’t collect dust and are easy to wipe clean. “Is it obvious that my mom doesn’t like high-maintenance spaces?” says Cynthia with a laugh. BELOW “I’ve always loved mixing metals. I think the contrast is so arresting,” says the interior designer, who incorporated both black and gold hardware. She echoed the eye-catching pairing in accessories and fixtures, from the pendant lights to the faucet to the dishware on display.

he secret to living large in a 150-square-foot room lies in selective style. Lacking the luxury of lots of space in this Vancouver home, designer Ami McKay and spouseslash-construction manager Don Thomas of Pure Design had to employ an exacting eye and choose elements for the sitting room that were nothing short of perfection: inviting and comfy, high quality and über-functional, timeless and on-trend. The pieces work together to add modern character to the home’s vintage 1930s envelope, delivering that quintessential of-the-moment decor mix that lends personality and charm to any space. 1. Arc On Sculptural arc lamps are nothing new, but these long-necked adjustable beauties are so versatile they never seem to go out of style. “They’re great for lighting intimate spaces in lieu of a ceiling mount,” explains Ami.

Singer-songwriter Megan Bonnell and her husband, Evan, found the perfect spot to begin their married life together on a quiet street in Toronto’s trendy Queen West neighbourhood. The couple had been casually house hunting (think: checking out open houses on weekends, just for fun) since before they got hitched in 2016. When they heard through the grapevine about this 2,600-square-foot contemporary new build, the couple didn’t necessarily know if it was meant to be. “I thought it would feel too modern to us, since we’d always liked character-filled older homes,” says Megan. “But I fell in love with all the light and the smell of the oak flooring, which reminded me of my grandparents’ farmhouse. It felt warm, fresh and inviting.”

Although the bones of the structure were intact, the place lacked personality. “It’s more open concept than what we’d been used to,” says Megan. And since she and Evan had different visions of where things would go – for instance, would the living room be situated in the front or the back? – they called in designer Lisa Lev to provide her expertise. “We want to be here for a long time, so we thought we’d better get it right the first time,” says Megan. Lisa’s design is a toothsome mix of vintage and contemporary, high and low, streamlined and boho. “There are nods to Mid-Century Modern style,

but there are also lots of pieces that are fresh, organic and current,” says the designer. One of the most impactful elements is the living room’s oversized wall mural of a forest, which references Megan’s rural upbringing and Evan’s childhood summers spent in northern Ontario. Though she had reservations about this house at first, today Megan is singing a different tune. To her, the look is light, bright and laid-back. “It feels relaxed and easy,” she says. “Whether we’re entertaining or it’s just the two of us and our dog, Dave, it’s such a cozy place to hang out.” STYLEATHOME.COM OCTOBER 2018

When designer Sarah Birnie was enlisted to refresh a dated Toronto loft, her initial reaction wasn’t about the design. Instead, her first thought was about the coolness of the owners. “They’re much more hip than me, so decorating their place was a fun challenge – I had my work cut out for me.” Those homeowners – a couple working in creative and tech fields – love their buzzy Queen West neighbourhood. They also clocked the two-storey 1,000-squarefoot former factory’s original features, which include huge windows, a wood-burning fireplace and an exposed brick wall. But ugly track lighting, cheap bathroom finishes and a closed-off kitchen with light-obscuring walls reflected its 1980s conversion date.

Sarah channelled the couple’s aesthetic to remedy these design flaws. “They have a taste for Mid-Century Modern style and own a lot of incredible art and textiles,” she says. “I envisioned a bright backdrop with a mix of industrial and vintage twists.” Gutting and updating the bathroom and opening up the kitchen were no-brainers, but there was one element that wasn’t going anywhere: a big boxy structure in the middle of the bedroom that houses the building’s common staircase. “I wanted to come up with a creative solution to make it look like it was an intentional part of the room,” says Sarah. “I designed a loft bed for the top of it and included some drawers at the foot. It’s quirky, but it works!”

