Summer Entertaining, Hamptons Style KATIE LEE & SAM TALBOT APPEAR TO BE CUT FROM THE SAME CLOTH. She’s a Southern belle who has taken New York by storm with her “The Comfort Table” entertaining books and recent novel, “Groundswell,” about a young woman dealing with newfound fame and divorce. Originally from South Carolina, he burst onto the scene as a “Top Chef” contestant (voted “Fan Favorite” in season two), who has made clean living and good food his thing, as detailed in his new book, “The Sweet Life: Diabetes Without Boundaries.” They both surf, they both love the East End (he’s the executive chef at the Surf Lodge in Montauk) and they both can wax poetic about Long Island’s local fruits, vegetables and seafood. Read on as they discuss their summer cooking and entertaining tips with ELLIMAN. As told to Lisa Marsh

TELL US WHAT YOUR PICNIC WOULD INCLUDE... Katie Lee (KL): It would be on the beach, naturally. When I do a summer picnic, I always try to make foods that are less likely to spoil quickly in the heat, so I don't use mayonnaise. I'll do a grilled, marinated vegetable sandwich and I love to do quinoa salad with some fruit, as well as avocado and nuts, and I serve it in little Chinese paper takeout boxes. Sam Talbot (ST): You can use those for flair. KL: And you have to have a bottle of rosé. I have ice in the cooler and I'm not ashamed. I do put a cube of ice in my wine sometimes in the summer. I know some people would turn their nose at that, but I like it cold.

ST: Listen, girl, you've got to get it done. I pretty much agree with Katie. My picnic would be on the beach, rosé definitely has to be there, but my guilty pleasure is fried chicken. Fried chicken is one of those things that tastes really good cold. There’s nothing better than a piece of fried chicken that's been in the refrigerator overnight, with the flavors and salt, everything gets in there. Sweet tea is a big part of picnics, but I'm a Type 1 diabetic, so I do it a little differently with mango and hibiscus tea. I'm a huge fan of avocados, just loaded with olive oil, really good sea salt and maybe toasted pumpkin seeds. Use demitasse spoons and everyone can eat their own little cup of avocado with pumpkin seeds. For dessert, I'll do fresh strawberry salad, with a little bit of lemon juice and fresh honeycomb balsamic vinegar. It's good.

IN THE SEASON... KL: There's nothing better than a Long Island tomato. The best tomatoes anywhere are right here. You really don't have to do much to them. Take a beautiful heirloom tomato, slice it up, drizzle it with a great extra virgin olive oil and a sprinkle of sea salt and you're done. ST: That's my number one selling salad at the Surf Lodge. I also put a spritz of fresh orange on it. We have amazing oysters in Montauk and we have amazing clams. I eat them raw and we serve them raw with mignonettes made of fresh fruit - maybe mashed up or smoked strawberry.

I've pickled whole fish — I caught a black bass out in Montauk, scaled and gutted it, put it in a shallow pan, and made a pickling liquid similar to an escabeche and let it sit for 24 hours. It's really refreshing, flaky. It’s amazing. KL: It does sound good. To me, summer tastes really light and fresh. I think of vegetables and fruits and fish, you know? Peaches really taste like summer to me. I love to do fruit salsas and put that on a fish. And anything from the grill tastes like summer ... when you're driving and your windows are down and you smell somebody's got their grill going. To me, that's summer. ST: Totally.

SUMMER TASTES LIKE... ST: Summer for me is about awakening your senses. Personally, I love to pickle things: fruit, vegetables, okra, green beans ...

Her Pick “In the summer, corn on the cob is the highlight for me. When that starts coming in, I'm at the farm stand almost every day buying it. It’s something you can just steam and serve with butter and salt, or you can doctor it up like I do. This corn has a little sugar burst with a little bit of spice, the creaminess of the cheese and then that squeeze of lime juice. It’s so simple but has so much flavor. - KL 8

WHAT MAKES THE PERFECT SUMMER PARTY... KL: I don't believe in perfection, so if you're looking for a perfect event, you're setting yourself up for disappointment. For me, it’s that feeling of rustic elegance — casual and laid back. You don't have to get dressed up. I love putting on a long, flowy dress and being barefoot. ST: Me too. I wear my long flowy dresses with a hoodie, though. KL: My house has a revolving door in the summer. People are in and out constantly. They know that they will be well-fed. I always put lunch on. My friends can go in and get lunch when they want and hang by the pool. I love the slow cooker in the summer for that reason. People always think that's nuts, but I'll do a pulled pork or a brisket, like a barbecue brisket type in the slow cooker, and I'll make homemade cole slaw. I'll get some buns and make a couple of sides that stay in the fridge; and then if you have a house guest, they can just help themselves. There's no muss, no fuss.

ST: I think Katie put it really well when she said "rustic elegance." I just do things that are fun. Instead of a regular cooler, just take an old rustic wheelbarrow and fill it with ice, put your beers in there or your rosé. Reclaimed has got more of a story to it, and your friends and guests can tell that you put a little bit more time into it. KL: Play good music. ST: Yeah, your iPod selection is huge. I always tell everyone in my restaurants that when I listen to music, my food just tastes better. You've got to have a play list. KL: And I like theme nights. Having a theme makes it easier to plan a party. You can build on what the menu's going to be, how you're going to decorate, what kind of music you're going to have. Mexican, Jamaican, southern .... ST: Cops and robbers.
