Taco Soup This one is a favorite of my family. My mom told me how to make it as a quick and inexpensive meal when I first moved into my own apartment. I’m sure there’s lots of variations of this, and it’s not original, but it’s still very tasty, simple and warming.

Ingredients: 1 can diced tomatoes 1 can black beans 1 can kidney beans 1 can pinto beans 1 can corn 1 can sliced olives taco seasoning to taste Corn chips or tortilla chips

Optional: 1/2 pound cooked ground beef, shredded chicken or other desired meat diced onion 1 can diced green chiles Garnish: Sour cream shredded cheese

Directions: Combine all ingredients except for chips and garnish, in a medium pot and heat on stove until warm. Do not drain juices from canned food. Serve over corn or tortilla chips and top with sour cream and shredded cheese as desired. Image Source: ordinaryinspirations.blogspot.com