Sarah underscored the new open floor plan by painting all the ceilings and walls bright white – with one exception. “There was never any talk of covering the exposed brick wall in the living room,” she says. “I wanted to highlight the loft’s industrial roots wherever possible, and the bricks reinforce the history of the building.” Sarah populated the space with pieces from the homeowners’ diverse art collection, which now pops thanks to the bright backdrop, and reintroduced their sensational mix of furnishings – sourced everywhere from auctions to antiques shops to big-box stores. “The homeowners are happy with their space,” she says. “But, more importantly, I hope they think it’s really cool.”

How Jillian Harris designed her dream home from scratch – and from a distance.

IN PICTURES, JILLIAN HARRIS’S NEWLY RENOVATED WEST KELOWNA, B.C., HOME IS IDYLLIC. The bright beachy rooms are washed in soft white, cream and the palest blue. You can almost feel the balmy Okanagan breeze that blows in through the wall of French doors, which open to the deck that overlooks her one-acre property, the pool and, in the distance, hills dotted with vineyards and orchards. In everyday life, the house – which Jillian shares with partner Justin Pasutto, two-year-old son Leo, boxer pooch Nacho Cilantro and, soon, a new baby daughter – is as down-toearth and quirky as the designer and TV personality herself. second. “Right now, the living room coffee table actually has painter’s tape all over it,” she says with a laugh. “I’ve taped skewers on it because Leo loves to drive his little cars over the ‘speed bumps.’” In some ways, the 10-month renovation of the 3,500-square-foot 1970sera house was just as far from what you’d expect. It’s been finished for around a year now (savvy readers will note that the master suite made the cover of our September 2018 issue), and Jillian is still amazed it came together. “I was so busy driving back and forth to Vancouver to film Jillian and Justin and Love It or List It – all while taking care of a new baby,” she says. “I was flying by the seat of my pants – I didn’t go to a single show-

room. I designed the whole place by getting people to send me samples and saying, ‘Yup, this’ll do!’ I remember thinking, ‘This isn’t the way I want to do it.’ I wanted to take my time, but it didn’t turn out that way.” The dramatic reno involved blowing out walls to open up the living room, dining room and kitchen located on the split-level’s upper floor. “It was basically one big blank slate,” says Jillian, who treated said slate with a palette of pale hues featuring pops of blue, gold and pink, and warmed it up with wide-plank driftwood-look floors and huge reclaimed barn beams. “Justin really wanted them,” explains the designer, “and I’m so happy he pushed for them – they look so good.” A new fireplace STYLEATHOME.COM OCTOBER 2018

The dining room is filled with light thanks to French doors along one wall. Paired with flowing drapery and traditional wainscotting, they lend historic flavour to the newly renovated space. The arresting light fixture draws the eye up to the spectacular ceiling beams and adds a hint of glimmer to the room. Avid entertainers, Jillian and her partner, Justin Pasutto, installed a bar equipped with wine fridges, beverage drawers and cupboards to store all of their serveware. LEFT & OPPOSITE Jillian created a cheery family-friendly kitchen with panelled cabinets, a huge island (where the family eats most meals) and a big farmhouse sink under a window overlooking the yard. “The window folds open to a little outside bar where the kids can sit on stools and have a snack while taking a break from the pool,” she says. The designer splurged on things like the range, Caesarstone countertops and a built-in espresso maker but tempered her spending with pieces such as big-box stools and dining chairs, as well as surprisingly afordable cabinetry from a local maker.

with a bold mantel and herringbone-brick interior acts as the focal point of this great room, with additional interest injected via architectural detailing like wainscotting and arched details on built-in bookcases. It’s the perfect envelope for her selection of low-key light-hued furnishings that impart a comfy relaxed vibe. With everything now in place, Jillian has the space and style to host a crowd… but is putting big get-togethers on the back burner for a while. “Knowing that the baby’s coming in October, I’m trying to slow down a little bit – to make sure that I’m breathing, relaxing and enjoying life rather than stressing myself out,” she says. “And my family is so laid-back. They don’t need a big fancy dinner – they’re happy to order takeout.”

esides its gorgeous bones, it was the history that endeared this gracious house to its current owners. “The same family had lived here for 40 or 50 years, and we pictured ourselves doing the same,” one of them explains. “We knew it was our forever home.” The homeowners, who now have three children, aged six, eight and 10, were living overseas in London when they purchased this stunning 4,000-square-foot Edwardianstyle house in an established midtown Toronto neighbourhood. “When this house came on the market, we bought it knowing

that we wanted to move back to Toronto at some point,” she says. “We just didn’t know exactly when.” Built in 1929, the home was architecturally stunning and teeming with potential, but renovations over the years had left it dark, dowdy and dated. So after renting it out for a year and a half, the couple decided to spruce it up before moving in. This meant imbuing its traditional envelope with the contemporary aesthetic they love. “We were inspired by London, where beautiful old buildings are updated with modern elements to amazing effect,” says the owner. Plentiful yet dysfunctional cabinetry gave the kitchen a closed-in feel.

They enlisted Ryan Martin and Amy Kent of Croma Design in 2013 – at first collaborating via latenight phone calls from across the pond – to strike the perfect juxtaposition of old and new in a space suitable for their busy young family. Top priorities included brightening the interior, enhancing flow and making it feel more connected to the exterior. Key to effecting the desired changes was putting on an addition at the back of the home. “The old garage that was there blocked the view of the beautiful back garden,” says Ryan. “So replacing it

with a family room that includes a wall of windows and sliding doors helped bring the outdoors in.” In addition, it flooded the space with light and allowed for a large open-concept kitchen. In the rest of the house, original architectural elements like wainscotting, hardwood flooring, leadedglass windows and a stone fireplace were restored to underscore the home’s character and charm. “Then we struck a balance by bringing in furnishings that have a bit more of a modern look but still work with those historic lines,” says Ryan. The

resulting vibe is sophisticated yet comfortable, clean-lined yet warm. Painting the envelope a crisp white offered a bright backdrop for a cohesive mix of neutral elements with hits of warm brass and cool blues. “Blue is a favourite colour for both of the owners,” says Ryan. “We didn’t want this to come across as a blue house, so we injected small doses of the hue here and there.” After returning to Canada and moving into the house four years ago, the owners continued making it their own, keeping family life top of mind. “We don’t have white sofas, and we don’t have upholstered dining room chairs,” says one of them. “We didn’t want precious spaces that were off limits to kids. We wanted to use all of our rooms, and use them all the time.” But, of course, even in the most attractive home, there is always an adjustment period. “We moved from a tiny, tiny, tiny flat in London,” says one of the homeowners. “At first, I think my kids didn’t know what to do with themselves in all this space!” RIGHT Defined by eye-catching wainscotting, the spacious hallway leading to the master suite is as grand as the room itself. How a Montrealbased couple slowly turned an old house in the country into a calming retreat for their family of four.

IN THE midst of a busy career AS A PHOTOGRAPHER OF PEOPLE AND PLACES, Montreal-based Monic Richard realized she and her family (her partner, Gilles DuSablon, and their kids, Charlotte, 21, and William, 17) needed a getaway, a place where they could soak up the restorative atmosphere of the countryside. They found the perfect spot just an hour’s drive from


the city, in the town of Sutton, Que., surrounded by the verdant landscape of the Eastern Townships. The couple quickly fell in love with the cottage (one of the oldest in Sutton) set on nine acres of land. Erected in 1828 of square-cut hemlock logs with a clapboard addition built in 1852, it had been carefully renovated in the ’70s using quality materials but remained a warren of small rooms. Monic and Gilles purchased the house in 1994, and have been slowly updating it, and the property, to suit the needs of their family ever since. On the main floor, they expanded the kitchen into a room that had previously been a bedroom and removed the wall between the living and dining rooms. “We wanted to open up the space and create a bigger kitchen,” Monic says. “Now it looks like a loft.” Upstairs, keeping the size of the bedrooms intact, they remodelled the bathroom. In the master bedroom, they added a clawfoot tub, which was a source of great delight for the kids when they were small. Nevertheless, except for a window expansion in Charlotte’s bedroom and the addition of a sweeping cedar-framed screened-in porch, the house remains mostly the same as when it was purchased.

It is a place of play and relaxation and offers a chance to do rewarding physical work on the land. The minor changes have come slowly, with much thought and planning. “We have a pool and a pool house now, and we added a kitchen garden,” says Monic. The family is by the water all summer and on the ski hills in the winter. But Monic loves the property best in the fall, when her brood harvests pumpkins and squash enveloped by the fiery tones of the surrounding trees. “We celebrate Thanksgiving here. om Simons had no intention of buying this house. It was being built as a spec project by Calgary home builder Mission Homes and was halfway finished when fate worked its magic. Having collaborated with

the company before, Tom was familiar with its high-quality work and wanted Mission Homes to build a new house for him and his two teenaged kids, Grace, 17, and Cole, 14. “I came here to meet the builder about it, looked around and

decided then and there to buy this one.” Even though the 4,000-square-foot house wasn’t complete, Tom liked what he saw. The space boasted attributes that went beyond spec house expectations thanks, in part, to designer Nam

Dang-Mitchell, who had been working with the builder on the basic finishes – so Tom hired her to fill in the rest. “It’s nice to take a project from beginning to end,” says Nam. “I wanted a family home that is tasteful and elegant but not ostentatious,” says Tom, who envisioned a robust mix of industrial and traditional styles with relaxed family living at its heart. “I wanted a space that could serve as both a spot for my kids to hang with friends and somewhere I could host business associates.” The casual masculine vibe Nam created suits this anti-precious practicality. In her signature sophisticated neutral palette, Nam produced a cozy character-filled backdrop with architectural details, textural wallcoverings and rich soothing colours. White oak makes

A wood-burning fireplace makes the living room Tom’s favourite place in the house when the weather gets colder. “Everyone hangs out in here,” he says. The reclaimed Douglas fir cofee table is a total conversation piece. “I love it,” says Nam. “Its pale wood tone is carried throughout the house, and its spiky legs lend a primal earthy quality. a frequent appearance in the house. “I’m in love with the flooring,” says Nam. “It’s wide plank with a naturallooking matte finish, and I just love how authentic, organic and casual it is. It counteracts the formality of the mouldings.” White oak continues in other elements, such as the kitchen island and the ceiling beams, as well as select built-ins, cabinetry and glass-panelled pocket doors throughout the home, all offering the same light and relaxed effect. Along with incorporating a chic mix of clean-lined mid-century, contemporary, traditional and transitional pieces, Nam pushed Tom to embrace some edge with whimsical winks, such as the sculptural Kelly Wearstler light fixture in the entryway and the spiky coffee table in the living room – but he was all for adorning the dining area with the bold Popeye pop art (which he already owned). Details like this keep the sophisticated house fresh and unfussy – and family friendly. The living room (and its adjacent study) is one of everyone’s favourite areas. “I’m in here all the time,” says Tom. “I start every day in here with a coffee and emails. Then at night, I’m here again, either working or reading.” Cole and Grace also like to sit by the fire with their tablets, and their three-year-old Labradoodle, Tucker, lies on the sofa in front of the window to keep watch. It’s the kind of family living that feels plucked from the pages of a storybook...but a modern one with a little edge.

ABOVE & LEFT The free-standing cast iron tub with a riveted stainless steel skirt is the star of the master bathroom. With its French bateau style, it’s at once classic and industrial. Elements like the floor-mounted tub filler, marble flooring and subway tile wainscotting lend oldworld charm. The grey linen drapery, layered over woven blinds, has a softening efect. “And because I like to add something organic to every room, there’s a tree stump side table,” says Nam. sheet puff pastry (about 11 oz) egg yolk, beaten tbsp extra-virgin olive oil tbsp unsalted butter oz shallots, peeled and halved oz chestnut or cremini mushrooms, quartered cup medium-dry Madeira or Amontillado sherry 1 rounded tbsp all-purpose flour 1¼ cups vegetable stock (preferably mushroom or onion) 3 cups Tuscan kale, stems removed 1 cup unsweetened cooked chestnuts, halved 1 tbsp chopped fresh parsley, for serving Sea salt and freshly ground black pepper, for serving

Preheat the oven to 400˚F. Unroll the puff pastry sheet and place on a lightly floured surface. Cut into four pieces, then score each piece about 5/8-inch from the outer edges. Place on a baking sheet and prick the centre of each piece several times with a fork. Glaze the edges of the pastry with the beaten egg yolk, then bake until puffy, about 10 minutes. Reduce the heat to 350˚F, bake for another 10 minutes, then remove from the oven; set aside. Meanwhile, heat the oil in a large saucepan over medium heat. Add the butter and shallots and cook until the shallots begin to brown; stir in the mushrooms; season to taste with salt and pepper. Cook, uncovered, stirring occasionally, for 10 to 15 minutes. Add the Madeira and cook until it reduces. Stir in the flour, then add as much of the stock as you need to make a thick sauce. Simmer for 5 minutes; check the seasoning and set the sauce aside. Roughly tear the kale leaves into pieces and place in a large saucepan. Cover with boiling salted water and heat until the water returns to a boil; cook until tender, a couple of minutes. Drain and rinse with cold water. Fold the kale into the mushroom mixture; add the chestnuts and return the mixture to the heat. Return the pastry to the oven to warm. When heated, spoon the mushroom mixture evenly over the pastry pieces. Sprinkle with the chopped parsley and salt and pepper; serve immediately.

large veal chops, about 2¼ lbs tbsp extra-virgin olive oil tbsp unsalted butter small onion, finely chopped rib celery, thinly sliced cloves garlic, minced cup Italian dry white wine, such as Pinot Grigio 1 cup passata or strained tomatoes 1¼ cups light vegetable or chicken stock, divided Finely grated zest of 1 lemon 10 pitted green olives, finely chopped 3 rounded tbsp chopped fresh parsley Trim any excess fat from the veal. Add the oil to a large shallow skillet set over medium-high heat. Cook for 1 minute; add the butter. When the butter stops foaming, add the veal and fry until they’re nicely browned, about 3 minutes per side. Remove the veal from the skillet and set aside. Reduce the heat to low. Add the onion and celery to the skillet and cook until softened, 5 to 6 minutes. Stir in the garlic; increase the heat to high and add the wine. Let the wine cook for a few minutes, until it has reduced by half, then add the passata and a scant 1 cup of the stock, stirring well. Return the veal to the skillet, spooning the sauce overtop. Reduce to a simmer and partially cover the pan. Cook gently, turning the veal halfway through and adding more stock if the meat is getting dry, until the veal is tender and cooked through, 30 to 40 minutes. Meanwhile, to prepare the gremolata, stir together the lemon zest, olives and parsley in a bowl. When the veal is ready, add half the gremolata to the skillet and stir to combine. Reduce the heat to low and cook for 5 minutes to allow the flavours to blend. Transfer the veal to four warm plates, spoon the sauce overtop and sprinkle with the remaining gremolata. Serve with saffron risotto, rice or a green salad.


SAUTÉED CHICKEN WITH WHITE WINE, PEA & TARRAGON SAUCE SERVES 2

1 tbsp extra-virgin olive oil 3½ oz cubed pancetta or chopped dry-cured fatty bacon 2 skinless boneless chicken breasts, thinly sliced 1 small onion, diced 1 cup fresh or frozen peas ½ cup full-bodied dry white wine, such as Viognier 4 rounded tbsp crème fraîche or sour cream 2 tbsp chopped fresh tarragon Freshly ground black pepper to taste

Add the oil to a large skillet set over medium-high heat. Add the pancetta and cook for a couple of minutes, until the fat starts to run. Add the chicken and cook, stirring occasionally, until lightly browned, 4 to 5 minutes. Add the onion to the skillet and cook for 1 to 2 minutes. Add the peas and wine and cook until the wine has reduced by about two-thirds. Reduce the heat to medium; stir in the crème fraîche, tarragon and pepper to taste. Heat gently until the mixture is almost bubbling. Remove the pan from the heat. Transfer the chicken to two warm plates, spoon the sauce overtop and serve.
